Abbaye des Rocs (9% alcohol vol.) is a pure malt beer, with no added sugar. The entire range of tastes is directly linked to the double fermentation, the precise quantities of malts (7 types) as well as the mixtures of three kinds of hops (Belgian, German and Czech). Its colour is a striking deep and majestic red. Its taste is rich and full of subtlety. It is tasted like a red wine with which it shares the ruby colour without having the tannin. It develops a strong sweet smell. It confirms the initial impression in the first mouthful, with a sharp body that is balanced with a certain fruitiness. It frees itself on the palate and develops an impressive depth of taste. Some traces of burnt wood are detectable, but never scorched even if it contains this kind of malt. The foretaste is very prolonged because of its rich and unctuous development throughout the mouth. The bitter and sugar tendencies (even though there is no sugar in its composition) compete and come back together to the taster's great satisfaction. It is a deep, mystic and extremely mature beer to be classed among the great products of our soil.

4.1Il est indéniable que la « pâte » Abbaye des Rocs est reconnaissable sur cette Brune 1979, mais c’est une version bridée de leur brune classique qui nous est proposée ici. Intensité, puissance, caractère et expression aromatique ont été ici atténué. Et j’en reviens à ma réflexion sur leur blonde 1979 qui était très nettement axée sur une augmentation du volume au détriment du gustatif (chose que je ne dénigre pas forcément, l’économique ayant toute sa place dans une réflexion de gamme, et ce d’autant plus que les prix sont très nettement inférieurs à beaucoup de brasseries françaises, néerlandaises, estonienne et autre qui font in fine de la bière artisanale une boisson élitiste alors qu’elle a tout pour se démocratiser). Cette Brune 1979 me donne la même impression. Le visuel est sur un brun limpide avec une mousse beige nappant la surface. Les nez est sur un cocktail caramel, prune, alcool, chocolat, appréciable, mais manquant d’intensité. L’alcool ressort de trop également, et cela encore plus à la dégustation avec un alcool qui est dissonant, à la limite du déséquilibre. Ceci est d’ailleurs le cas sur l’attaque où celui-ci est sur les devants, ce qui donne du caractère, mais au détriment de l’expression aromatique qui est en retrait. LA deuxième bouche gagne heureusement en complexité et en intensité. Caramel, prune, chocolat et réglisse sont présents sur une belle alliance. De la part de la brasserie, on se serait tout de même attendu à plus de caractère et d’intensité. L’arrière-bouche revoit l’alcool reprendre l’ascendant, donnant du tonus, mais perdant en richesse aromatique. Le final est également plus sobre avec moins de variations. Si en tant que grand amateur de la brasserie, je reste quelque peu déçu, cette Brune 1979 peut être une bière intéressante pour les palais encore peu habitués aux grandes intensité et richesses aromatiques et être en cela une bière passerelle les amenant vers d’autres cieux.

La simplicité est la clé de toute véritable élégance » disait Coco Chanel. C’était avant. Lors de son défilé, l’Abbaye des Rocs présente sa miss Belge éponyme. A peine l’escarpin posé sur le tapis que la nouvelle brune l’aura démentie. Chevelure fine et disciplinée, elle porte une robe de couleur brun foncée, tirant sur le rubis par l’effet des jeux de lumières.
Le défilé est millimétré : 7 sortes de maltes et 3 types de houblons (belge, allemand et tchèque).
Ses matières premières, de grande qualité, permettent d’oser la corpulence dans l’élégance.
A premières vues, notes chocolatées, caramélisées et de pruneaux. Sentiment de puissance et de force pour cette dame au parfum aromatique complexe.
Nullement potiche, la verve qui l’anime est à son image : richesse et finesse se développe au fil de la discussion, plutôt dense. L’adage voulant que ces dames choisissent leur parfum à leur image a prouvé sa justesse : son léger caractère brûlé complète ses traits de personnalité de maltes sucrés et caramélisés. La douceur chocolatée ne fait qu’adoucir la puissance sans pour autant lui enlever sa force.
Dame onctueuse et riche, son côté pétillant lui permet de persister à briller sous la lumière.
Cette dame a donc démontrée qu’il est tout à fait possible d’allier élégance, profondeur et puissance, en toute complexité.
Preuve que les brunes ne comptent pas pour des prunes, la brune pur malt s’impose aujourd’hui en haut du podium.

Bottle 75. Robe rubis et mousse beige éphémère. Nez : caramel, fruits (prune, pêche, raisin surtout), alcool. Bouche : douce, veloutée, saveurs fruitées comme les arômes détectés et le côté alcoolisé "type porto" ! Rondeur, finesse, céréales et en fin, une discrète amertume. Bonne bière qui réchauffée fait penser à nos meilleures trappistes belges !

Overly carbonated, slow gusher; it pours with a lot of foam. The aroma betrays some sourness, together with the Belgian character. Good body strength; it has caramel flavor, with moderate sweetness and a nutty edge; no sourness, just a shade of vegetables. The bitterness is medium-low, with some alcoholic component in the end; the final is also very nutty. Good but strange.

Cloudy red-amber color, with floating particles, with a rather fizzy head, reducing quickly to a creamy thin layer. Strong malt aroma, mature. It has a good malt and caramel aroma, some sweetness, but possibly some overfermentation ate out some of the body. Not much bitter; the alcohol warms the mouth at the end. Good for lovers of the style, but not complex enough as it is today; gimme more body and more hops.

Calda, rotonda, leggerissima astringenza. Carbonatazione intensa. Equilibrata ed armonica.

WOW! profumo di caramello, frutta candita e zucchero di canna. incredibile dato che non c’è alcuna aggiunta di zuccheri! sottofondo di malti tostati, ma quasi impercettibile. la schiuma è color capuccino molto vaporosa e fa dei bellissimi merletti di bruxelles. frizzantezza perfetta, solletica la linga e non disturba. corpo quasi oleoso. il gusto è incredibile. praticamnete un vino rosso, con note di liquerizia, cioccolato fondente e luppolo solo sul finale. Il retrogusto p lungo e oleoso, quasi da sciroppo. Diventa una droga, ordinatene già 2.

Flavour is gently tart and very malty, with sweet candi sugar, Belgian yeast, and sweet caramel. Much sweeter on the palate than the nose suggests, and the tartness is a little bizarre. Not a big fan of this.

750mL bottle, pours an opaque dark red with a small beige head. Aroma of dark fruits, syrup, caramel malts and yeast. Flavour of maple syrup, caramel, dark fruits (especially berries, prunes and dates), and yeast. Quite complex and full-bodied, with medium-high carbonation. Delicious.

330 ml bottle. Pours a deep cloudy, rich red/brown with huge head that dissipates slowly leaving thick lacing. Aromas of warm spice, dark roasted malts, dark pitted fruit and raisins. Very complex, creamy, and warm but alcohol is well hidden. Flavors of toffee, dark cherry and dates, spice, and bit of woodiness. Beautifully balanced. Easily one of the top ten beers.

Aroma has lots of ripe fruits and some sweet toffee typical to aged belgian ales. Also some hints of candi and brown sugar. Flavour is slightly sourish with ripe fruits, some toffee, raisins and spices. Becomes syrupy after some sips. Warming alcohol feeling at the end. Brilliant belgian ale!
Gets rather strong on toffee and orange when aging (BBE 2010 on 2012). I like this one best just before the BBE date.
3.5Complex malt aroma with light spice, pepper esters and toast. Amber color with a slight light brown head. Malt on the palate, with a moderate dry finish. High carbonation, soft mouthfeel. The body is average.

The aroma is saturated with caramel, esters. Saturated red color, transparent with a little foam. On the palate, there are few toasts, caramel and a flimsy alcoholic aftertaste. The body is medium, carbonation is high.
3.7Fresh, 3 weeks in a bottle, but I really want to try it. Brown in color with a lot of yeast flakes. Good foam. The flakes are so large and slimy that they had to pass through a sieve ... Epic Fall .. Nose. Red wine, dried fruits (Prunes) caramel, ethers. Taste. Wine notes, dried fruits, fruits, shades of malt. There is some wood and malt in the aftertaste. This beer has everything you need for an evening. except for yeast flakes, of course.

3.1Bottle. Hazy ruby body with a load of chunks beneath a thin beige head. No visible carbonation. Faint lacing. Aroma of caramel and fig. Flavour of toffee and stewed apple. Medium body with a frothy mouthfeel... plus chunks. Soft fizz. One to revisit... and pour very carefully.

4.4Love this Abbaye, so delicious. So much caramel in the malts, but no cloying sweetness, rich depth of smell with prunes and candied fruits, what a character. Taste has so much bread crust malts and a light sweetness, caramel and toffee, rich rich rich very fully bodied, a bit of a warming alcohol note in the finish, some very subtle roasted notes in the finish. Hop character blends with the malts to balance out the beer. Such a killer big body brown ale. Big props to all the monks who made this possible, just love these beers.
