Against the Grain Kentucky Ryed Chiquen

Our first barrel aged beer here at Against the Grain is the Kentucky Ryed Chiquen. Named so because: 1. It was made in Kentucky. 2. It has a lot of Rye in it and was aged in rye barrels. and 3. It is not Chicken, and as we all know (or should know) Chiquen refers to anything that is not chicken. Brewed with Maris Otter, rye malt and caramel rye, imparting a spicy, fruity and dry flavor. Then hopped with enough English Nugget and Kent Goldings just to balance and fermented with our house ale yeast. After fermentation we moved the entire batch into the AtG private dining room and into used Redemption Rye barrels from our good friends at Strong’s Spirits. There it aged for 5 weeks until we felt it had picked up the right amount of residual bourbon character and oak flavors. We then transferred it to our serving tank, carbonated it and the end result is on tap now, a balanced drinkable and complex barrel aged beer.

3.3 Slodki aromat zdominowany przez beczke. Whisky mo?e brandy. I kwiaty. S: kwaskowe, wodniste, delikatny szlachetny alkohol i w finiszu zbozowe, mo?e chlebowe.
3.9 Ciekawy, swojski aromat pieczonego chleba, dębu, wiśni. W smaku gładkie, aksamitne, ułożone. Smak chleba razowego, ciemnych słodów, melasy, ciut pumperniklu, toffi i beczka. Słodkie i przyjemne dla podniebienia. Lekki akcent owocowy w tle - wiśnie.
3.7 Bottle. Pours dark amber with a small off-white head. Aroma of rye, bourbon, light fruit, oak and caramel. Flavor of caramel, vanilla, bourbon, oak, rye and some dried fruit.
3.5 How: tap Appearance; hazy dark amber, medium white head. Aroma: stone fruits,, wood, hay, some mild citrus notes. Palate: medium body, average carbonation.
3.6 Tap at Hoppy Gnome. Red orange with a white head. Toffee, dried cherry, woody and faint whiskey aromas. Woody and earthy flavors, mostly dry. Medium body with a smooth feel.
3.3 Tasted from the tap on the 04/02/2017. Orange to amber colour with a big off-white head. Aroma of sweet fruits, caramel and spices. More wood on the taste than in the aroma. Taste has some spices, hints of caramel and sweet fruits. Next one please!
3.5 Tap@Fermentoren, Copenhagen (07/01/2017) - fuzzy dark amber to brown coloured pour with white head. Aroma and taste is sweet toasted malty, rye, some sweet caramel action, fruity notes, dried fruit, bourbon soaked wooden accents into the close.
3.6 On tap. Pours a dark mahogany color with a small head. Aroma of fairly muted with rye, bit of caramel and dark fruit. Taste of caramel, dark fruit and rye. No real bitterness and fairly clean finish. Moderate body, smooth with a slight malty feel. No hint of the 8.6% ABV. enjoyable beer to relax with.
3.7 Underwhelming aroma, unique brown color, nice rye barrel flavor, slightly boozy with a smooth palate. Overall good and different.
3.3 Tap at J’s. Pours a clear, deep gold to light amber with a half-finger of foam that dissipates quickly. Malty nose with some light caramel and rye bread notes. Clean and crisp amber. Faint barrel notes on the finish: vanilla and whisky and more malt.
3.2 Very sweet aroma, slight maize and bourbon. Flavor is much like the aroma. Sweet, light bourbon, light rye. Thin across the palate.
3.4 750 ml bottle, Cardinal Pub & Bar, Stavanger. ABV is 8.6%. Orange to amber colour, huge off-white head. Distinct aroma of rye whiskey oak barrel, hints of caramel and dark dried fruits. The flavour has a slight malty sweetness, again followed by notes of rye whiskey or bourbon oak barrel, caramel and brown sugar, dark dried fruits and mild spices. Moderate hops. Overcarbonated, fizzy mouthfeel.
3.3 Fra flaske (kveldens siste) på Mi2 Cardinal nov-16: lett uklar lys gylden med ok skum. Interessant duft og smak av karamell, krydder, grillet kjøtt, og appelsiner sammen med rugsyre og noe bær. En fin avslutning på nok en hyggelig kveld! Et kjærkomment gjensym på Mi2 feb-19: overstående notater tiltredes!

3.9 Sporo aromatu beczki pod postacią mokrego drewna z dodatkiem czerwonych owoców, lekkiego karmelu i pikanterii żyta. W smaku pełne, lekko oleiste, wytrawnie karmelowe z lekką kwaskowatością i świetnym już stricte bourbonowym finiszem. Świetne !
3.8 Draught at Fermentoren. Medium high white fluffy lasting head. Hazy dark amber body. Fruity acidic aroma. Smooth and pleasant fruity acidic flavor with a little bit of vanilla. Low on bitterness, low carbonation, long finish.
3.8 Pours dark amber with a small offwhite head. Aroma of malt, rye, light sourness, bread, light fruit, oak, bourbon. Flavor is malt, rich caramel, cocoa, chocolate, vanilla, oak, bourbon. Medium body, soft carbonation, dry finish.
4.7 Smells a little nutty, a little barrelesc, a bit of heat from the whiskey. Glowing brown with light cover of head. Smooth almost mellow milk chocolate then then a woody vanilla carries it home. Amazing great smooth body.
3.7 Bottle@guren. Amber haze. One finger foam. Bourbon malty notes. Alcoholic caramalte tone. Oak backbone. Nice complex in any Way.

Pours a medium, well retained, ivory head, with heavy lacing, over a slightly hazy copper (SRM 15) body......nose is rye, light bourbon, hints of oak, light bread, biscuit, balanced.......taste is slightly sweet with caramel hints, light bourbon notes, heavy rye, hints of oak and vanilla, mild hop bitterness on the finish.....mouth feel, medium body, moderate alcohol heat, moderate carbonation. This is a well made showcase for the rye, with nicely handled barrel notes, mild hops. BJCP 8/3/13/4/7

3.6 A nice bourbon rye overall. Pours a cloudy Amber with a tan head. Smells of cherries, strawberries and a bit of caramel and vanilla. Taste is crisp, like a pale ale, with some bourbon and vanilla. Had in the bottle.

3.6 Bottle thanks to Rob. Pours a dark hazy copper with medium off white head leaving spotty lacing. The aroma is rye, wood and bourbon. Medium mouth, rye, bourbon, oak, spice, nice dry finish, very good.
4.2 75cl bottle shared with friends. Somewhat hazy amber / golden with a small white head. Full body with low to moderate carbonation. Well balanced sweet and bitter tones. Caramel, malts, bourbon, rye and some fruits. Very nice.
3.5 Bottle from starcross -- cheers! Opened at a tasting of barrel-aged beers, and this one came across as distinctly "light". There’s some good rye flavor (somewhere between spiciness and earthiness), and the aroma of rye whisky is definitely there. However, it’s a bit too muddled and sticky, and it didn’t stand out next to a lot of the other beers we tried.
3.3 On tap at Taps. Pours a pale brown color with a bit of head. Mild maltiness and minimal barrel flavor.
3.7 An aroma of rye whiskey and dried fruit with a hint of malt. Pours a clear bourbon color with an off white head with decent laci g. Tastes like a fruity rye whiskey with a sweet malt whiskey finish. Medium body.
4.1 .66l bottle from Firmabier. Pours cloudy apricot color with high foamy, off white head. Aroma is dried fruits, exotic fruit notes, grape fruit notes, hops, malts, alcohol, syrup, caramel, bread. Flavor is mostly same. Well balanced, bubbly mouth feel. Swell!
3.1 Poured into a snifter. 3.75 A: Mildly hazed rose/light amber color. Two fingers of creamy beige head. Retention is pretty good and a short ring of lacing is left. 3.75 S: Hmm, this is interesting. To start, the rye malt isn’t nearly as strong as I was expecting. A lot of rye beers I’ve had would mop the floor with this one. That said, there’s TONS of rye whiskey aroma. It’s tangy, earthy, and boozy. Less of the spicy earthiness that comes with rye malt. Still it’s a very nice nose. Light caramel and toasty notes. 3.5 T: The taste is like the nose, but calmer. Less boozy than the nose suggests - indeed it’s pretty much undetectable. Tangy, earthy, leather rye whiskey. Spicy earthiness, caramel, toastiness, light non-sweet toffee. 3.5 M: Medium to heavier medium body. Good moderate carbonation.
