Pipedream is a joint venture between Alvinne, De Struise & Pipeworks Brewing Co. Pipedream is an American inspired IPA using five hop varieties to satisfy the discerning hophead. This truly is a Chicago Pipedream come true!



Please note that bottles with the letter S on the crown cap was brewed with a different yeast strain from de Struise Brouwers instead of the Morpheus yeast from Alvinne.

2.6 2 year old bottle which probably was not looked after. The bottle gushed all over the place. Straw colour with lively carbonation. Funky aroma, little farmyard and citrus. Also a little acidity / sharpness in the nose. Flavour in ultra dry with brett character
4.7 M’encanta aromàticament. No em cansaria d’olorar-la. Notes de caramel, espècies, fruita àcida i herbes. En boca és cremosa, amb un punt dolç i un final amarg. Complexa i molt interessant. La única pega és la seva dificultat de trobar. Gran.
3.5 Gift from SJ. I love Belgian Strongs, and this one didn’t dissapoint. A nice blend of orange, spice, caramel and lemon. Nice smooth and sweet balance with a bread and bitter finish. I love Belgians.
3.3 4th July 2009 Cloudy orange - brown beer. Fresh and bitter grapefruit with lemon citrus. Dry frothy palate. Finishes with bitter orange. Refreshing.
3.4 Bottle. Pours a murky golden orange with a decent billowy white head. Aromas of spicy resiny hops. Light caraeml sweetness in support. Flavours are dominated by resiny hops. A little out of balance but OK. Thin to medium mouthfeel.
3.5 33 cl bottle @ Struise. Rated on 20100717. Pours amber color with large head. Aroma of hoppy fruits, malts, caramel notes and grass. Flavor of fruits, dry hay, caramel notes, goose berries and some malts.
3.9 Bottle at Gainsbar. Orange/golden colour with massive beige frothy head. Aroma is hops, herbs and spices and fruit. Touch of brett too. Very lively from the bottle. Taste is fruity, peach, citrus, orange sherbert, mango. Finish is quite bitter and very fruity, tangerine maybe. Slightly herbal/floral taste too.
2.6 Bottle from Mane Liquor. Pours murky, bright orange with a small yellow head. Nose starts out ok. Touch of passionfruit and grass. Taste is not so good. Very sour with grassy/earthy hops. Doesnt work very well and I dont think the sourness is supposed to be there
3.6 bottle, yellow coloured with foamy white head. Smell: hoppy, taste: very nice hops, with fruity notes. Nice one
3.2 tasted like a Brett influenced IPA. Interesting. Lighter orange amber color. Highly carbonated. Brett, lemon citrus, lemon grass and peel smell. Small malt backbone but it is a Belgian malt as it gives some banana taste. Sort of a Belgian wit in some odd way. Highly carbonated and a lot of lemon. Out of balance in a lot of places. Odd little beer
2.9 Lot 539. Flaske 0,33l spandert av Rune og delt hjemme hos ham 26 Jan 12. Aprikosfarget. OK luftig skum som fester seg til glasset. Uklar. Syrlig aroma meg et distinkt gjærpreg. Dette er gjennomgående også i smaken hvor det også dukker opp innslag av mørke frukter. Tørr fruktig avslutning. Et annerledes øl.
3.1 330ml bottle, 7.8% abv., lot 539, carried home from The Bottle Shop in Brugge. Partially gush forth settled to a big, rocky white head with solid duration. Spotty lacework. Hazy, amber coloured body. Fruity dryness to the nose with earthy malts. Interesting flavour profile of ripe lemon, yeasty fruitiness and malts. Ends with a moderate fruity tartness. Again interesting without further excitements (shared with Finn, Tromsø 26.01.2012).
3.5 Bottle. Little bit of a gusher. Cloudy brown with some good carbonation. Interesting aroma and flavor. Belgian yeast, malty, with little bitterness from the hops. Really excited to finally have a beer from Pipeworks. Cant wait for them to get going in Chicago.
3.8 Bottle. Big creamy head that took some time to dissipate. Yellow and slightly cloudy. Full bodied, hoppy with a lingering bitter aftertaste.
3.8 Bottled, 330ml, one of my Anniversary beer selected by Fin (cheers). Lively little feller on the pour, gold amber with big white head. Big fruity, Belgian yeasty notes from the start, hints of ripe banana and strawberry. Big on alcohol too, warming and soothing on a bitter winter night, never gets dry enough for an IPA for me, but a big hoppy finish. A very decent beer, really enjoyable.
3.5 12 ounce bottle If it weren’t for the fact that this was a bottle bomb I would have given it much higher marks. By the time it settled down I had about four ounces left. It was enough to get a sense that this has lots of potential when fresh (assuming it gets made again). What less would you expect with Struise involved in the brewing process? Aroma / Appearance - It took ten plus minutes for the foam in my glass to settle into a semblance of a beer. When it did I was left with the hazy dregs. I imagine it is not nearly so cloudy if you don’t get the yeast shot. Mango, cotton candy, oranges, and tangerines combine for a tropical Belgian feel. This is like Dreadnaught with a European twist. Flavor / Palate - The creamy mouthfeel is like sipping the inside of a creamsicle. Yeast and citrus warm the mouth during a prolonged finish. Like drinking a can of tangerines with a boost of alcohol the result is solid. Growing more bitter with time by the final sip it leaves a memorable bite. I would love to try this again when I have a full bottle rather than a third to sample
3.6 Orange, hazy body with an off-white frothy head. Nose of hops, oranges, caramel: very nice and well balanced. Heavily bitter, lightly sweet flavour: quite citric, malic acids. Ok, but somewhat out of balance and astringent.
3.4 Over the best-before date. Dark orange beer, off-white head. The aroma is yeasty, Brett, malty, only slight hops left. Flavour is quite dry, rather bitter with some fruitiness and spice. Little sweetness comes through. Finish dry. Heavy carbonation, even too heavy, it draws attention away from the beer. Quite OK, wondering how it would have tasted when fresh. 3.6 Judging by the best-before date on the bottle this is now three years old. Pours dark orange-red with medium off-white head. Aroma is funky with Brett, very reminiscent of Orval. Only very faint hop aroma left. Taste is quite bitter with grapefruit and lemon. In the middle there is some balancing sweet caramel and it all ends dry again. Carbonation is overly strong. Still really reminds me of Orval. I’m curious what this tasted like three years ago.
3.6 33cl bottle from beer planet. Hazed with dirty white big sticky Belgian head. Pine, fruity esters...some banana and apple, but both mellow...kind of soapy as well with dusty, almost stale, malt. Lively carbonation with unfiltered slightly chewy feel. Strange balance of esters and hops up front, kind of makes it hard to discern specific flavors. Slightly sweet woody hop flavors that have plenty of bittering. Finishes up dry with a ’belgian ipa’ character.
3.8 33 cl bottle @ De Struise Brouwers. Rated on 17.07.2010 Aroma has earthy notes, toffee and hints of banana. Flavour is slightly sour with earthy notes and some toffee. Feels a lot like Westvleteren blonde.
4.0 Bottle at the school thanks to Urbain. Pours semi-clear, amber-gold with a white head. Aroma holds a nice array of hops. Flavor is medium sweet with bitterness of pine, grass and grapefruit. Medium bodied with average carbonation. Dries out a bit in the finish with modest sugars and a nice hop kick. Great beer.
3.4 Bottle @ home shared with DutchDrebus. Gusher! Not a really nice smell, taste is decent but not really outstanding. Bit dull, boring. Not bad, but no spirit sort of..
3.6 Dark orange/brown body with particles and a small off white head. Bitter hoppy aroma with grapefruit, lemon and lots of caramel. Nice spicy bitter flavour with an underlying sweetness with peach and lemon.
3.6 RBESG Sheffield 2009 Grand Tasting @ Harlequin. Hazy amber, medium white head. Fruity hop aromas of peach, lemon. Fruity taste of grapefruit, lemon, peach, some caramel. Quite tasty.
2.7 I do love IPA and IPA inspired beers, but this one not so much. Shared a bottle with benzai. It smelled and tasted a bit funky. Good thing that these guys will have their own brewery soon though!
2.2 Brilliant coppery straw pour. Honey-like. Overly large white head, even when pouring carefully. Lacing is there, when the head finally dies down. Long wait. Buttery toffee aroma. Like lots of toffee. It overpowers anything else that may be there. Not much of an IPA aroma. I didn’t call it an IPA, the bottle did. Carbonic dry mouth. A little sweet. Not much taste past the toffee, again. Not that good.
3.5 "Feb 2013; Lot: 539." aroma is honey and hops, also slightly tart with cherries and peaches and some bretty horse. pours a very cloudy dark orange with fluffy beige head. flavor is fairly bitter, sharp fruity/piney hops backed by light syrupy sweetness. very fizzy -- i’d say overcarbonated -- with a medium-thin body and long quite bitter honey/fruit finish. somewhat astringent. this is an odd combination of fruity belgian aroma and a biting bitter flavor and finish.
3.7 Bottle. Pours a dark, opaque orange body, medium light head. Mild and somewhat dull aroma, yeasty and fruity. Unlike what you would expect from the 56 bittering units, Pipedream makes for a punishingly bitter beer, thanks to the interplay between the mildly bretty yeast and the bittering hops.
3.1 Hopfiger, eher aber prickelnder herber Antrunk mit sehr leichter Malznote, die sich im Mittelteil hintergründig festigt. Klebrig werdend, die Hopfigkeit nimmt etwas ab, bleibt aber auf präsentem Niveau und Hauptaroma. Ausgewogen, wenig nach Kräutern und etwas hellmalzig. Gelungenes Sessionbeer, dem es an tiefgründigen Aromen aber etwas mangelt. 13/9/10/8/8/9
