Danish: Hvem Xiquic egentlig var kan være lidt vanskeligt at forklare i korte vendinger, men de heltmodige tvillinger kender vi alle: Wayne Wambles og Jacob Storm - chefbryggere på henholdsvis Cigar City Brewing i Tampa, Florida og så her hos os på Amager Bryghus.
Siden sit første besøg på bryghuset tilbage i 2011 har Wayne været lidt af et idol for os. Vi har nemlig svært ved at forestille os nogen, der er mere dedikeret og kompromisløs i sin tilgang til brygning - og det kombineret med ægte passion og sans for detaljen.
Derfor var det en stor ære, at Wayne tog imod vores invitation om at brygge hos os - og det endda på hans fødselsdag! Opskriften blev skabt gennem en endeløs række e-mails. Cigar Citys signatur-ingrediens - cedertræet - blev bestilt hjem og en fødselsdagskage blev bagt.
Det blev en sjov dag - og vi håber at du vil have det sjovt med at smage denne dobbeltmæskede cedertræslagrede peber Imperial Stout - ja intet mindre. Det er lidt af et bæst - men et blidt og venligt bæst.



English: Who Xiquic was, is a bit hard to explain - but we all know the hero twins: Wayne Wambles and Jacob Storm - headbrewers of Cigar City Brewing in Tampa, FL and Amager Bryghus, Denmark respectively.
Since his first visit at Amager back in 2011 Wayne has been quite the idol for us. We don’t believe it’s possible to find anyone with a bigger heart in brewing - combined with the utmost passion and sense for detail.
Therefore it was a great honor to us that Wayne accepted our invitation to come brew at Amager Bryghus - even on his birthday! A recipe was created from what seemed like an endless stream of emails. The Cigar City signature cedar wood was ordered and a birthday cake was baked.
We had a fun day - we hope you’ll have fun enjoying this double mash cedar infused black pepper Imperial Stout, yeah, no kiddin’. It’s a bit of a beast - but a gentle one.



Ingredients: Water. Malts: Pale, Crystal Rye, Crystal 50/100, Crystal 70/140, Crystal 100/200, Black, Chocolate Rye, Roasted Barley. Cedar, Black pepper. Hops: Citra, Centennial, Chinook, East Kent Goldings, Herkules. Yeast: UK-ale.

4.1 Butelka 0,5l Kolor ciemny nieprzejrzysty, piana brązowa ładnie się trzyma i osiada na szkle. Aromat sojowy, pikantny, lukrecja i torf,, do wyboru do koloru" Pełny smak solonej wędzonki, trochę czekolady, jałowca? Pełnia smaku i aksamitne odczucie, super imperial stout.
3.8 Bottle. Nose is light citrus with dark roasted grains. Deep dark coffee. Pitch black with light brown head. Taste is where this guy shines. Lots of cocoa powder and lightly bitter chocolate. Light fruity esters.
2.3 Um. No. Intense cedar aroma is at least somewhat pleasant because dear god the taste. Beats your skull in with cedar and rye and is just so damn spicy.
4.0 Dirrerent...pours a dark mahogany brown with fluffy tan head. Aromas of cedar, cedar, and cedar...just like my humidor, spicy peppery goodness. Flavors of chocolate malts, a touch of tobacco, and then straight cedar. Wow!
4.4 thanks to bartlebier for sharing this wonderful beer @ his cellarclearing tasting! exceptional nose of powdery dark chocolate, espresso, vanilla, smoked herbs, pipe tobacco; more smoked herbs and spices with dark chocolate and roast in taste, wonderful palate, long finish, with a decent yet subtle bitterness. Not a trace of alcohol burn in spite of its 9% abv. A real work of art.
4.4 500ml kindly sent by Enjoyit in a former EU Swap 2014 - tak skal du have! - Batch nr. 00628, bb07/2018. - Shared during Freiburg 2015 Jolly Cellar Clearing (Saison&Weird). - Mid-unctuous deep, cultured black pour. Smells luxurious and elegant, a suave cedar-darkgreen varnish glazed over tobaccoed espresso. Massive C-hops tucked away underneath layers of dry bitter chocolate and coffeebean roast, the pepper slowly adding a punch where the exotic cedar adds wood-vegetal misdirection. Love how the rich C-hop resins stay in the mid and bass part of the mix here, never becoming treble but always there - very original and well engineered. Could be a tad more lush in mouthfeel, but perfect considering abv. Great PoMo composition of a Transatlantic ImpStout.
4.5 Now this is thinking outside the box. Aroma is about what I’d imagine when done by these guys. Flavor’s a surprise and works so well. Excellent finish. Thanks to friends Patrick n Karen for this treat.
2.0 The aroma of the herbs. The taste is of herbs and dark coffee. Okay bitterness that fills the mouth forever. You can drink it but tastes and smells very much. Follow me @ Kung av öl @ Facebook for more pictures and ratings.
3.8 Dark black. Thick dense tan head. Grapefruit. Pacific Northwest hops are dominating. Like a IPA and stout had a baby. Cedar, almost like licking a humidor. Thick and chewy. Charred and roasted. Thx oldrtybastrd!
3.8 Pours pitch black with nice head. Aroma: fresh pepper dominates, cedar wood, chocolate in the background. Taste: cedar wood, chocolate and coffee, with pepper in the palate. Very original, not a typical imperial stout, but I like it. The pepper could be less dominating.
3.8 Tom’s bottle share. Poured into a small snifter...brown with a mild head. Aroma is BIG BIG BIG cedar with spices and chcolate. Did I say Cedar? The taste is CEDAR! SPices, dark chocolate, roasted malts and CEDAR! Almost too much for me. As it warmed it was better. Big mouth, potent almost sappy finish. Cedar!
3.2 Bottle at Cara B. Black colour with tan head. Roasted, spices and alcohol aroma. Roasted, spices, herbal, alcohol, dark chocoalte taste. Medium to full body.
4.3 Bottle. Potch black, beige creamy head. Aroma of fine dark chocolate, some coffee and cedar wood plus peppery spicy finish. In taste dark chocolate mixed with cedar, coffee, licorice and again pepper in the finish. Full bodied, oily and smooth on the palate, good bitterness in the finish, the beer is not very sweet. Great beer, very nicely mixed cedar and pepper, ecerything fits just right.
3.7 Shared 22 with Zach, pours a dark black pour with a Java head. Nose is malt with strong cedar and pepper. Taste is very strong cedar and peppery on the palate. The cedar wood beers from CCB are quite distinctive and are either acquired or take it or leave it. Worth a try ! The finish is moderately long , malty without any real sweetness and ends with a forest of cedar. Quaff Score 7 / 10
4.1 Bottle. Pours black with a brown head and aroma of cedar wood and peppercorn. Taste is full of cedar wood and peppercorn throughout with some roasted malt notes into the cedar finish. Delicious stout
3.3 Aroma is spices, chocolate and dark malts, kind of similar to a Mexican stout. The flavor is spices, garden vegetables, chocolate, dark malts and a warning/slightly sour finish.
3.9 I like pepper. Luckily. This is a pretty different beer but in a really cool way. So many different flavours in a serious stout - that work. I get the obvious pepper, dark chocolate, wood, spices but also some eucalyptus or mint or maybe new tennis ball haha. I like it
3.9 Bottle shared by Marcus. Pours drk blk with a slight tan head. Aroma is cedar, spice, smooth burnt malt. Full bodied. Flavor is treacle, heat, citrusy hop, smooth burnt malt, smoke, wood, chocolate. Lots of complexity. Finishes not quite dry and bitter.
3.8 Bottle from Capitol Beer & Tap Room. Pours dark brown with a modest tan head and a strong cedar aroma. There is a very bitter burnt smoked malt flavor with a pepper finish. Also some chocolate and coffee.

3.9 from Erzbierschof - black beer with a little long lasting dark beige foamroasted aroma of black chocolate; gentle hints of wood and a bolder presence of pepper; full-bodied and a soft carbonation, dry and fairly bitter; more wood presence in the finish where the black pepper dominates chocolate and tobacco
4.2 Bottle as a gift, thanks A! Pours near pitch black with a huge, dense, thick creamy head - it does disappear after a long while. On the nose it’s roasty and peppery, some soy notes, liqorice, wood, peat. Kinda salty. The pepper fades later on, giving way to a more traditional, thick and vinous Impy character. Tastes extremely nice - deep roast together with not overpowering bitter chocolate sweetness, then in the second wave some hoppiness and woody notes. Burnt wood. Cedar and juniper. The peppery character is just enough to give off a nice warm sensation while not disorienting the well crafted Stout that this is. Body medium plus, soft and velvety in the mouth, with near flat carbonation. Leaves the roof of the mouth somewhat dry, even ashy. Alcohol well covered. Complex and memorable. Excellent! I absolutely love it. So glad I’ve got another bottle of this - YUM!
3.3 Bottle split two-ways. Pours pitch black with a medium dark brown head. Aromas of pepper (shitloads), sweet licorice, light cinnamon-like spice, savory, dark chocolate. Taste is very dry, piney, cedar wood, lots of pepper, dark chocolate, soy, bitter roast. This is not for me at all. Ugh.
3.8 Bottle from VP Aker Brygge enjoyed at home Pours pitch black with a demse brown head. Smell of cocoa, toast, dark dark malts, coffee and roast. Heavy sweet, alot of dark dark malts, more coffee, chocolate, roast, dark fruits; quite sinful. Moderate bitter finish, chocolate tail Balanced, pepper arives late and plays along
3.0 26th April 2015 Opaque black - brown beer, small tan head. Palate is smooth and semi dry. Fairly rich dark malts. A modicum of smoke. The cedar and black pepper kick in and completely dominate. Dry finish with a long spicy cedar linger. Interesting beer but it’s relentless in it’s cedar and pepper and thus drinkability goes out the window.
3.8 Aromat: paloność, drewno, likier kawowy i specyficzna przyprawowość, w tle delikatna śmietanka i alkohol. Wygląd: klasyczny RIS Smak: jest palono-czekoladowo z muśnięciem kawowego likieru, alkohol grzejący przełyk, ale niewyczuwalny zbytnio w smaku, do tego lekko mleczny akcent i lekko szczypiący pieprz w finiszu. Dziwny, intrygujący, ale świetny RIS.
3.9 50cl bottle shared by Arve_Christian - thanks! Pours close to black with beige head. Roasty aroma with mild wooden notes, hints of citrus, licorice and spices. Strange, but delicious! Balanced and easy to drink!
3.8 On bottle from Vinmonopolet Vika- a little while back. Black color,ok offwhite foam. Medium/ high aroma intensity: roasted aromas, hops, leather, cedar & coffee. Medium/ full body & high complexity. Some sweetness, good bitterness- balances well. Very enjoyable
3.1 Bottle shared at the Cotteridge Convention 2015. Pours oily black-brown with a creamy beige head. The nose holds rich burnt cedar, chocolate. Medium sweet flavor with heavy charred wood, earth, dirt, bitter cocoa. Full bodied with fine carbonation. The oppressive burnt wood character continues into the finish, with further earthy bitterness, mild chocolate, cedar. A bit heavy. Not very drinkable.
