Belgian Style Double IPA

Double IPA aged in French oak Chardonnay barrels with Brett. Deep within the tortured aberrations of a monk’s mind there lay a concept of a Holy Grail of beer -- a beer oft imagined but never tasted, strived for but never achieved. It’s Belgian heritage manifested in its yeasty complexity, softened and rounded in its cooperage Français and made to sparkle like the stars first seen by his distant predecessor Dom Pérignon.

Bitter Monk Belgian Double IPA is such a beer. Redolent of citrusy hop bittering and massive malt infusion, this is a beer to ponder, to sip, and, even for a monk, to dream. Why then is the monk so bitter? What provokes that sly smile? What is he wearing under that flowing robe? A triple-fermented beer gives him three times the mystery. Remember, anything worth doing is worth over doing. Nothing exceeds like excess. Even for the cloistered.

And what rough monk, his hour come round at last, slinks slowly toward Brussels to be reborn.

4.2 Aroma of hay in golden sunshine, lemon. Taste of farmhouse, lemon zest with a peppery finish
2.2 Hop fruit herbal spice aroma. Clear yellow colour good head and lacing. Malt herbal spice flavour with strong chemical aftertaste. Smooth palate.

4.2 From the bottle: Batch #6, Triple fermented - First in French oak foeders with a Belgian yeast, then in French oak Chardonnay barrels with Brett and then bottle conditioned with a third yeast. Dry hopped with Citra in the barrel. Pours hazy golden, not getting a lot of the dry hopped Citra on the nose, mainly just the Belgian yeast characteristics with the Brett funk right in there. Flavour wise I’m getting a bit of balsamic, some citrus (mainly coming through as lemon to my palate) and a nice keen bitterness. There’s a rounded acidity to this beer and the Barrel is quite present. The flavours linger pleasantly. Not being extremely familiar with this sort of thing it’s hard to portray the flavours in words as I’m not sure the common descriptors. I’m usually fairly unfriendly to Belgian/Pale Ale hybrid variant beers, and quite inconsistent with Brett, however am pleasantly surprised by this beer. 3.7 Bottle at home. Batch #5, Nov. 2016. Tasted 19.03.2018. Pours a slightly hazy orange colour with an off-white head. Aroma of gooseberries, lemon, vinegar, grapefruit, wheat, forest floor and grass. Flavour of grass, grapefruit, rowanberries, pale malt, apricots, hay and hops. Soft mouth feel, full-bodied and medium bitterness. Like a sour tripel with some added bitterness. Complex or messy? Interesting adn fresh anyway.

Aroma of flowers, soap, grapefruit peel, hashish, unripe mango, apricot, apple peel, sherry, brett, lactic acid. Taste is medium fruity sour, quite lactic, notes of unripe fruits (apple, apricot) with flowery & wheaty accents; light to medium hoppy bitter then, grapefruit peel & mango, a bit peppery, whilst sourdough & yeast keep the sourness in shape. Dry, peppery hoppy finish, more bitter grapefruit peel, tart lactic acid & flowery touch, softly warming gin-like alcohol. Medium body, slick texture, soft carbonation. Interesting & well-made experiment.
3.8 23/02/2019 - bottle shared on BBGG @Kraddel's place. Clear light yellow, no head. Nose is malts, fruits, sour, some wood. Taste is sour, fruity, dry, wine, some yeast, fresh!
3.9 A hazed golden ipa with a thin white head. In aroma, sweet fruity biscuit malt with loads of citrusy floral hops, grapefruit pulp, light tropical fruits, light Brett, very nice and rich. In mouth, a nice sweet fruity malt with light resinous floral hops, loads of Brett, ground cherries, very nice and smooth. Bottle at La Cuvée 2019.
3.8 Sample from bottle @ tasting formerly know as RBBWG 2019. F: medium, white, average retention C: pale gold, hazy. A: malty, bit sour fruity, herbal hops, brett, woody. T: malty backbone, herbal, peach, floral, bit vinous, sour fruity, grapes, medium to full body, medium carbonation, like Brutt DIPA for me.
3.7 Keg at the bottle shop druid Street. A mostly clear golden orange coloured pour with a fine white head. Aroma is semi sweet. Light caramel, grapefruit skin, grassy citrus, pineapple, perfume notes. Light bubblegum. Flavour is composed of tangy bitter lemon, grapefruit, low bubblegum, clove, spicy citrus. Tangy citrus, canned pineapple. Interesting. Good stuff.,
3.7 No to już dzikość po bandzie a nawet nieco poza nią wypadająca, aż w język szczypie. Z całą sympatią dla bezkompromisowych piw tego browaru stwierdzam że moje podniebienie jest nazbyt konserwatywne. Ciekawe, ale wściekle stajenne. W sensie: pot wściekłego konia.

3.9 Bottle from a friend. Hazy yellow color, white head. Bitter taste with citrus, hops, brett, earthy notes, toast and ripe fruits. Bitter finish with citrus, brett, hops, ripe fruits, grass and toast. Excellent brew.
3.6 Pours a hazy gold from a bottle. Nicely balanced yeast and fruity hop aroma, similar flavor. Pretty good beer.
4.0 8-4-8-4-16 Bottle, #5. Pours hazy yellow, with a creamy head. Aroma is hoppy notes of citrus and tropical notes, bretty notes of grapes, plums and musty fruit peel, as well as wooden barrels. Medium to full body, with average carbonation. Flavour is tart, wooden yeast, with fruity bretty notes of grapes, hay and wooden barrels, as well as hoppy notes with apricots, orange peel and musty fruits.
4.0 KYGG 250818. Unclear golden color with a white head. Aroma i vinous, citrus, funk. Flavor is vinous, citrus, floral, white wine, yeast. Very nice beer.
4.0 29-09-18 // taster from the bottle at Mon Petit Cafe Stuttgart at the Pre-Zwanze-Tasting. Fresh sparkling fruity. Brett. Peach. Grassy floral bitterness. I can see the Belgian ipA but brett is strong.
3.6 Bottle. This is a brett IPA more than Belgian, very strong funky character, very dry and herbal.

4.1 Pours hazy golden with low white head. Aroma of bretta, stone fruit, kiwi, gooseberries. Taste is mellow bitter, tarty, light funky vinous finish. Light and crisp body with soft carbonation.
3.1 Aus der Flasche im 2018-08 getrunken. Bei dem ist der ürsprüngliche Charakter eines IPA doch sehr deutlich. Allerdings gibt die Brett dem Ale ein deutlich sauren Charakter mit einer Citrusaroma. Hier gefällt mir die deutliche Hopfenbitterkeit nicht ganz so, dass ich ins Jubeln kommen könnte.
3.9 Bottle, 75cl corked. An unclear orange colored beer with a finger-thick off-white head. Quite funky aroma, barnyard, sweaty horse blanket, grapefruit and a woody, vinous touch. Some notes of pale malts and grass. It's quite sour on the palate, bitter too, with lots of funky flavors and a good piney, grapefruity hoppyness. Not much malts, but a good vinous twist and some woody tannin-ish notes. Lasting fruity finish. A delicious beer blending bitterness and sourness in a way few breweries match. 180825
4.3 Bottle 750ml @ gunnfryd Pours hazy golden with a white head. Aroma has notes of malt, brett, funk, barnyard, citrus, floral, white wine and yeast. Taste is light to medium sweet, medium bitter and light sour with a long slightly dry, funky, brett, citrus, white wine and light yeasty finish. Body is medium to full, texture is oily, carbonation is soft.

4.1 Hazy yellow color with off-white head. Aroma has brett funk, floral hops, pollen and citrus fruits. Taste starts sweet in the background with citrus fruits and floral honey on top. Finish has a light hop bitterness. Medium body and carbonation. A really nice combo of yeast and hops with some quite complex flavors.
4.7 Aromat: dosyć intensywny i niesamowicie złożony i bogaty. Białe, półwytrawne wino, masa białych, cierpkich owoców, biała porzeczka, agrest, kwaśne białe winogrona, łagodna stajnia, lekkie taniny. Bardzo orzeźwiający, bogaty i złożony aromat. Wygląd: jasnozłote, czyściutkie i przejrzyste, średniej wysokości, biała, drobnopęcherzykowa piana, po chwili zanikająca. Smak: doskonale splatają się i balansują trzy smaki: cierpki, słodki i gorzki. Piwo można uznać za półwytrawne. Wpierw smak cierpki: białe, półwytrawne wino od beczki, drzewne nuty, lekkie taniny, mnóstwo białych, cierpkich owoców, biała porzeczka, agrest, kwaśne białe winogrona, tarnina.Także cierpkie cytrusy, limonka, cytryna. Słodycz lekka i bardzo świeża, owocowa, taka od słodkich i soczystych cytrusów, pomarańczy, mandarynek, słodkich, czerwonych grejpfrutów, plus półsłodkie, białe wino. Świetne i bardzo subtelne stajenne, dzikie nuty. Goryczka przyjemna, spora, nie jakoś agresywna, ale długo utrzymująca się, o charakterze grejpfrutowym, żywic jest tu zdecydowanie mniej. Pijalne nieziemsko, bardzo lekkie, orzeźwiające, przepyszne. Odczucie: tu musi być maksymalna nota za niewiarygodne ukrycie 9% alkoholu. Nie wierzyłem ale mnie sieknęło więc to musi być prawda. Pod przysięgą bym zeznawał ze jest tu maksymalnie 4.5%. Spore ale delikatne ciało, średnie wysycenie, finisz kwaśno gorzkawy, nigdy jeszcze nie spotkałem się z tak zdradziecko schowanym alkoholem, to piwo jest tak niesamowicie lekkie i rześkie. Szkoda że nie można dać noty wyższej niż pięć w tej kategorii. Całość: nie piłem jeszcze podobnego piwa, niewiarygodnie lekkie, orzeźwiające i pijalne, świetna beczka, cudowny balans i kompozycja, bogactwo doznań, bardzo złożone, doskonałe na taki gorący dzień jak dziś. W życiu bym nie uwierzył ze to piwo ma aż tyle alkoholu, jest tak cudownie lekkie i delikatne, orzeźwiające. Butelka 750 ml a kończy się tak szybko:( To piwo mi tak podeszło że aż się wzruszyłem, jak dla mnie majstersztyk, piwowarskie arcydzieło. Genialna, wielostylowa hybryda, czapki z głów! 4.1 Interesting combination... Belgian IPA? Actually, it works well. Light, bitter, and refreshing. Like a Belgian, the mouth feel lingers a bit too long. Overall, a really pleasant beer.
4.8 Excellent beer with a very unique style. Strong citrus hops aroma, hop heavy start with the finish of a Belgian Strong. Highly recommended from someone who typically does not go for IPA style beer. Complex, aromatic and most importantly, tasty.
