Bell's The Wild One

The Wild One begins, not as a single beer, but distinct batches fermented in wooden foeders each with its own array of flavors. Our brewers sample and blend to taste, resulting in a refreshing brown ale with a tartness buoyed by fragrant aromas of ripe red raspberry, cherry, apple and a bit of funk from Brettanomyces yeast.

Minimal hop character and mild toasty, caramel malt flavors support the ripe raspberry, tart, fruity, vinous character of the wild fermentation.

3.7 Bottle shared at Pre-Borefts Ratebeer Tasting 2016. Clear amber pour with no head. Notes of cherries, oak, vanilla, wild funk. Medium body, light carbonation and a tart finish.
4.5 Thank you Koelschtrinker. 750 ml. bottle sampled @ Pre-Borefts Ratebeer Tasting 2016. Dark amber, tanned head. Nose is sour pleasant puckering vinegar oak, sour acidic dark fruits with touch nail polish. Taste is sour but a bit more mellow than the smell, lightly fizzy, low oxidation (quite a bit of age on this one probably), huge oak, USA sour acidic affair at its prime, dark fruits, low balsamic vinegar in a good way. Potent big, lovely USA sour. Quite a beer.
3.2 Bottle. Dark amber-ruby color with tan ring. Aroma is candy, some dark malts. Taste is candy, dark malts, cherry. Fizzy carbonation. Not excellent for my palate, a bit too dark for me, but certainly well made.
3.6 Sampled @ Pre-Borefts-Tasting 2016. Trübes orange braunes Bier mit einer geringen beigen Schaumkrone. Geruch nach roten säuerlichen Früchten, Kirschen. Geschmack nach roten Beeren dezent säuerlich, Holz.
3.6 Bottle at Pre-Borefts tasting. Almost clear deep red with off white head. Some hay, overripe red fruits, light cheese, soft glue, white wine, oak. Under medium sweet and sour, light bitterness. Medium bodied.

3.7 Bottle at the pre-Borefts tasting, Den Haag, 2016. Poured a clear dark amber with a thin broken white head. The flavour is light sour with a rich smooth citrus sour doughy biscuit yeast palate. Medium to light bodied with soft carbonation.

4.0 Nice reddish brown pour, small tan head. Smell of funk and a bit of balsamic. Taste is very wild with no rough edges, fairly smooth and lighter bodied. Lots of horseradish taste/smell/aftertaste. Super nice.

3.6 Draught@CBC2015. Amber colour, small off-white head. Aroma is fruity, floral, caramelly, toffeish and some mild sour wooden notes. Flavour is sour wood, some fruity, floral and grassy notes to it.
4.0 On tap. Fantastic. Wild taste with a bit of booziness. Reddish slightly cloudy appearance.
3.8 Bottle #526 from batch 1 opened up at the 2015 Ottawa Year-end celebration. Overall a very nice, dry flanders: dark mahogany with a thin off white film for head, fairly tart with some cherries, oak, lemon, slightly chewy toffee malt, moderate carbonation and body, nice long dry finish that highlights the cherries, oak and tartness.
4.0 Bottle: Poured a reddish color ale with a medium size foamy head with OK retention. Aroma of brown sugar, oak and tart notes is pretty interesting. Taste is a mix of brown sugar, some tart notes with plenty of oak and cherry notes with limited acidity. Body is about average with good carbonation. Solid Flanders Red from a brewery that is not necessarily known for these style of beers.
3.8 Bottle at 2015 xmas gathering. Pours brown with limited head and some lacing. Nose is vinegar. Flavours of vinegar, lemon, dark fruit. Taste is medium tart, light sweet. Light body with light carbonation and a very dry finish.
3.8 A reddish copper ale with a very thin light mocha head. In aroma, sweet fruity caramel malt with light grape skin, lactic acid, ground cherries, very nice. In mouth, a tart sweet fruity malt with light acidity, lactic acid, Epsom salts, caramel malt, interesting and complex. Bottle at Ottawa Xmas gathering 2015.
4.0 Tap. Deep darker amber brown. Lots of sourness up front, balsamic, tart cherry, leather and oakiness int he aroma. Puckering at first with tart cherry, slight vinegar, and rounds out smoothly into a woody, vinous and cherry finish. Lighter to medium body.
3.8 May 2, 2015. On tap at CBC2015, red session. Clear amber with an off-white head. Aroma is fruity with red and dark berries, red wine vinegar, citrus notes and light funkiness. Taste is light sweet and tart. Finish is sour berries, some citrus, some aged vinegar. Light bodied, average carbonation.

3.5 Pours a light purplish color with a thin tan ring. Strong pleasant aroma of sour tart cherries. Good tart taste that isn’t too sour. Great oaky flavor follows the fruitiness. Very enjoyable. I need to find some more of this.
4.0 Draft pour. The beer is a clear amber with a beige head of foam. The aroma has big funk and fruity sweetness. The beer gets a sour and has a decent malty sweetness. The sourness doenst linger like the sweetness does. Medium body and medium to high carbonation.
3.8 Draught at Fest of Ales. Red and sour without much fink. But cherry notes to it. Very good.
3.8 On tap served in snifter. Pours a light Merlot with tan head. Aromas Brett, sour cherries, hay, and oak. Flavor profile lines up with the aromas. Light on the palate, medium carbonation, dry finish.
3.5 On tap at Bells on 8/7/15. Clear chestnut red/brown in color with a thin beige head. Aroma of malt, funky sourness, tart berry and light acetone. Sweet malt and funk flavor with light caramel before a tart berry finish.
3.9 CBC 2015. Pours dark amber with a clear low white head. Aromas of red apple, red currant, citrus and funk. Taste is red currant, funk, red apple and citrus. Mouthfeel is tart and dry with medium carbonation.
3.9 Draft: Hazy red-brown with a beige head. Vinous, tart, berry aroma. Tangy toffee, yeast, dark fruit wine flavour. Peppery and spicy. Good stuff.
4.4 Draft at the brewery. Deep brown with a white head. Farmhouse/saddle funk and sweet raspberry. Outstanding.
3.1 Pretty damn sour. Heavy acetic component, I’m not crazy about this one but I know many who would be.
3.9 On tap at MBGSF 2015. Amber pour with an off-white head. Sour candy aroma, berry. Great sour, tart berry, a SweetTarts candy sensation. A great one.
