BFM Abbaye de Saint Bon-Chien (2007)

BFM Abbaye de Saint Bon-Chien (2007)

The color of this beer points out the old wines of Burgundy with their red tile with a light foam collar. With the nose, the ASBC surprises, because one finds there a range of very astonishing flavours, spices (grooves, wooded), of the brandy odors, ripe fruit and point liquorice and vegetable dry. In mouth, it is necessary to take more time than a beer of conventional tasting: one starts with velvety, raised of light carbonic giving a little nerve, to arrive on a light acidity of the vinous notes and a very low bitterness. The ASBC strikes by its length in mouth and its Port side. It is appropriate well for example for a steaklet of duck or foie gras stove thawed with the vinegar of Modena or for a bitter chocolate.

3.7 Bottle shared at the Foothills bottle share... thanks for setting it up, Mike! This is acetone and fruit. Sharp acetone and paint thinner feel with some nice cherry and strawberry lactic notes. A mix of offensive and awesome, with thankfully more of the latter.
4.0 Pours murky reddish brown color with tan head. Sour cherry and oak aromas. Sour and funky flavors of cherries, dark fruits, toffee and wood. Medium body with moderate carbonation.
4.0 Bottle. Pours very hazy maroon with dark creme colored head. Rapidly diminishing with no lacing. Aroma is tart, big buttery oaky, fruity, cherry, plum, vinous and vinegar. Flavor is moderately tart, big dried cherry, grape, fruit leather, with a buttery oak finish, vinous, with a lingering tart, oaky aftertaste. Soft carbonation, medium body, and mildly dry, astringent finish. Mildly warm but alcohol is well hidden. Very good.
4.3 Nice. Complex. I'm admittedly not a sour guy. But there's something going on here that is exquisite.
4.0 Bottle at Hay Merchant. Pours a cloudy brown ruby with small off white head that diminishes to nothing. The aroma is oak, cherry skin, and brandy. Thin mouthfeel with cherry oak and light tartness in the finish. Very impressive.
4.2 Bottle shared by jayhawk73. Thanks man! The beer is ruby to amber in color. The head quickly fades to nil. Sourness, red wine, grape skins, must, earth, tart berries. Complex and delicious. Intense sourness and acetic finish. Bold and assertive. A terrific beer that ages well.
4.7 Pours a murky burgundy color with a thin white head that settles to nothing quickly. Aroma is oaky with strong funk and wine tones. Lightly tart, but extremely complex; slight funky red wine and pineapple notes ...oak-wood as well. As amazing as any other version I’ve tried. Notes: 2007 opened 4 Dec 2013
3.8 Thanks to John for sharing!! Pours Smell is rich fruit, some tartness, leather. Taste is some malt, some oxidation, chocolate cover cherries, sharp tangy fruitiness and a touch of sourness. Body is light plus and about average carbonation. Complex and very interesting despite the 6 years on this bottle.
4.3 I picked up a bottle of this at Chan’s Wine World while I was out in Destin, FL. This beer pours out a cloudy reddish brown with a thin brown head. Aroma is funky and obviously sour. This beer is tart and sour. It has notes of ripe fruit and fine balsamic vinaigrette. I loved this one and I’m glad I had the chance to try it.
3.9 (bottle - 750 ml - 2007 vintage) Muddy copper pour with a thin tan head. Tart and sweet aroma with some caramel hiding in the middle of it all. Some light spice as well. Mild spice at the start of the flavor but there’s still that funky sour taste, still holding up well after six years. Nice acidic finish and very smooth.
3.9 Bottle, shared at RBAG 2013. Muddy tawny brown, diminishing creamy off-white head. Intriguing aroma of vinous malts, distinct nutty undertones, some burnt sugars, subtle sourness. Sponge toffee sweetness up front with some background lactic sourness, light cherry, light spice. Smooth mouthfeel, not a hint of the 11% ABV. Mellow, tasty, nice.
3.4 RBAG 2013 from a 750. Murky looking pour, orangey brown, almost no head. Sour and cherry-ish nose with lemons. Taste has caramel, nut, lemon and red wine with some sharpness. A bit of a sour finish that fades out pretty fast. Light carbonation and mouthfeel. Good, but not vibrant, felt a bit faded.
3.8 Bottle - Red wine, raisin, nuts and oak. Muddy red brown with a thin brown head and floaters. Light malty sourness, dark fruit and the barrel. Very smooth and mellow with dark fruit finish. A Flanders type with a roundness that makes this very easy to drink.
3.9 Pours a hazy red brown from the bottle with little to no head or lacing. Aroma is sour funky dark fruits with a hint of tannic bitterness. Taste follows, far more sour, and a hint of sweetness. No real hint of the booze, awesome stuff!
3.4 Bottle pours a murky light brown with a thin tan head. Aroma of soured caramel, cherry, wet wood, with some funky wine elements. Taste of almond infused balsamic, chocolate notes, caramel, vinous, a hit of bourbon, acidic. There is a lot going on its not bad but I’m not crazy about it.
3.7 Tart, spicy, I really love the quad base. Deliciously tart and soured; plenty of Belgian spices and funky gueuze-y influence. Awesome.
4.2 ruddy brown-red color. opaque, decent carbonation. Truly wonderful and diverse fruit flavors coming from lactic acid, acetylaldehyde, subdued to absent acetic acid...beautiful complex oak, a true work of artistic craftsmanship.
3.9 Pours a hazy ruby brownish rust color with a trace of pinkish grey foam. The nose is basement wet wood, rotten cherry, acetic funk and some caramel toast in the deep undertones. The flavor follows the nose with a bit of fizzy funk and lots of unripe berry, apple and cherry fruit... nice lingering rustic leather note.

3.9 750mL bottle, sent from Glouglouburp (thanks a lot, Dany), pours a murky dark mahogany with a small beige head. Aroma of vinous notes, oak, vinegar, and soured dark fruits – quite complex. Flavour brings out soured fruits, light vinegar, and complex oak barrels. Very complex and oaky, quite woody and mildly vinegary. Excellent stuff. My favourite of the 05-07 vertical.
4.2 Our anniversary brew. Bottle from Knightly Spirits on orange blossom. Ruby pour with thin light tan head that leaves a slight ring. Tart dry aroma. Tastes are red fruit, barnyard, oak, dark fruit, wine, cherries, and light vinegar. Thinnish, sour and lively tingle on the palate. Nice treat.

3.5 Bottle @ THE Sour and Saison Tasting. Cheers to Scopey for busting this out. The pour’s deep reddish brown with a small head. the nose is oud bruin-like: plenty of ketchup, umami, sugar and balsamic vinegar. The taste is mild raspberry jam donut, some syrupy balsamic reduction. Medium acetic burnon the finish. Light vegetable and spice. Medium body, a bit thick on the tongue. Overall,a fairly decent wild!

Taste are mild grape of chardonnay, cherry, hints of maple, sourness of the yeasts. Palate was silky prickly CO2 with meduim body, then long dryish tarty warming finish. Complex tarty sour...

3.4 Tap at lions pride. Pours a muddy dirty pondwater brown.notes of apple cider vinegar, white grapes, plum skin. Apple cider taste. Dry. Moderate acidity. Okay.
4.5 Sampled at the mekong beers gone wild. Side by side with the 11 and 09. Hands down my favorite. All the normal "sour" qualities and "bon chief-ness" but just much more all around awesome. The most sour and acidic of the bunch. My favorite of the three and what I wish every sour tasted like.
