L’ABBAYE DE SAINT BON-CHIEN

L’abbaye de St Bon-Chien est une bière acide de fermentation mixte mûrie durant un an dans des barriques ayant contenu du vin. Nous utilisons plusieurs fois ces barriques provenant des meilleurs vignerons suisses. Après cette longue période d’élevage, je déguste toutes les barriques tentant de les assembler au mieux pour parvenir à la fois à un équilibre et à la fois à une ligne de bières d’exception.

Cette cuvée aux reflets rouges-ambrés est mûrie pendant de longs mois dans des fûts de chêne ayant déjà contenu du vin ou des eaux-de-vie. Ces fûts donneront des arômes très complexes à cette bière.

En bouche, elle rappelle la trame d’un vin rouge fruité avec une acidité très marquée. Mais attention, je vous vois venir, pas question de me descendre une bouteilles de St Bon-Ch’ sortant du frigo dans des verres à moutarde Pingu, non ! Servie à 16.5 °C environ, dans un beau verre à pied accompagnant une souris d’agneau confite ou un bon Epoisse, vous apprécierez pleinement ce nectar.

La légende veut que nous avions une chatte particulièrement sympathique qui répondait d’un petit miaou au nom de Bon-Chien. Lorsqu’elle nous quitta à jamais, pétris de tristesse nous organisâmes une cérémonie de sanctification décidant de dédier une cuvée incroyable à l’animal fraîchement disparue. L’Abbaye de Saint Bon-Chien était née. Grâce à notre chatte disparue, notre bière fait maintenant le tour du monde. Elle connaît un franc succès aux Etats-Unis, au Japon, en France et Scandinavie par exemple.

L’ABBAYE DE SAINT BON-CHIEN GRAND CRU est parfois disponible quand nous tombons sur de merveilleuses barriques comme dans des barriques de Rhum ou de Vin Jaune... nous vous tiendrons au jus quand il y en a la prochaine fois.

4.1 Cask at moeder lambic center. Pours dark amber-brown with slightly beige head. The head stays. Aroma is oaky, dry, cellar, fruity, vinegar. Flavor is sweet and bitter, sour, acidic, vinegar, oak. Finish is acidic ,sweet and bitter. No sign of alcohol. Overall: great beer.
3.9 Brussels Trip. Backlog. Spicy, caramel, vinegar, earthy, acetone, herbs, bubblegum, clove. Medium to heavy sour, acidic, moderate sweet, light bitter.
4.9 25/07/2017 - draught glass @Moeder Lambic Fontainas. Murky pinkish brown with a nice pearly light tanned head. Nose has lots of glue with some sourness, red fruits and wood in the back. Taste is insane : sour berries, cherries, strawberry jam, sweet red wine, caramel, only light glue, light creamy mouthfeel, Bloody brilliant.
4.4 Robe brune, fine mousse, délicate. Nez puissant sur des arômes balsamiques, des notes boisées, de la cerise acidulée, un coté "mon chéri", belle complexité. Bouche à l’attaque acidulée et boisée, fine trame acidulée, bulle discrète mais présente, grande longueur sur la cerise et le coté balsamique, finale tendue. Une bière assez unique qui mériterait d’être dégustée sur plusieurs millésimes.
4.0 From 32 Great Power. In Teku glass. Playing Grim Legends 3. Wine-ish, sherry-like, with a soft, smooth sourness and a pretty well concealed ABV. Nose greater than taste, as i find much BA beers lately. Low on foam and a dirty-reddish colour, not a look I like
4.3 (Draught at Chez Moeder Lambic Fontainas, Brussels, 17 May 2017) Reddish brown colour with frothy, beige head. Fruity, sourish nose with notes of balsamic vinegar, oak wood, black-currant and caramel. Fruity, tart taste with balsamic vinegar, black-currant, caramel, oak wood, sour cherries and a really harsh, tart finish. Full body, with a certain sweetness. Hardly subtle, but really tasty, with a good sourness and alcohol fairly well hidden. Very nice. (7/4/8/5/15=3.9) Rerate: (Bottle, 6 June 2021) Reddish brown colour with brief, frothy, tan head. Fruity, sourish nose with notes of sour cherries, balsamic vinegar, raspberries, caramel, black-currant and oak wood. Malty, tart taste with caramel, balsamic vinegar, sour cherries, raspberries, black-currant, red grapes, red wine, oak wood and a slightly vinous and tart finish. Full body, with a certain sweetness. Ridiculously good, this beer always amazes me. Great beer.
3.4 (750ml bottle, 2014 vintage) Pours a hazy amber body with a medium cream head. Aroma of wood, caramel, vinous, oak, and horse blanket. Flavor caramel, vinous, oak, cherry, brett, balsamic, vanilla.
3.9 750ml bottle @ Alex’s(thanks Sergiy for arranging this trade for me). Pours a cloudy brown orange colour with a thin off-white head. Nose is acetic and musty. Flavour is smooth for the abv, the balsamic character is fairly prominent, sweetness isn’t overbearing, the barrel character. Very tasty brew.
4.2 Courtesy of Brian, 2 years old Filthy brown color with small head. Sour aroma, fruity, vinous, with a strong acetic component. Full bodied, great to find some residual sweetness here, solid malt depth, and strong sourness with some acetic acid. Fruity, powerful, still dynamic. Excellent.
3.8 750ml bottle traded from Louis-Philippe B. to Brian at Alex’s. Aroma is acidic with lots of balsamic, barrel notes, fruitiness. Taste is smooth on the beginning and moderately spur after, bready, with balsamic and barrel notes. Good stuff, but it’s definitely must be shared.
3.5 Bottle - Dark sour cherry and woody barrel notes. Cloudy cooper with a small white head. Lacto notes, soured cherry and a long acidic finish. Smells great, but taste is not en point..
4.0 Cask at Moeder Lambic Fontainas, Bruxelles. Dark orange, lasting medium off-white head. Dried fruit, malty, caramel, wood, sweet, sour, vinegarish, complex. Full bodied. Soft carbonation.
3.6 (750ml bottle) cloudy reddish brown, no head. Nose of acetone and vinegar, caramel, lacto, oak, complex. Taste of oak, acetone and sawdust, lacto, lactose, interesting mix.

4.1 On tap at Mother Kelly’s, Bethnal Green. Reddish/purplish pink. Clear and flat. Aroma... Mon Dieu! Oak, vinegar, basement, more oak, red wine, wet dog, ginger, chilli, oak. Sour taste with a sweet stone fruit edge. Medium to long finish. Thin and flat body but it works for this beer. As good a sour as I’m likely to have anytime soon.

Flavor is acetic cherries and figs with bready and caramel malt, light nuttiness with light earthy hops and bitterness, yeast spices and a dry finish. Full body and moderate carbonation.
4.6 Tap in BierCab. They somehow managed to arrange this beer in the beggining of 2017 and without doubts - this is ridiculous! I feel in love in this beer, in the way it smells, taste and looks. It’s sure and sweet, tart and pleasant, super smooth and harsh in the same time. And it behaves in the glass like a majestic ambrosia.
4.2 Amazing Sour from this swiss brewery.absolutely delicious for Sour beer lovers. Small bubbles like champagne, sour and tart. Apples, cider, pears. Great job.
4.5 Had on tap @ Sergio’s Nice red color. Sour without being overly sweet like some sours. Surprisingly not boozy on the back end despite it’s high ABV
4.5 375ml bottle at home. Hazy somewhat dark orange / amber with a medium off-white head. Medium to full body with moderate carbonation. Well balanced sour, sweet and bitter tones. Sour berries, oak, vanilla, vinegar and tart. Very good!
4.3 On tap at Morder Lambic Fontanas. Hazy brown pour with a tan head. Aroma of funky, mouldy cheese, dank cellar and cognac barrel. Taste notes include wine barrel, whiskey, sherry, cognac, macerated fruit, light balsamic vinegar, caramel. Very complex bouquet, you keep identifying notes as you sip. Medium body and carbonation and a bitter-sweet and lightly sour finish.

2.7 Non existent head. Very cloudy brown-orange color. Big acidic aroma and taste that overpowers all other tastes and aromas. A very one dimensional beer.
4.1 Vycap Moeder Lambic. Tmavo jantarova farba. Vona kyselkava, bret, prezrete slivky. Chut kysla, bretova, citrus. Skvele.
3.7 Bottle @cgarvieuk - The Xmas Tasting 2016. Pours dark copper/amber, its murky not cloudy, very slight white head which lasted about 5 seconds. Nose is apple, malt vinegar, balsamic vinegar its also got a fruity back edge to the nose. Taste is tart, raspberry, funk, its really interesting, i would not want to drink a pint of it, but.........in smallish amounts nice.
3.9 Keg. Pours orange amber with no head. Scent is light balsamic and light sour notes. Taste is nice sour fizz with balsamic notes and soured fruits as well. Finish is on the dry side. Great.
3.5 [9/26/16] Draught at Moeder Lambic Original in Brussels. Deep amber-brown. Aroma of caramel, balsamic vinegar, cherries, oak, wine, cellar character. Sour, acidic, and sweetish flavor with caramel, oak, wine, balsamic vinegar, fruits. Rounded mouthfeel.
4.4 750mL bottle from Beer Run. Aromas of raspberry, light booze, lemon, oak, red wine. Hazy red with a fairly lasting beige head. Tart, gets in the nose, fruity, acidic. Medium bodied.
