Birrificio del Ducato Beersel Morning (3 Fonteinen)

A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.

This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

3.9 Hazy golden, big head. Aroma: funky nose with peppery spicy notes, some dusty grass. Dry with moderate tartness. Light almond notes in the flavour. Good.
3.8 On tap Les Berthom Strasbourg. Jaune orangée, légers dépôts, forte mousse. Nez sur les bretts, vert, un peu fut, cuir, sucré, typique. Gout brett, vert, acidulé puis fruité jaune et citronné voir raisin et enfin acidité, fut et note terreuse. Nickel
4.5 Bouteille 750ml du broue ha ha. Dégustée avec Wedge. Gros jus de fruits accompagné d'un arôme de lambic délicieux. Très intéressant comme breuvage.
4.1 Hazy golden peach color, frothy white head. Fruity esters nose, dried apricot, spicy notes, ginger, cloves, phenols, funky. Spicy taste, ginger, cloves, Belgian yeast, fruity esters, peach, bitter lemon, metallic, peppery notes, dry finish. Medium body, soft carbonation. 8, 4, 8, 4, 17
4.0 Gold pour, white head. Aroma of green pepper, spices and wood, tart apples, grapes and berries. Taste follows, sweet, tart, and full.
4.0 Bouteille. Robe jaunâtre un peu trouble et surmontée d'un col de mousse blanc et rocailleux. Arômes de citron feuilles de thé, fines herbes (sans être trop intenses), pêche, pomme verte, bois mouillé, raisins, zeste d'orange. En bouche, heureux mélange de pomme, pêche et effluves boisées. Également des saveurs d'orange, fines herbes, chair de citron, cuir. L'arrière-goût ne laisse aucun doute sur l'origine du liquide. C'est âcre et boisé, du vieux miel brun ainsi que de la pomme brunie. Texture un peu vineuse et légère, corps mince. Très bien
3.9 750ml bottle @ Kelly's Cabin. Pours a hazy orange colour with a small white head and there was quite the rusty looking murky yeast sediment under the bottle cap and along the bottle neck. Nose is sour, lightly fruity, citrus with a hint of funk and some leather notes. Flavour is lightly tart with a light abrasive sourness, a light wet hay influence, a mild funk character that's mixed with a semi spiced floral aspect going on mid palate, and it finishes off with a lemony character. Medium bodied, light carbonation, and has a nice complexity. Not sure why I held off so long to drink this bottle, but I'm certainly enjoying this while watching the light diminish on a hot summer's day in the woods.
3.8 Bottle (2014? - bb 2024.) Gold. A few white bubbles are at the rim. Aroma is floral (although there's no real sign of the camomile in the normal beer) with some honey and oldish lemon notes. 8+ Slightly slippery but pretty light bodied. Carbonation is low. Crackers and some apricots and their stones, old lemons, gentle funk and gentler sourness, the memory of flowers. 8- The lambic has presence in the aroma but doesn't announce itself on the palate (maybe the lambic is too well mannered). Doesn't quite finish dry. Good, but maybe the real blends were the friends we made along the way.
3.7 Tap @ TCBW 2018. Pours yellow with minimum head. Aroma is sheep shit, citrus, some vinegar, bitter notes, light fruits. Taste is sour, some outhouse notes, citrus, vinegar, some citric fruits. Very nice beer!
2.4 Every beer I've had from these guys has been a disappointment. This has a sour flavor but it just isn't that tasty.
3.9 Piany brak, barwa pomarańczowa, mętna. W aromacie cytryna, zielone winogrona, woda z kiszonej kapusty, skóra... W smaku cytrynowe, brzoskwiniowe, umiarkowanie kwaśne, lekko cierpkie, lekko mineralne, lekko dzikie... Jakieś nutki przyprawowe, białopieprzowe w aftertejsie, na szczęście nie drażni imbirem, kolendrą czy rumiankiem. Wysycenie średnie, grube, mega rześkie i pijalne w odbiorze. Ogólnie całkiem zgrabne połączenie Lambika z Saisonem, przy czym ten pierwszy nadał charakter, a drugi dopełnił całości, zbalansował i zwiększył pijalność...
3.8 22/X/17 - 75cl bottle @ Alengrin's Tasting (Goedele's place) - BB: 31/VIII/24 (2017-1806) Thanks to Alengrin for sharing the bottle! Very cloudy dark blond to murky orange beige beer, small creamy yellowish head, unstable, non adhesive. Aroma: lots of lambic, mandarins, wood notes, some tannins maybe? MF: soft carbon, medium to light body. Taste: pretty sourish, bit lemony, fruity, some banana, pretty dry, tannins, mandarins. Aftertaste: soft acidity, tannins, orange peel, fruity, slightly bitter.
4.2 Rating #2749 - 2016.08.05 - Bottle from CBI - Hazy golden pour with a sticky white foam that bubbles away fairly quick. Wondrous aromas of orange peel, peach, lime, pepper. Palate is sticky tropical fruit punch sweetness, and the sourness comes in with some glorious dry tang. Nice blend of saison and 18 month Lambic.
4.1 Hazy dark golden, with a thin head that does not last long but still leaves some lacing. Splendid aroma feels at the same time delicate, clean and quite intense. Clean but not aggressive lactic sourness, rustic notes of salami peel and leather, fruit notes (citrus, peach, white grapes) and a slight flowery touch. Taste has a light white bread base, medium to high sweetness, a medium intense lactic sourness that never feels aggressive but "cuts" the sweetness very well. As in the aroma: rustic notes (salami peel most prominent), peach, white grapes, slight citrus, flowers. Only small glitch is that it gets a bit too earthy/muddy in the last sips. Light to medium bodied with medium carbonation, with an excellent dry/clean finish (except as mentioned for the last sips). Overall complex and most of all so easily drinkable for a sour beer. Excellent.
4.6 On tap at WB17. Hazy golden with small white head. Aroma and taste are complex and sour, lambic notes with some acetic and more lactic, white grapes, earth, funky notes, citrus zest, slight herbs, flowers with a white wine-y finish. Excellent!

4.0 Aged blend of a Ducato saison with Drie Fonteinen lambic, from a typical Ducato, olive oil-like 'Italian' 75 cl bottle bought at Dranken De Moor. Irregular and loose, snow white, bubbly head immediately opening in the middle and eventually all but disappearing, over a cloudy orange-tinged peach blonde beer, murky with deposit and eventually - in combination with the eventual absence of a head - looking like a glass of home made pear juice or something alike. Interestingly 'wild' and indeed partially lambic-funky aroma of fermenting apples, overripe gooseberries, raw pineapple flesh, old musty cellars, red wine vinegar, starfruit, green banana, old dry sherry, wet leather, yoghurt, pear juice, kiwi, sourdough. Very estery onset, lots of purple gooseberries, apricot, starfruit and old apples, sour with a sweetish core, softly carbonated. Doughy and soggy bready malt basis, bit soapy wheatiness somewhere, with a lot of these 'fermenting fruit' lambic esters continuing till the end, dried by a lactic, yoghurty sourness. Wry plum peel and stale lemon juice notes in the end, grape peel and grape juice impressions, some vague soaking wet oak wood and - especially towards the end - a dry, powdery yeastiness bringing breadiness; retronasal dry sherry aromas as well. Lovely sour 'versnijbier' indeed, but I wonder if this would have gotten even better with more age - and thus Bretty lambic effects - on it.

4.1 On tap at Beavertown Extravaganza. Aroma is quite funky with barnyard and musty cellar notes. Taste is dry and funky with lambic style dusty farmhouse notes.
4.4 Dégustée au restaurant de La Fine mousse. Corps jaune doré limpide; mousse blanche quasiment inexistante. Arômes de pomme acide, groseille; boisé; grande finesse. Idem en bouche; assez complexe. Très appréciable.
3.7 Orange/gold pour, flat, zero head. Earthy aroma, sour, barnyard, white wine, gueuze. sour up front, tropical fruit, earthy, white wine, very light lactic notes, herbs. Lighter to medium body, still, creamy mouthfeel. Perfect replacement for white wine at the dinner table.

3.5 Pours clear orange with a nice, big white head. Aroma is sweet, citrus, light lactic, funky. High carbonation, nice dry and quite creamy mouthfeel. Flavour is light crisp and sour. Good balance with good tartness.
4.0 0.75 l bottle from Alko Arkadia, Helsinki (tasted May 2, 2017). Aroma has rhubarb, lemon and marmalade. Appearance is golden, cloudy and still with some bubbles. Taste has citrus fruits, especially lemon. There’s also lemongrass, cardamon, rhubarb, pepper, well some spices. The actual spices are not the same I thought I tasted. Well, this is nicely sour and spicy in a refreshing way.
4.1 Toer de Gueze 2017. Bottle at Oud Beersel brewery. Muddy orange with white head. The aroma has notes of almonds, ripe fruits and raisin, very floral. Sourish and bitterish flavor with notes of citrus, flowers, lemon, some acetone, wood, apricot, spices and herbs. Light to medium-bodied.
4.0 Bottle at Oude Beersel brewery during Toer de Gueze 2017. Cloudy orange. Aroma is very fruity with notes of apricots, peaches and wood. Sour, tropical fruits, white wine, oak. Medium-bodied, silky smooth. Great.
3.8 Pale golden orange pour with a thin white bubbly head and light sticky lacing .... aroma of spices coriander, pear, barnyard, cinnamon and floral ... taste is funky and sour, light and of cinnamon, apple, pear, dry oak, barnyard and earthy .... has a really nice fruity floral bouquet .... sour and a bit tart .... very drinkable ... finish is spicy and tart with lingering sour funk, dry oak and a fruity pear/apple combo ... really tasty and fruity brew .... loved this one
4.1 April 2017 - 75cl squat bottle as Birrificio del Ducato Beersel Morning, 6.2%, 5 years aged. Bottle says "So happy just to be alive, underneath the sky of blue", and it happens to be a beautiful sunny day here in Richmond. Pours with a glug, glug, glug due to the bottle shape. Clear, sparkling, golden orange with a small but lasting head. Aroma is cider, rubber, peach, wet wood, polished metal, lemon pie and all that musty lambic goodness. Body is smooth and rounded with a subdued tingly to soft carbonation. Taste is not that sour, has a toffee sweetness with gooseberry, lychee, gose and lemonade. Very soft oak and acidity. Smells like lambic and tastes like gose (but better). Really drinkable and I like the subdued carbonation. Very tasty stuff, though there are similar options that cost less. (4.1)
3.8 It has a good earthly sour aroma to it. The flavors are highlighted by earthly elements with plenty of tartness. There is also a strong vinous element as well.
