Birrificio del Ducato Chimera

This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier.

Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Today’s Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink.

3.3 Draught @ Brewmakers dinner - Gastropuben KICK Malt & Mat, Kristiansand Pours dark brown with a off-white head. Aroma has notes of malt, caramel, dried fruits and chalk. Taste is meidum sweet and light bitter with a long fruity, dried fruity and caramel finish. Body is medium, texture is thin to oily, carbonation is soft.
3.0 Color rame carico e densa schiuma. Al naso ricorda le ciliege sotto spirito, mentre al palato caramello e alcol.
3.3 On tap at Kick. A dark brown beer with a small beige head. Caramel, prunes, a touch of blackberries and a touch of chocolate on the nose. Some spiced, cellar hints too. Spiced hints. Some cigar. It’s full bodied, soft and lightly warming, with a nice carbonation level. Nutty, caramel flavor with roasted notes, blackberries and a hint of cellar. Low on bitterness. Lasting caramel and roasted malts finish. Not bad at all, but far from my favorite Ducato beer. 151022
3.4 Bottle. Pours a deep mahogany brown body with a medium creamy light beige head. Nose is blue plums, raisins, figs, dark malts and hints of caramel, candi sugar and rum. Taste is figs, dates, rum, dark malts, raisins and hints of caramel and candi sugar. Medium to full body, high to fizzy carbonation. Decent and pretty classical BSA, without much more on offer.

3.8 75cl bottle, teku glass. Pours an average white to beige and creamy head; slight ruby to really murky brown colour. Smells huge: ripe fruits, lots of pears, raisins, yeast, brown sugar. Tastes very fruity, pears, plums, caramel, sweet cocoa, spices; medium plus sweetness followed by a balancing bitterness that just cleans off the mouth, leaving a dried fruit and roasted malt finish. Medium bodied, sticky and silky. Strong character, balanced and very complex, enjoyed it
3.9 Really murky brown but a smooth, creamy head that really lasts. Raisins, plums, and caramel flavors make up a full body and a rich finish. This is a respectable brew!
3.6 280815. Tap at Gastropub Kaleva, Tampere. Pours dark brown/black with a small head. Aroma Belgian yeast, some spices. Slightly sweet strong body. Almost chocolatey like after taste. Not Bad. .
3.2 Tap @ Gastropub Kaleva. Pours murky brown color with a small head. Caramel malt aroma, some ripe fruit notes, some yeast. Flavor is fruity, some berries and earth, mild yeast. Decent. 3334
3.6 11.2 oz. bottle from Supermarket Liquors. Appearance: finger tan head, brown and copper, opaque, no lacing. Aroma: raisin, prune, light licorice, slight vanilla, chocolate. Palate: medium full body, oily texture, soft carbonation, dry finish. Taste: sweet molasses and chocolate with notes of prune and raisin coming through, finishing with vanilla and mild chocolate and light booze. Overall, pretty different, pretty complex, but not the best. Maybe a little too much going on and not enough balance for the sweetness. Still very nice.
3.6 Bottle @ barbaresco, Legnano. Ramata carica, velata, riflessi rubino. Schiuma beige abbastanza fine e mediamente persistente. Aroma fruttato, frutti rossi sotto spirito. Caramello, alcool, speziatura (zenzero su tutti) .Gusto amabile, tostato (cioccolato), caramello e di nuovo speziatura. Molto carbonata mediamente corposa rotonda calda ed equilibrata.
3.6 11.2 ounce bottle. Pours a hazy dark brown with one inch tan head. Taste is of roasted malt, barley, caramel, chocolate, wood, fruit, sugar, yeast and wheat. Similar aroma. Has a mostly full body with a fruity and woody finish. A pretty good brew.
3.4 Good one. Rosso rubino,lievemente velato, con una schiuma beige persistente anche se sgranata. Sentori di caramello,pere e mele al naso, e qualche spezia. In bocca tanto caramello,Miele d’acacia, sapore di mosto d’uva e di pere. Finale piccante con le spezie,corpo medio,tessitura medio esile,carbonatazione media. Buona birra ma,niente di indimenticabile.
3.2 Backlog rating. 33cl bottle from Grand Cru, Rimini. It pours a dark amber color with a small tan head. Aroma is yeasty and estery, malty and fruity. Taste is again fruity, medium sweet, estery, yeasty and spicy with cloves and black pepper. Medium bodied with good carbonation. Overall, decent Belgian style strong ale
3.1 Bottle from GBBF 2014 and drunk at home. Dark dark brown beer with thin beige head. Fruity aroma with lots of esters, almost paint like. Yes lots of malt, yes lots of fruit. Some hop on the finish. Some raisin and plum. Definitely malty. But a touch of paint to be honest.

3.6 Dal bel colore tonaca di frate, e dalla schiuma non molto ricca. Ha il naso di molte dark o dubbel ale belghe, con molto caramello, una tostatura discreta ma decisa e ricordi di frutta rossa sotto spirito (prugne, uva, ciliegie). Pungente ma anche elegante. In bocca è più rotonda che al naso, con un corpo non certamente esile ma neanche eccessivamente robusto: moderatamente carbonata, ha nel proprio DNA note morbide di malto, una leggera polvere di cacao, frutta secca (mandorle, nocciole) e una leggera speziatura finale che insieme al finale secco e asciutto completano quasi alla perfezione tutto il percorso. Elegante e raffinata, merita la più attenta considerazione.
3.4 Ins Glas ergießt sich ein leicht trübes rötlichbraunes Bier mit ordentlicher Schaumkrone. Geruch sehr malzig fruchtig, blumig, würzig. Geschmack stark malzig, fruchtig, Gewürze, blumig, reife Früchte.
3.1 birra da sufficienza..non mi ha colpito più di tanto..aroma e gusto sono deboli e non da grande birra (la ricordo anche poco..)
3.9 Poured deep reddish brown with a dense tan head. Aroma of spice, yeast, dark fruit, caramel malt. Medium body, quite sweet, nuts, raisins, berries. Dry, bitter finish.
3.6 color tonaca di frate con sfumature rubino e rame. Schiuma nocciola labilissima. Aromi nettiu di prugna, frutta fresca. si sente forte il tostato. Labile il cacao. Ben presenti note di ciliege (marasche?) Gusto pieno inizialmente amaro con finale chiaro di sherry e di nuovo ciliege. Difetti principlai sono l’eccessiva frizzantezza che sacrifica soprattutto il gusto che ho apprezzato di più a fine bevuto quando la CO2 se ne era un pò andata. Pregio principale è non cadere negli aromi e nei gusti medicinali. (che per esempio trovo nella rochefort 10)
3.6 W aromacie spora alkoholowość, nawet lekki rozpuszczalnik, nuty karmelowe, lekkie suszone śliwki, ogólnie niezbyt powalająco. W smaku już lepiej, dość wytrawne jak na styl, dobrze przykryty alkohol, kremowe w teksturze, pozostawiające lekką nutę, której najbliżej do migdałów, orzechowość, lekkie przyprawy, przyjemna goryczka ziołowa. Dobrze pijalne, co przy mocy jest zdradliwe. Całkiem udane piwo.
3.9 (bottle) pours black in colour with a frothy light beige head. aroma of caramel, pigsty, peaches, sugar icing, light grass, bubble gum and green peppers, with heavy notes of pears and walnuts. flavour is mostly brown sugar and roasted malts, with a hint of liquorice, more pears, fudge and light sugar icing. medium to heavy-bodied with lively carbonation.
3.3 In bottiglia 33cl. Colore marrone con ampi riflessi ramati. Aroma di frutta sotto spirito, prugna, frutta rossa e lievito. Al palatocorpo medio, carbonazione corretta, troviamo sentori di caramello, frutta rossa, con un finale secco e non stucchevolmente dolce.
3.4 Bottle shared. Pours deep brown with a light brown head. Aroma is yeast, plums, raisin, somewhat floral and alcoholic. Taste is moderate sweet and light bitter. Pretty decent but not my cup of tea.
3.6 Láhev 330 ml. Aroma je znát po uzeném sladu, bukovém dřevě a kávě. Pěna je středně vysoká, lehce hnědé barvy, jemná a nedržící. Barva samotného piva je temně měděná, proti světlu krásně tmavě rudá a čirá. V chuti je znát kvalitní hořká čokoláda, má lehčí kyselejší okraj a sladší střed, finišuje kávovým spádem a konče lehkou hořkostí na patře.
3.5 Bottle at a pavement bar in the heart of Trastavere, 21/06/13. Light black with a thin tan head. Nose is dark malt, dark fruits, roasted tones, touch of cocoa powder. Taste compries dates, figs,dark fruit, light spice, chocolate malteser light, touch of roast. Medium bodied with bite, fine carbonation, a little booze in the finish. Decent enough Belgian offering.
3.8 Brown, dark fruit aroma, molasses and banana flavour, bitter finish. Spilled the last half, tragically, as I really enjoyed it.
3.5 Tha last beer from my advent calander. Not bad but like all of the beers in the calander not great. A decent Belgian
