L’idea di questa birra è nata nel dicembre 2008, cinque anni prima della sua commercializzazione. Doveva essere una birra brassata con materie prime e tecniche simili a quelle utilizzate per la produzione del lambic, che non vede mai l’acciaio ma fermenta direttamente nel legno. Non si trattava di imitare ma di tracciare un nuovo cammino, percorrere una strada che non era ancora stata battuta. Inizialmente ho utilizzato i primi batch di Chrysopolis solamente come base per il blend de La Luna Rossa. La ricetta è molto semplice: 65% di malto Pilsner e 35% di frumento, il programma di ammostamento cerca di imitare il turbid mash mantenendo nel mosto una grande quantità di destrine e anche alcuni residui di amido. Durante la bollitura aggiungiamo del luppolo suranné in fiore che lasciamo invecchiare all’aria per alcuni anni. Dopo il raffreddamento trasferiamo il mosto direttamente in botte. I primi batch di Chrysopolis venivano inoculati con una miscela di Brettanomyces, Lattobacilli e Pediococchi questo con l’intento preciso di indirizzarne la fermentazione. Dopo almeno 12 mesi di fermentazione e affinamento in botte arriva il momento del blend, dove botti differenti di diversa età vengono assemblate in proporzioni distinte per creare la vera e propria Chrysopolis. Assemblando botti diverse posso creare sfumature, dare complessità, smussare gli angoli, dare pennellate di colore, realizzare le luci e le ombre.È una fase delicata e suggestiva, un momento particolare e per me di grande emozione, uno di quei momenti in cui mi rendo conto di fare il mestiere più bello del mondo. -Giovanni




Nel bicchiere, al naso e al palato

Chrysopolis si presenta di un color giallo dorato, piuttosto opalescente, ha una frizzantezza molto bassa, poco percettibile. All’olfatto è molto complessa ed intrigante rivelando un bouquet costellato di sentori che ci riportano con la memoria a madide e buie cantine disperse nel Brabante Fiammingo: albedo di limone, scorza di cedro, coperta di cavallo, muffa del salame, ruggine e cuoio. Al gusto emerge la tagliente acidità lattica con una tipica asprezza da Brett, leggermente sfumata da reminiscenze acetiche. Il legno è presente ma in maniera assolutamente discreta, rimanendo educatamente in secondo piano. il finale è molto intenso e persistente, dimostrando grande finezza.

3.6 33 cl bottle at Italian Job, Chiswick, London. Hazy orange body with no head. Inviting aroma of berries and tangerine. Flat, crisp and astringently acidic. Mouthwatering. Sharp ending.
3.5 [Bottle (330ml)] Pours a murky yellow with floaties and no head. Nice sour and lactic aroma (7+) along with citrus, wood, yeast and light herbs. Flavour follows and is a bit watery. Average bodied. A bit flat but a pleasant Sour.
4.1 Robe blonde aux reflets dorées, fine mousse délicate, peu persistante. Nez qui allie des notes balsamiques, des levures (un coté brett), des fruits acidulés. Très belle attaque de bouche tout en fraîcheur et en tension, fine bulle délicate, beau fruit et finale finement amère et presque tannique. Une très belle bière de soif.
3.8 Pouring at the Well after Where The Wild Beers Are VII (2016). Pours a hazed gold with a thin white head. Floral and fruity with a nice grape nose. Acid, funk, malt, wheat. Medium bodied, acid, melon, funk. Tangy with a bit of salty acidity. Long tart finish.
3.4 Bottle that Ian shared at Reading Beerfest - cheers Ian! A hazy yellow brew. Sour lemon is the main thing here, but there’s a touch of farmyard too and an unripe apple aftertaste. Pleasant stuff, but a little one dimensional and I’ve had better sours.
3.6 Bottle at Reading BF 2017. Hazy pale gold colour no head. Sour as hell. Lemon sour lemon barley water .wow sour as hell but a little funk. Very sour. Perhaps too much. Lemon sour barley water. Woke me up but way too much.
4.2 Hazy deep golden with no head, even when poured vigorously. Brisk golden sour aroma with lovely sweet fruity esters with a funky bactillic tart twang and light oak tones as well. Bright acidic apricot-pineapple flavor that’s golden and juicy and semisweet with a light bit of oak funky sour twangs throughout with a pleasant complexity and delightfulness.
3.6 Pours cloudy mild yellow with low white head. Aroma of green grapes, grass, light bretta. Taste is mild tart with a gentle fruity finish. Light and smooth body with average carbonation.
4.3 Very light carbonated and a slight acetic scent. Clear lyellow blonde. Very sour and funky flavour, strong and assertive acidity. Very light bodied, when I breathe in all the flavours seem to change. Worth the hype.

3.2 Pours clear golden with no head at all. Interesting sour aromas with fruity undertones and fresh cut hay. No carbonation, very sour with a light acetic bite, ending on an apple vinegar note. Nice take on a lambic style beer altough it lacks complexity and is way too much acidic to enjoy more than a couple of sips.
3.8 Semmi hab, narancssárga szín. Savanykás, enyhén mézes, boros illatok. Savanyú, hordós, boros ízvilág. Könnyed, enyhén szénsavas, alig keserű. Frissítő, érett ízvilágú sör, nagyon jó egyensúllyal és összhanggal.
3.5 Pours hazy orange with a very low white head. Aromas of funk, citrus, kiwi, gooseberry, lime. Taste is very sour with some fruity notes. Mouthfeel is dry and very tart with moderate carbonation.

2.1 33 cl bottle from LCBO online, served at cellar temperature in a tulip glass. App.: Hazy straw yellow with a very frail head. Aroma: Quite a lot of vinegar-like sourness, a bit grainy and vaguely fruity, some wild/funky character. Palate: Medium-light body, almost no carbonation. Flav.: Vinegar-like sour notes with a little wild/funk, lightly fruity, a bit of solvent/acetone; dry with fairly high sourness and a citrusy finish. Certainly a sour beer. Could use a bit less vinegar and a bit more wild.
3.6 Tap@ilbirri. Yellow hazy. Pretty nice sour nose, bacterial funky, straw wheaty, dry, horseblankety barny, sorta cantillon qualities to it. Med bodied, sour yellow fruits, funky barn. this is pretty good. Nice funk, horse, intensity. Could well be a raw lambic from the yummy- belgiums, has the acidity, the intensity in flavour, dryness. 3.8 Bottle in Seattle. Big thanks to Andrew for pulling out this interesting, old bottle. Alberto, we miss you! No head, juicy opaque pour, soft apricot juice look. Touch of sweet and vinegar on nose, mild fruitiness, with some acidic burn. Complex, fruity sip with notes of apricots, peaches and a little bretty lemon. Very little carbonation, leads to a smooth sip with some round depths. Hit of acidic sour burned my nose after my first sip, startled me, but it really works well the more I enjoy this glass. Round sweetness up front is countered by the acidic, vinegar high notes on finish. Spicy fruit finish. Body is a bit off for me, but flavors are fantastically Italian.

3.1 37.5cl Bottle from Uiltje Taproom. Hazy golden colour, no head. Aroma of funk, lemon juice, lambic stuff. Flavour is pure lemon juice with wild yeast, quite sour but also refreshing. Light bodied, flat. OK.

Unclear matt medium yellow color with a small to average, frothy to fizzy, good - fair lacing, mostly diminishing, white to off-white head. Aroma is moderate malty, pale malt, tart, moderate hoppy, citrus, grapefruit, orange. Flavor is moderate sweet and moderate to light light heavy acidic with a long duration, tart, sour, dry, citric, barnyard - funky, tart - sour fruit. Body is medium, texture is oily to watery, carbonation is soft to flat. [20160902]
3.3 375ml bottle, pours a hazy yellow. Nose is citrus and vinegar. Flavour certainly sour, citrus. Tingles on the tongue leaving that feel of having just sucked on a lemon slice.
3.7 Bottle - Lemon funk and some acidity. Cloudy gold with no head. Big acidic notes and some white grape. Acidic and bright.
2.9 375mL bottle, pours a cloudy golden blonde with a small white head. Aroma brings out notes of lacto, some balsamic, some bubblegum and light acidity. Flavour brings out heavy acidity upfront, with some citrus and tropical fruits, medium-high acetic notes, and a finishes acidic and vinegary. A little too much vinegar for me, but it’s not too detracting. Decent.
3.9 Cloudy, light yellow-tan. No head. The aroma is bretty, fruity, with a nice lemony, grapefruity, yeasty character, Very light body, and this has a fair bit of tartness. Still quite balanced, with a delicate honeyish sweetness.
3.4 Pours a cloudy yellow colour with no head. Funky and acidic around. Sharp, almost lambic flavours, and some gingery spiciness. No carbonation. Interesting. Very funky.
3.8 Draft sample at Craft&Draft Amsterdam, The Netherlands. Time to taste event. 05.07.2016. Taste with adamnowek. Pour it hazy orange yellowish color with no head. Aroma nice citrusy. Taste malty, pleasant sourish lime and citrus feel, nice balanced, fizzy carbonation, medium body, slick feel, long finish. After taste lemons.
3.7 On tap @ Ebenezers. Clear golden beer with a white head. Huge lemon juice and sourness. Some leather, library book, and damp funk. Pretty earthy. Huge citrus sourness of lemon and grapefruit. Some green grape and green apple as well. Intense acidity and sourness to this, but it does have some nice depth to it. Pretty nice.
3.6 Härligt runt syrlig doft. Här finns citrus och laktostoner Disig brygd, tämligen ljus och helt renons på skum. Intensiv, kraftigt citrusbetonad smak men även en viss bärton. Kroppen är tunn men karaktäristisk. Eftersmaken är kort och behaglig. En av de mest citruskaraktäristiska surölen jag smakat. Inte så dum!

BB 01.05.2034. yellow hazy color, basically no head. smells of green apples, sour, nutty, bitter almonds, lovely smell. medium body, light carbonation, slick mouthfeel. tastes citric, sour, green apples, some wood, nutty, marzipan, some leathery notes. finishes very dry with notes of citrus, leather and wood. very good stuff, I wish it just had a bit more carbonation. good stuff.
