Doppelbock was first brewed in Munich around 1700 by the monks of Saint Francis of Paula, to sustain them through the Lenten fast. They called their full-bodied brew “Salvator.” Today it is customary to pay homage to the good brothers by giving doppelbocks names ending in “-ator.” Our version bids a fond aufwiedersehen to tradition, charting a flight path into bold new territory. Medium amber in color, it offers a heady, estery banana aroma. Rich maltiness predominates, with cedar aging lending just a hint of spice to the finish.

3.1Dark brown, cloudy, really nice head. Aroma has a lot of dark toast going on with some prune sweetness to it. The taste is dark fruit and a bit sweet. The cedar is tough for me to detect. Unfortunately it feels to me like it has more alcohol in it than it does.
3.4750 ml bottle
One of many Boulevard beers that I have somehow accumulated over the last two years this one seems appropriate (and was the easiest to access). Boulevard has a trend of making solid but not spectacular beers - this one is no exception. A well rounded doppelbock might be somewhat rough around the edges but puts you in the ballpark.
Aroma / Appearance - The lively carbonation was sharp and crisp. Ringed by an ivory head the body underneath was a soft brown (like the color of the empty bottle held up to clean white light). The nose was a mixture of roasted almonds, tea, and a cedar chest which has set ignored in the corner of the attic for decades. Put together it feels a bit like opening the door to the summer cabin after a few years away - rustic and cool.
Flavor / Palate - Almonds, chocolate chips, maple syrup, and a trace of cedar meld effortlessly into a sweet mouthfeel. The malts linger in the finish for a while before deciding to fade away. Much like the nose this has a laid back rustic feel to it. Easy going with the alcohol hidden well until the final half pour, the result is a solid dopplebock. In the end though I didn’t find that wow factor to set it apart from the rest.
3.7Pours a brown color with a bubbly canvas colored head. Notes of cedar, tootsie roll, booze, earthy hops, and milk chocolate. Tasty.
3.5Clear amber with a medium creamy tan head. Aroma of raisons, brown sugar, toffee, roasted malt and dark fruit. Taste of toffee, dark fruit, sweet malt, alcohol, sugar and spice.
3.5Bottle. Poured a dark amber, brownish color with a smaller tan head. Left lacing on the side of the glass as it went. There were a lot of floaters on this beer as well. Aroma was caramel, butterscotch, candies and nuts. Flavor was banana, other fruits, caramel and woody flavors. Longer finish. Very complex beer. Good, above average beer.
3.4Bottle thanks to a generous trader. Pours dark brown with tan head. Nose/taste of toffee, dark fruit, banana and sweet malt. Taste has a light hint of cigar box. Medium body.
3.4A: The beer pours a dark amber color with a tall off-white head.
S: Sweet toffee, caramel, miscellaneous dark fruits, and just some mild brown sugar give this one a fairly traditional doppelbock aroma. However, the cedar wood comes through shortly after, as does a bit of booze.
T: The wood seems to be even more pronounced on the palate and gives a weird spiciness. There is a nice caramel and toffee sweetness with some mild bread and fruit notes. A touch of booze and maybe even some vanilla.
M: Medium bodied with medium carbonation.
O: A little boozy and the cedar threw me off a bit.
3.9Pours a deep golden brown. The thin ivory head rings the glass. Malty aroma with fig and prune notes. Smooth rich malt, fig, and prune flavors with a slight hint of caramel.
4.1750 bomber. About a year if aging. Dark iced tea pour with quick head and Antioch of lacing. Nose is a boatload of malty, sweety, toffee goodness. Taste follows the nose but with a touch of spice. A tad bit of heat that I wasn’t really expecting. Would really like a couple more of these.
3.9Big thick doppelbock. Bottle pours orange with minimal white head. Malty caramel aroma. Taste sweet caramel and toffee. Palate thick and a little syrupy. Finish more malts. Alcohol slightly apparent.
Malt bomb - if you like sweet beers here you go.
3.9Excellent doppelbock. Pours dark amber-orange with a smallish orange-white head. Decent retention and lace. Big, sweet woody aroma, full of caramel and fruit. Complex. Very sweet flavor. Full-medium body, creamy thick texture, mild carbonation, and a sticky, woody, malty finish. I haven’t tried many better in this style.
3.7Big thick chewy bread and caramel. Fairly sweet with little to no bitterness. Just chewy goodness. Reminds me of a thicker Celebrator.
3.8Smell of wood and malt in the aroma while the appearance is solid amber. The taste is malty as a good doppelbock should be with a background of acidity that leans towards the cedar’s influence. A very good doppelbock, not the best but still good and a little unique.
3.5rating from memory because this has been discontinued. will be replaced by nommo dubbel. both scent and flavor were far too dominatined by cedar. i wish i had aged some. cedar probably would mellow and thus make for a better beer.
3.3bottle. a little over 2 years on it. doughy sweet dried fruits with a touch of sherry oxidation, and some light cardboard. cedar character has faded over time but some light spiced bread character is still present. not bad, but probably better fresher.
4.0750 ml. bottle corked n’ caged- 2010 vintage, technically expired in may 2011, but I think it’ll be fine- Pours a beautiful semi cloudy ruby red with a nice 2 finger off white head. Aroma is malt, cherry (assuming from the cedar aging), definite wood, little hops. The flavor is sweet malt, cherries, cedar wood, deep and complex yet very drinkable and sessionable, there is a mild bitterness, mostly coming off as dry. This beer could get you into trouble, I could session this all night, and be shitfaced halfway through the night. The body is full, carbonation is medium high, finish is extremely dry yet sweet.
3.86/26/11. 750mL bottle. Creamy brown/red pour with a thick, frothy brown head that lasts a long time and laces a little. Relatively subtle aroma of sweet caramels and brown sugar with a touch of metal and wood. Caramelized and burnt sugars in the flavor that packs a more bitter coffee punch than the aroma along with a hint of wood and a dash of metal. Not bad!
3.8Bottle from a trade with crajun. Bours clear medium brown color with off white head. Aromas of cedar, caramel and toffee with some dough. The cedar really comes through adding a spiciness to the flavor. Medium body with average carbonation. The cedar adds an interesting touch that I really enjoyed. Thanks Kevin.

2.9Bottle for pikapp327’s graduation! Brownish pour with a huge tan head. Aroma is alcohol, dates, and brown sugar. Taste is smoked meat, more dark fruit, malts, sugars, and alcohol.

Reddish brown pour with a small amount of off-white head that does not stick around for very long. Small amount of cedar in the aroma with some dark fruit and caramel. More cedar in the taste which makes this a very intesting Doppelbock. Banana and raisin flavors as well. I enjoyed this - very different.
3.8One of my favorite Smokestack beers.
The beer pours a medium brown color with a tan head. The aroma is great. I get a mix of toffee and caramel along with some hints of cedar and bananas. A little bit of raisins and other dark fruit also comes through in the aroma.
The cedar is more present in the flavor than it is in the aroma. A nice, dry cedar characteristic melds very well with the dark fruit and toffee. There is also a little bit of alcohol present in the flavor, as well as a little bit of grass.
Medium mouthfeel and medium carbonation. A very nice spin on the doppelbock style.
4.0Bottle. This beer pours a rich deep amber with a thin off white head. The aromas are oak, leather, plums, and pasta noodles. The mouthfeel is sticky, syrupy and sweet with a heavy body. I really liked this one. Cheers!

Pours a medium brown for with a slight off who’re head and some very light lacing. Those nose brings a touch of caramel plus some breadm. Very light fruits plus a bit of alcohol in tue background. The flavor is similar with some caramel and bready malt. There is a bit of alcohol but not much else. Mouthfel has a hot of body with low carbonation. Okay, though I would not seek this out again.

3.7Bottle. Poured clear brown color with an average frothy brown head that lasted with good lacing. Moderate to heavy roasted malt and fruit aroma. Medium to full body with a smooth thick texture and flat carbonation. Medium to heavy sweet fruit and toasted malt flavor with a medium smooth sweet finish of moderate duration. Very good doppelbock.

3.7750ml corked bottle. Pours a clear deep amber color with a tan foamy head. Continuous fine bubbles. Very clean aroma. Medium body with solid creamy mouthfeel. Clean malty flavor, slightly bready, medium dry caramel notes. Very nice.
4.0Reallyt dark reddish-amber with a moderate off-white head. Aroma of caramel, dark fruit, banana, and cedar. Taste is sweet and woody, with just a touch of hop prescence. For a beer that isn’t hop forward, this is quite complex. Medium bodied and very smooth with just a hint of alcohol.
3.8Corked and caged 750mL. Pours reddish brown with a compact head. Cedar chest and dark fruit aroma. Sweet caramel over raisins, with a dark bread component.
3.4There is a lot going on in this beer - more than most other doppels I’ve tried. Pours a gorgeous caramel/amber color with a slightly larger head than others of this style. Smell is sweet of caramelized nuts. Plenty of cedar coming through in this beer with medium sweetness at first, turning to a slightly spicy aftertaste. A slight carbonation tends to remain on the tongue.
