The unsung heroes, the foot soldiers of the revolution. We owe a huge debt to the billions of tiny yeast cells that work tirelessly to ferment sugars into alcohol and CO2. But yeast isn’t just here for the grunt work. Yeast has the power to change the flavour, aroma and complexion of your beer in an instant. This series is designed to showcase the impact different yeasts have on the same base beer.


This series of 4 beers gives the limelight to four totally different yeast strains: Belgian Trappist, Pilsen Lager, American Ale and Bavarian Weizen. All 4 beers have been brewed to the same ABV using a blend of Centennial and Amarillo hops and a backbone of Pale Ale, Munich and Cara Malts.

3.2 Bottle, 33cL. Home. A brown-orange opaque beer with orange hues at the bottom of the glass. Medium white head ; average retention. Aroma of fruit, hay, herbs.Light to medium bitter, light sweet. Light body, light texture, average carbonation, bitter finish with an acid note. Overall, good hay aroma (+) with an OK taste (+/-).
3.3 5/VIII/14 - 33cl bottle from Bierhalle Deconinck (Vichte) @ the seaside - BB: 11/X/14 (2014-881) Little hazy deep orange beer, lots of sediment floating around in the glass, big creamy head, little stable, dissipates quickly, adhesive, leaving a nice lacing in the glass. Aroma: pretty hoppy, citrus, bit grassy, some banana, sweet malts, bit sugary. MF: ok carbon, medium to full body. Taste: lots of banana, pretty bitter, bit sourish, lemony, sweet malts. Aftertaste: hops, caramel, sweet malts, pretty fruity, very bitter, citrus, little yeasty, some banana.
2.5 Bottle. Pours golden with a creamy head. Aroma is sweet with malts, as well as some fruity yeast with cloves. Flavour is sweet and fruity with grainy malt, and fruity yeast in the finish.
3.4 Bouteille 33cl, batch# 243, BB 11/10/2014. Orangée-ambrée, col crémeux blanc cassé. Arôme léger épicé, côté fermenté avec un ester restant assez discret et offrant un ajout banane minime. Houblonné assez noble. Palais offre une base maltée différente d’une weisse, pointe de banane assez discrète, léger en épice, possible coriandre? touche houblonnée nobles sur note agrumes. Dommage car la base n’offre pas spécialement cette influence allemande surtout dans l’emploi des malts, manque le malt de blé pour aller vers un crysta cara?
3.3 Bottle. Deep golden colour with an off-white head. Aroma is citrus, malt, hop. Flavour is citrus, malt, hop, pine, orange, banana, berries. Weird beer.
3.8 from la Mise en Bière - hazy golden-orange beer with a long lasting foam; fruity estery nose actually more melon and grapefruit than banana; full-bodied, fizzy and lively, sweet and fairly tart and acidic; quite dry and long fruity and spicy finish - luckily pretty different than your standard bavarian weizen
3.1 Couleur orangée trouble, bonne mousse blanche. Nez malt toasté, notes légères bananes, paille et levures. Gout de levures, fort houblon, notes alcool, fruité. Forte amertume en fin de bouche. Un peu puissante pour une hefeweizen... Et amertume pas si bonne que ca
3.1 On tap at Christian Firtal. Hazy golden with a lasting white head. Hoppy aroma with citrus and pine and a touch of banana. Sweetish hoppy and malty flavour with faint hints of Bavarian Weissbier. Decent bitter finish
3.6 4 finger beige head, amber body. Nose: Candy, banana, honey, hay and jasmine. Aroma: Candy, peach, oranges, malt, honey, brown sugar and hay. Semi-long ending with some bitterness.
3.0 Keg at BD on da Bush, 01/07/14. Clear golden with a well appointed off white covering. Nose is pale malts, grain, light toffee, straw, faint banana. Taste picks up the pace a little more so than the aroma, caramel, wheaten bread, yeast esters, light vanilla, banana. Medium bodied, fine carbonation, semi drying close. So so hefe.
3.2 On tap at Brewdog Birmingham, pours a cloudy orange with a small white head. Aroma brings out wheat, some orange fruitiness, and clove. Flavour brings out lots of clove upfront, some banana and dry hoppiness as well. A more abrasive wheat beer - as can be expected for Brewdog. Good stuff.
3.1 Bottle, 6.3%.Hazy amber with medium off/white head. Aroma is malt,fruit, yeast, phenols, caramel and spicy. Flavour is malt, yeast, phenols, little sweet, spicy, caramel, hop, grass and medium bitter.
3.3 Aroma: Smelling of bread, banana, spices and yeast. Appearance: A clouded amber colored beer. A off-white head with good lacing and good curtains. Taste: Tasting bread, pear, spices, clove, apple peel and yeast. Palate: Medium carbonation, a soft texture. A medium body with a dry finish. Overall: A bit unbalanced towards spicyness without hop. Note: Bottle 330 ml at home. Reviewed 2014-06-20.

2.9 Litt uklar lys kobberfarge med et kremet skum som limte seg i glassveggen. Aroma av malt, karamell, frukt og gjær. Smaken følger aroma mye frukt med en fin bitterhet i avsluttningen
3.4 33CL bottle at home, orange beer with a medium head, aroma is tropical fruit, taste is tropical fruit, citrus, bitter. Nice one.
3.1 A hazy, dark yellow beer with a medium and blond head. The nose is fruitfull and slightly tropical, yeast, light grain. Taste is fruitfull, mangos, light malts, slightly biscuity body. Medium bodied, fresh carbonation. This is not hefe. Fruitfull hops with biscuity malts. It’s very difficult to find the hefe-yeast.
2.9 Pours a slightly hazy, mild carbonation with a thick white head, dark gold colour. Aroma is sweet banana sweet bit of yeasty funk & mellow spices. On the taste, is a little under whelming, but with a fairly unpleasant astringent ending. Holds a touch of black pepper spice.
2.8 Bottle. Aroma is weird and soapy, only light clove, most of the hops went away. Taste is much more weizeny, in balance with the hops. Spicy, some clove, peppery. Shows the yeast nicely, but overall the beer is not to my taste.
2.2 330ml bottle from brewdog.com. Pours promisingly enough, hazy amber, decent carbonation. Taste however brings very mild weiz flavours with hay, pepper, spices and slight vinegar coming through a little too much. Definitely a brewing fault somewhere along the line. Disappointing.
3.6 Bottle at home in London - bought from an online shop. Pours mostly clear, deep gold with a creamy, off-white head. The nose has toasted wheat, some grains, bread. Medium sweet flavor with dry, toasted cereal, toasted wheat, some bitter hay, mild citrus. Medium bodied with fine, massaging carbonation. Moderately sweet to finish with more toasty wheat bread, fait grass, hay, cereal. Tasty enough.
3.4 Botella de 33 cl en la internacional, en el momento el 29-04-2014. lote 243 hasta 11-10-2014. Color rubio pálido con espuma blanca persistente. Aromas a cereales y maltosos con toques cítricos y ligeramente herbáceos. cuerpo ligero con 6.3 vol. Sabores también a cereales y maltas seguidos de cítricos y herbáceos frescos que terminan en un ligero amargor que perdura en boca durante unos minutos. Interesante.
2.4 How: Bottle. Where: Systembolaget, had at home. Appearance: Slightly hazy golden colour with a white head. Aroma: Yeast, citrus, tropical fruit, banana. Body: Medium body and carbonation. Flavour: Citrus, some tropical fruits, chemical banana.

2.9 Bottle @ benzai. Slightly hazy amber colour with a small off-white head. Smells slightly smokey, banana, overripe fruits, slightly hoppy and quite sweet. Tastes sweetish, hoppy, some apricot, a hint of banana, a hint of smoke. Thin to medium body, soft to medium carbo.
2.9 Bottle shared @ weekly tasting with Dutchdrebus, Thompson and Ansjelaah. Clear golden to orange color, average sized white head. Smell and taste are a bit hard to describe: a touch of yeast, a touch of banana, still slightly hops and bitter. Wouldn’t say this is a German Hefeweizen, not a typical one anyway.
3.0 Bottle @benzai. Hazy amber color with a small white head. Smells banana, malts and hay. Tastes fruity, sweet, banana, some hops.
2.9 Bottle at Tilt, february 18th 2014. Golden body with a big white head. Hoppy aroma with fruit, some spicy yeast, banana. Quite bitter and hoppy taste, with a discreet hefeweizen yeast hint of clove and bubblegum. Not too excited about this one.
3.4 Bottle from Rehills, Newcastle. This is a slight hazy golden coloured beer with gentle banana, vanilla and clove flavours, spicy citrus and a warming finish.
3.3 Butelka 0.33L. Złote z pływającymi drobinami drożdżowymi, niezbyt ładnymi. Piana w kolorze złamanej bieli, najbardziej obfita z serii. Aromat: czuć goździka, banana, słodowy, chmiel wyczuwalny bardzo delikatnie w postaci słodkich, dojrzałych owoców tropikalnych. Smak: dziwne bo aromat sugeruje weizena a tu sporo słodyczy i przede wszystkim sporo chmielu i goryczki chmielowej. Wywołuje to swego rodzaju dysonans. Ciało średnie+, wysycenie średnie+. Goryczka chmielowa wysoka, jak na styl bardzo wysoka. Pokazuje wyraźnie jak drożdże mogą zmieni piwo, choć w tym wypadku mało udane połączenie.
