Humulus Terreux is the type of beer that gets our stomachs tied up in knots of excitement. It’s a chance for us to experiment with both hops and yeast, creating unique, juicy & funky flavors with just these seemingly simple, earthen ingredients. Each batch of Humulus Terreux will use a different hop varietal and one of the several strains of Brettanomyces yeasts that we have incubating in our laboratory to create a one of a kind, wildly traditional bière™. The flavor possibilities are endless when combining possible hop notes of citrus, pine, flowers or grass with the barnyard funk, earth and tropics that can come from a 100% Brettanomyces fermentation. While each beer will showcase a different, distinct character, the overall result will always be dry, funky and delightfully hoppy.

3.2 Bottle. High carbonation, lots of brett and hops produces a very dry, earthy flavor which reminds me of shower gel.
4.1 Pale gold, explosive white head that settles down to about a finger. Nose is yeast (definite wild vibe) , malt, and spices and herbs. Middle starts of with an earth herbal presence, some slightly bitey yeast, woody notes, with a fairly light bodied malt base to tie it all together. Finish is sour with a pixie stick yeast finish. Formidable beer.
3.7 Bottle thanks to William. Pours a cloudy yellow with medium white head that lasts. The aroma is strong oak, brett, lemon zest, floral. Slick body, yeast, oak, lemon zest, wheat, lingering dry finish, very good.
3.3 Bottle. The colour is hazy straw with a small off-white head. Aroma of barn yard, lemon, hay, flowers, basil, cheese and some peaches. The flavour is similar with more flowers, grass, gooseberries, juniper and some mango. A little dry in the end. Has a slick and silky mouth feel, medium body and a light bitterness. Fresh, balanced and spicy. A little peculiar.

3.9 On bottle from Vinmonopolet Aker Brygge- a special release a while back. Hazy golden orange- good foam. Medium aroma intensity; fruity , floral with light hops and Brett. Medium body & complexity . Good bitterness & balance. Very enjoyable
3.6 Notes from Bottle share in June 2017. Funky beer; carbonation is quite heavy. Floral and herbacious/earthy hops, quite autalytic with a earthy yeast profile. Refreshing, crisp and bone dry finish. Light grainy malts, straw, mild brett esque funk with a light grass and citrus note. Overall a bit monotone but enjoyable
4.2 Fine white retaining head with lemon hue that is just slightly cloudy (bottle conditioned); Nose of lemongrass; Bright carbonation; Dry, with a very pronounced Belgian barnyard yeast flavor along with a crackery lemongrass taste and just a bit of sourness. Finish continues dry with a back tongue bitterness that lingers.

3.3 75cl bottle from Rudat. Funky beginning with lots of carbonation. The hops are nice earthy bitter, the beer is funky with a nice yeasty dry background. Refreshing with a nice and bitter earthy body. Light with grainy hints, sessionable and great round funky.
3.7 Pours very gold and foamy. Overly carbonated on palate, but great flowery and very bretty scent, smell is dry. If I swirl the head reforms, better once the CO2 gets out. Taste is very bretty and funk all over, quite well balanced though. Fresh garden in the front and herbal weirdness throughout. Solid beer but not overly punchy.
3.3 750 ml bottle. Pours a hazy yellow/amber with huge head. Aromas of overripe stoned fruit, candied lemon, Brett, and toasted malts. Flavors of cottony Brett (a lot), lemongrass, and wheaty malts. Suspect this one was more fruity when younger. Overpriced fro delivery, but if you like Brett...
3.2 Bottle shared @Freiburg testing. A copper beer, nose is on brett. Aroma is medium malty, caramel touch, medium sweet to low, lemony, floral, lot of brett. Finish is dry still on brett.
3.7 Hazy pale gold pour with a tall, fluffy white head. Aroma is loaded with funk, sweetness, and tropical and stone fruit, nice, deep toast and cereal notes, a bit of sweet grass and a light acidity. Flavor is funk, tart stone fruit, pineapple and guava heavy tropical fruit, lots of minerality, sweet citrus and light perfumey notes. LIght to medium body, dry, slightly acidic feel with a heavy, blanketing carbonation. Good stuff, the aroma is definitely the high point.
3.1 Courtesy of Josh, this is the Motueka version Cloudy blond color. Funky aroma. Dry mouthfeel, very astringent, quite earthy, and astringent bitterness in the final. Mediocre.
3.4 Bottle @Craigs (The Budget week tasting, rating backlog). Pours golden, small white head. Nose is sour, lemon, sour lemons, socks. Taste is toffee, pine, floral, dry finish.
2.8 Wannabe gusher, but I manage to contain it. Huge offwhite head doesn’t last. Hazy opaque yellow body. Funky waxy citric aroma with barnyard notes. Sweetish funky resiny taste is kind of muddy and unclear. Mid-bodied. Sharpish, fizzy mouthfeel. Sweetish barnyard resiny mineraly aftertaste with waxy earthy herbal notes. I don’t know. It’s unfocused, dirty and just not very good. (0.75l bottle, from wine monopoly, Strømmen.)
3.8 Bottle. Hazy yellow with a big foamy off-white head. Aroma of brett, spice, bubblegum, citrus, and flowers. Dry, slick, medium bodied. Tastes funky and lightly bitter.
3.5 Brett overpowers hops! But I did enjoy it. Slightly cloudy golden color. HUGE head took up 90% of pint glass with careful pour right out the frig!
4.3 Bottle, shared with Rockley. Extremely carbonated, and while it wasn’t a true gusher, it did climb out of the neck of the bottle in a strange slow motion volcano impression. The hops and Brett combine in such an elegant way here, it really took me by surprise. Beautifully floral and spicy and dry, very complex but drinkable. Just fantastic, I really would love to have this again.
3.7 Draft at Georgetown’s Deli. Pours golden with a white head. Leaves trace lacing in the glass. Tropical fruits in the nose. Nice grapefruit on the tongue along with a lot of tartness. Finish lingers a bit. Pretty refreshing.
3.7 Brother Barrel, Seattle. Intriguing funky nose, lots of tropical fruit with an edge of barnyard and manuere. Lime zest, a little mint and gin. Good funk to the finish, with a hint of lemony tart. Body is smooth and waxy, but there is a nice fruity and drying bitterness to the finish. This is pretty nice.
3.7 Bottle, vintage 2015. Pours clear golden, large white head, good lacing. Aroma is super Bretty, dank, mildew, damp basement, mushroom, dust. Flavor is dry, quite Brett funky, citrus notes, grass. Light body, soft carbonation. Good.
