Burning Sky Saison à la Provision

Burning Sky Saison à la Provision

Originally, the farmhouse brewers of Wallonia would produce a weak Saison beer for the workers and a stronger beer to be aged & sometimes blended – destined for the local taverns. This beer has a primary fermentation with a Saison yeast, then undergoes a secondary fermentation with a blend of Lactobacillus & Brettanomyces. The result is tart, crisp, slightly sour & incredibly refreshing.

2.2 Bottle at home from the Wine Society. On opening I just got the bottle to the sink before 25% of it rushed out. There was no head and it fizzed like a coke in the glass. For some reason the colour and the head reminded me of a cider. The nose was funky and the taste was in your face sourness which really isn't my bag. I had a bit of stilton alongside it to offset that sourness, but in the end I found it unpleasant. I struggle with a non-integrated sourness like this, but at least the cheese was good.
2.5 330ml bottle, trade with Skinnyviking. Firm white head. Hazy yellow-gold body, spotty lacing. Dry and tart fruity nose. Lemony tartness to the taste profile, brett and yeasty fruitiness to it. Dry ad tart to the ending. Decent cleanser, without further excitement (Shared at a session with Finn and djoeye, Tromsø 31.01.2018).

3.5 Tap at the Canal House. Pours golden with white lace top diminishing. Aroma floral grassy hops with lactic back note. Taste is medium to full sourness. Palate is medium bodied, crisp and dry texture, soft to average carbonation, sour finish. A good Saison but also proof that it will never be my preferred style.
3.5 Bottle shared with JMD at HNB 12.01.18. Golden. Off-white head. Fine aroma and taste of lemon, lime, brett, lactic acid and lambic. Also some pilsner malt. Dry and astringent. Astringency and lemon seed bitterness is lingering on.

3.8 Bottle at home. A bit of a gusher on opening, despite which it poured a clear pale yellow with no head at all. The aroma is of citrus and pear drop sweets. The taste has initial sweetness with a burst of acidity to follow. There is a surprisingly firm malty sweetness with further sharp citrus flavours. Sharp, tart and refreshing with good mouthfeel and a long finish.
