Lambic aged in coganc barrels, refermented in bottle.

In March 2005, the brewery Cantillon had bought second hands barrels in the region of Cognac. For 15 years, the wood had been impregnate with cognac. Then for 2 years, our lambic has extracted all the flavors and aromas to make a unique gueuze. The name comes from the geographic location of the brewery.

3.8 Bottle @L'Elementare Trastevere (Rome). Dorata mediamente torbida, schiuma bianca leggera. Al naso intense note vinose, di cognac, botte, etilico, mela annurca, leggero acetico. In bocca è acida media, con note di botte e un leggero acetico, leggermente tart. Corpo medio, carbonazione media. Ovviamente molto buona, ma non certo il massimo della finezza. Il carattere gueuze ne esce un po' trasfigurato e appiattito dall'uso forse eccessivo della botte.
4.4 75cl bottle from the brewery (Blend of Lambic brewed on 30 November 2016 and 6 December 2016 aged in Cognac barrels and bottled on 10 March 2020) as my #2600 Belgium beer. F: medium, white, not long lasting. C: shiny pale gold, hazy. A: lemon, woody, unripe gooseberries, sherry touch, light sour fruity, funky. T: medium body, woody, light lemon, funky, bit cognac, green apple, sulphure touch, not so sour and complex, great one, fully enjoyed.
4.1 ( vintage 2020, bottle) Aroma: apricots, vanilla, some funk. Taste: semi-dry, flavour of apricots, vinegar, stale fruits and wood. Palate: medium body, medium carbonation. Overall: Tasty !
4.2 (Bottle, bottled 2007) Amber colour, slightly hazy, with brief foamy head. Fruity, sourish nose with notes of grapefruit, sour grapes, barnyard, stable, wood and a touch of cognac. Fruity, tart taste with grapefruit, sour grapes, wood, barnyard, hints of cognac lurking in the background and a dry and tart finish with a good vinegar acidity. Solid gueuze, tart and funky, with a touch of cognac in the background. Great stuff.
4.5 Dojrzały, intensywny, dziki aromat, funky, zapach stajni, beczka po winie bardzo zaznaczona, suszone owoce, w smaku delikatnie octowe, skórki winogron, słodycz suszonych owoców, wino, lekkie cytrusy, degustacyjne i jednocześnie pijalne. Pyszny Lambik, klasa.
5.0 Dark blond beer with fine white sparkling foam that quickly fades into a fine layer. Woody, apples, sweet, cognac is wonderfully woven into it. Drying aftertaste. Phenomenal beer, perfectly balanced.
4.7 Donkerblond bier met fijne witte parelende schuimkraag die snel wegebt tot fijn laagje. Houterig, appeltjes, zoetje, cognac zit er geweldig in verweven. Droogtrekkende afdronk. Fenomenaal bier, perfect in balans.
4.3 0,75l from bottle at the brewery. Yellow hazy color, small white head. Smells bit funky, musty, wood, light cognac, very subtle, very nice barrel notes. Medium to full body, soft carbonation, slick mouthfeel. Tastes earthy, wood, cognac, bit musty, light sherry, light spices, light tobacco, peppery, citric, some ripe fruits. Finishes lightly dry and lightly sour with notes of apples, ripe fruits, wood and citric notes. Very very nice one, so smooth, really surprised by this
3.7 2/12/2018 - 75cl bottle from the brewery shared with Peter @his house. Hazy orange, small white head. Nose is grains, lemon, wood, cognac. Taste is sharp sourness, lemon, wood, cognac. Much sharper than the other version which I like more.
4.3 750 ml bottle, brewed in 2010 and bottled in 2012, at Moeder Lambic Original, during Zwanze 2018 weekend. Light hazy golden orange color with white head. Malty and yeasty aroma, wood, cognac notes, funky, barnyard, citrus, cheesy notes. Sweet, light bitter and acidic taste. Medium oily body with soft carbonation.

3.9 Taster from a friend (2012 vintage). Golden color, white head. Sour taste with cognac, sour apple, gooseberry, tart, earthy notes, oak and citrus. Sour finish with cognac, gooseberry, tart, earthy notes, citrus, sour apple and oak. Excellent lambic.

4.3 (750ml 2012 bottle deceanted to an Erlenmeyer flask @ Moeder Fontainas, Apr 29/18) Pours nearly clear pale gold-tinged orange with a small but persistent white head. Aroma of sweet grape must, cognac, red apples, pit fruit, subtle fortified wine, fairly heavy wood, moderately funky, light to moderate citrus touches, no real oxidation, funk is pretty subdued but not absent, definitely quite spirit-forward. Flavour matches the nose, somewhat sweet grape must and cognac are quite clear throughout the sip, overtop of lightly tart apples, citrus highlights, deep impressive wood, relatively subtle stables, finishing relatively dry with a long cognac-inflected finish and even a little spirit heat vibe with the woody tannins. Medium-bodied, slick, softly effervescent. At its peak partway through the decanting period, a bit tight to start and too cognac-soaked at the end. An after-dinner sipper lambic I would say. Lovely if you like cognac.

3.9 Interesting aroma, do not have comparison for it. Maybe some wold berries and mulberries. Refreshing
4.4 I dig it very much. The cognac alcohol and sweetness profile is overcome buy the gueuze character. It is still wild and sour but with a lot of changes in the mouth and throat. Love it.
4.0 Bottle @ Himmeriget. Pours hazy orange with almoast no head. Nice medium sourness, well balanced,  tart, green apples, wood, funk, wet cellar, some grapefruit perhaps.
3.8 2017.12.05: Bottle from 2012. Fruity aromas. A bit hazy pale appearance. Medium-high sourness, light-moderate sweetness. medium-full body. A very fine Gueuze but not as good as the regular Cantillon Gueuze in my opinion.
3.9 Bottle shared at Cotteridge wines, Cotteridge Convention III 20/05/2017. Many thanks! to Wingman Dave for this one. A hazed golden orange coloured pour with a samll off white head. Aroma is onion, green apple, lacto funk, small vinegar, tangy apple. Flavour is composed of souyr, green apple, layered lacto funk, nice. Palate is sour and tangy, mellow pucker, highish carbonation. Lingering clean grapefruit, woody mouldy funk.

4.3 Flaska @ Cantillonbryggeriet. Orange mot b�rnstensf�rgad �l med ett mycket l�tt vitt skum. Doft och smak �r fruktigt syrlig med inslag av persika och vita druvor. Till detta kommer ganska framtr�dande brett och tr�toner. Stall och l�tt jordighet. Komplex men �nd� frisk och l�ttdrucken.

5.0 75cl bottle at the brewery. Golden orange colour. No head. Its an intense version of lambic bio. Much stronger in flavor and aroma. Simple but impressive.
4.4 Bottle @ cantillon, brussels. Pours a golden colour beer with a medium head. Fruity and bretty with notes of wood. Dry finish.
4.3 Bottle at the brewery. Pours a clear golden with a white head. Tart and dry with aromas of sherry and vinegar with notes of mirabeller and black pepper. Also notes of cask wood. Medium bodied. Soft carbonation. Dry and tart finish with more sherry.
4.0 Bottle at Cantillon with sunevdj (the both of them). Bottled in december 2015. Hazy golden with a medium sized good lacing white head. Soft and fluffy carbonation with mild sweetness and medium sourness. The barrels clearly show in the flavour with notes of sherry and port. Also some lemon, wood and barnyard. Mild cheese and white grapes. Funky finish with mild lemony sourness. Good.
4.1 Cotteridge Convention III – May 2017 - Cork and cage bottle shared at Cotts. Big thanks to Dave for this one. As ’Cantillon 50°N-4°E’. Pours a hazy orange with a small foamy off-white head. Aroma is peachy, lemon, light metallics. Body is smooth with soft carbonation. Taste is again peachy, lime and lemon sherbet, a little grassy, some light drying cognac vibes. Lovely. (8-4-8-4-17=4.1)
4.4 Copper color with a thin head. Hints of oak and vanilla in the aroma. Light tartness. Dry as all hell. Woodsy. Dry cognac notes. Very vegetal hops. Barn funky. Sublime.
4.6 Bottle at Cantillon, split 3 ways with the wife and Mike (bytemesis), cheers! Pours a hazy copper color, small off-white head that leaves a ring of lace. Aroma is full of signature Cantillon funk, oak, hay, horse blanket, light leather notes, light citrus rind and an underlying floral note. Taste is a balance of cognac, Cantillon funk, light citrus, light floral, light hay....mild acidic, mild bitter. Great balance. Finishes medium dry with a sweet bread note, bitter brett/hops, deep funk, horse blanket and oak. Outstanding!
