A high density lambic, think of it as a Gueuze/Barley Wine.

2.8Pour from 750ml bottle at Cantillon. Pours slightly hazy darker amber colour, small white head as ring. Aroma is tart, malty, bready. Taste is bitter tart, woody, yeasty, strong black tea which is been in cup for days. Bitter finish. Medium body, low carbonation. At first I didn't like it all, feels very weird, but sip after sip it goes almost enjoyable
4.5(jus raisin, nez sauvage, ~raisin, 0-bulle, ∞-pamp rose, espèce de vin blanc très sec (last surtout), 51 mois, 9% (!))

3.010.05.2018, 0,75l bottle (2013 vintage) sampled @ 1420 "Cantillon First Batch Tasting":
Small slightly bubbly shortlasting head, slightly cloudy dark orangy color. Aroma is slightly sweet fruity, sap, oak, old rope, dried fruits, wet hay, fruit stones, minerals, alcohol, butterscotch. Taste is slightly dry sour-ish medical, fruit stones, oak, harsh berry skin, minerals, alcohol, medicine, dried fruits, sour grass, hay, old cellar. Medium bitterness, harsh sour-ish medical mouthfeel. Nice aroma...
2.63/III/18 - from 75cl bottle, shared @ Cantillon (2018-222)
Clear deep amber beer, small aery irregular head, unstable, just some bubbles. Aroma: lots of turpentine, very alcoholic, bit sweetish, oxidized touch. MF: soft to no carbon, medium to full body. Taste: lots of tannins, lots of turpentine, very sharp, green banana. Aftertaste: very dry, bitter, woody, bit chemical, turpentine, meh, don't like this!
3.6Aromat: chlebek rodzynki trochę sianka i funky;
Wygląd: bursztynowe zamglone brak piany;
Smak: cierpko, rodzynki, trochę funky, trochę posmak skory i sianka, bardzo wytrawne, kwaskowe skórki winogron pestkowość, winne;
Podniebienie: niskie ciało ściągające, cierpkie;
2.3I think this only exists to get rid of waste at the brewery and to trick stupid Americans who don't know what "haute densite" means but are attracted by the high percentage. This is basically a malt liquor and it's quite offensive.
3.3Pirkts centillon bruzi. 51menesi noturets muca. Specigi sit iesalu un pariet spēcīgas mucas garšā. Pec zalas koka mizas. Interesants mazliet etikains.
3.6Weird malty kick, breadish, dusty some overripe fruitiness. Moderate tartness with light sweetness. Weird, but nice
3.5Aroma of barley wine, fruits and swetness. The taste is yeasts, bitter barel.
3.0Glass at Cantillon. Hazy brown color, white head. Sour taste with vinegar, wood, ripe fruits, wheat and barnyard aromas. Sour finish with vinegar, barnyard aroma, ripe fruits, wood and a bit of toast. Decent, but some unpleasant flavors.
2.8Glass at Cantillon, pours a clear dark orange with zero head. Here we go... some malt, some pomegranate, lots of sherry notes, port, some chocolate syrup, some vinegar. Flavor is OK, others may dig this but I'm just not a sherry guy, caramel notes, distinct wood, syrupy, sour is there but it has none of their traditional character, heavy wood pulp. Finishes hot and acetic. I'm never going to be a sherry guy.
3.4Pours clear dark amber with no head. Aromas of earty and dank notes and some notes of plum, figs and dates. Taste is earthy with cellar and some alcohol notes. Mouthfeel is medium bodied with almost no carbonation.
3.4Pours clear amber with flat head. Aromas vinous and light tart notes, winegums, some ripe fruityness. Taste has sweet funky notes of dried fruits, over ripe apples, some winegums
3.4Poured from a bottle @ the brewery.
Pours lightly hazy, still & amber colored.
The aroma is quite funky with some grass clippings, some big alcohol, and a bit of like cognac character.
The flavor is quite high in alcohol, nicely tart with lots of brandy like booze/fruit/wood character. It's lightly bitter, it's odd but it's also enjoyable.
3.7Draft at Cantillon. Almost clear orange golden beer with a small white head. Aroma of red fruits, strong fruits, some vinegar. Taste of strong riped fruits, red malt, caramel, vinegar, boozy finish.
4.1Murky golden color with a ring of off-white head. Musty lambic aroma. Subdued tart funk with an earthy malty strength and funky finish. Well balanced with a nice kick with the higher ABV, prob my favorite Cantillon.
4.0On taps at the brewery >> Deuxième dégustation pour moi après Quintessence.
3.6Pours hazy reddish dark amber colour. Thin white head. Earthy notes, honey-like notes, sourness, hints of sherry and some berries in the aroma. Bitter and acidic beginning. Notes of sherry or cognac in the middle. Vinegary, bitter finsh with notes of honey and grapes. Bitter and sour aftertaste. Rather medium bodied, silky lambic. However maybe too bitter.
3.4Tastes and smells like a stew made from wooden block. Abv is also present. Freaky.
3.3Pours cloudy amber with flat head. Aroma of grass, hay, oranges. Taste is bitter, tart, boozy. Light and smooth body with soft carbonation.
3.7From Bottle at Cantillon. It poorest deep amber - brown with a small, bubbly white head. The aroma is quite sweet upfront, vanilla, oak, candied fruits, tangy berry, must, funk and damp leather. The taste is dry, bitter, chewy, very woody, earthy, must, mouldy, damp leaves, bit of a boozy kick, oily, funky, musty, barnyard filth, black tea, tannin, oily and resin with a drying, woody finish. Medium body, flat with an oily mouth-feel. Pretty heavy duty, but good depth of flavour. Challenging, but also rewarding stuff.
2.7From a bottle at the brewery. It's hazy light brown/amber with no head. It's strong and boozy all right. The aroma is acidic with brown sugar suggestions and booze. Strong acid burns the throat with every sip and a lot of that signature funk is covered up. Not as nuanced as their others I've had and definitely not as subtle.
3.6F: no, some bubles.
C: amber, hazy.
A: funky, bit honey, caramel, sweet fruity, bit vinous, brett, woody.
T: bit malty, funky, woody, fruity, bit harsh tannins on the palate, basement, different from other Cantillon beers, not very easy drinkable yet enjoyed, medium to full body, almost no carbonation, 20cl from bottle @ brewery.
4.0In small tulip at the brewery. Dark amber color with no head, a few bubbles. Wheat, brown sugar, nose a bit of funk. No carbonation, sour, intense, acidic. Wow.
3.4Rami Rami is drinking a Lambic D’Haute Densité by Brasserie Cantillon at Brasserie Cantillon Brouwerij (Cantillon - Brouwerij en Brussels Museum van de Geuze)
Cierpkawy, drewniany, przyprawowy, malo kwaskowaty i malo dziki, dosc ciezki i lepki, alko schowane, dlugie posmaki. Bardziej ciekawostka
2.7Tap at Cantillon. Pours hazy amber. Aroma is sour, booze, oak, funk, Flavor is sour and bitter, oak, booze, funk. Finish is dry. Overall: drinkable, but this is so boozy that it is bordering hobo fuel levels.
3.5P Cantillonbryggeriet.
