Cantillon Zwanze (2015) Wild Brussels Stout

Zwanze 2015, or Wild Brussels Stout, was brewed in March of 2013 and was originally a candidate to be served for the Zwanze Day celebration in 2014.



Zwanze 2015 is Cantillon’s interpretation of a spontaneously fermented stout. Aged for 28 months, Wild Brussels Stout is a blend of Cognac, red wine, and Lambic barrels. The beer coming from Cognac barrels brings a warming alcohol character, while the beer coming from the red wine barrels has a vinous, fruity presence. The fruitiness and roast give this "wild" stout a nutty character reminiscent of wine from Madeira or Banyuls.

3.9 Bottle at Cantillon. Black pour. Aroma of tart and roasted malt. Flavor has tart, smooth roasted malt, ripe fruitm vanilla and chocolate. This is a great dark sour.
3.4 September 19, 2015. On tap at Akkurat. Dark brown, almost black with a very small brown head. Aroma is fruity, light malty and light funky with light roasted notes, hints of coffee, licorice, prunes, leather, some balsamico notes, oak and grapes. Taste is tart, light funky, dry and light roasted. Finish is bitter roastinees, sour fruits with some lemon, grape skins, cherries, some balsamico, hints of funk with some leather and earth. Light to medium bodied, soft to average carbonation. Being a sour stout it’s decent, the roastiness is not too intense so the clash between roast and sour is not too bad. Not my favorite style though...
3.9 Draught at Cantillon, Brussels. Black beer with a nice beige head. Sourish chocolate aroma, vinous, licorice, grapes, tar notes, red grapes, tart, woody notes, some cognac. Sourish chocolate flavor, grapes, hay, licorice notes, red grapes, vinous, vinegar notes, some raisins. Nice mix of lambic and stout, works out just fine.
4.0 Had this at Zwanze day, didn’t rate it yet appearantly... APPEARANCE: black beer, small stable beige head. NOSE: smells quite sour, some chocolate and alcohol comes in knocking afterwards, but faint. TASTE: sourness is clearly dominant, but pleasantly followed by the dark malts and chocolate taste. Very nice experiment
4.0 Pours a nice dark brownish color with a good head. The nose is great with dried fruit and bready notes. Taste is slightly tart with some lemon and sweetness. Overall I was very impressed with this beer.

4.3 Bue en bouteille de 75cl à Anderlecht chez Cantillon, couleur noire avec des reflets rouges, mousse bien présente et effervescence moyenne. Nez sur le caramel et les levures endémiques, Attque en bouche sur le grillé, le caramel et ensuite acidité sur le lambic made in cantillon, bel équilibre global.
4.6 Dark brown colour. Nice white head. The aroma is killing in the positive way. Bread, dark fruits, berries, wine, raisins in the aroma. Really complex. Never had such an experience. Acids, berries, caramel, raisins at first. It is like a two faced person. Some lambic characteristics and the stout character together. Berries, wine and dark fruits in the aftertaste. One would say that it might be messy, but I really call this an innovation. Contreversial tastes are ingeniously connected.
3.9 On tap @ Erzbierschof Zurich on Zwanze Day 2015. Appears almost pitch black, but still able to see through. Short-lasting beige head. Aroma reminds me of a mix between unripe fruits, sourness, cola and woody barnyard. Taste - wow! Actually quite light mouthfeel, nothing creamy there. Still got the roasted notes as well as a great amount of funk, tad bit of sourness and licorice, but not in the stout way. Feels more like a black lambic (does that even exist? Well it does now..). Great experience!
4.0 Medium light-beige head over virtually black beer. Vinous, very little stoutfeatures, lots of lambic. Dried, non-sweet grapes. Sourish, acidic, lactic, near bitter-roasted. Dry, and quite fruity finish. Acidthinning, sharp MF. Quite good, dark lambic, not much more.
4.0 Cola color. Nose is vinegar, lemon, funky, vinous, dark fruits slight roasted malts. Taste is lemon, vinegar, vinous, sweetness on the front end that transitions to tart juicy fruits, oak as it opens up. Some coffee liqueur as well but overall very little of the characteristics of darker beers in the taste; and yet it’s unlike any lambic I’ve had. Soft mouthfeel and lingering tartness and bitterness. Very unique and much better than I anticipated.
4.1 Quintessence 2018. Paired with orange stuffed chocolates. Yummy. Dark brown and murky without a head. Woody, roasty, sour grain, nutty and balsamic. Lovely pairing. // Zwanze at Oedipus Brewing. Tap. Balsamico, stal, zure stout. Backlog from 2015/09/19.
3.5 How: Draught. Where: Akkurat, Stockholm. Appearance: Black colour with a minimal beige head. Aroma: Dried fruit, vinegar, sour. Body: Medium body, low to medium carbonation. Flavour: Acidic, dried fruit, port, vinous, oak.
3.7 Draught at ølbutikken. Murkey brown - offwhite bubbles. Sourish. Barnyard notes. Fruity. Roasted. Apple notes. Dryness. Wooden notes. Herbal notes. Licorice. Nice.
4.4 Tasting notes from zwanze day @dutch trading co, Perth, west Australia. Looks..black/brown with a amber hue Smells.. Musty malts, some vinous notes, some oak too. Tastes.. Musty, salty choc, tart dirty lemons, and a little of each barrel. This was amazing and I wish it was available in bottles/part of the range.
3.8 Bottle at Cantillon. Pours a deep, Dark, reddish brown with a medium sized, off White head. Aroma is very different. Soapy floral, slight roasty, Dark, unripe fruits, Black currants, cola, balsamico, tannins. Taste is sweet and again a little Coke. Roasty bitter, fruity sour, leather, vinous, full but acidic body, low carbonation. Surprisingly good.
3.7 Draught @ Zwanze Day 15 - Bluebox, Grimstad Pours slightly hazy deep amber with a off-white head. Aroma has notes of malt, tart, fruits, funk, caramel, vinegar, cocoa and hint of coffee. Taste is medium sweet, light to medium bitter and medium sour with a long tart, funky, caramel, coffee, cocoa, fruity and light vinegar finish. Body is medium, texture is oily, carbonation is soft.

3.8 Enjoyed at Armsby Abbey for Zwanze Day out of their custom glassware. A dark and dry stout, slightly tannic and funky. Noticed notes of vinegar on the back end and some lasting roastiness. Cool experiment!
3.7 @ Cantillon 15-10-30: Lite svårbestämd doft. Smaken är mycket speciell med syrlig ton samt smak av aska och russin. Torr munnkänsla.

3.9 Bottle @ Cantillon. Pours dark reddish brown with a medium offwhite head. Aromas of balsamico, dark berries, vinegar, malt, funk, caramel. Taste is tannic, funky, dark berries, oaky, vinegar, cherries, oak, light bitter roastiness.
3.8 Bottle at Cantillon, Brussel. Aroma of sour fruits, funk, grapes, oak, red wine, chocolate, dark malt, balsamic notes, vinegar, mild cognac notes. Flavour is moderate to medium sour with a hint of sweetness. Body is medium, some richness. Nice blend of sour/wild ale and stout.
4.1 Bottle @ Cantillon. Pours murky amber with a white head. Roast, caramel, funk, ashes and barnyard. Labre larver and Haribo Matador Mix in a good way. Tart and dry finish. A succes!
3.9 Bottle split at the brewery with James, 24/09/15. Extremely dark mahogany brown with a decent light tan covering. Nose is nutty, funk, musty wood, faint cocoa rub, spice, tarte berry. Taste comprises light manure, soured red berries, funky, oaky, pitted red grapes, damp hay, shades of dry rot, light spice. Medium bodied, fine carbonation, drying close with a puckering halt. Solid dark sour.
3.9 Aroma of cognac, barnyard, light smoke, vanilla, and a bit of burned rubber. Taste not as a stout at all, a bit fruity plum, lots of cognac, not that funky, and the tartness isn’t full on, a bit floral and earthy.
3.3 Bottle at Cantillon. Pours dark brown with an off white head. Aroma is a weird combination of caramel/roasted malts and acidity. Taste is lots of caramel sweetness, liqourice, dry, wood. Not my thing, at all.
4.2 Bottle @ Cantillon. Dark brown body with a small offwhite head. Aroma is "Labre larver", winegums, in other words - when you open a box of "matador mix". Flavour is more tart, light vinegar, dark malt, nutty, cognac notes. Great.
3.6 Bottle at Cantillon. Pours hazy light black/brown. Aroma of sour, light roast, sweet malts, light coffe, dried fruit, nutty, light caramel. Very messy, and not my thing.
