Our Saison is as old-world as it gets. We use 100% Colorado ingredients: Colorado water, malted and raw barley and wheat, Crystal hops and a yeast blend of saison yeast, brettanomyces and lactobacillus. We ferment the beer in custom-made open oak barrel fermenters. After this rustic primary fermentation, the beer goes to other barrels for further aging and flavor development. The result is a citrusy, dry, tart and effervescent beer worthy of sharing.

3.9(On tap @ CBC 2016 Yellow Session, Copenhagen) Pours pale gold with a fine white head. Nose of pretty tart crabapple, honey, aromatic lemons, yeasty and bready, with a solid mineral overtone. Flavour is super crisp, lean, a bit acidic but in a zesty rather than sour way, with the mineral bite of lemon in soda water. Fruity citrus augmented by a hint of grape skins. Funk component is fairly light, making itself known in the finish along with a hint of oak. Quite dry overall, quite mineral. Light to moderate body with zippy carb. Really refreshing and cleansing.

3.9750 ml bottle to snifter (bottled 3/9/16; shared with the Mrs.). Looks good; a cloudy lemon with white head that dissipates into thin lacing pretty quickly. Smells of yeast, hops, wheat, oak, and funk. Tastes like it smells, but more robust, and with some lemon as well. Mouthfeel is medium-bodied and pleasantly tart. Tasty and super-sessionable.

Smells of light wine barrel. Some oak. Yeast. A little fruity and bretty.
Very nice flavor profile. Wine barrel is much stronger. Lightly acidic. A little grainy. White wine finish.
Bright and lightly tart. Well carbonated. Medium light body.

3.5Thank you fonefan. 750 ml. bottle sampled @ Pre-Borefts Ratebeer Tasting 2016. Second Blend 6/25/14. Hazy pale milky citrus, white bubbles. Nose is weird milky barn, rotting fruit, spoiled yoghurt, lemon. Taste is milky zest, lemon, basic sour, spoiled dull yoghurt & good amount of aspirin plus some zest. Body is milky zest. Not getting the hype to be honest.
3.5Bottle shared @ Borefts Pre-tasting. Hazy pale yellow color, average sized white head. Smell and taste wheat, lightly sourish, cucumber, nice balanced sourness overall. Decent body and carbonation. Quite decent.

4.0Bottle at Pre-Borefts tasting. Hazy light golden with white head. Lemon, light yeast but not in a very spicy way, soft bread dough, light mineral, hay. Light sweet and almost medium sour. Medium bodied. Lovely!

3.9750ml bottle courtesy of a loving box from adnielsen. Thanks, brother. Pours a well hazed amber orange glowing hue, a decent darker dulled middle casts out with firmer amber glowing edges. A frothy offwhite head atop is a mellow decent film with frothy ringer atop that laces ok overall. Aromas show a melange of fruit, white grapes and wine meet green apple, pineapple, earth and funky yeast. Cobwebs, pear, jabs of tart fruit and more white and green grape, subtle funk and spicy yeast appeal. Mellow apple ester, pineapple, bready malts, cereal grains and spice. Really nice stuff. Initial is lighter bodied, bready malts and a bit of straw, funk, punchy tart sour crab apple and green grapes. Mellow funk, subtle oak and vanilla meet yogurt, mellow sweetness behind the initial brunt. Some punchy tart grapes, dryness, lingering vanilla, yogurt, earthy and grainy malts, straw, and cobwebs. A bit of stone fruit, fleshy apple and white grapes, white wine and mellow tart trail out. Punchy, tart, flavorful stuff. A nice sour and tart appeal, dry and tannic, mellow funk supports into the backend and finish. A bit of white peach, tart green grape, dryness. Really nice stuff with a pleasant, full nose, solid pour, punchy firm flavors without being acedic or harsh. Very nice stuff.

3.6Bottle from some place in Glenwood Springs on the way out of town. Dated 3/10/2016. Hazy gold pour, short-lived white head that’s gone in a flash. Aroma: oak, citrus, funk, rubber. Very light initial sweetness, followed by vomity tart, dry finish. Medium body, average carbonation, lasting slickness. Overall: this is a nice enough beer, but honestly, it’s kind of a let down.

4.2Bottle, a cool gift. Pours a barely hazy yellow with a tall white head. The aroma is very funky and sour, yet cohesive and enjoyable. Notes of wool, goats, pepper, lemons, raw oak, hay, all hit the nostrils. The palate is super dry with very lively carbonation. The tartness is spot on and it makes this very lemony. Oak and barnyard dance around cheesy, peppery notes in the flavor. Balanced, complex, and delicate. It’s hard to pull this style off to this degree.

Hazy orange with a medium sized white head leaving lots of trace on the glass. Aroma is citrusy and funky with lemongrass, lemon zest, notes of peach, white grapes, brett, oak, light herbal and yeasty spicy notes. Taste is fruity, funky, light dry tartness. Finish is slightly dry, tart citrusy, lemon juice, some oak notes, grape skins with vinous notes. Light bodied, average carbonation, dry.
Very good dry and citrusy saison.

Pours hazy golden with a white head. Aroma has notes of malt, citrus, yeast, tart and funk. Taste is light sweet, light sour and light bitter with a long dry, citrus and funky finish. Body is light, texture is thin to oily, carbonation is soft.
