With an aim of finding a fairly marked coffee after-taste, we have chosen to use the most torrefied barley malt that can be found on the market - Black malt at 1400 EBC. As this malt is a bit acrid, we have “corrected” it by using another slightly caramelized malt (150 EBC), and some brown sugar.
So that the hops can exist alongside these strong caramelized and torrefied malt flavours, we have mainly opted for the strong American hop, Tomahawk."

Bottle from Belgibeer. Black with an amber hue. Aroma of toasted malt. Flavour is chocolate malt, dark fruit, spicy pepper, long dry bitter chocolate fizzy finish.
Aged 75cl bottle from Tournai Fest 2010, bb09/2012, paired with pizza casalinga. - -Aged really well into a fluffy chocomousse parfait full of liquorice and chicoree root bitters, lots of food paring goodness. Dark mahogani pour, fluffy beiga creme. Not overly intense but "damp" coffee bean and chicoree root aroma, some vanilla and earthy sautéd mushrooms. There is an unusual freshness and fluffiness to this Belgian Foreign stout - two departments that I find lacking in Belgian overcarbed stouts (see brewer descr.) - great near-British ale mouthfeel and a hop fruitiness even after 5+ years of aging. Will revisit fresh anyday, and in fact in a week...

Comme souvent chez Cazaeu, la bière offre une dégustation fort équilibrée goûtue à l'amertume subtilement astringente sur la fin. Cependant, on reste dans un produit standard où les arômes torréfiés passe en arrière plan de son profil sirupeux. C'est plein de sucrosité cacaoté et épicé à la réglisse avec de la levure. Appréciable mais son caractère caramel au chocolat a du mal à surprendre tellement il est attendu. Trop convenue dans la ligne la qualité des bières belges.
Bottle shared at a tasting. Amber-brown with a big beige head. Smell of caramel, earthy, coffee, licorice. Sweet, caramel, prunes, chocolate, dark fruits, sourish, dry finish. Medium-bodied, strong carbonation.

Bottle shared at a tasting at troubles’s place. Cloudy brown with beige head. Sweetish aroma with notes of alcohol, yeasts, coffee, some chocolate and caramel. Sweet flavor, quite alcoholic with notes of coffee, hoppy bitterness, yeasts and some fruitiness. Medium to full-bodied.
Couleur bien sombre, plutôt sur le marron bien foncé. Grosse mousse beige qui tient pas mal. Nez... hum... ça paraît oxydé. En bouche c'est assez chocolat, un peu caramel et pruneaux, avec une fin de bouche qui paraît un peu poussiéreuse. Pas mauvais, mais un peu zarbi.
Bottle 33cl. Black with a foamy light brown head. Coffee aroma and some roasted tones. High carbonated beer. Nice taste, though, plenty of coffee. Medium length.
Frothy beige head stayed on a jet black still body.

Medium bodied feeling airy in the mouth with a clean dry back.
Taste is much as the aroma with dark bitter berries, malt, licorice, coffee & a slightly burnt smoky finish.
Bottle, november 18th 2016. Dark brown body with a small beige head. Aroma of dark malt, caramel, cocoa. Taste is sweet and chunky with a mild acidic berry note, grain coffee. A bit messy in balance. Dusty and roasted sweet finish.
Bottle from Carrefour City Supermarket, Brussels, Belgium. Black-brown with red highlights and a thick tan head. It has a liquorice and dried fruit flavour with plum notes and a spicy chocolate, liquorice and smooth, warming oak-vanilla-currant finish. Good.
November 2017 - 330ml bottle at home in Richmond as 'Tournay Noire', 7.6%. Very dark brown with a huge brown head that endures. Very Belgian in appearance. Aroma is wholemeal bread, syrup, some Oreos or bourbon biscuit, Twix. Body is foamy with tingly carbonation. Taste is ashy, candi sugar and booze, burnt fudge, caramelised almonds, little harsh varnish note towards the finish. Pretty sweet and boozy which I can find a little grating. More of a Belgian strong ale than a stout in character for me, despite the way it looks. Interesting to try. (6-5-5-3-13=3.2)
Bottle @ home. Cellared for nearly six years. Pours a dark brown liquid with a medium beige head. Aroma is sweet and delicate vinous with vanilla, prunes, raisins, milk chocolate, coffee. Taste is remarkably dry, smooth roasted with licorice, ash, vanilla, prunes, wood, chocolate, cold coffee. Average duration. Lingering ash, charcoal, licorice wood and coffee. It has aged very gracefully, as young it was sharply roasted but now nicely vinous + smooth and dry.
Belle bouteille, belle étiquette. 33 cl trouvée chez Beer Lovers à Chênée (Liège). Aspect : noire avec tout de même quelques reflets et une mousse beige à fines bulles demeurant sur le verre en assez grosses dentelles. Nez sur les houblons, la cerise, d'autres fruits, le végétal, la réglisse mais aussi le rôti. Bouche étonnante, originale : douce mais herbeuse, sucrée mais houblonnée, caramel mais un peu de café, du chocolat, un peu de réglisse, du gingembre on dirait, une petite amertume et un peu de chocolat. Vraiment un bon stout, plutôt original et pas écoeurant du tout !
Ce stout de la brasserie Cazeau se caractérise principalement par un fumé bien présent et ce dès l'attaque sans être toutefois étouffant. Bière relativement bien équilibré, j'ai eu cependant du mal à entièrement déborder de passion pour celle-ci. ressenti personnel? Peut être, mais j'ai trouvé tout de même l'alliance fumé et fruité des houblons Cascade et Tomahawk légèrement dissonant (à noter l'utilisation complémentaire de Warrior). Remarquable travail cependant sur le malt qu'il faut mettre en avant. Sa robe est totalement noire (137 d'EBC) avec une mousse brune de 3 mm d'épaisseur. Le nez se porte sur le café, le chocolat, un alcool bien présent (7,6 % Abv), mais également sur une belle amertume alliée à des notes de pamplemousse, et en retrait une touche de fumée. Cette dernière prendra beaucoup plus d'ampleur à l'attaque, qui soyeuse, est complétée par du caramel, du chocolat et des notes de pamplemousse liée à l'amertume. L'amertume, bien dosée monte en puissance en deuxième bouche qui, sur la fraîcheur, se porte sur le café et le caramel et toujours sur le fruit. Le fumé est alors en retrait. L'amertume, quant à elle, à 38 d'EBU, donne un ressenti très légèrement supérieur. Celle ci se dévoile d'ailleurs très bien à l'arrière bouche sur le café (notes fruitées moins présentes). La troisième bouche laisse se dévoiler l'alcool qui à 7,6 % Abv est bien dosé en complément du café avant un final d'une bonne longueur, qui, sur une base d'amertume en déclin, se remet plus largement sur le fumé, café et le chocolat. Appréciable.

Certainly not the best stout in the world, but one of the good ones in Belgium for sure ! The colour is dark-brown with a nice creamy-coffee fuzzy head.
The aroma is full of coffee and chocolate, and the taste is surely stouty, but this the chocolate that overhelmed us for once, not the coffee. Pleasant aftertaste.

Bottle @ home. Marrone scuro, quasi nero, velato, schiuma beige, fine e persistente. Aroma piacevolmente complesso, intenso. Tostatura, caramello, lievito belga, zucchero di canna, cioccolato e frutta secca (mandorle). Gusto abboccato, tostato, cacao amaro e caffè, erbaceo da luppolo, liquirizia in abbondanza nel retrolfattivo. Calda, abbastanza carbonata, rotonda, corposa, di buona carbonatazione. Armonica ed equilibrata.
Robe noire avec légers reflets rouges. Col de mousse court à moyen, beige, moyennement aérée. Tenue assez bonne. Nez sur le malt torréfié, toast grillé, petit fumé. Attaque fort carbonatée, torréfié, café. Suivent ensuite des saveurs plus caractéristiques d’une brune : fruits mûrs, confits, caramel, liquoreux. Le houblon amérisant, herbeux perce légèrement en troisième vague. Texture moyennement aqueuse, carbonatation assez forte. Une bière noire qui s’appuie sur une brune pour donner une belge complexe.

75cl bottle from la caisse de Bieres. Pours a quick fainting brown head, with strong caramel and fat candy butter aromas. Dark black colored body. In mouth, less sweetness and middle class malts.tentative classy Belgian dubbel but lacks roundness.

Share bottle at RB/HD at Gunnar´s 29.11.16. Dark copper. Beige head and lacing. Mild aroma of dark malt, roasted barley and vanilla. Stronger taste, with dark chocolate, salty liquorice and a hint of herbs. Fine mouthfeel and good drinkability!
Flaske fra Belgisk Bryg, delt på RBHD-treff hos Odd Gunnar nov-16: brunsvart med fint skum som varer. Mild aroma men pregnant smak med mørke bær, sjokolade, mørk karamell og litt lakris. Elegant bitterhet i den lange, halvtørre og myke ettersmaken.
Shared bottle at local tasting. Pours almost black with a small off-white head. Aroma is shy, herbal malty, with notes of liquorice. Taste is moderate sweet, liquorice and herbs, very good one.
Very deep brown body with a tan and fully lasting head that laces the glass well. Moderate aroma of roasted malt and baker’s yeast, with a generic fruity background, raisins and ash. Strong flavour of dark roasted malt, Belgian yeast and spices, and coffee, fruits and hints of solvent in the back. Moderate bitter taste. Mid-bodied, oily texture, soft carbonation. An ok brew, but both the baker’s yeast in the aroma and the unclean alcohol notes make this one a bit too close to a homebrew.
