The base beer is the recipe of 2014 Stone Homebrew Competition winner Chris Banker, an intensely flavorful milk stout brewed with coffee and spices to mimic the rich flavors of Mexican hot chocolate.



IN THE MASH: U.S. Pale, Maris Otter Pale, Crystal, Black Patent, Coffee Malt & Chocolate Malt IN THE BOIL Challenger & East Kent Golding Hops



SPECIAL INGREDIENTS: Lactose, Flaked Oats, Coffee, Vanilla, Pasilla Peppers, Nutmeg, Cinnamon & Cocoa



AGED 3 Months in American Oak Kentucky Bourbon Barrels



CELLAR NOTES: Time spent in bourbon barrels gave an already complex beer even more complexity and flavor intensity, layering additional caramel-like and vanilla flavors on top of those already present. Aromas of rich coffee and dark chocolate are followed by nutmeg and cinnamon a lush, heavy mouthfeel laden with charred oak and toffee engulfs the palate on the first sip. Lingering pasilla pepper and soft oak flavors persist through an exceptionally long finish in this intensely rich and satisfying beer.

4.9 From backlog. Taster at Barrel Age Tasting at Stone Company Store Oceanside, ca, during SDBW 2015. First batch. Black with beige head. Roasted malts, Chocolate and barrel. Smooth. One of The best beers i ever had.
4.3 The 2014 version (retired). It has been a great for over 4 years and it tastes great.
4.4 Bottle, 500 ml at Greg Koch meet & greet at Fakin. 2016 version. Shared with others. Black with beige head. Very nice coffee aroma, roasted, sweet, chocolate, vanilla, cocoa, bitterish finish. Quite smooth. Soft texture. Medium to full bodied.
3.8 500ml bottle from Woodmans in Waukesha, cellared 8 months and shared with ck1, PracticePlastic, BeardedBrewerH, and BrotherWithThreeSons. Very dark brown pour. Big cinnamon, pepper, and nutmeg presence. Quite sweet. The barrel is there, but the cinnamon actually cuts through it, to the overall detriment. Sweet, barrelly and cinnamon-y. 13.7
4.1 Bottled 500ml. -at Fakin Zagreb, shared with Marko, kajser27, hrabren and JFK. Pitch black coloured, medium sized brown head, chocolate, cocoa and light peppery nose. Roasted malt, chocolate coconut, light peppery and notes of bourbon barrel with mild spices and wood in the finish. Smooth and silky. Great brew.
4.1 Unclear, dark brown to black colored, small tan creamy head. Aroma is of roasted malt, chocolate, some caramel, spices, coconut, cocoa, bourbon barrel. Taste is medium to very sweet malt, caramel, dark chocolate and cocoa, roasted malt, spices, cinnamon, bourbon vanilla, medium roasty bitterness, bit pepper. Full bodied, soft carbonation, creamy. Very nice!
4.4 Bottle from Fakin (don't know exact batch). Extreme coconut chocolate! Cocoa, some vanilla, burbon, woody light spices, not really much of a cinnamon, maybe light nutmeg. Pitch black color with minimal brown head. Sweet cocoa and chocolate taste, cinnamon is definitely noticeable in taste, some nutmeg, coconut and burbon wood. Medium to full body, soft carbonation. Awesome! Additional bottle, thanks to Vasilije, Stone Xocoveza Charred 05. 8 6 8 6 16 / 4.0 Walnut and walnut liquor aroma, chocolate, lots of burbon, bit funky and nutty. Pitch black color with minimal sized brown head. More sourness in taste, chocolate, coffee and berries, blueberry mostly, ton of burbon and some coconut. Unfortunately I can't see any of the cited spices. Medium body, soft carbonation, bit warming. I liked it a lot this time too, but it seems I was much more thrilled last time. I'm gonna leave the bigger rating.
3.9 Bottle at Fakin meeting with Greg Koch, shared with Marko, Kaiser, and Ogi. Dark brown, small off-white head. Chocolate, cocoa, light spices, light smoked chilli pepper, dark malts. Very rich. Chocolate, sugary, fruity flavours, roasty. Sweet. Smooth. Light alcohol. Lasting finish.
4.1 Bottle, with JFK, Hrabren, ogivlado & kajser. Fantastic full aroma, milk chocolate with coconut and mild pepper. Dark chocolate taste, carame, sweetish, coconut, chillies, ending dry and a bit tannic/woody. Excellent! Truly excellent sipper.
4.0 Proefglas van fles. U: Zwart met een dunne licht bruine schuimkraag. G: Koffie, aards, leder, alcohol, chocolade en lichte toetsen van chipotle. Bij opwarmen wordt dit een ware vanillebom. S: Moutzoet met een lichte moutbitterheid. Chocolade, mokatine, licht koffie en vanille. Alcoholwarmte. M: Volmondig, licht sticky en lichte carbonatie.
4.2 Fles. Zwart bier met licht bruin schuim. Geur: eerst stoofvlees, wild, hertenkalf met champignon, daarna aards, koffie, Ovomaltine, noten, eekhoorntjesbrood, chocolade. Smaak: speculaas, licht zoet, porto, whisky, zweempje zuur, kruidig, koffie, wat aards. Medium koolzuurprikkel. Complex degustatiebier, lekker!
4.0 Taster @ Kill the Cat Stone Brewing Event. Very dark Ruby. Smokey dark fruits and dark chocolate nose. Palate is the same. Super smooth! Beautiful!
4.2 LCI. Uit de fles geschonken. Heerlijke imp stout: rokerig, chocola, koffie en ern lichte bourbonsmaak. Prima aanvulling op het origineel!

3.8 Bottle at home. Pours deep reddish brown, nose is floral, toffee, caramel, vanilla, light fruit, taste is chewy, oak, vanilla, caramel, sweet.
3.0 500 Ml bottle cork and caged Black with ruby highlights. Light tan head that falls to a collar. nose is oak, coffee, cinnamon, soft bourbon, cherry. taste is sour tobacco, sour toffee, sour cherry, sour oak and bourbon. Much lighter than 10%, more like 6%. easy to drink but does not meld together well. very disjointed beer. Interesting but not that good.

3.8 Refrigerated 0.5 L brown bottle corked and capped. Aroma is coffee, medium body, medium carbonation, and very little lacing. Taste is coffee, bourbon, cinnamon, some wood, and some chocolate. I prefer this over the base beer.
4.3 2016 Series - Batch #3 - ABV 9.6% Pours pitch black, smooth, medium fluffy tan head, nice lacing. Aroma of roasted malts, dark chocolate, coffee and spices. Tastes quite sweet, with roasted malts, rich coffee, chocolate, spices, oak and bourbon. Thinner than expected mouthfeel, but still rich, a good chew, soft carbonation and long feeling with sugary chocolaty after taste. Not a sipper as I expected but a very good ale, in any way you look at it.
4.0 From a 500 ml bottle. This one says Small batch 2016 Series Batch #3 at 9.6% abv. Into a St Bernardus stem glass this pours dark brown with small brown head and some lace. Aroma of dark malts, coffee, spices. Medium carbonation and big mouthfeel. Flavors of dark malts, dark chocolate, malted milk balls, bourbon, coffee, spices. Overall big, bold, bodacious and tasty for a coffee-bourbon big beer enthusiast!
4.5 2016 batch 3. Pours black with brown head. Aroma of bourbon and campfire. Very roasty and earthy with lots of bourbon. A little spice like cinnamon and a little dark chocolate. Pretty heavy.
4.0 Bottle from Brewcraft at home alongside 2017 Xocoveza for comparison. Opaque black pour with minimal light tan head. Aroma is bourbon barrel - vanilla, booze, wood - much less cinnamon, nutmeg, and cocoa. Still present but under a layer of bourbon barrel. More refined maybe, less pronounced spices, less coarse, more subdued. Taste is similarly rounded versus the regular xocoveza, and much bigger and boozier, more complex but . Wood, alcohol, vanilla, cinnamon and warm spice, some chocolate. Chili is still evident. Very sharp. Palate is light for such a big beer. Really good. And sort of how you’d expect a barrel aged xocoveza to taste. Very clearly aged vs the original. But not sure I prefer it to the normal one, as it’s a little less special.
3.9 Black color, small brown head. Aromas of cinnamon, chili, ash, coffee, chocolate and fudge. Sweet taste of chocolate, cinnamon, bourbon, vanilla, smoke and gingerbread. I like it!
3.9 Bottle @Beershoppen, Kolding. Nearly black, no head. Burnt cocoa aroma. Chocolate and coffee. Chocolate and cocoa flavour. Coffee and vanilla. Light bourbon boozyness. Nice.
3.7 Bottle, 5cl sample @Beershoppen, Kolding. Pours deep opaque black with a small, creamy, beige film head. Aroma has lots of fresh ground coffee, chocolate, light vinious, hazelnuts, vanilla, soft oak. Low carbonation, fine dry and quite creamy mouthfeel. Flavour has sticky sweetness, chocolate, firm coffee bitterness. Quite a bit of vanilla and oak. A bit too sweet actually.

4.0 500ml bottle. Poured a nearly pitch black, very dark brown color with a small tan head. Aroma was really nice chocolate, coffee, roasted malts. Nice woody vanilla bourbon notes. Some roasted notes, light spices. Pretty tasty actually.
4.3 Bomber shared. Dark pour.  Aroma, vanilla,  chili peppers. Taste is amazing, chilies up front, vanilla, chocolate.  This is amazing!
4.0 Pours black with one finger high latte brown head. Aromas of chilies, chocolate, vanilla, roasted malts, spices, dark fruits . Taste has subtle notes of anjou chilies, chocolate, coffee, cinnamon
4.0 Pours black with fairly tall tan head. Aroma of peats, cedar wood, burnt malt, chocolate, vanilla. Taste is roasty, burnt, vanilla and chocolate, sweet and somewhat sticky finish. Medium bodied and smooth with soft carbonation. Edit: five minutes later the cinnamon is coming through loud and clear!
