Our third anniversary beer up-sizes Chocolate Sombrero, using extra ancho chile and adding chipotle pepper. We aged the brew 100% in Wild Turkey and Heaven Hill bourbon barrels. May it leap onto your palate majestically, like a luchador who flies into the ring from atop the highest rope.

4.2 Appearance and aroma are nothing special, but the flavor is divine. Judicious use of the booze barrels are subtlety evident and supportive of the bolder coffee, cocoa, black malt, flavors. Perfect palate. Fairly drinkable.
3.4 On tap. Pours brown with a thin tan head. Aroma of roasted malt, vanilla, sweet malt, nougat. Flavor of bourbon, roasted malt, vanilla, chocolate malt. I don’t really get any of the chile notes, just lots of bourbon. Ok. 7/4/6/4/13 (3.4/5)
4.0 650ml bottle from Cork Keg & Spirits, brought by bananabi11, cellared for 2 months and shared with him at cellar temperature. Thx E! Chasing Clown Shoes, so a bit of a white whale. Black pour, brown head. Aroma has chocolate, caramel light chile, truffles. Taste is sweet caramel, dark chocolate, some roast. Medium to full bodied. Low carbonation. Blend is good. Some alcohol. The light chile is an interesting addition. Finishes well mixed between bitter and sweet. Clown shoes has really nice stouts. Big fan! 15
3.8 Bottle. The pour is dark with lacing. The aroma is chocolate and spice. The taste is nice. Not a lot of spice which I was glad, but warming. Not a ton of barrel. A solid beer.

3.6 Bomber->snifter. Black with small khaki head. A: chocolate, oak, cocoa powder, chili powder, vanilla. Dusty. T: sweet cocoa, malt, cinnamon, green chili, dust. Real dusty component throughout. Eh, ok.

Taste is of bourbon, oak, vanilla, coconut, roasted malts and some sweet and bitter .... Has some warming abv and oak in the finish .... Sweet and not very carbonated with a thin body .... Like drinking whisky with chocolate ... Sweet brew
4.0 Served on tap at griffon gastropub. Dark black color with a brown head. Sweet bourbon aroma. Strong bourbon flavor with a slice kick at the end. Heavy body. Very good but intense. Lot of bourbon and alcohol.
4.0 Not a fan of whiskey, but must try some of these as barrel aging is so en vogue. CS can be a bit of a crap-shoot, but they have some great brews. This one pours with a darkness and thin skim of mocha foam. Aroma thankfully has nice rich notes of cocoa and roast amid the obvious booze. Flavor is similar, with more of the whiskey coming through, but still yielding some room for chocolate and vanilla. My favorite aspect of this is by far the incredibly smooth mouthfeel and mild, clean finish. Quality brew for sure. If only I could enjoy whiskey...
4.0 bottle poured into a snifter..opaque with a thin tan head..aroma of bourbon, coffee,chocolate,pepper..tastes of all former with some vanilla..medium body ..good stuff.
3.9 The beer pours very dark brown with a dense tan head. The aroma has sweet roast, vanilla, chocolate, bourbon and oak. It has a full smooth body that’s velvety and had light gentle carbonation. It starts with milk chocolate, oak, bourbon, rich roast and some berries. The finish has cocoa nibs and mild astringency. Excellent imperial stout.
3.9 Bottle shared by a friend. Pours darkest brown with a thick beige head. Aroma of cinnamon, chocolate and bourbon. Malty and chocolatey flavor with cinnamon and chili pepper before a boozy finish.

It is a little on the thin side for me. The heat from the chillies is slight but after I stopped drinking I would feel some heat on my tongue. I would suggest this beer to a friend.
4.1 From a 22 oz bottle shared at home. Pours a clear cola with a tan head. Aroma of dusty cocoa. Favors of chocolate and chili with big bourbon notes. Very nice blending of some strong flavors. Smooth, bitter roast finish.
3.6 Pours a thin black with a thick mocha head. Aroma of milk chocolate, roast, vanilla. Taste follows with peppers in the finish with a hint of bourbon and oak. Very nice but a bit thin
3.9 Bottle. Bottled on 03/04/16. Black bodied with a short tan head. Aroma is boozy with vanilla, molasses, caramel and some toasted coconut. Taste is peppery spices, Bourbon, vanilla, caramel, sweet malt, roasted malt, chocolate and soft toasted coconut. Body is medium-full with a strong, bubbly carbonation and warming finish. Ends with more Bourbon, vanilla, chocolate, spices, pepper notes, caramel, sweet malt, molasses and light coconut.
3.8 Bourbon, oak, coconut, and fudge nose. Clear brown, thick beige head, abundant glass coating. Bourbon, oak, prune, some chocolate hints. Vanilla and peppermint also present. Full body, soft carbonation, alcohol obvious. Tons of complexity, very boozy. Oddly, no chilies detected heat or otherwise. Much more of a bourbon bomb.
3.9 Pours dark unclear blackish with a darker beige head. Aroma brings some vanilla and straight bourbon smooth in the nose. Flavors bring big bourbon as well with some chocolate and light chile spice on the backend.
4.5 2016 batch. From the 650 ml. bottle. Black as night pour with a lingering tan head. The aroma brings out chocolate, dark sweet malts, raisin, and black licorice with a a touch of booze from the Bourbon Barrel aging I expect. No hot spice character as I anticipated. Bold, creamy body. The taste is sweet malts, chocolate, and black licorice but the hot Mexican spice characters are subtle and downplayed. They do show up but they do not overwhelm. An excellent beer.
3.9 Aromas of chocolate, cigar smoke, barrel wood, bourbon, cocoa, oak, charred dark malts, raisins, plums, cinnamon, toffee, prune juice and subtle chile heat. Pours pitch black with a very slim brown rim and moderate lacing. Taste brings smooth as silk chocolate, cocoa, brown sugar, cinnamon, spices and fudge upfront. Mid palate offers toffee, oak, bourbon, vanilla, barrel wood, raisins and plums. Finishes earthy and chocolate filled with residual bourbon, cinnamon and spice. Noticeable char and burnt campfire ash present among the palate as well. Overall, a very fine treat with lots of complexity. Much chocolate, cinnamon and spice define this beer yet, vanilla is slightly subdued. A rating.

4.1 Bottle. Dark with slow burn mocha head that diminishes, but sticks around. Aroma of cocoa, cocoa, cocoa. Some bourbony vanilla oak and a hint of chili pepper. Flavor is cocoa, bourbon, subtle vanilla, and even subtler but noticeable pepper. Mostly the heat, no real pepper flavor. Wonderful silky mouthfeel. Very slight heat. An enjoyable beer. At some point in the not too distant future, when there are so many BA beers that they can no longer sell out right away or charge $15-30 for bombers, I hope they still make them and charge more like $10. I’d buy a whole lot of these at $10. At $14, or $20 for Speakeasy Syndicate, or $33 for Eclipse, I really think a lot of people are going to lose interest in all but the very best ones.
4.3 Bomber into a pint glass. Pours black, with a small tan head that fades quickly. Nose is coffee, cocoa, and chili pepper. Taste follows. Taste starts with coffee and cocoa, then the peppers kick in, followed by a nice bourbon note on the finish. Excellent.
3.9 Very enjoyable. Chocolate and chile notes are mild. Bourbon barrel is strong.
4.0 Poured from bottle dark chocolate with a nice one finger tan head. Aromas of chocolate coffee bourbon and roasted malt. Taste is nice full creamy with notes of caramel and a balanced bourbon finish with a nice spice.
4.3 Tap at hopcat, Aroma is coffee, chocolate and bourbon. Taste is a nice blend of chocolate, peppers, vanilla, and some dark roasted malts, finishes smooth. Very nice
4.0 Draft at Hopcat GR - pours jet black with thin tan head . Chocolaty aroma with hints of cinnamon spice . Smooth cocoa and bourbon flavors with bits of warming spice on the finish . Very good .
4.1 Poured into a snifter. 3.25 A: Black color. One finger of frothy light brown head, which fell quickly and left no lacing. 4.5 S: Smell of this is great. It’s totally bourbon forward, but it’s just what I was in the mood for. Big leathery start with lots of vanilla. Melon, raisin, and caramel. The base beer offers gives a nice roastiness with chocolate and molasses. The chiles are buried way down in there. 4.25 T: The taste integrates all the wonderful smells together in a very pleasing way. The bourbon is relatively less powerful which allows the base to come out stronger. Again lots of leather, vanilla, raisin, and chocolate. Layers of caramel, hints of molasses, plenty of roast. Very nice overall. 4.75 M: Heavier medium body. Good moderate carbonation. Lots of great creaminess and supremely smooth. The alcohol is so very well hidden.
