De Dolle Stille Nacht

Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker.

4.1 Hazy golden with a good white head. Excellent lacing. Aroma: heavy on malts - hay, bread, honey. Some hops - a hint of citrus, gooseberry. Alcohol. Mouth: Sweet but with both a moderate bitterness as well as a fruity freshness to balance. Full body. Smoot texture. Low/medium carbonation.
3.9 On tap at the Brick Store Pub. Pours almost clear, golden, with a big, bubbly, beige head. The nose is grapefruit zest, cloves, rosemary, lime zest, and dry vermouth. Dry and citrusy, with a dusty and creamy bitterness. Beautiful.
4.2 Millésime 2017. Robe dorée avec reflets oranges. La texture est fat, c'est du lourd, c'est riche, bien balancée puisque la rondeur assure une forme de douceur qui masque les 12 degrés. On sent bien le sucre candi mais ce n'est pas écoeurant pour autant. Bière qui se joue des codes des bières de Noël avec originalité, classe.
4.3 Draught @ SKAAL Sønderborg. Pours hazy dark blonde with airy white head. Clear aroma of fruit and malt, with vinous notes and spicy hints. Sweetish, malty and fruity onset, giving way to dusty, hoppy and spicy notes, which are themselves replaced by dry, vinous touches. Dusty, spicy and malty aftertaste with acidic hints. Warming alcohol presence. Fantastic. Complex, tasty, potent and well-balanced. A journey inside the mouth.

4.5 33cl bottle from Pauwels drink store in Courtrai, Belgium drinking 5/10/2021 brewed in 2019** as it says on the cap. Pours a hazy dark golden with thin creamy white foam on top and good lacing. Aroma of belgian yeast, dried fruits, candi sugar, spices, caramel, dates, raisins. Taste is quite complex and sweet enough with malty, spiced and fruity notes, orange, ripe fruits, caramel, dried fruits, yeast, raisins, candi sugar, a strong booziness from the high 12% abv that seals everything up wonderfully. Warming, smooth and delicious, with a sweet warm finish. Full bodied, slick oily texture, sticky, soft carbonation. Simply warming and delicious belgian, outstanding.

3.5 It pours golden blonde and murky; the head is off white and dissipates quickly. The aroma has notes of: candi sugar, caramel, wild-honey, and floral notes. The taste is meduim sweet that finishes dry. The palate is medium bodied, has medium carbonation; the finish is long and oily. Overall, it's delightfully floral.
3.6 Gift Bottle 330 ml 2020 Vintage Aroma: apple, sugars, alcohol, faint hint of prune, almonds. Old school vibe in a good way. 7+ Look: poured with fine haze, amber gold. Head quickly vanished, Palate : full bodied, frontal frisky feel with mellow backing. Sticky sugars on lips, rounded. Taste: apple with brown sugar and sprinkle of almond, drying alcohol on side. Notes: brought me back to early days of craft beer revolution. Thank you for that.

4.0 Bottle. Golden, almost clear, white foam. Aroma: esters, apple, pear, higher alcohols, dried pear, good. Taste: soft, pear, apple, a little strawberry, mild bitterness, very balanced, great stuff.

3.9 Bottle from JefVerstraete, thanks. Malty aroma and taste, spicy yeasty notes, caramel, medium bitter, light sweet notes. Full body, malty caramel spicy bitter finish with light alcohol warming notes. Well ballanced, good.
3.9 Bottiglia. All'olfatto si esprimono sentori di sottobosco e di vegetazione. L'intensità olfattiva è molto elevata e la maniera in cui permane è considerevole. Il mantello birroso superiore ha una buona tenuta. La grandezza delle bollicine è medio-fine, con carbonazione. Il liquido si presenta velato. Il colore è giallo dorato carico. Il corpo è strutturato e articolato. L'amaro è di media potenza. La forza gustativa è elevata e la durata è lunga. Il gusto è piacevole. Le sensazioni boccali finali risultano di birra beverina. Il retrogusto è intenso. In bocca l'aroma è quello di miele, frutta secca, pane cotto di recente, resina, agrumi, frutta passita, mandorla fresca, spezie, curry, arancia, cream caramel, vaniglia, albicocca tabacco e alcol presente.
4.0 There is a place to write bottled date on label corner, but it says instead "see cap". You look on cap and written 2020x (the x probably means a shitty year - yes, 2020 :P). Crazy amounts of tiny bubble carbonation, very active. Amber, orange colour with golden highlights and very tiny particles through it. Fairly creamy, warm off-white head, great retention and some creamy-foamy lacing. Alcoholic, warming nose with some nice spices, orange notes and Belgian yeasts, sugars. Hints of bananas from light wheat, also sliding in the taste. Pretty rich with the alcohol burning the sweetness. The dry finish helps, and the lingering is nicer because of this, than the beginning. Even some decent notes of dark fruits in there. Silky, oily mouthfeel at the start. This one becomes much better as it breathes. A nice warming experience on this very cold winter night.
4.7 330ml bottle from the LCBO. Pours an opaque ruby brown/murky orange colour with one finger of white head which reduces into a film after a minute or two. Complex aroma on the nose with notes of Belgian yeast, honey, ginger, clove, banana and a whiff of citrus sourness. Taste matches the aroma. Full bodied with moderate carbonation. Leaves an oily palate. Overall, an outstanding night capper dessert beer.

3.5 A 330ml bottle, bottled in October 2019. Poured into a De Struise tulip glass. It was a hazy orange colour with a big three finger white head that had good retention and nice lacing. Aromas sweet, candi sugar, honey, boozy, candied orange peel, Belgian spices, with slight notes of apple and banana. Tastes of light to moderate sweetness, boozy, candi sugar, fig, apple, orange peel, pear, peppery spice, with notes of clove and banana. Boozy, medium bodied with moderate carbonation. Overall, it’s a sipper, but the combination of sweet and boozy, although not too extreme here, is still not my favourite.
4.1 Bottle from Etre, bottled Oct 2019 Pours a lightly hazy light gold color with a good sized frothy bone white head that shows great retention. Aroma is filled with honey like maltiness light candy sugar and earthy spice. The flavor is intense caramelized honey like sweetness, confectionery sugar, with a bit of clove and peppery spice. Light to moderate warming alcohol. The last quarter of the bottle had to sit until the head from the initial pour settled down. When I poured it in it was considerably darker, sweeter and a bit more cloudy than the original pour. Reminded me of that darker chunk at the bottom of the Italian Ice package. Great brew and a wildly complex sipper, my first time and I guess I need to seek this out more often.

3.4 De Belgische traditie van Kerstbieren spreekt erg tot de verbeelding. Mijn verwachtingen voor 'stille nacht' waren dan ook hoog gespannen, maar worden eigenlijk niet helemaal ingelost. Mooi gebrouwen bier, dat zondermeer.
4.6 2019 bottle. This is an awesome beer. At 12%abv it's a bit special and too be savoured and sipped. Taste bomb of flavours. Mildly sweet and lightish mouthfeel. One i will buy again.

3.5 11.6 ounce bottle at The Winking Lizard in Copley, Ohio. Smell the Belgium yeast. Golden in color with white head. Addicting sweet. Very little yeast notes. 12 percent of smoothness where you can’t taste the alcohol. Sweet and just a little yeast aftertaste. Just a wonderful beer. Cheers!
3.9 Flaska från Etre. 2019, ett år gammal. Gul-guldig, smådisig med hög vit krona. Honung, spannmål, vita druvor, jäst, estrar, äpple. Stor, snällt eldig med maltig och sockrig sötma i förgrunden. Tydligt syrlig ton som rundar av den något också.
3.6 Pours a clear, deep amber coloration with a tiny, wispy head that immediately fades to nothing and lots of fine sediment suspended in the glass. Smells of caramel malt and dark and estery fruit and spices, with notes of rasisin, plum, red apple and some candi sugar as well. Taste is a good balance of caramel malt, sticky toffee, candi sugar, dark fruit, with notes of raisin, fig and plum and estery fruit and spic, with notes of red apple, gooseberry, banana, orange rind, clove, cinnamon and black pepper. Finishes syrupy sweet, with some dark/estery fruit and spice lingering in the aftertaste. Full mouthfeel with a rich body and low carbonation. This certainly does have a certain christmas fruit cake feel to it, with its rich complexity of sweet, fruity and spicy nuances and while I realize that this is a much beloved beer that makes for a great, warming sipper by the fireplace when it's cold outside, it's just too sugary sweet and boozy for my personal taste. I can absolutely respect the deep character of this beer and the craftmanship that went into it, but it's just not for me personally at all to be honest. Mouthfeel is full, but with rather low carbonation.
