3.5Musty grapes, wood, funky red berries. Hazy brown, small, creamy, off-white head. Light bitter. More citrus fruits, wood, lemon peel, marmalade, soft carbonation, medium to full bodied. Very nice, right and intense. Bottle at Chriso & Ruth’s pre-GBBF shindig, Kensal Rise.

3.9Bottle shared at Chriso’s and Ruth pre GBBF shindig, August 5, 2017. Creamy amber. Nice vinious apple vinegar nose. Autumny apple peel fermentation thing. Sourish feel, some sweet caramel that’s gone sour. Very nice actually.
4.0Bottle care of Tom Cadden. Opaque deep rich golden amber with very thin head. Nose is musty, orange, touch sour, damp cellar, spice, orange liqueur. Taste is orange bitter, little sour, tangy citrus, orange liqueur, citrus peel, slight damp cellar.
3.9Bottle shared at Chris & Ruth’s pre-GBBF Shindig 2017 - Part 1. A slightly hazy orange golden beer with a small off-white head. Aroma of dried fruits, zest, apricot ,wood. Taste of mild tart fruits, zest, peach, dried fruits, bourbon, awesome!
4.6Bottle, picked up in Amsterdam by me and miles back in my suitcase and carefully stored for this special event: my 10,001st rating. Shared with my various tasting group members. Capped and corked, not a gusher, so good start (plus Lori says the cork smells like brown sugar!!). Medium orange-amber, pillowy white head. Beautiful aroma of cooked pears, maple syrup, candied orange, very reminiscent of a tawny port. The palate maintains the same oxidized notes (in a pleasant way), with a sultana sweetness and vinous complexity. The finish is tart and dry and woody. Just amazing. I really love the rounded sweetness and unfolding complexity of this brew!

The nose shows tart acetic notes with a light red wine notes of plums and blackberry.
The palate is highly carbonated and medium bodied. Moderately tart with light acetic notes and light notes of red wine - plums and blackberry again. Not bad!
4.6Hazy medium amber color. Walking into a sauna with tons of cedar, sour, dried apricots and apple skins. Tons of stewed oranges stewed, apples, apple skins , mixed spices, dried fruit in the mouth, oaky finish. Super malty. For 12% this is fantastic. Just out of this world.
3.9Bottle opened up at the 2016 Ottawa Year-end Gathering. Clear copper with a beige head. Red wine and oak dominate at first but then settle down once things open up, allow room for yeast, fig, candied orange peels. Moderate carbonation and full body, smooth, dries out with a nice boozy finish. Liked this one.

A: Opaque brown with a creme color head and lacing.
N: Leather, caramel, oak, red wine, oak, peppercorn, clove, grapes, toffee, vanilla, fig, raisin, cherry, sherry and honey.
T: Sweet and soured. But not in that infuriating infected way.
M: Medium-heavy body, very sticky, spritzy carbonation, no alcohol.
O: Beautiful beer. It’s so well rounded and the bordeaux adds so much to its already sterling profile.
4.3Bottle thanks to Ayrton. Pours a mostly clear red orange color with a large white head. A wonderful woody fruity vinous oak. The flavor is big sweet cherry, oak, rich red wine. Lovely. Big sherry flavor. So smooth, no heat. The barrel is wonderful here. smooth and melodious flavors. Decadent. I could drink a lot of this. Superb Belgian beer.
4.8Rating #3500, my 400th Belgian rating. Bottle, leaking cork, but still fine. Amber color with white head. Aroma is nutty, sherry, vineous. Taste is vineous, tart, figs, sherry, red wine, nutty, so much complexity. Medium to high carbonation. Totally worth its hype. One of the best drinks I’ve ever had.
4.5Bottle, courtesy of SinH4, many thanks! Pours hazy amber. Aroma is strong wine barrel, but also sweet. Body is heavy boozy, vinous, fruity, even a little sweet, but also a little sour, candy, lively to fizzy carbonation. Palate is rather light, even tart, lingering with the wine characters. Absolutely worth the hype, an outstanding beer.

4.4Hazy amber color with a medium sized, off white head that left nice lacing on the glass. Aroma of caramel, wood, bordeaux, vanilla, and light alcohol. Taste of vanilla, wood, caramel, dark fruits, red wine, and a lightly tart finish.
3.9750 ml bottle shared at the original Chez Moeder Lambic’s cellar. Hazy orange color with off white head. Malty and yeasty aroma, caramel, bread, citrusy fruity, hebal, leather notes, vinous, wood. Acidic sour taste. Medium oily body with soft to average carbonation.
4.2Bottle: Poured a reddish color ale with a huge off-white foamy head with great retention and excellent lacing. Aroma of vinous notes with some malt notes also discernable. Taste is an incredibly well balance mix of flavours including some vinous notes with some oak, tart, malt with some residual candi sugar notes and some dark fruits notes. Body is full with excellent carbonation. I had concerned the bottle might have been a bit too old but I should not have worried.
4.0750ml bottle thanks to Toby. Murky brown pour, initial beige head fades. Immediate fruity nose, plums, prunes, raisins, yeasty, wooden notes. Taste is more of the same, some quad, some dubbel, with more of the wine and barrel notes in evidence. nice lingering flavor and gentle warmth.

Nose is very complex tons going on pit fruit sweetness wine barrel notes some berries a great belg yeast spice. Taste is more of the heavy complexity wine barrel pit fruit rich malts yeast notes and a great finish.

Portrait: Une robe cuivrée sans mousse. Un nez vineux de caramel fruité, fort complexe. Une bouche tout aussi vineuse, fruitée, piquante avec des saveurs intenses de caramel. Tout simplement superbe.

Pours deep copper/orange with low-medium off-white head. Good lacing. Aroma is of alcohol, barley sugar, vinegar, acidity, wine. Taste is of alcohol, barley sugar, acidity, belgian yeast, very slight cardboard. Palate: Full bodied. Soft carbonation. Overall: Good. A bit flander’s brown-like.
3.9Couleur cuivrée ou orangée, un peu tangy, bois et fruité, oxydation, traces de vin, onctueuse, bulles tranquilles, pêches, petites baies. Suspicieux dès le départ, très bonne à l’arrivée malgré le développement de quelques notes acides qui arrivent sur le tard.

My rating no. 5000, a nice celebration of both 5k ratings and my 40th birthday at the same time. :-) Pours a clear deep bronze-hued orange body with a large rocky off-white head, sparkling with promises of beery delight. Aroma is red berries, tart lactic notes, wood, red wine, candi sugar, vanilla and hints of alcohol, caramel, yellow apple peel, spices and acetic acid. Taste is caramel, red berries, wood, yellow apple peel, tart acetic tones, red wine and hints of grains, candi sugar, alcohol and vanilla. Medium to full body, high carbonation, semi-dry finish. Highly complex and pretty unique in its composition, this is honestly one hard beer to wrap my vocabulary around. Almost more like a sour beer or even a sort of wine, this barrel aged version of Stille Nacht really stands out from the regular version. I guess it will continue to evolve even more into the sour/vinous territory but aided by micro-oxidation it might take more unpredictable directions. Hopefully I will taste this one again in the future. A hugely interesting beer, definitely worthy of summing up my "career" on Ratebeer so far and a great companion for this 40th birthday night cap session. Cheers to all you wonderful friends and Ratebeerians out there, what a great journey to have been on with you over the past 6 years! :-)
4.1Bottle shared at the Kenny 20K mega monster tasting. 15/01/2016. Many thanks to Matteo for this one. Hazed caramel orange coloured pour with with a small off white froth head. Aroma is tart fruit, grainy caramel, alcohol, grape fruit. Flavour is composed of tart prickly blood orange, brown bread, some caramel, sweet and sour, tangy finish. Some oak and red wine in the finish. Palate is semi sweet and sour, tart and prickly, frothy, Warming alcohol. Lingering tart. Orange.
4.0Jan 2017 -Bottle share at Kenny’s 20K, many thanks to Matteo for this one. As ’De Dolle Stille Nacht Reserva 2010’. Vibrant orange, hazy, lightly sparkling, small ring of white head. Aroma is a little plasticky, airy malts, soured fruits, maybe some oxidation. Body is light, tingly carbonation, smooth. Taste is tangy and sour, red wine, tannnic, tart and woody. Is more sour and red wine-forward than the 2000 Reserva. Both are very tasty beers. (7-4-9-3-17=4.0)
August 2017 - Bottle share at Chriso's Pre-GBBF Shindiggery. Big thanks for another opportunity to try this one! Pours a hazy dark orange, lightly sparkling, foamy off-white head. Aroma is a bit peppery, orange zest, musty. Body is light, tingly to spritzy carbonation, frothy. Taste is red wine, spicy, papery, white pepper, fair amount of booze showing up. Quite decent but almost too much carbonation and not showing the richness to compete with the alcohol here. Didn't enjoy this as much as last time.. some bottle variation? (7-4-7-3-15=3.6)
