The sixth edition of the De Proef Brewmaster’s Collaboration Series is our first blended beer. Legendary brewer, Alan Sprints of Hair of the Dog joins Dirk Naudts at De Proef to create this unique bottle conditioned beer. Flanders Fred is a blend of Flanders-sourced lambic with a collaboratively-brewed version of the famous Hair of the Dog Fred.

The result is a deep golden ale topped with a creamy off white head. The nose is complex with notes of lemon, pine, tropical fruits and spice. The palate is rich and layered with toffee, apricot and almond, balanced by some green apple, a hoppy bitterness and barnyard funk.

Please enjoy Flanders Fred with food and friends. This beer should pair very well with many cheeses, roasted vegetables and grilled meats. We believe this bottle will continue to evolve beautifully over the next few years, adding a subtle blending of the flavors.

2.9 Bottle from Julios. Murky cloudy caramel color with lasting head and a little lace. Funky woody cherry caramel bready aroma. Fruity sour cherry caramel woody with out of place herbal bitterness and some toffee in the finish along with mouth-coating old wood. Medium body. Fairly unpleasant. Give me Rodenbach Grand Cru at half the price any day.
2.8 Poured from a 32 oz crowler. Aroma is sweet with a medium light honey note. Some light stone fruit notes with some cherry and a touch of tropical fruit. Some caramel with a bit of toasted bread. Light acidity and faint citrus notes. Pours a slightly hazy, copper color with a large, frothy, rocky, light tan head that recedes to a thin film of foam that clumps in the center. Light lacing and no legs. Flavor is moderately acidic with a moderately strong malt profile. Lots of caramel, honey and some lighter toasted bread. Medium light bitterness. Some stone fruit notes and over ripe tropical fruit with bits of cherry. The honey character gives it a strong oxidation note. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, not a good beer. I’m not sure why, but this beer has such a strong a oxidation that really conflicts with the light acidity.
3.7 Kind of a typical Flemish red/brown. This one was a little extra foamy in head & more lace. Flavor was a bit more bitter in finish too.
3.5 Earthy hop, touch of spicy hop, biscuity malt, with med bitterness and well-balanced.
3.9 This bottled brew from a bottle shop poured a head of foamy white colored bubbles that were mostly diminishing and left behind a softly carbonated transparent light yellow orange colored body and a fair lacing. The funky aroma was musty dry and sour. The dry crisp mouth feel was tingly at the start and at the finish with a lingering fruity aftertaste. The sharp flavor contained notes of sour mildly vinous citrus floral dough and fruity. A decent one that I would consider drinking again.
3.8 Draft. Aroma of cherry, vinegar. Deep red body with generous head. Flavor is cherry, barnhouse and a tartness that leads to vinegar finish.
3.7 Slightly hazy orange post. Big off white head. Lacing. Slight sour cherry and peach nose. Somewhat tart fruit in the mouth with a hint of acetic bite.
4.1 On tap at Novare Res in Portland, Me which is slightly ironic I guess u guize. Pours a nice ruby hued head, cream hued foam head. Lightly tart and acidic, nice pitted fruit sweetness underneath. I can’t believe I have to be at the airport at 5 am tomorrow gonna suck. Sourness lingers on the palate. Medium to light bodhi.
4.3 Pours a hazy golden-copper from a bottle. Aroma of lemon, green apple, like a french pastry. Flavor does add notes of apricot, apricot jam in particular, maybe some quince. A little barnyard funkiness and a hint of pine. Good sourness. Very good beer.

3.6 On tap at Mekong. Earthy aromas, dry citrus. Cloudy orange with a somewhat lasting white head. Dry, earthy, funky. Light-medium bodied.
3.6 On tap at HotD. Dark golden with an off-white head. Aroma is peach, dried pear, rhubarb. Medium bodied, lightly sticky mouthfeel, lightly tart on the palate with fruity notes and a dry finish along with a subtle touch of bitterness. Taste is peach, dried pear, sour summer fruits.
3.8 Draft to taster at Cappy’s. Pours a slightly hazy golden color with a small off white head film. The aroma and flavor have tart fruit, apples, citrus, cherry, funky, caramel, mild lemon, some resiny character, mild spices, I don’t think it is overly sweet, interesting combination of flavors, I am a fan of the base Fred more but this is an interesting spin.
4.0 Poured a cloudy orange. Aroma is dunk with oak, grapefruit vinegar and barnyard notes
4.0 On tap @ The Yard. Pours slightly hazy golden amber with thin lacy off-white head. Aroma is clean oaky dank pale malt; crisp berry tartness comes in on the back. Taste is crisp clean light caramel malt up front, then big dry oaky notes right after, light red berry tart notes on the finish. Interesting blend, tons of flavor, clear that lots of work went into this.
2.5 Draught at Deep Ellum, 2/7/16. Deep copper-golden beer has just a hint of rose to it and is topped by a small, moderately-well retained white head. High clarity. Smells of simple sugar mixing with pineapple, sweet apricot and with a touch of cellar mustiness. Moderately sharp esters permeate. Saccharine-sweetness is very prominent in the flavor. Mild pixie stix, waxy crayons and sharp, out-of-place esters prick at the palate. Bare acetic acid is not integrated at all in to the rest of the beer. Sweetness does not evolve much, having a very simple, saccharine/table sugar-like character to it. Some fruitiness, light vegetal character and indeed some green apple (why would they want that?). Like most De Proef beers, it’s overly sweet with compound flaws.
4.1 Draft pour at the Burgundian. Pours a cranberry juice red color with a short bubbly head. Aroma full of spice and dark fruits. Very complex flavor with some raisin, plum, apple, cranberry, and a full array of dark fruits. The majority of the flavor is very bold, and doesn’t show any sweetness at all. Very nice beer here. Loved it.
4.0 So good. I’ve been sitting on a bottle for 2 years and it has mellowed really well. Sour tart is perfectly balanced with the Wild ale and is so sippable. Need to get my hands on some more Hair of the Dog!
4.0 Poured from a 750ml bottle. This is fantastic, tart, apple, melon, slight maltiness, fruity.
4.2 Dry, with a tropical fruit and apple tartness. Not overly sour, but not exactly mellow eiter. The base beer works well here. This sour was a great food compliment, though they are scored the same, I’d pick Michael 6 times in 10 :)"
3.9 Brewed 2002. Very nice. Pours cloudy orange with ok head and lacing. Some raisin, plum, apricot and light bretta. Sweet and sour finish. Great stuff. Bottle thanks to Donny at Epic Sour Tasting.
4.2 Bottle (Brewed March 2012) shared from me at DC Annual Epic Sour Tasting. Honey yellow with off-white head. Aroams of dark fruit, tart notes, tropical fruit, raspberries. Tastes of dark fruit, tropical fruit, citrus, tart notes. Medium body with a dry finish. Tasty.

4.1 Great back story to this rate. I was meeting up with HeffIam for an in person trade. He and some buddies were in town for a bachelor party. I introduced him and a few of the celebrants to Dave Blanchard, owner of the Brick Store. He proceeded to show them the Brick Store cellar and pop one of these bottles on the house. Glad he did. Marvelous beer. Pours a just hazy red with hint of brown. Big white head. Scent is cranberry, sours grapes, and tart candy. Well balanced sweet and sour flavors. Lively with a light medium body. 3.9 Deep orange gold. Minimal lacing. Nose of pineapple and lychee, lactic funk. Tart lemon, caramel and light toffee sweetness, some funk. Tasty.

3.6 Pours a murky hazel with very little carbonation or head. Smells like honey and straw, slight caramel. Taste was very unique, very balanced honey, earthy, wood, slightly bitter. Palate was mild with a bit of a bitter aftertaste. Overall, a unique experience, not sure I’ve tried anything like this before.
