Destihl Wild Sour Series: Counter ClockWeisse

This reverse engineered, wild Berliner-Style Weisse is a German-style sour that is very pale in color and is the lightest of all the German wheat beers. The unique combination of wild yeast and lactic fermentation yields a beer that is acidic, lemony-tart, highly attenuated and very light bodied. The carbonation of this Berliner Weisse is high, and hop rates are very low.

3.7 Pours a golden color with minimal fizzy head. Aromas of lemony, yeast, some sour. Nice sour tart flavor with some spicy yeast.
3.3 Can. Golden with sodalike fizzy head. Smell slightly pukey and lemony. Taste tart lemon lime soda minus the sugar, plus a puckery purple grape/grapefruit/lemon-lime finish. Some grass. Quite sour.

3.0 This canned brew from a bottle shop poured a medium sized head of foamy finely sized bright white colored bubbles that were long lasting and left behind a strong bubbly carbonation transparent weak yellow colored body. The mild aroma was dough and sour. The sour mouth feel was very tingly at the start and at the finish with a lingering aftertaste. The sharp flavor contained notes of sour wheat and dough. A decent one but not one that I would consider drinking again.
3.4 Pours a slightly hazy golden yellow with a thin white head. Aroma is wheat, funk, and lemon. Flavor is very sour lactic acid and lemon, a little bready in the finish. With this, I think I understand what raters mean by "clean." Flavorful for its ABV. Good.

3.3 Sampled July 2015 A steady pour into my glass produces a two-finger thick, pale tan colored head. The beer is a golden color that shows a lightly hazed, pale, straw-gold hue when held up to the light. The aroma smells strongly of lactic acid, a touch of lemon like character, and some distinct lactic aromatics; as I dig a bit more I get a dried grass like, pale grain character. Nicely tart, almost puckeringly so, though not quite, and there is a prickly carbonation that adds some lively effervescence and some carbonic acid to the finish. The body of this beer is very light, there is a touch of lactic slickness that keeps it from being watery, but this is the type of beer that I could drink in mass quantities on a very hot day. Up front there is a pale cracker like grain character, and through to the finish there is a dried grass / dried hay like flavor; though everything plays a supporting role to the dominant lactic acidity. I can’t say that I get much of the wild yeast character here, really the lactic acid really dominates, and it is quite clean. I prefer a touch more wild Brettanomyces character in my Berliner Weisses, but that seems to be the rare one of these that has this. Still, this is a beer that scratches the sour itch that I have, and it is enjoyable.

2.9 looks like grapefruit juice cloudy yellow pour. lots of fizz. Aroma lemons, wheat tang. Tastes a little brownout. lemons very acid and carbonated.

3.4 Can at trailer. Cleargolden color with white foam. Dusty, dry lemon, sour dough, lactic, fruity aromas. Light to medium bodied. Medium sour dry lemon, citrusy flavors with sour dough, light pit fruits---tasty tart brew.
3.7 Can to glass. Nose is strongly and sharply acidic, lemon like. Crystal clear, pale yellow with a medium sized white head. Taste is immediately sour, sharp, very cleanly lacto, makes just a little pucker in the gills. Pretty solid.
3.9 Can from Total Wine, Naples. Gold pour with a small eggshell white head. Nose is simple and inviting. Mellow sour cream, wheaty funk. Mild lemon drop candies. Sugar. Clean, mild tart flavor. Greek yogurt, lemon slices. Mineral and salt. Light body, pillowy carb. Good stuff.
4.0 Can that I took to James’s for a tasting with Hackobock. Pours a clear gold with a thin white head. Soft musk and funk, a touch of tartness. Medium bodied, tart and tangy, light salinity, super tangy. Long acid, a nice lingering tartness.

3.9 Glass at World of Beer Easton on 11/25/15. Clear yellow to gold in color with a thick white head. Aroma of honey, creamy wheat and sour lemon. Creamy wheat flavor with honey accents before a sour lemon finish. Not sure if the honey is I’m catching is from this beer or if they had a mead on before this and didn’t clean the line well enough. Not catching any honey sweetness, but definitely the nose and flavor of it. Pretty tasty either way.
3.7 Can from Troy. Pungency and sour make this a great Berliner. Fantastic balance of wheat, acidity and tartness. The flavor lingers and creates a sweet-tart like feel. Good stuff.
3.7 12 oz. can. Pours a fizzy yellow, with a small, bubbly, off-white head that disappears completely. The nose is lemon and blood orange, with some salt, rose, and a touch of ginger. Low sweetness, with a nice, clean, tart zing. Light body, very acidic, a little creamy, and well carbonated. This is an assertive and very sour beer, but well done, crisp and clean. Just the right amount of sourness makes this a very refreshing and delicious beer.
3.6 At ElijahP’s in Alton, Il. 12oz can into Belgian tulip glass. It poured a crystal-clear yellow colour with short-lived white foam. Crisp husky grain, tart, acidic, boldly sour. Really sour, in a good way, much further than most Berliner Weiss brewers are willing to go. Hint of bitter balance, but no detectable hoppy flavour/aroma. Super light body, high carbonation, true-to-style Champagne bite. Tasty and refreshing.
4.1 Can. Pours a slightly hazy straw color with a decent head that dies to lace and a thin film fairly quickly. Aromas have an odd citrus sourness to them... kind of like bitter orange and nectarine pit meat or something (in contrast with straight lemon that I get from many sours.) Flavor is light and sour with a hint of sweetness that balances things in a way in which I am not accustomed to finding in a Berliner Weisse. Decent and different take on the style.
3.9 Sampled at GABF 2015 with Andrew, Moreau and Paul. Pours a light murky body with white lace. Mouthfeel is light, zippy and tart with notes of lacto, vanilla yogurt, sour wheat and tart lemon. Good stuff.
3.9 Can. Aroma is simple but good. Lemon, salt water, glue, and more citrus. Tastes moderately sour. Lots of lemon, mild funk, a little salty. This is a simple berliner but I love it for some reason. Just hits everything exactly the way like it. Delicious.
4.0 Sampled at GABF 2015. In the tasting glass was gold with a white head. Nose of sour citrus. Medium body. Flavor is quite lemon tart and very dry in the finish. Mouth puckering good,.
3.8 Purchased at Bottles and Cans in Chicago, IL; enjoyed at home on a fall evening. Appearance is a cloudy gold with a bubbly head that quickly dissipates. Aroma of sour cherries, some honey as well, relatively faint. Taste packs a huge sour punch, extremely lemony, not too sweet, the finish is extremely crisp. I’m not too much of a fan with the initial kick, the finish is fantastic though. Very interesting beverage. Not sure if I’d have again though.
3.9 12oz can from TRT. Poured a cloudy milky golden yellow body under a huge tight foamy white head. Aroma is a touch of glue, plastic, sourness, funk, old lemon, citrus, grapes. Flavor is like sweet tarts and a light touch of funk. So sour, nice. Body is medium with lighter carbonation and a lingering sour aftertaste. Good stuff.
4.3 Yikes! This thing slapped me in the face. Poured out of the can but what is this magic? It’s basically carbonated lemons. First splash of intense canned sour.
3.3 On draft at HopCat. The pour is a foggy peach color with no head and no lace. The aroma metallic and lightly fruity. There isn't a lot going on in terms of sourness, but the finish is quite salty. It's crisp and clean. The flavor is very similar. There is a lot of salt and not much fruit or sour. The mouth feel is thin and slick. Not a lot of flavor. Big salt. There isn't a lot of carbonation and a lingeringly medicinal finish. It's not really good
3.4 Aroma is sweet, Belgian yeast coming through, slight funk. Appearance isopp opaque, pale yellow, white head. Taste is funk, sour, then Belgian yeast, maybe easing towards salty. Mouthfeel is crisp, medium body and carbonation. Overall, this could be a lot better.
