Dieu du Ciel! Chaman

This beer style was created in the late 1990’s by some breweries on the west coast of the United States, and most notably by Rogue. It’s an extreme version of the American IPA. It’s a beer with strong amber hues and dominating hop flavours and tastes. It is however well balanced through the presence of a combination of malts. This beer is usually dry hopped, a tradition that is adhered to by Dieu du Ciel!. The bouquet of the beer consists of floral hops. In the mouth, the bitterness is quite strong, without being extreme, and the alcohol makes its presence known, without being domineering. The aftertaste is dry and less syrupy than a barley wine. Thus, it is a very complex and bitter beer, but always well balanced.

3.9 Really great double ipa. Pours a light orange. Aromas of citrus rind and booze. Lots of God stuff going on in the mouth. Citrus, honey malts, booze. Really smooth. Great stuff.
3.8 Beautiful orange body, white lasting head, nice lacing. Citrus, dried fruit, molasses, caramel aroma. Taste is rich sweet malty, a touch of hoppy bitterness, juicy citrus fruit. Coating mouthfeel. Pretty great beer.
3.7 Pour is orangey gold with a teeny tiny white cap. Nose is surprisingly faint. I tried a year-old bottle of this, and then shortly thereafter a month-old bottle, and while it’s definitely better fresh, it’s still lacking some hop punch. Still, I get piney/floral hops, light citrus and soap, caramel and earth and bread and honey. This is a really nice, full, chewy caramel malt, lightly spicy and boozy, but balanced/masked with a bracing bitter pine finish. I wouldn’t call it dry but I wouldn’t call it....wet, either (giggity). I was kind of disappointed because I had such ludicrously high hopes for this beer, but it’s still damn good. Man I like adjectives.
3.4 Pours goldenamber with almost no head. Far less aroma than a typical imperial IPA. Slight aroma of bubblegum and citrus. Tastes warm, oily, far less alcoholic than it’s 9% abv would suggest, or than most imperial IPAs have. Tastes more like a hoppy dubbel than an imp IPA. Nice.

3.8 Bottle from Halles St-Jean. Aroma: grapefruit, orange, pines, caramel. App: hazy golden, nice lacing. Taste and palate: medium body, average carbonation, big long dry bitter finish. Overall: enjoyed it but a bit too big for my tastes, maybe not that well balanced since the alcohol makes it a bit too hard to swallow. But after a few sips we get used to it. Another great beer from DDC.
4.0 Arômes de pamplemousse, orange, malt caramélisé, poivre, lime et alcool. En bouche, goût de pamplemousse, caramel, alcool, poivre concassé, orange, résine de pin. Finale bien amère, un peu terreuse, pointe de zeste d’orange. Texture moyenne. L’amertume colle au palais. Double ipa bien goûteuse, maltée, bien houblonnée.
3.1 Une bière caractérisée par une amertume très présente. Ca tombe bien j’aime. Malheureusement y manque un petit parfum supplémentaire.
3.3 Un nez et une impression en bouche très ronds. Une bière que l’on sent tactilement être forte mais qui cache bien son alcool malgré tout Je trouve qu’il manque quelque chose dans cette bière, cela dit... Comme si elle était la "base" sur laquelle était en train d’être développée une excellente bière, mais dans laquelle on aurait finalement oublié d’ajouter certains ingrédients de la recette! Il manque de saveurs et, j’avoue, j’aurais apprécié plus de notes houblonnées.
4.3 Ölföreningen 2015. Spännande och oväntad. Smak och doft av humle, aprikos, persika, mango, lavendel, marsipan, toner av gula russin. Oljig, torr, lagom söt, beska med smak av citrusskal. Välbalanserad, frisk och fruktig, riktigt gott!

4.0 Flaska från Saveur-bier. En lite annorlunda DIPA som inte smiskar tungan med besk humle, itsället ganska blommig och med en sötma och lätt syrlighet som påminner om gula russin. Stor söt fruktig kropp och lite lätt tvålig p g a blommigheten men det stör inte. Riktigt gott.

3.5 Flaska från Saveur-biere. Mörkt dimmigt kopparfärgad. Doft av smörkola och rostad malt. Lite smörkola i smaken men även lite syrlighet
4.2 Bottle from Cool Wine Hobart 300115. Great looking beer and greet atom and flavour. All round this beer ticks all the boxes and leaves a long lingering aftertaste in the mouth.
4.3 341ml bottle (dated May 2012) served around 10 degrees in a snifter: Pours a fairly dense and clear golden robe forming about a finger of white foam. It skrinks to a porous layer and leaves a fair amount of spotted lacing. The nose is agressive with citrus, pineapple, vanilla and honey and alcohol. I did get a grassy/floral element from the hops which balanced out the sweets but I had this brew in late June so it probably still had all of its properties. I did read other reviews where older bottles seemed to have faded most of their citrus elements so make sure you enjoy it fresh. The flavours are pretty sweet delivering notes of brown sugar, caramel and vanilla with much hoppy bitterness kicking it way back for a moderate finish. This brew feels somewhat dense and has good corpus and you do get a certain sharpness. The alcohol is present but not overwhelming which is always a nice feature when dealing with complex beers.
3.7 Belle robe typée IPA impériale : orangée, trouble, reflets rouges.Belle mousse très fine, blanche à blanc-cassé se dissipant assez vite.Nez de sève de pain, fruits au sirop, fermentés, douceur, "barley wine", céréales et quelque chose comme du fromage.En bouche idem, l’alcool se ressentant peu mais donnant un corps certain.Ni doux, ni sec, équilibré.Une IPA impériale américaine autrement dit plus portée sur les malts et l’houblon amérisant que sur les fruits frais et tropicaux.Pas mal.Très bien dans le genre.
4.1 Belle mousse qui colle, attaque de mangue,fruits tropicaux résineux. beaucoup de pins avec une touche d’érable.bonne amertume ,le coté fruité s’imprègne bien a la sécheresse de cette bière, bien fruité,bien malté,bien sèche. très belle double ipa...(mais je trouve plus que c’est une impériale pale ale américaine , qu’une double ipa.. mais bon c’est moi)
3.8 Bottle: pours a cloudy darker orange with a frothy white head, nice hoppy and lightly citrus aroma, taste is hoppy, resin, bitter with a dry finish. Nice.

Medium to low retention forming lots of lingering lacings left in the glass S: Caramel malts. Flowery hops. Lots of pine, grassy and bit citrus hops. A bit fruity and spicy. A bit of alcohol in the very end T: Slightly sweet upfront. Caramel malts. Lots of flowery, pine and citrus hops. Good bitterness M: Heavy body. A bit molasses too. Medium carbonation. 3.9 Poured from 341mL bottle. Clear golden amber with off-white head. Very nicely balanced bread and caramel malts with grapefruit and resin hops. Subdued sweetness with a touch of bitterness. Medium body, nice mouthfeel, alcohol hidden.
4.1 Bottle. Cloudy golden colour. Aroma of caramel, bread and fruits (peach?). Flavour is sweet malt and fruity. Creamy body. Nice finish with sime bitterness. Balanced beer, lovely.
4.4 disons avant toute chose: quelle belle bière!en bouteille 340 ml. une belle cuivrée pale avec un beau col assez epais qui se dissipe malgré tout presque totalement apres quelques minutes. dès la premiere sniffée au dessus de la bouteille on remarque sa premièere qualité, un equilibre merveilleux. en nez du malt, de l’alcool et un beau côté sucré. en bouche, un corps moyen, des saveurs et aromes extremes qui semblent se battre ensemble, le resultat: une bière brillament equilibrée donne un effet crémeux en bouche. le houblon, le malt, l’alcool...tout semble sa juste part du gateau dans un equilibre renversant. ce sera donc la dernière ligne: une bièere complexe mais équilibrée. excellente. a essayer. conseil: la boire a une temperature assez chambrée, car la premièere experience autour de 6 celcius a été decevante. sortie du frigo 20 minutes avant la degustation s’est avérée une expérience unique a 3 reprises
3.7 Bottle. Golden, light coppery. Sweet malty, soft peachy stony fruity nose with a bit of milky vanilla. Full bodied, butterscotch in flavour. Pretty good. Stone fruityness, smooth maltyness. Sweet finish. Pretty nice. Sweet, without cloying. Flavourful, nice. Hasn’t any extreme flavours, but everything is just nicely balanced.
3.6 Deep gold, cloudy with white head. Aroma is juicy grapefruit, peaches and cream. Full bodied. Loads of citrus and big sweet malt character. Grapefruit citrus finish lingers. Solid.
3.5 Pours a deep golden sienna color with a finger of eggshell foam. Nose is sweet caramel, bready malts, citrus and some earthy grass. Palate follows with more sweetness, honey, citrus, boozy and lingering bitter grass finish. Probably a bit past its prime but still drinking pretty nice.
3.8 341 ml bottle. Pours a deep copper color with light white head. Aromas of sweet malts, bread dough, and a little fruity hops. Flavors of toasted malts, light toffee, brown sugar, and bitter hops. Big sugary malts up front followed by a bitter middle and a mixed finish. Neat.
4.5 Guest tap at Beermarkt in Montreal. Pours a hazy copper with a thick luxurious white head. Aromas of citrus hops a bit but with lots of honey sweetness an some fruity perfume. Tastes of hops, fruit peels, with a great balance between sweet and bitterness. The high abv is only slightly noticeable. Overall this one is very hard to pigeon hole as it has so much going on and is wonderfully complex. Great beer!
