Dogfish Head 75 Minute IPA (Cask/Bottle)

Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.



Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

4.1 Light coppery with a huge frothy off white head. Old school resiny hops forward, but in check with the lightly caramel sweet malt bill. Balanced and very well brewed. Everything in its place. Killer.
3.8 Pours a slightly tinted copper, nose is wood, resin and a whisper of booze. An easy drink. Smooth, grapefruit, a little sweet for an IPA, but very good.
2.6 Bottle. Golden in color with a three finger head. Yes, it's an IPA. Bitter taste and hoppy smell. What else.
3.7 6 pack of bottles from some out of the way gas station, of all the places. Next to the Miller. Copper pour with a thin white head. Hop resin aroma, with tons of malty sweetness. Very thick, piney and earthy hops. Malt forward, sweet and sticky. Gets a bit thicker and maltier when warmed, and I would like to see a bit more carbonation like the 90 min, but it's darn good.
3.5 Bottle with commonmac. Dark gold with medium white head. Slightly syrupy nose. Taste is a little bitter, a bit sweet, some underlying maple syrup. Medium body. Falls just short of the perfect balance. Pretty decent.
3.4 12oz bottle shared by commonshawn and consumed in snifter glass. Deeper golden and orange color with initial off white head. Aroma is kind of malty and grainy with very little hop presence. Taste has an underlying sweetness initially before giving way to a bitterness from the hops that had previously been willing to hang in the background. Relatively mild overall except leaves you with extended bitterness in the finish. Not really one of my favorites but a decent effort from the brewery.
3.6 Bottle at trailer park. Pours bright amber with white foam. Nice floral, pine, malty maple aromas. Smooth mouthfeel. Lightly sweet pale malt, maple syrup flavors with a pine, floral, herbal hoppy bitterness to balance--- nicely drying finish ___ good IPA.
4.0 I like this one. Trying to decide if better than the 90 minute. Actually a little different with the added sweetness from the maple syrup. Hopped well with good balance....but the maple really makes it quite unique for an IPA. An in-betweener from the standard 60 and stronger 90 min version. This is actually more expensive for oz. than the 90 min, but definitely worth the sample.
3.8 hoppy and smooth with some body. A bit of nut and light straw. seemingly with a bit of caramel. bit of citrus and smooth grape for flavor. smooth frothy carbonation with s touch of sharpness.
4.8 Who would have thought I’d have both the 120 and 75 on the same day? Slap my face and call me Sally! ‘Effing great beer! My head’s spinning and I may have to excuse myself for a private moment of reverence. From the houses of the holy, this is a subliminally satisfying experience, sleeping on a Tempurpedic mattress of hoppiness!
4.0 Bottle pour into nonic pint glass from Greg & Jane's Beer and Wine. Appearance is lightly hazy orange with tons of sparkle, finger-width off-white foamy head with excellent retention and nice, soapy lacing. Aroma is citrus, pine, caramel malt. Taste is floral, citrus, evergreen, bready malt backbone. Straining to get some maple syrup and maybe some cask contribution as it warms. Palate is medium side of light-to-medium bodied with smooth texture, soft carbonation and finish as taste. Overall, the influences here are more 60-minute than 90-minute and not sure the extra dry hopping, cask conditioning and maple are adding much. Don't think you'll find a better-looking beer. At outside boundary of freshness (bottled 11/1/18) so that may have muted things a bit.

3.7 Pours an amber color with a white head. Aroma is floral hops and caramel malts. Flavor is similar but also has some maple sweetness on the finish. Slightly bitter, but not too much.
3.6 Bottle from Brewers Haven. Medium amber with thin creamy head. Aroma: oranges, caramel, fruity notes. Taste follows with some orange zest, sweet caramel, toffee, apples . Falls a bit flat at the finish, but finishes clean.
3.8 Bottle. It poured a copper color with an off-white head. The aroma was a hoppy grapefruit citrus with some sweet notes - maple syrup according to the label - but I did not pick up maple. Ovetall, nice IPA.
3.8 12floz bottle, BOD: 10.23.2018, $1.75 unit cost, pint glass. Appears a deep golden yellow with a small amount of head. Pine accentuated IPA with honey-citrus sweetness with a medium bodied mouthfeel. Very solid.
4.1 It pours amber with a white head. Head retention is excellent. It has a strong aroma of spice and citrus. The flavors have citrus and spice. There are some bready flavors as well. There is a hint of maple syrup in the background. It has a medium body with clean and pleasant bitterness. Overall, it has a great combination of flavors.
4.0 12 oz bottle. Pours amber with tall, long lasting, fluffy white head. Aroma is of citrusy hops, caramel malt and tropical fruit. Body is medium and crisp. Taste is similar to aroma. Finish is long and dry. Very tasty brew.
3.9 12oz bottle at home. Pours clear bright copper with a lasting, creamy white head and good lacing. Orange and grapefruit citrus, pine, sweet caramel, resin. I don’t really find the maple, other a brief whiff in the nose. Medium carb, soft texture. Piney grapefruit finish with long lingering bitterness. Excellent.
4.0 Clean hoppy aroma with a hint of maple. Interesting amber color with a cream colored head. Hops are similar to 60 minute, the syrup balances it well, nice aftertaste. Slick palate. This did not disappoint.

3.6 A dark golden color with a white head. The aroma contains some citrus, caramel, biscuit, and herbal notes. The flavor is slightly bitter but also malty with some oranges, lemons, caramel, and a bit of alcohol showing up. A bit of sour citrus shows up in the end. Overall a pretty good IPA.
3.4 I don't detect any overt maple syrup notes with my so-so nose and palate, but very good and drinkable nonetheless, with nice fresh citrusy taste and a good finish. Recommend.
4.0 DATE: December 26, 2018... OCCASION: watching The Office after visiting with my parents for Christmas... GLASSWARE: La Fin du Monde tulip... with a golden bronze boy, this sets its bubbles aswirl like a licking flame... its finger-thick white is resilient and creamy, steeped and clinging to the glass... strong resin, sweet maple syrup, lemon, floral hops, pine, cardamom, and toasted malts... a strong, bold nose pervades the glass... a smooth, creamy mouthfeel generates an extremely drinkable experience... its finish is reasonably lasting and mildly warming... a grainy mid-sip follows the downtuned frontal expression... the dank resin forms the basis for citrus, with lemon, pine, and cardamom meshing with strong, sweet malts.... the citrus in this wins, taking the practical, everyday glory of the 60-minute with the otherworldly phenomenon of the 90...
3.4 Pretty solid IPA. Brewed with maple-syrup, which has a subtle appearance in both the smell and flavor. Good appearance when poured, and a well-centered IPA all around. Not blown away, but would have again.
3.4 12 ounce bottle at home. Smell the pine and citrus. Clear orange in tint. Medium off-white head. Deep pine in taste. Citrus after taste that lingers. Good for the style. Cheers!
3.8 Solid. Feels like a nice middle ground between 60 and 90. Not sure I get much of the maple syrup profile here...
3.9 Bottle. Floral hop aroma with notes of grapefruit citrus, pine resin and a little bit of maple syrup sweetness. Pours clear copper colored with a large tan head that has excellent retention but no lacing. Starts with sweet maple syrup and grapefruit hop citrus flavors. Finishes dry, but still quite smooth with floral and pine resiny hop bitterness that’s not overpowering at all. Another nice IPA from Dogfish Head.
3.8 Aroma of citrus hops and fruit, pours a hazy caramel color with a thin white head. Taste is a pleasant fruit taste with some sweetness, medium body with a pleasant fruit and caramel finish.
4.0 12 oz bottle from Trader Joe's in Short Pump, VA The ale poured a clear amber color with an off-white head and lacing. The ale has a medium body with average carbonation. WOW! This is a wonderful IPA. Nicely balanced flavor and aroma. The aromatic hops contribute citrus and floral hops. Nice malt aroma as well. A very drinkable IPA.
