The elusive brew is made from pilsner malt and amber malt with an original gravity of 26.5?P, yielding an 11% abv. It's hopped with Warrior and Glacier varieties. Primary fermentation takes place in open vessels using two yeast strains, one American and one English. For added complexity, the beer is conditioned on barrel staves of French Oak for four months before being dry hopped with Glacier at the rate of a half-pound per barrel. This elixir is then blended 50/50 with 90 Minute IPA.

3.8 Bottle from Beers of the World. Aroma of oak, leather, vanilla, caramel malts, and spruce hops.
2.7 355 ml bottle bought at Q-Club in SoHo, Central. Looks: Clear amber colour with a layer of trunky yeast sediments; Half finger head with soapy white foam which fades in 40 seconds; Very good sticky lacing with active slight carbonation. Aroma: Fragrant Amber malt, with vanilla, blueberries, wood barrel, caramel, floral, sugar, strong pine, resins, dough, lemon and grass. Taste: Strong sweet full Amber malt, with strong caramel, grapefruits, floral, syrup, strong pine, resins, spices, herbs, dry biscuits, lemon, strong bitter hops and grass. Body: Close to full body. Slick and very oozy palate. Mouth Feel: Strong Amber maltyness in a pretty thick background. Strong grapefruits and strong pine dominate, like an overshot. Strong caramel with floral and SPL-like syrupy sweetness, very oozy, herbal biscuity with strong lemon to round. Unbalanced. Hoppiness: Blueberries, floral, strong pine, resins, lemon and grass in nose. Grapefruits, floral, strong pine, strong resins, spices, herbs, lemon and grass in taste; Bitterness is strong for a lasting, high astringent strong sweet-bitter Amber malty finish. After Taste: Quite dry. Very piney-oozy and strong bitter to mouth. Comments: This one's aroma has a decent combo of fruits and barrels, but the taste is an overkill of sweet malt and numbingly bitter hops which goes nowhere. Strong on all fronts but close to annoying instead of being impressive. A bust!
4.8 Burton Baton has a very thick, ivory head, a bright, orange, mostly opaque, but not cloudy, appearance, and heavy glass lacing. Aroma is of strong & sharp pale malts, and the flavor is of strong, yet not harsh, pale malt, moderate hop resin, sweetness, nougat, and dates. Mouthfeel is heavy, and Burton Baton finishes medium dry and memorable. Also, I never really noticed a wood aspect. RJT
3.9 Deep orange pour with a on off white head. Aroma is a wooded citrus with minor oak accents. Flavor is similar, with a full bodied oak finish.
3.7 Pours hazy deep amber/brownish with a medium sized, thick/creamy, white head that lasts. Fades to a lasting cap. Smells of caramel malts dank, piney and citrus. Tastes sweet malt and citrus with some earthy piney hops. Lots of oakiness, burnt caramel and hint of vanilla. Finishes mostly dry with a long pine linger. Slight alcohol taste. Lighter side of full bodied creamy.
3.8 12 oz. bottle. Pours hazy copper with a creamy off-white head. Aroma of caramel, citrus, and oak. Taste is caramel, citrus, oak, pine notes. Nice.
4.1 Pours clear amber, big off white head. Aroma is rich malt, orange, vanilla, wood. Taste is rich wood, toffee, vanilla. The alcohol is mostly dissolved into general warmth. The hops are noticeable, but subtle - the IBUs balanced by the malt and ABV. Fairly heavy, rich, creamy mouthfeel. Avery good well balanced beer.
4.5 Great blend of 60 minute IPA and ale. Deep and rich but hoppy citrus from the IPA. Another classic from Dogfish Head.
3.9 Bottle from Whole Foods. Nose is sweet caramel, citrus hops, orange, light oak. Tastes sweet orange, caramel, toffee, hoppy citrus, oak, rich malty. Yes, boozy as well.
3.4 Bottle. Pours cloudy dark orange with small foamy off-white head, woodsy aroma, sweetish woodsy taste with medium bitterness following up, alcohol undertones, thin body, long bitter finish with slight alcohol aftertaste. Tastes more like a triple ale than an IPA.
4.1 Hazy amber color. Some really nice wood and a teentsy bit of vanilla. Mostly grassy hops, some light citrus and a dense malt backbone. Very pleasant. Picked up a bottle in 2017 at On the Rocks in Lawrence.
4.8 Pours a light whiskey color with a 3-finger off white head with a hint of oak and malt in the nose. Tastes of moderately bitter hops with a semi sweet malt backbone with a hint of astringent oak. It's medium to full bodied with moderate carbonation. It has a warming candi sugar finish. Very little alcohol in the taste. Very complex and very good.

4.4 Bottle. Aroma: different malts, wine, spices, a little oak, hoppy, oxidized and fruity. Taste: white port wine, oak, richest maltiness, warming, bitter finish.
4.2 A dense off-white head on an amber/orange body. Nose features citrus hops, brown sugar, apricots and fruit zest. A well blended and crafted double. Citrus and tropical fruit, melon, toffee, wood, dark berries and a hint of cherries work well together. Used to have a solid whiff of vanilla, but not in this batch.
3.3 6 month old bottle. Hazy amber color with a white head and medium lacing. Green pear, grass, slight oak, and pine aromas. Light sweetness finished by a restrained pine aftertaste. Heavier body with a fizzy feel.

3.5 DOB:? 2015 BJCP Category: 33A Wood-Aged Beer (base style: 22A Double IPA) AROMA: Sweet nose with confectionery notes of toffee, caramel. Slight sherry oxidation character is fine. Citrusy/piney hops are present, but do not dominate. Moderate alcohol character. 8/12 APPEARANCE: Murky copper hue; very hazy body. Mammoth off-white frothy head retains and laces well. 3/3 FLAVOR: Moderately-sweet palette overall with English-style confectionery notes of toffee. Wood imparts slight vanilla and nutty flavors. Bitterness is strong, dank. Hop flavor akin to resin or citrus concentrate. Minor oxidation creates for sherry-like taste. Alcohol is quite prominent as it finishes with warming sensation. 14/20 MOUTHFEEL: Full-bodied with medium-low carbonation. Smooth, soft texture with noticeable alcohol warmth (not surprising consider it’s 10% ABV). 3/5 OVERALL IMPRESSION: Interesting, impressive hybridization of styles. May be a little too big, though. 7/10 TOTAL SCORE: 35/50
4.1 From a bottle. Pours amber and makes a medium white head. Smells of hops and oak. Tastes of caramel, brown sugar, and hop back taste. This is an original brew from one of my favorite breweries.
4.1 Doesn’t smell like much. Some oak, some hops but very muted. Surprising. Looks great, light brown with a dark cream head. Tastes malty and creamy with a dash of earthy hops at the end. Better than 120 in my opinion, I like the addition of oak. Good creamy palate. Dogfish Head is becoming one of my favorite brewers.
4.5 Pours a cloudy copper-red, wispy ivory head. Aroma is phenomenal, woodiness, resin, honey, butterscotch, stone fruit and deep florals. Full on the tongue but still a carby bite...so much going on here, caramel, toffee, florals, pine, wood, apricot and earthiness....root vegetable. Very complex and flavorful with a solid sweet oak finish. An outstanding specimen!
3.8 2013 12 oz bottle: aroma - very sweet caramel, toffee, molasses and brown sugar. hint of vanilla with just a faint sign of oxidation. appearance - pours deep amber, with a thin off-white head of maybe quarter inch thickness with low retention. the beer is hazy bordering on muddy although it seems to clear a bit as it warms. light lacing is observed. taste - complex combination of bold malt sweetness together with intense bitterness that slams the palate. the evidence of oak aging is definitely there with vanilla notes in the background. palate - this is a medium/full bodied beer with resiny, oily texture and pronounced astringency. medium carbonation. finishes long and strong with intense sweetness that lingers overall - this beer is not for the faint of heart. obviously does not mellow with age as some other strong ales and barleywines. as with other DFH beers, it promises intensity and does not disappoint even after aging.
4.1 Aged IPA? Wow I had to taste this! Pours a amberish liquid almost clear with a small head that disappears to let only a circle around the glass. Not the usual nose of an IPA but what a smell! More like a lots of caramel malt, woody notes and almost smokey smells. Taste is heavy caramel malt, light to medium sweetness, wood notes, booze, resinous pine bitterness, full body, oily texture. Warm alcohol feeling in the throat. What a good damn beer! Seriously aged IPA rocks! One of the beer that I never get tired off!
3.6 pours a clear copper with a generous beige head. The aroma is weird for an IIPA, kinda smoky. Hints of floral or tropical. The taste is not super hoppy or citrusy. Kind of dank. There’s some definite malt presence. full oily mouth feel. Pleasant slightly bitter finish and linger. Alcohol is well muted for 10%. Different, but good!

Não aparenta os 10%, média persistência no paladar, final puxa um pouco para pinho, mantendo o cítrico.
4.3 Slightly hazy orange/amber hue, persistent but thin white head. Nose is a beguiling blend of soft English hops, hint of citrus, and malt. Bitter. Middle is soft creamy malt, caramel , burst of orange marmalde, a little alcohol, and an oily medium mouthfeel. Finish is bittersweet and slightly woody. Well done.
4.1 A very nice DIPA. I view 90 minute as a gateway IPA. This would be the next step to becoming a real hophead. (or starting the journey). Nose is nice and hoppy. Never ending head! A very enjoyable beer that a hop head will chose over 90 minute. The wood aging is subtle but it can be detected.
3.7 12oz bottle at Newark Airport. Pours a hazy amber with an off-white head. Aroma is oak, malt, pine, and citrus. Taste is a blast of sharp bitterness, like bitter greens and grapefruit followed by oaky whisky. Resiny, piney finish. Very nice.
3.5 Draft. Gold with a off-white head. Aroma is malty with notes of caramel, pine, oak and fruitiness. Very noticeable alcohol content, but not too bitter.
3.9 2016 bottle from Discount. Pours a clear copper with a tiny bit of beige foam that dissipates. Malt, apricot and wood on the nose. Sweet on the palate, with some earthy hoppiness. Orange pith with a bitter, peppery finish. Oak smooth, with some nice, lingering dryness. I’m diggin’ this.
