Dogfish Head / Victory / Stone Saison du BUFF

The idea for this beer germinated way back in 2003 when the three guys (Sam from Dogfish, Greg from Stone and Bill from Victory) formed the BUFF alliance (Brewers United for Freedom of Flavor) - a noble endeavor with the goal to highlight the passion and camaraderie of the American craft brew movement.


So, BUFF didn’t really do anything (beyond talk a lot of talk) until 2010 when the three brewers finally got together to jointly brew at beer at the Stone Brewery. Saison du BUFF will first be brewed at Stone and then replicated at each of the other two breweries - same recipe, same ingredients, three different breweries throughout 2010.


Plans call for Saison du BUFF to be a 6% alc/vol Saison brewed with parsley, sage, rosemary and thyme. This beer will be brewed three times, once at each brewery using the same recipe. The expected release dates for each brew are as follows:

4.1 Goudgeel, licht troebel bier met fijne witte schuimkraag. Kruidig aroma (salie, rozemarijn, lichte eucalyptus). Deze gedronken bij 30° en dan smaakt deze zeer verfrissend. Citrus, beetje menthol, en vooral rozemarijn verweven met een saison-smaak. Lange licht droge afdronk die goed blijft hangen. Doet mij wel ergens denken aan de Tre Fontane trappist. Mooi bier.
3.5 Draught. Clear pale yellow with very small frothy white head, faint spicy aroma (sage), medium carbonation, malty taste with vanilla and sage, smooth body, medium malty finish. Nicely spicy saison.
4.3 DATE: June 4, 2017... OCCASION: Cavs/Warriors Game Two... GLASSWARE: La Fin du Monde tulip... an insane, swirling storm of bubbles set astir within a golden glass... the snow white head stands prominently, a symmetrical three fingers of sponge that tables into a mesa--this beer looks ready to drink... first whiff is strong herbs: rosemary and thyme are most notable... honey, vanilla, parsley, yeasts, and some earthy malts make for a promising experience... halfway through the glass, a clean drain--balanced, active and extremely drinkable at 6.8% ABV... the Scarborough Fair foursome makes this a festival of flavor, with secondary funk and soft medicinal undertones actually compliment the honeyed sweetness... a beer that could easily lose its four-pack in a sitting, as with the unique aromas and flavors ot usually associated with a saison, much less a beer in general...could these three brewers create something less?
2.8 Shared 12 oz. bottle. Clear straw, white head. Intense herbal aroma. Taste has very concentrated herbal flavors, with rosemary, thyme, sage and even parsley noticeable. There are some faint saison characteristics getting through, but the herb flavors are incredibly overpowering, and not necessarily in a good way.
2.5 Aroma: interesting combination of rosemary and grainy/wheaty notes; Appearance: clear yellow pour with thin white head that dissipates quickly; Taste: follows nose, but doesn’t work. Unpleasant, like the combination of beer and a scented candle; Palate: light bodied with medium finish; Overall: No thanks.
3.3 Draft. Pours gold with white head. Herbal aroma with thyme, rosemary, and sage most prominent along with some fruity yeast. Lemon citrus upfront followed by herbs (rosemary and thyme especially). Long, herbal finish.
3.8 I really enjoyed this mostly, the spices were really nice in the saison grain bill. It was cool to drink, but for whatever reason there was a metallic taste that I couldn’t get over. Overall, I’ll have to try this again to see if it was just the keg pour I had, but for now it the Metallic flavor dings what maybe is a really good beer.
4.3 Pours marvelously into a tulip, murky gold, resilient white head. Aroma is big, yeast, spice, coriander, banana, earthiness too. Medium-full bodied, creamy. Nice lemony zest, pepper, celery, Belgian galore. Excellent.
3.6 It pours clear golden with a white head. The aroma has all kind of spices and herbs, and there’s a bit of breadiness and a French Saison slant. It has a medium body with mild carbonation. This definitely have more spice/herb than saison, but it’s still pleasant. The spicing is savory and gentle and there is nice pale malt balancing and a touch of fruity bite on the finish. Pretty nice.
4.0 12 ounce bottle. Bright yellow gold color. Small foamy white head. Big herbal nose. First sip has light grainy malt and herbs. Notes of rosemary, sage and thyme (in that order). Sorry parsley, didn’t pick you up. This is very refreshing and drinkable. Just the right amount of herbal influence creates a uniquely flavored Saison. Some tart yeastiness in finish provides a hint of funk. A nice effort from the BUFF boys!
3.8 Clear medium gold pour, finger of pure white head . Nose is herbs and yeast. Middle is creamy malt, hints of rosemary, sage and fresh cut grass. Finish is bittersweet and even. Look forward to this with pork chops.
3.6 Are you going to Scarborough Fair? Parsley, sage, Rosemary, and Thyme... Brings back fond memories of Simon & Garfunkel. Pours a clear pale yellow with a thin white head, medium carbonation and some lacing. Pleasant flowery herbal aroma. Crisp, clean, and lightly tart. Nice full mouth feel. Smooth clean finish with a lightly sweet herbal aftertaste. Not harsh or bitter. The herbs are not too earthy but light and refreshing. Very enjoyable.
3.7 First beer of the day on arrival at Stone Berlin. Pours cloudy Golden with a White head. Lovely herbal aroma and a fresh flavoured saison yeastiness. A bit of lemon and a bit of sweetness. Odd, inventive and quite good.
4.0 Bottle from Liquor Barn, poured in sampler. Citrus and spice nose, orange yellow clear with big white head. Spicy hops taste and medium body. Bittersweet hops finish.
2.9 Bottle from Capones, Pours hazy golden with medium head. Flavors are a sweet and candy malt, banana bread, clove, lemon rind and other peppery saison spice. Some weird vegetable notes.
3.4 Sampled from tap at Stone Garden Berlin. Rather clear golden color with white head. Aroma is spicy yeast, dough, black pepper, and some bananas, lemongrass. Taste is spicy, doughy, herbal-earthy, and with a bit of a peppery-boozy finish. Oily mouthfeel. Classic American Saison, it’s quite good, albeit on the spicy side.

3.4 12 ounce bottle from Sonoma Cellars in Delavan, WI, sampled at cellar temp from a Unibroue glass. Big pop when the cap is lifted and foam fills the glass, receding ever-so-slowly and leaving thick chunks on the sides above a cloudy light gold body...herbal-spicy aroma is sweeter than I’d expect (well, maybe not from this brewery) and at first it’s sort of a morass of herbs, but eventually I can certainly pick out the sage and rosemary, and I think a sort of raisiny character as well...thankfully not quite as sweet on the tongue as the nose promised, with spices fairly well integrated into the pale malty body; little bitterness...body is just a bit on the thin/watery side, carbonation tingly and just enough. This is a bit too sweet for what (I think) it’s supposed to be, but it’s drinkable enough and better I think as it warms. I’d be interested to try the Victory and Stone versions, guess I’ll be on the lookout now.
3.8 Appearance is decent.. golden almost neon yellow, nice foamy head. Nice aroma.. citrus, floral, spices, very summery. Taste is great.. this is the epitome of a great summer craft beer. Love it.
3.7 Kind've a weak pour but nice herbal, spicy aromas. Initial spiciness art first taste whichb then flattens out a bit too much. Good.
3.5 Bottle poured side by side with the other producers pour light gold with thin white head. Nose crystal malt, sage and thyme. Taste sweeter up front, less herbal than when fresh (4 year old) . Some sage and rosemary. Still a nice beer. Survived the best of the 3.
3.7 Sample at Daily Growler Powell. Hazy bright golden color with a medium thick fluffy white head that diminishes gradually. Partial rings of lacing. Aroma of citrus, yeast and spice. Medium body with flavors of herbal yeast, citrus, malt and hops. The finish is floral yeast and fruit. Above average overall.
3.4 Bottle pour into nonic pint glass from Greg & Jane’s Beer and Wine. Aroma is restrained fruity esters, Belgian yeast, mild bubblegum, mild citrus. Appearance is hazy yellow with attractive sparkle, finger-width fizzy white head with poor retention and no lacing. Taste is as aroma with a spicy pepperiness as well. Palate is medium bodied with thin texture and lively, stinging carbonation that overwhelms the taste experience (best to let it sit a bit); dry, crisp lightly bitter finish. Overall, this is OK but with the mega-cast of characters brewing this you’d expect an All Star.
2.6 Bottle, medium amber, thin white head. Aroma malt, garbage, light fruit. Taste is malt, sprucy, minty hops, sage, . Palate is light, carbonation fairly bright.
3.9 Ar- hops and herbs dominate the nose, bright lemon and orange mix well with rosemary sage and a wispy floral component Ap- clear and golden with a big white head that lingers at the edges of the glass Fl- malt sweetness up front gives way to citrus notes, well balanced hop bitterness and a dry peppery finish. Hints of the herbs show up through Rosemary Mf- soft and coating, hint of alcohol, lacking a bit in carbonation, Ov- very nice beer. Wonderful nose, nice flavor, would love a bit more of the herbs and much more carbonation.
3.9 On tap at PreFunk. Pours out a nice clear golden with soft creamy head, lazy carbonation. Slightly oily, creamy mouth feel, yeasty, grassy aroma and taste. Mild spice on the back on the finish leaves some tang lingering.
4.4 Very woody and herby in scent. Slightly foggy yellow color which is my favorite beer color for some weird reason. Starts off slightly malty then the rosemary and thyme come through beautifully with a Nice smooth spicy finish. Medium body with wonderful crisp carbonation that tingles throughout the whole profile. Love all 3 breweries great collaboration to push the boundaries of where beers can go. Nice work.
3.7 12 oz bottle pours golden with a white head. Aroma of yeast, herbs and some citrus. Taste is rosemary, sage, spicy and yeast.
3.6 Shared 12 oz. bottle poured to snifters, displaying a clear, golden hue, with a presentable layer of white, bubbly head foam, and spotty lacing. The nose was a touch of yeast that was quickly displaced by pronounced grass & greenery, herbs, resin, & spice. Piney rosemary, thyme, and lemongrass were keys, with only a hint of sage showing some herbal earthiness. Rather light bodied, with only moderate carbonation, the taste contributed some earthy & lingering bitterness. Basically, the whole essence of the style was blown out of the water by the Simon & Garfunkel theme, and would have appreciated a little more body and livelier effervescence as my initial review of the Stone rendition revealed. Must have been overwhelmed by the grouping of heavy hitters back then.
