Dominion Millennium Oak Aged

Dominion Millennium Oak Aged

We have just solved a brewery mystery (and it is delicious). We wondered what would happen if we put 2004 Dominion Millennium in oak barrels that had bourbon in them for five years. Three months later we had Oak Barrel Millennium. Something special, we think. Ruby-red color with a wide range of complex flavors. Malt and sherry predominate.

3.7 Bottle of the ’06. Pretty big vanilla in the aroma, which is present but lighter in the flavor. It also has a light tartness to it. The flavor reminded me a little bit of coconut water.
3.5 sweet toffee, and a bit vineous. tasty, but i didn’t find this particularly woody (tasted alongside the normal version)
3.6 12 oz. Bottle. Pours a reddish brown with a thin film of head. Sweet alcohol in the aroma with hints of oak. Some malty sweetness a firm hop bitterness. Lots of alcohol in the feel and down to the gut not unpleasant. Definetly a sipping beer. I think I would have rated it a little higher if I had it in the middle of winter by a fire.
3.9 Bottle scored from the WBF richmond. Pours a clear reddish copper with no real head. Nose of burgandy, sweetness, some vanilla, and surprisingly no alcohol heat. Flavor brings the alcohol, along with sherry, and strong sweet malty backbone. Very syrupy, but not viscous, and fairly thick. Very enjoyable after dinner cordial. But still has a bit too much heat on it. I would bet this would mellow perfectly with a few years on it.
3.7 Chestnut reddish brown with a small crema. Aroma is rich and fruity with stonefruit. Taste is similarly rich, with relatively high hop bitterness and serious tannins. 13/pitcher
3.6 Lots of oak and yum. Nice pour ams just an overall good beer. Yum! I want to rejoice yay
3.0 Bottle at home ... copper ... thin white head ... plums and loads of alcohol nose ... sweet vanilla toffee ... over rich and clawing ... little oxidisation ... plums... little wood ... vanilla ... bit to rough and almost whiskey
3.4 bottle from late ’06 ..burnt caramel look, and some in the nose with some soy.. light smoke.. pretty full- great covering .. a decent brew, and not overdone .. good abv .. .. The point is, how do you know the fairy isn’t a crazy glue sniffer? "Building model airplanes" says the little fairy; well, we’re not buying it. He sneaks into your house once, that’s all it takes. The next thing you know, there’s money missing off the dresser, and your daughter’s knocked up. I seen it a hundred times.
4.1 Bottle from Immy. Abrazame muy fuerte! Pours a nice, thin-from-aging maple syrup brown. Light body that only reveals a head along the edge of the sniffer glass. Aroma is a medely of peach and orange marmalade, candied oak, woody pear, and diluted apple juice. Flavor is a peach/grapefruit Kool-Aid with sweet syrup stored in a dusty oak container. Nice, lingering mouthfeel. A very nice late night treat. Después de acabar esta cerveza, gritaré cariñosamente en la noche de modo que usted viniera a mí.
4.3 Side by side pour with regular Millenium. Pours orange/amber, lighter than the original, with slight off white head. The aroma is much smoother hop and malt blending, and the taste is a much cleaner hop that gives way to a nice smooth sweet malt character that is tart because of the oak. Awesome beer.
3.6 12 oz painted bottle shared by Gregis. Bottled on 111706 stamped on the label. Pour is hazed orange ruby amber with a very minimal off white head. Nice lacing for a beer without much head. Aroma of initial sweet caramel maltiness, followed quickly behind by a dry dusty sherry - nice but a touch oxidized with quite a bit of cardboard showing through. Taste is the nose, caramel sweet malts, followed by dusty oxidized cardboard minor sour earthiness. Palate is medium, the oxidized cardboard nature thins it out a little bit. Really no alcohol present. Nice stuff, thanks for sharing this one Greg.
4.0 Pours dark brown. Nose is sweet malts, cherries, wood and bourbon. Flavor was a mild tartness, dark fruit, warming alcohol, prunes and plum, bourbon and dry fresh wood.
3.9 Bottle courtesy of Ibrew2or3. Pours a hazy brown to cola color with thin tan head. Aroma is sweet and malty with notes of sour malt, vanilla, oak, brown sugar, chocolate. Flavor is sweet and malty with notes of chocolate, brown sugar, vanilla, wood, light smoke, slight sourness. Medium body with a slightly boozy finish.
3.4 Pours brown with a thin tan head. Smells of vanilla, oak, some earthy hints. Tastes boozy and sweet with a dark fruity finish.
3.9 Bottle from sloth in trade... A twist off !??!! OK, That aside. Pours a semi muddled brown/amber with the thinnest of head. Very drinkable from star tto finish. Mellow realy does not touch the unstated evil that lurks in this liquid. Nose must be pulled from the snifter. 11.4% are you mad? Certainly does not seem that way to me... Body is well rounded and slick. Nose is caramel and lots of it. Full mouthfeel does not overpower. Finish is slow and pleasant...hops twinkle over basement earthy tones. Nice....
3.7 Bottle. [thank you, madmitch76] vintage 2006>/i> Pours lovely orange amber with a small, frothy, yellowish head. Fat toffee aroma, roasted caramel, vanilla-like oak notes, light strawberry sweetness. Low carbonation, great oily mouthfeel. Flavour has lots of caramel, light earthy and citrusy hops. A tad vinious, lovely oak flavours. Relatively sweet, still. Fine flavouring hops - perhaps they should just have added a tad more to bittering. Otherwise top-quality.
3.6 Pours Texas orange with a white ring of foam. I get some good oak in the nose. Other than that, nothing exciting in the nose. There’s lots going on with the flavor. Well blended toffee and citrus and oak. Medium body. A tad sweet on the finish. Very tasty though.
3.6 Thanks AgentSteve. ’06 Poured hazy amber, oxidized, caramel, fruity, little alcohol, little wood.
3.7 12oz bottle from my summer secret santa who I still cannot figure who it is. Pours lightly hazed orangish amber with very thin off-white head. Aroma is heavy with sweet malt, booze, oak, light vanilla, hops, dark fruits and caramel. Flavor is mostly sweet malt, booze and oak with some light vanilla, dark fruit and caramel. Flavor is really onesided and little underwhelming. Mostly just sweet malt and booze with some oak and caramel. Mouthfeel is thin and carbonation is very light but that probably due to high ABV and the barrel. Have been wanting to try this for a long time and am a little disappointed but this is still a good beer. I was just hoping for greatness.
4.1 Pours a cloudy dark amber color with a thin white head that quickly settles into a thin lace. Pleasant aroma of bourbon, earthy oak, vanilla, hops and alcohol. Well balanced with lots of bourbon vanilla oakiness, malt backbone, sweet alcohol and strong hop presence.
3.8 12oz bottle, courtesy of TheBeerLover. Per the label, bottled in 2005. Pours a nice red-brown mahogany with modest head that quickly settles down to a ring around the rim of the glass. Aroma is a little weak but eventually gives up rich notes of vanilla, bourbon, raisin and alcohol. Flavor is a strong yet pleasantly subtle burst of standard "bourbon-barrel" flavors of bourbon, vanilla, oak and a bit of charcoal. It almost, but not quite, overwhelms the malty, vinous qualities of the base barleywine. Warming alcohol creeps up on you after a few sips. Thinnish, clunky palate is the only letdown here. Otherwise, this is a really solid, well-balanced, and very approachable, drinkable bourbon-barrel beer. I should note that this bottle aged for 4 years. I don’t know how different it tastes today versus 4 years ago, or if there would be any difference at all. But at any rate, it held up extremely well despite not always being stored in optimal conditions.
3.5 2007. A little sweet and realatively thick. Nicely balanced carbonation profile. Sweet malt a little overwhelming on the back end of my palate, some caramel and bourbon.
3.3 12 oz. bottle - props to riversideak; no bottle date in my notes; pours clear, dark orange and flat with no trace of head; scattered aromas of sugar, alcohol, oak; drinks with some noticeable heat; thin texture, seems aged a little too long maybe; pretty blah overall
3.8 Bottled on 11/20/06. Poured hazy, peachy amber with a short, well-retained off-white head. The aroma was strong with light fruit skins paired with plums, raisins, and aged caramel.. accents of brown sugar, fresh oak, and vanilla.. smelled like it was going to be sour. The flavor did indeed have tangy sourness laced throughout with light fruit skins and oak being the major players.. brown sugar and aged caramel provided the base.. darker fruits and vanilla rode out the edges.. bitterness was mostly oaky.. finished with a fine balance between the sweetness and the barrel. Medium-plus bodied with low-ish carbonation on the palate.. warm, but never too much so.. well-balanced and aged. I’d gladly have another.
3.8 Like the standard version, but even sweeter with a thicker, heavier palate. Molasses. Malt, moderate hops, and a plain, brown color. Quite sweet, lots of oak, but no bourbon, I am happy to report.
3.4 Bottle from Raleigh WBF. Clear amber pour and not much head. Big oaky nose. Lotes of vanilla and sweet as hell. Syrupy. Too much for me. I don’t dig this.
4.3 5 year old keg on draft at Capones. Man was this good. So smooth and rich. Nice and sweet with hints of bourbon and oak. Aroma and taste of vanilla, oak and cream. Some milk chocolate rounds this out. Really good.
3.9 5-year-old on tap at Capone’s a week ago. Aroma of vanilla, oak, sweet fruits, particularly boysenberry, mildly bourbony. Flavor more vanilla and oak with very rich, toffee and cake malt. Coffee in the finish. Just a touch cloying with some overbearing sugariness, but otherwise very enjoyable.
4.1 5 year old keg on draft at Capones. Poured a reddish brown flat body with no head what so ever, oh well it is aged five years. Aroma was nice with notes of vanilla, oak, toffee, butterscotch, chocolate, coconut and slight rum. Flavor is just as complex with the oak really coming through on the aftertaste. This was highly enjoyable and one of the better beers on a day of some really good beers.
3.9 Strong aroma of bourbon, dark fruit, and caramel. Best served warm. Flavor really arrives with malts, vanilla, fruit, wood, and bourbon. Very nice!
