This is a beer already brewed in the 1950’s by Dupont Brasseries. As Dupont has extra fermentation capacity now, Olivier has the luxury of crafting some new brews, or re-creating some old specialties.There were two test versions of Monk’s Stout, both at 5.2% abv. One was dry and roasty, and another is said to be a little more rounded. Monk’s Stout is available in 33cl bottles and 20 liter kegs in Belgium.

3.4 Taken as our second drink of the evening, I was hoping this one would have been a dark ale instead of a stout. My friend really liked it, where I thought it was correct.
4.0 1st impression: very foamy. much too foamy. very bitter, especially the foam. also a bit sour, kind of like fruit schnaps. strong coffee note. tiny hint of chocolate. 2nd impression: this beer gets a lot better after the first few sips, once you get over the bitterness. then the chocolate/caramel/toffee notes really begin to shine!
3.1 Stout léger.
2.9 Heavy on the ashes and a little cigarette, over a mildly sweet malt. Finish lingers ashes and bitterness. (Not unlike a few of my former relationships.) I think this is my lowest rated Dupont. Disappointing, really.
3.4 330ml bottle. Black with a foamy beige head. Flavors are yeast, bread, roasted cereals, citrus and spices with fruity and floral notes. Medium body, good carbonation, smooth texture.
3.3 Brown pour, clear, finger sized tan head. Lightly floral aroma, cocoa, yeast. Roasted malt up front, yeast, slightly chalky, light cocoa, a bit smoky and lightly sour. Medium body, pretty lively carbonation.
3.7 (bottle) clear, bright dark amber brown colour with a medium tall brown head; aroma of lilies, roast, dark chocolate; assertive, dry flavour with a long, medium strong bitter finish

3.6 Chinée à L'Usine à Bières de Granville bouteille 33cl (DLC: 05/2021) Le nez est un chouïa fruité et on y distingue un bon fumet de café du à la torréfaction du malt. Belle robe brune avec un bon lit de levure qui rend cette bière très vivante. La mousse est fine, de couleur crème et d'une belle tenue avec une carbonatation excellente. Dans le palais on détecte des arômes importants de céréales et de levure en action. Le malt fortement torréfié nous donne une saveur de café brut et amer bien agréable.

3.3 Pours brown color with average head. Very unique combination. Monk style of monastery Belgian beer combined with stout. Results is pretty damn good. Slight taste of Belgian yeast and basement, toned down by lactose stout to bring a nice balance to the beer. Low carbonation suits it.
3.3 330ml bottle from LCBO. Pours an opaque deep brown colour with one finger of head. Aromas of roasted malts, coffee, and some Belgian yeast. Taste matches the aroma that leads to a spicy and bitter finish. Medium bodied with moderate carbonation. Not bad.
2.8 dark brown with whiteish head. smoky, charred aroma. taste is very bitter, no malt sweetness, charcoal, smokiness, near sour from malt choices (low ph). unique stout, not easily loveable as the intense smokiness is not balanced out well. would not get again

3.1 Rocky tan head stayed on dark oak coloured body. Malt aroma. Medium bodied thinning to the back. Malt, chocolate, bitter berry & fruity tastes.
3.3 Copenhagen 19/12 2019. 33 cl bottle from Køl Beer Web-shop. Black label simply stating the name of the beer and brewery. Very gushy upon opening leaving puddels in my kitchen. Pours opaque dark brown with a very big light beige head. Settles as 2 cm thick layer of fluffy foam. Moderate lacing. Aroma is moderately intense, lightly sweet with some prominent citric notes. Dark roasted malts with a sprinkle of brown sugar. Citrus and tart goose berries rummaging in the background. Strong carbonation. Thin, watery and lively almost fizzy texture. Flavor is medium sweet followed by and balanced by a tart citric sourness. Aftertaste is bitter sweet and lingers for a while. Pretty light hearted and a bit thin for a stout. But has it’s own strange banale and is actually almost fresh.

2.7 Bouteille: Nearly black, presumably clear, bigger loose off-white head, thats slowly collapses, moderate sourish-roasty nose with traces of necrotic yeast ["turpentine"]; moderate sourish-bitter flavour, not overly soft, pretty light bodied; dryish bitter-tart finish with the usual remaining acidity. Not really convincing...
3.9 Fridge clean-out rating day! 330ml bottle Deep almost opaque black, huge fluffy light tan head. Smells like a roasty tripel - modest alcohol, lightly floral - the taste is great - this bottle is a couple of years old but I think it's improved; dried floral bitterness and somewhat ropy tar roast - just lovely, so drinkable. Average body, slick, light carbonation, building but light acidity in a medium dry roasty dried herb/flower finish. Good, good stuff
3.2 The aroma of coffee and chocolate, a little burnt grain. Dark, impenetrable beer with good brown foam. In the taste of chocolate, burnt grain. Body average, carbonation average.

3.2 Robe brun rouge très très sombre, mousse abondante, fine et brun clair. Nez vanillé agréable, avec un arôme semblable à l'alcool. En bouche, l'attaque est plutôt sèche, sur du cacao léger, avec le froment bien perceptible. Arômes plutôt légers, notes torréfiées, amertume légère. Ensemble riche pour un degré léger. Un stout correct, mais pas la meilleure bière de la brasserie.

3.3 Ein Stout aus Belgien habe ich noch nicht gesehen - drum gleich mal bestellt. Im Gegensatz zu den angelsächsischen Stouts ist es recht hopfenbetont und die Malznoten halten sich im Hintergrund. Es treten eher rauchige Aromen hervor. Ein interessantes Bier, das ich aber nicht als Stout erkennen würde.
