Gregorius shimmers in the glass with a rich dark maroon colour. In the nose herbal and licorice aromas dominate, which are combined with ripe fruit notes. It presents a strong malt body, which is characterised by coffee and roasted aromas. Honey from the region and Alsatian wine yeast conjure up a nice sweet and sour game on the palate. Slightly bitter chocolate flavors accompany the warming finish of this powerful Trappist beer. Deep - Thoughtful.

Im Antrunk präsentiert sich ein kräftiger Malzkörper, welcher von Kaffee- und Röstaromen geprägt wird. Honig aus der Region und eine elsässische Weinhefe zaubern ein schönes Süß-Säure-Spiel auf den Gaumen. Leicht bittere Schoko-Aromen begleiten den wärmenden Abgang dieses wuchtigen Trappistenbieres. Attack: thicker slick oily crisp
Mids: date malt, lvl7-sweetness, raisin, boozy hit

Overall: deep and rich, alcohol is on the harsh side, but at least there is flavour.

4.033cl bottle got from an online shop, drinking it late night @home on 10/07/2021 BB 10.07.23 Pours deep dark brown with a beautiful, short ring of beige foam on top and good lacing that follows the beer all around the glass. Impressive aroma of malt, plum, dried fruit, roasted malt and some chocolate, licorice and vanilla. Taste is rich and sweet enough with nice roasted malt, nuts, licorice, dried fruit, black olive, and chocolate flavours and a slight gentle herbal hops touch in the finish, also quite warm from the 10.5% abv. Really balanced sweet - bitter and complex, rich taste and extremely drinkable. You can feel the alcohol after a while but it's well hidden in the taste, really smooth and i can't help having another sip every few seconds. So balanced and perfectly made. Medium full body and slightly oily texture, mellow soft carbonation. Quite intense and wonderful finish. Loved this one, really impressive and delicious quadrupel.

Compared to Rochefort 10, it’s maltier, darker, in general heavier. Same sweetness, but like fudge compared to toffee. It’s fuller. Like Finnish mämmi but sweeter.
3.8Pours dark brown with a small light beige ring. Aroma is raisin, plum and rich malt. Taste is a little purple fruit, rich malt a little alcohol burn. Not as complex as other trappists but still very solid.

3.6Voelt een beetje dubbel maar dan krijg je een Quadruppel 😂 Van binnen blijf je een dubbel gevoel aan over houden. Zoete bruine nalatige kandij smaak. Redelijk zacht en zoet met een kleine droge bitter. Maltig licht winterkruidig geurend. Donkerbruin met gemiddeld koolzuur en een crème kleurige schuimkraag. Overall een kruising tussen een dubbele Bock maar dan met een stuk hoger alcohol percentage wat redelijk subtiel op de achtergrond is. Fles @ Proefglas klein

Rich dark pour, modest head. Lots of chocolate atop a quad base, pretty prominent hop close. Dangerously easy to sip. I really quite like this.

Head: tan, two fingers. Dissipates quickly, leaving thin thick foam.
Colour: dark brown, lots of yeast floating around.
Aroma: red berries, suryp, molasses, caramel, dark bread, alcohol, spicy.
Taste: thin/ medium body, lively carbonation, taste follows aroma, warm. Some herbal bitterness.

3.9Aromatic with malted dominance and powerful notes of black fruit (dates, figs) as well as molasses and caramel. The foam is beige,, medium-sized,effervescent and still maintains quite well despite its low density. The color is brown with red highlights and the latter is quite opaque. The mouth is well caramelized and is accompanied by black fruits raised in olfactory. The finish is pepper-spiced and is accompanied by a gentle heat of alcohol. Vanilla and pepper add to the complexity. The finish is intensely sweet, although the spicy hops mitigate its impact. The body is plump and creamy. However, the carbonation is deficient compared to the Belgian Trappists versions. Very sweet and well enhanced with spices that give it a coarse overall taste. But there is a lack of effervescence and we would have appreciated a more intense alcohol heat.
Aromatique à dominance malté avec de puissantes notes de fruits noirs (dattes, figues) ainsi que de mélasse et de caramel. La mousse est beige, de taille moyenne, effervescente et se maintient quand même assez bien malgré sa faible densité. La couleur du liquide est brune avec des reflets roux et ce dernier est assez opaque. L’entrée de bouche est bien caramélisée et s’accompagne des fruits noirs relevés en olfactif. La finale est épicée au poivre et s’accompagne d’une douce chaleur d’alcool. La vanille et le poivre rajoutent à la complexité. La finale est intensément sucrée quoique les houblons épicés en atténuent l’impact. Le corps est bien dodu et crémeux. L’effervescence y est cependant déficiente si l’on compare aux Trappistes Belges. Bien sucrée cette quadrupel et bien rehaussée d’épices qui lui donnent un petit aspect corsé. Mais il y a déficience au niveau de l’effervescence et on aurait apprécié une chaleur d’alcool plus intense.

The taste is medium sweet that finishes lightly bitter. The palate is full bodied, with light carbonation. Overall, nicely complex.
