3.6750ml from the Bstill-ery vaults, thanks Brian. Bottled in 2004, sampled in 2008. Murky orange-brown color. Very interesting subtle tastes going on behind the smooth malty body. Mild yeast character helps smooth the beer out. There is an earthy, almost vegetable flavor in there it seems. The aroma has deteriorated significantly, perhaps the taste has suffered as well. Nonetheless remains quite enjoyable and drinkable.
4.0Thanks to Brian for this one. Hazy amber with tall fluffy white head and lots of fluffy lacing. Aroma is kind of dry with brown sugar. Flavor is slightly maple, brown sugar, dry finish, no stickiness, and a bit of candy sugar mellowness.
3.8750mL bottle, courtesy of bstill. Thanks, Brian! Pours a bright, golden-amber color; off-white head with good retention and glistening, mixed-bubbled lacing. Musty, tea, and stalky floral notes and light citrus in the aroma; maybe a touch of dried parsley; really nice, interesting, musty nose. Medium-to-full mouthfeel: toasty breadiness, tea-like malts, and floral notes upfront; solid amounts of characteristic Fantome funk, dry toasty malts; very drinkable, funky, and dry. Lengthy finish: dry toasty malts, breadiness, hints of spice and floral notes.
3.9Courtesy of bstill. Cloudy gold/amber body with a small white head. The nose is malty with caramel and light herbs. The flavor is lightly sweet with toffee, graham cracker, herbs, flowers and honey. Medium body is very soft with high carbonation.
4.0750ml bottle. Seriously kickass aroma. Very unique, even for Fantome. Very woodsy. Lots and lots of dusty cedar. Maple syrup laced oak chips. Honeysuckle dripping in morning dew. Just the smallest hint of earthy funk. Pours a dark and slightly hazy copper with a very fluffy white head. Flavor is rich and full bodied for a saison. Toasted nuts, cut grass, dusty basement. A touch of aged cheddar. Becomes very yeasty as the beer opens. Wet wood. Honey and maple syrup. The smallest hint of yeasty funk. Dried citrus peel. Very nice. Fluffy carbonation with a lasting dusty and cedar finish. Nice! Thanks a ton for this rare treat Markus!
3.5Poured a fairly hazy amber color with a large off-white head. Moderately yeasty, dusty, floral and spicy. Also some sweetness and notes of Swiss cheese. The flavor had mild malt, but on the short side, with dried flowers and spice toward the finish. Light to medium body.
3.8750 mL bottle received via trade with elmatador00. Pours hazy orange with a large, fizzy, off-white head, mostly lasting with good lacing. Aroma is heavy malt (grain, hay, straw), average hops (herbs, grass), heavy yeast (horse blanket, barnyard) with notes of grape, pineapple, pepper, and chalk. Full bodied, sticky texture, lively carbonation, and a chalky finish. Average duration, moderate sweetness, light acidity and bitterness.
4.1In short: Dry and dusty rustic Saison like no other. An acquired taste. Fantastic to me but not for everybody.

The look: Cloudy orange copper body with a large beige head.
In long: Nose is like opening an old wooden chest is a old dusty attic. Very rustic and I like it. Tastes is pretty much what the nose hints on. A bit wild/funky but this beer is more dry and dusty than anything else. Fluffy body, graham cookies, dry wood chips, some crunchy caramel. Quite a bit of acidity, not fruity tartness, just pure acidity. A little spicy touch. A light oxidation kind of works well with the dry dusty nature of the beer merging together into a rusty flavour. Barely any fruity notes except maybe some dry orange peels. Lively carbonation. One of a kind. Fantôme BBBrrillant.
3.8750mL shared by notalush, thank you. The beer pours a mud thick brown with a small head. aroma is signature Fantôme with that spicy and lightly funky thang. Spicy, funky, and woody. Taste is much more plain with a malt driven, thicker Saison. Above average carbonation, as usual for Fantôme .
4.0Bottle from elmatador00 - cloudy pinkish beer, with huge carbonation - funky, cheesy aroma, with a nearly bacterial quality, light fruitiness, and lots of earthy cobweb and mustiness - cheesy and fruity in equal measure, reminding me of eating apples and blue cheese - quite leathery and earthy, with a wee hint of smoke - not really sour, but quite funky - a bit past its prime, but I loved it anyway.
3.8750 from A Southern Season. The pour is a lively golden orange that produces a two finger frothy light orange head. A well maintained head for a highly carbonated Belgian, it recedes quickly and yet leaves enough behind to remind you of what it used to be. The nose is very nice, sweet, subdued caramel, a slight dry bretty character, and a slightly acidic smell. The flavor is dry and spicy, a light brett character, nice vermouth qualities, fruit. The mouthfeel is full and carbonated with a lasting finish. Very nice drinkable saison.
3.7The color was light orange. The head was creamy and off-white. The aroma was sour, earthy, sweet malt, and slight bubblegum. The flavor was earthy, funky, and tart. The palate was average with an astringent finish.
3.8Poured a milky reddish color with a thin white head. Has hints of sour fruits, dark sweet fruits, spices, yeast. Finished with a yeasty taste on the tongue.

Appears a hazy, dark amber with a small white head that fades into a mild white cap. Spotty streaks of lacing are left around the glass.
Smell is of funky, cork, wet straw, toffee, vanilla, brown sugar, and roasted nuts.
taste is of the mentioned aromas with a standout of sweet, sugary, earthy malts. Light oxidation in this aged bottle but still decent.
Mouthfeel is medium bodied, semi-sweet, smooth, with sugary caramel holding on with light herbs and spices.
3.5Poured a dark cloudy amber with a small white head. No signs of the usual funk nose you get from Fantome.The nose had spice, bread and bananas.Flavor was bready with spice and malts.The finish was dry.This was definately different than any other Fantome I’ve had.
3.5Thanks to EDA for sharing. Id been wanting to try this one for a while. Pours a hazy amber with a nice fluffy off white head and good lacing. Aroma is a bit stale and old but held osme of the saison yeast, light caramel, but had light paper, and cedary pencil quality. Flavor is a bit better beign slightly sweet caramel, nutty, earthy and herbal spices including white peppercorn. A bit too old at this point but still decent
3.3Thanks to eyedrinkale. Pours a cloudy brownish golden with a small bubbly white head. Aroma of sweet malts, light spices, tea, some citrus and grains. Flavor of various spices, dry, honey, malty sweetness, some wheat tartness...kind of past its prime.
3.5750ml bottle thanks to gottalottaibu for this retired Fantome. pours hazy dark orange with fluffy white head. nose is very mothy, flowery, grainy, and subtle citrus and spice. flavor is mothy, oaky, spicy, grainy, and stuble citrus sweetness. finish is really dusty and dry. carbonation is smooth, and body is light. uniquely fantome, but sorta boring.

4.2Bottle from Bu11zeye. Definitely the most disappointing fantome I’ve had to date. Pours a deep ruddy brown with a large head. Aroma of chestnut and plum with a slight alcohol heat (at 6.4%?!) and little complexity. Chewy and watery flavor, fruity and odd, dry spices. 6/4/5/3/3.0
rerate 2/2/08: Bottle shared by MaxxDaddy. Rich, musky, dank cellar aroma, grapes and apples and a touch of mint, with that distinct fantome yeast. Rich cardboardy malt flavor, mint sprigs, and a wet wheat freshness that is completely delicious. Lovin’ this. I’m amazed this is the same beer as last time. 8/4/9/4/4.2
3.6Hazy dark amber, with a soft, smal off-white head. Rather a bitter nose with some dust, brett, light sweetness. Flavor is fairly sweet, with quite a bit of dust and hay. Not too much depth there--a touch watery. Ends quite dry.
3.3in the barrage of ratings i found from last year. i like fantome for the fact that they supply me with the Funk i enjoy in my belgian-styles. perfectly orange color with light carbonated head. some lemon, orange, lemongrass, herbal stuff, lots of bready yeast, and some raisin with white grapes and apricots. some funky jalepeno cheese in the flavor as well. ooh gotta enjoy the white pepper too. dry mouthfeel, like champage or wine.
3.4750mL bottle, no date. Pours a cloudy orange with a large, fizzy light beige head. Big aromas of dust and mustiness, grassy, spicy, yeasty, and misc. fruits. Taste is very yeasty and funky, and actually get a tiny bit of coffee bitterness in the dry finish. Citrus fruits are the dominant fruits, the only ones I can discern besides juicy raisins.
3.7Bottle: This was sent to me by either Sprinkle or Secret Santa 12/05. Cork exploded out of the bottle and literally bruised my thumb under the fingernail where it hit. Aroma is very yeasty with moderate fruit, pepper, and light grassy and flowery hops. Pours a hazy orangish-red with a moderate off-white head that lasts a minute or so. Very yeasty and fruit up front with some grape. Spicey (light clove) and peppery finish with light flowery bitterness. Soft carbonation and creamy mouthfeel.
3.1Bottle. Golden with a huge head. Malty and a bit yeasty. A faint taste of dried fruits.
3.4Bottle: Dull caramel, thick, very muddy/dirty looking, large foamy off-white head, fairly nice lacing. Tart nose, wheaty, slightly floral. Very dull flavor up front... expected a bit more from Fantome but this one is very tame and dull. Moreso wheaty (boring) than sharp and floral (exciting). Clean, but just not Saison enough. Moderate body and mouthfeel. Finishes.... rather dull, only slightly musty but certainly not floral or even spicy. Uninteresting Saison. Not bad, but too tame. Thanks Tom for the bottle!
3.1Bottle courtey of StewardofGondor. Slightly hazy dark copper in color. Off-white headlasts for quite awhile before fading to film. Lots of sweet malt and yeast up front, with hints of spice and some skunk in the background. Flavor again malty sweet up front, with musty farmhouse, yeastiness funk going on. Turns more and more skunk like as it warms, not in a good way either. Dissapointed overall.

It’s slightly better than the 4.1 I originally gave it. As it warms more depth and flavors comes out. The lemon rind becomes more fruity...grapefruit mostly and I am very impressed with the the slightly tingling clean feeling it leaves in the aftertatse. My first 5 minute later re-rate!

The proto-typical horseblanket aroma. Quite musty and very slightly sweaty like a shirt worn all day. Yeasty and faintly fruity and spicy. Reddish/orange color with a wallop of a head that lasts and lasts. Flavor is very clean in the fore (suprised me) with hints of lemon rind (the white stuff not the yellow peel) and a crisp acidity. I don’t get any sourness or even any musty notes. Some mild bread (yeast) and herbal notes as well.
This was a bif suprise. Amazingly clean and crisp...they way beers that advertise themselves as "clean and crisp" never could be. The herbal lemon rind flavors are the most dominate and they linger nicely through all phases and compliment the medium body the beer has. Nice.
3.3Cloudy brown-amber body. Brown malt/yeasty aroma. Odd flavor - mint, pear, white bread, some sage at the end. Dry mouthfeel.
