3.7Reviewed from notes. Received in a trade with jsquire, thanks a bunch for the great trade Jeff! No discernible vintage found on the bottle, but it has the old paper labels typically seen in the early to mid 2000’s. Pours a murky brown in color with a ring of soapy off-white head around the glass. Nose shows very little oxidation, more along the lines of malt, citrus, orange peel, and some slight metallic notes. Flavor is malty and somewhat cocoa-y, with a fairly pleasant tart, citric finish. Very well rounded flavor. Moderate mouthfeel with moderate carbonation and a lingering acidity. Much better than I expected, quite a pleasant surprise on the day. You need to make this again Dany!
3.3The original is better! Similar taste and aroma with some metallic hints and special malts.
3.5750mL bottle, courtesy of julian, pours a dirty, cloudy amber / mahogany with a tiny beige head. Aroma seems a tad oxidized and very malty, with dry cherries, some tannic qualities, and a bit of red wine vinegar. Flavour of red wine vinegar, tobacco, and leather most dominantly, and some dry caramel or toffee a little later. The oxidized qualities certainly show as well but definitely don’t kill it. While this has certainly passed its prime, the leather and tobacco notes help save this. Doesn’t strike me a saison, more like a Belgian amber ale. Very interesting one.
3.8Bottle a couple years back. Hazy golden pour with huge and ultra fluffed out white head. Lacing was small to medium. Aromas of lemon rind, and other citrus dominant fruits. Other notes of belgian spice, vinegar, and light cocoa powder. Taste is similiar with a green apple and lemon flavor with honey, malt, and hop bitterness. Somewhat dry but worked well with the beer. Nice and woody. Will try again.
3.8Cloudy golden-amber body. Large fluffy white head. Spotty lacing. Nose if full of lemon, wheat, yeast, and mild earthen notes. Flavor is similar but a bit less successful. Medium bodied, lively carbonation, a hint of acidity in the finish. Another interesting offering from Dany.
3.8750ml bottle. Man, I’ve sought this one for a very long time after losing my rating from long ago. The pour yields a cloudy, dark, orange-amber body with a small, foamy, eggshell tinted blanket for a head. Minimal spotty lacing marks the glass. The aroma is quite spicy and complex, suggesting of peppery grasses, herbal tea, and orange and lemon skin, all over a base of candied amber cereal grain. Yeast is slightly tart and minty, as per the Fantôme norm. Flavors follow suit, very herbal and peppery, showing plenty of citrus pith. Candy sugar is sufficiently dried by the minty-tart yeast. The palate sports moderate body and carbonation. This one really came together for me. Nice stuff....a very solid Fantôme.
3.6Bottle… Fantômepalooza 2011… Cloudy golden ale with a small, quickly vanishing head. The bouquet is spicy and funky with notes of leather and citrusy lemon peel. Medium to full-bodied with dancing carbonation. Finishes crisp, tart and lightly sweet. Bottle courtesy of the always-generous Beerlando!
3.6Old 750ml bottle shared by Sylvain. 2004 vintage.
Appearance : Dark amber with small head.
Aroma : Some herbs with light oxidation. Light soy sauce with light sourness. A bit vinous.
Taste : Light sourness with lots of herbs. Sharp vinous finish with herbs. Light alcohol. Soft carbonation.
Overall : Very weird (as usual). Firsts sips are quit disconcerting but you slowly get used to it. Quite complex and very original but in the end it’s not really my thing.
3.3Vintage 2003. Pours a bit murky and amber in color. It’s somewhat sour with a definite vinegar note. A little sweet malt aroma of toffee, maybe some apple. The flavor is sweet and malty with a decent amount of bread. A weird herbal flavor, perhaps spruce.
3.3Pours medium brown, hazy, low head that doesnt last or lace. Aroma is very chocolatey with some light spices. Flavor is lightly chocolatey and vinegary without much else, aside from some floral and piney qualities. Weird and both good and bad. Overall enjoyable.

3.7Courtesy of ekstedt. Pours cloudu copper with a small bubbly off white head. Aroma is sour, fruity, nutty, dry and spicy. Flavor is sweet, sour, spicy, vinousa and fruity; pleasant. Finishes sour, vinous and fruity.
4.0Bottle (75 cl) from Etre Gourmet. Hazy amber, medium off-white head. Nutty almond aroma with red berries and some vague spices. Medium bodied, soft carbonation. Semi dry, medium bityterness, mild acidity. Very good.
3.6Tart apple aroma. Clear amber, no head. Tart apple flavor which gives way to cherries, wood, and twigs. Good transitions. Refreshing.
3.2A clear golden colored beer, with a thick white head. The aroma has some notes of sour, with fruits and spices. The taste is also some sour. It has sweet fruits a little sparkling, some spices with a little bitter. The aftertaste is some sweet, notes of bitter with a little sour.
3.1Würziger, deutlich kräuterartiger Antrunk in entsprechender Intensität. Süßlich, intensiv, rund. Weiter nach Kräutern, sehr ausgewogen. Zum Ende deutlich milder, dennoch würzig. Ein breites Aromenspektrum! 9/10/11/12/9/11
3.4Bottle, bought @ EG.
Murky darkish orange with a medium, fizzy, off-white head. Aroma is sweet, some good orange peel, light white pepper, fat bready malts and a bit of caramel. Light funk. Highish prickly carbonation, light and kinda dry mouthfeel. Flavour is mild at first, sugary sweetness, mild caramel, lemony zest with orange peel. Dryish and light spicy end with white pepper and coriander. Not the most impressive Fantome, but it’s still good.

6 Not a big aroma by any means. What’s there is earthy and leathery, and definitely sour, with a clear spike of acidity.
4 Hazy orange, brief head.
Palate 4 - woh - what a smack in the chops. Crisp, tart and acidic, and with pleasant crispness from the carbonation.
Taste 7 - Retronassals are dark tart berries, balanced with lighter tart berries. Some muddy yeastiness too, which spoils it a bit. That continues in the taste, the acidity comes through more, fighting with ferns and undergrowth for front place.
Finish 4 - That acidity coats the mouth quite convincingly, it’s a real cheek scraper. Fills out with some nice wheat-bready light grains, and then some dry papery hops, which aren’t my favourite. They do fade though, and leave you with the lambic-like sourness on your lips.
14 Covers 8% very well, but not as well as a marriage parfait, if you like sharp sourness. The yeast has a little bit too much earthiness for my taste, alas, I prefer a crisper sour, or a less sour earthy beer.
3.6Corked botte. pale amber color. Cloudy. Initial malt. Spicy citrus aroma. Tart lemon flavor with some coreander and anis. Well balanced, especially for a Fantome brew. Very nice!
3.4Beautiful, orange beer with medium head. Aroma is strongly sour, fruitfull, cider, rosehips and whitewine like sourness. High alc. %, but still surprisingly light body with sparkling carbonation. Taste is strongly sour, quite dry, fruitfull, rosehips and whitewine; taste is very similar than aroma. Surprising, sour beer, but more complexicity would be great.
3.0Bottle. Amber, hazy, average and fully diminishing head. Moderate, malty and dry sour aroma, spiciness (pepper, orange), light fruitiness and alcohol. Body is light to medium, malty and dry sour flavor, fruitiness, and light spiciness, yeasty. Finish is short to average, malty and dry, lightly sour and yeasty. Mediocre one from Fantome, there nicer ones from this brewery.
4.1O,7l. bottle. Orange with not much head. A lot of berry aroma. Sea-buckthorns or sorbus maybe. Slightly grainy. Acids and yeast. Clementines AND STUFF. Gets better towards the end of the bottle. Veeery fruity. Both me and my friend kiwu, peach and grapfruit int this. Wonderful.
3.30.75 l bottle at Petalax Beer Festival 2010. Reddish brown color. Weird spicy and perfumed aroma with pepper, ginger and lingonberry. Tart and musty flavor with red currant, lingonberry and pepper. Spicy bitterness in finish. Very dry, tart and spicy. Original and weird taste.

Clear medium amber color with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, caramel, light roasted, moderate yeasty, barnyard, leather, fruity, light peppery. Flavor is moderate to light light heavy sweet and bitter with a average to long duration. Body is medium, texture is oily, carbonation is soft. [20100703]
4.2My first Fantôme experience, sampled at l’Autre Oeil in Aylmer, Quebec. Pours a nice creamy head which is long lasting. Sediments are found at the bottom-half of the glass. Hazy amber-beige-orange colour with foamy lacing. The nose is a mix of Belgian yeast with hints of apples. Also earthy. There is a mild bitterness to the taste, from start to finish. Fruit is found and the background seems filled with candy. The mouthfeel is dry and slightly waxy. A berry feel is left in the mouth after the swallow. Quite refreshing for a strong brew. I enjoyed this one, and hope to taste many others from this micro-brewery.
4.2Cloudy orangish pour. Aroma is farmhouse earthy grass. Taste is earthy tartness with some fruit. Rated 2/21/05
3.7Bottle shared by Tmoney99. Pours a hazy orange/light brown color with a larger off white head and lots of lacing. The aroma is grassy, herbal spiciness, fantome yeast, and some barnyard funk. The flavor is more tame than most Fantome beers. Slightly fruity with some tart qualities, barnyard funk, grassy and floral, touches of spices appear. Some earthy hops show through, before the finish becomes dry and bitter. This is more drinkable than many Fantome beers, but not as complex.

3.175cl Bottle. Pours mahogany, rusty white head, lots of floaties. Sourish nose. Saison? Tastes more like an oud bruin.
3.4750ml Bottle - Hazy brown in colour. Tart and fruity aroma with hints of dried fruit. Slightly tart taste with dried fruit and tangy caramel. This bottle is from around 2005/2006 time and seems to be a bit more sharp than other vintages I’ve tried.
