3.5Bottle... Poured reddish brown with a thin head. This had some oxidization going on for sure. Body thinned out, dry and funky, a little flora and mildly bitter herbal spiciness to it.

The various flavors and aromas all seemed a bit muted.
3.4Apparently a very very old bottle. Pours with a hazed murky brown body and a small white head. Aroma is minty and spicy with crushed grapes, ethanol and white wine. Flavors are bready, malty, and minty. Noticeable oxidation. Light bubbles. Tastes faded.
3.7750 ml bottle poured into a tulip glass. Pours a ruby brown in color. Tart sour aroma, flavor is tart with hints of cherries, and citrus. Really good with two years of age.
4.6750 ml bottle. Acloudy dark golden beer with a hune, frothy, fizzy, lacing, mostly lasting white head. The aroma is lightly malty, lightly to moderately hoppy, moderately yeasty. There are notes of toasted grains, lemon, orange, apple, flowers, barnyard, earth, spices (pepper). The flavour is moderately sweet, moderately sour, lightly to moderately bitter. Medium body, lively to fizzy carbonation, dry and very long finish with medium bitterness, no signs of alcohol. Probably the funkiest and wildest product from Fantome. Excellent appearence, awesome balance, a lot of acidity (maybe even more than moderate), very clean. A truly masterpiece, I’ve been searching for this beer for a long time, and I can say it has respected my personal hype.
3.5bottle shared at RBSG’10 grand tasting - arouma is acetone and spraypaint. Funky, caramel malts and tart. Still tasty despite the offensive arouma... probably due to it being an old bottle and me being overly sensitive.
4.1Perhaps I am missing something, but I think Fantome is one of the best breweries on the planet. Everything Dany makes appeals to me. This beer is no different. Pours a darker amber color an orange hue and an off white soapy head. Has an aroma of vinegar, caramel, and funk, with hints of lemon zest and apple cider. Sweet malty taste with a slight carbonation that kicks in with the very gentle tart kick. Nice delicate bitters on the back end. You are left with some funk and cider sweetness on the finish. Not my favorite from Dany. But damn good and as always, unique.
4.1Bottle from Savvy I believe at RBSG 10. Thanks! Pours a murky yellow/brown. Nose is pretty aromatic. Sauteed mushrooms, tobacco, kale, tea leaf and funk. On taste, plenty of funk comes through along with spicy tobacco, leather, truffle & tree bark. Slightly sour and dry funk. Finishes nicely. Pretty fantastic saison and another winner from Fantome.
4.2RBSG Tasting. Holy crap. Aroma is crazy awesome. Parsley. Low carbonation. Subtle and lovely. Tobacco leaf.
3.8Bottle @ Ebenezers.. Medium amber pour , small white head that leaves quickly, no lace . Aroma of fruit (apple) , barnyard and some spicy yeast notes . Nice light malt and fruity , funky yeast flavor . Light bodied , lingering spice notes , Excellent .
4.7Bottle, with enormous thanks to Doodler. Fuck me this was one helluva Saison. Poured murky yellow, thin white head, and generous lacing, if rather spotty. Nose is tobacco, brett, lacto, spice, loads of multilayered funk going on here. Sweet and sour, the notes range from earth, to Morel mushrooms, to leather, to sweet stonefruit. Perhaps the best nose i"ve had on a beer to-date. Flavours are less assertive, soft creamy and spicy, with more mushrooms, stonefruit, and a rather Gueuze-like mouthfeel. Tremendous.
4.7Enormous thanks to Savvy1982 for the sample at RBSG! Pours a very hazy yellow with a very small head. The aroma is funky with cedar and tobacco with some lemon rind and some amazing earthiness. The flavor is cigar wrapper leaf with a mild sourness and plenty of spicy herbal and earthy notes. This beer was made for me almost perfection in a glass.
3.8Bottle shared by Savvy1982 at the 2010 RBSG Grand Tasting. Thanks! Apple-cider-looking and extremely cloudy. Aroma of spice, apple, citrus, cream. Very dry, with a slight acidic sourness, a little bit of yogurt and apple, herbs-quite herbal. Very nice indeed.
3.9Bottle shared by Savvy1982 at the 2010 RBSG Grand Tasting. Poured a very cloudy amber gold with a light brown head that lasted. Aroma was very funky with barnyard and menthol coming out. There was some nice underlying floral and sour fruit notes as well. Flavor was funky with dry tart apples the main note with some funk underlying.
3.8Bright gold with very little head. Sour, puckery, tart nose. Taste is very dry, tart, still fresh. Unlike any of the Fantome beers I’ve had-much more sour than the saisons from Fantome. Fades every so slightly on the end. Alcohol is hardly present. Decent, drinkable but not quite world-beating.
3.9A: Ruddy brown body. One finger off-white head. Quickly receded leaving a bit of sheet like lacing at first, but eventually leaving very little behind.
S: Earthy. Caramel, a little brown sugar, the slightest bit of brown sugar, mushroom, earthy hops and just the slightest bit of sour cherries. Sharp up front but becomes muted fairly quickly.
T: Like the nose this is very earthy. I think the best way to describe this saison is that it has all the characteristics of a good steak (without the meat taste). Mushroom, browned butter, and that earthy flavor from the outside of the steak. Not particularly funky. The hints of sour cherries in the nose are no longer present.
M: Smooth, medium bodied brew with a nice gentle (but not insufficient) carbonation. Refreshing in a savory kind of way.
O: I don’t know how frequently I’d be in the mood for this saison (unlike the regular saison which I could drink everyday), but I have to admit I really enjoyed this one. This is a fairly old beer at this point... many thanks to stowehop
3.4This is friggin weird. Really, really friggin weird, but I kinda like it. The aroma betrays some barrel aging. The aroma and flavor remind me somewhat of the spiced vegetable juice you find in a bloody Mary.
4.6Hazy golden pour. Taste is lemon citrus with some breads and grain. Very light fruits on the palate. Rated 2/12/05
3.6A- Body is a slightly hazy translucent murky tarnished gold hue. Pours with a big foamy white head that eventually fades almost completely. Cloudiness is thick and dynamic.
S- A ton of vinegar is upfront. Underneath this is grain, some funk, must, caramel, and a slight floral hoppiness.
T- Taste is much like the nose and its hard to get past the vinegar-though it is not extreme (like in Duchesse). Beneath this is apples and pears upfront with a spicy accent. A hint of hops come through for the finish but is masked by a vinegar tartness. Some funk lingers.
P- Nice full carbonation and a thick yeasty body. Pretty smooth.
O- Decent beer overall but a little bit too much vinegar for me. The complexity behind it isn’t really enough to make up for it either. ABV is undetectable.

4.1750 ml bottle; 2003 vintage; pours cloudy light orange with aromas of lemons, salt, yeast; quite fizzy mouthfeel with lemony bite; light bitterness with tasty mix of velvety wheat, grains, light fruit and yeast; pretty killer for an 8 year-old bottle, but not quite where I like a saison; age has made the texture a little more like a light wine; musky and muted; quite delicate though with dry funk and lemony sweetness
3.675cl bottle, at least five years old. Large off-white head atop murky apple juice body, a light layer of dead yeast on the bottom of the glass. Aroma is medium sweet, lemon/tart, some funk, straw/grass, musty. Taste is medium sweet, straw, some funk/barnyard, light lemon. Effervescent light-medium body.
3.9(on bottle) Light golden, clear, white head. Soft hoppy feel, slightly tart. Wheatmouth, bananaish. Light carbonation, interesting finish with peas and herbs.
4.8Warm, bronze-gold pour veiled by a thin, but persistent, creamy off-white head. Nose is floral meadow, apricot, and freshly turned soil. Flavor adds tart berries, a touch of fireweed honey, and a sublimely spicy ’forest floor’ earthiness.
Extremely well balanced and drinkable. The finish has a mineral dryness to it, like licking the ancient stone of a rich, cool mountainside.
Well balanced at 7% (although, I wish it could be lower).
Another amazing concoction from one of my absolute favorite brewers.
4.0Bottled. Hazy orangeish golden colour, mediumsized slightly off-white head. Aroma is spicy, earthy, barnyardy as well as some mild fruits and mild maltyness. Flavour is quite much the same in a very pleasant balance.
4.1Huge thanks to ElJefe for sharing this bottle. Fluffy white head, gold body with some haze (more towards the end of the bottle). Nose is pineapple, brett, a floral spring field. Flavor is pineapple juice, hay, unripe strawberries. Lightly astringent amazing pineapple finish. I want more!
3.9Bottle courtesy of ElJefe. Shared with Rudolf, Jacob & ElJefe. Pours a deeper golden color. Notes of mead, honey, strawberry, blackberry in the aroma. Taste was winey, acidic, raisiny, mead like flavors upfront. Some light tart sourness. Very good beer

Hazy yellow with a large and attractive white head. Absolutely spectacular aroma, plenty of orange zest and yeasty esters, dusty musty cellar (though not overpowering the spice and peel). Mineral and sour flavor, yeasty not bringing through the best of dust and spice in the nose (in retrospect, this one would be fun to try fresh as well, though no regrets given that this bottle was six years old when I got it.) While enjoying the 2003 bottle, my daughter asked me when she was born. 2003. She was delighted that I was drinking a beer of the same age.
4.22004 bottle shared by Simon at the Del Mar Doom 6/27. Another great and interesting Fantome offering. Appearance was picture perfect ... nose was musty as can be w/ lemony-orangey notes. Flavor was lemon zest, corriander, funk/dusty, barnyardy ... and as Simon put it - "football field, horse, essense of Europe". Damn cool beer.q
