2.7Bottled. An unclear dark amber beer with a lazing beige head. The aroma has notes of phenol, malt, and caramel. The flavor is sweet with notes of malt, phenol, caramel, and a bit of alcohol, leading to a dry phenolic finish. Hmm - I’ve had a lot of better beers from Full Sail. Thanks Papsoe for sharing.
2.9Bottled. Amber coloured. Unclear. Dense light brown head. Aroma of fruits, spice, light herbs. Flavour of alcohol, fruits, light caramel and vague spice. Medium bodied. Dry fruity end.
3.5Bottle. Hazy deep amber with a creamy off white head. The aroma is malty, minty hoppy with caramel and lighter hops. Lots of caramel, light booze, flowers and fruity hops. Good balance. Nice fruity finish.

Medium body, skewed sweet malty notes - something is not completely clean here, a fermentation error? Sweet burned caramel and hardly any bitterness. Nor the cleanest of Bocks. 290110
3.422 fl oz bottle. Pours hazy dark brown with a small off-white head. Aroma is mild fruity and light caramelish. Sweet caramelish flavoured with a light fruity hops note. Lingering sweet and light hoppy finish.

3.622 oz bottle. Pours a dark brown with some ruby highlights. Small off white head with some spotty lace. Sweet caramel and molasses aroma . Full bodied palate with little carbonation. Flavor is dominated with the same molasses and caramel malt as in the aroma. Also secondary flavors of brown sugar and dark fruit. A little bit bitter to go along with the sweet

3.1Bottle:   Brownish in color, moderate light beige head, foamy, spotty lacing.   Malty nose, cereal, a little bit of cardboard.   Slight nutiness.   Much the same on the tongue.   A little soapy and peaty.
  A bit of roastiness as well.   Body and mouthfeel are moderate.   Not a heavy Doppelbock by any means.   Lingering honeycomb and wet cardboard.   Hmmm, seems like a tossup between a beer going south or a possible
bad bottle.   Not heavy on the cardboard or honeycomb, but enough to know it shouldn’t be there.   Otherwise its an okay beer.   Their 20th Anniversary fairs better tho.
3.1One of the cooler Full Sail labels with the label over the cap. Pretty malty and a nice alcohol taste. Taste is different from usual Full Sail fare.
3.3Rich ruby amber color with a thick beige head. Sweet aroma of grain, berry and light alcohol. Taste is sweet, body is a bit tea-like.
3.4Sampled at the Noogfest High Five. Pours a light brown with decent tan head. Pretty fair for the style. Good smokey, peatyness. A little soft on the palate.
3.3Bottle @ Paul’s tasting for Kan’s visit. Brown pour. I have seen many beers that hide abv better than this. Some dark malts, and hops. Eh.
3.3Bottle at Paul’s place for Kan’s visit. Pours a clear thin looking caramel brown with a thin white head. Caramel, malt, not much else. Sweet, thin, cardboard. Finishes lightly bitter with a little bit of grain.
3.3Bottle shared at Moosetoberfest. Poured a thin muddy brown with a small fizzy white head. Aroma of dates, raisin, honey, molassess and lots of isopropyl alcohol. Flavor had some weird celery notes about it blended in with lots of alcohol, honey, molassess and raisin. Not bad but the alcohol was just too hot in the aroma and the flavor.
3.5This one was rather enjoyable. Malty raisin aroma with hints of clove. Medium bodied dark fruit and malt body that isn’t that thick. Fair amounts of clove towards the finish with definite signs of booze. Good, but not as full as it could be.
3.5Pours a clear deep dark copper/chestnut brown color with mahogany edged when held to a light source. 2 finger off-beige frothy head that quickly dissolves into a thin ring and cap that last throughout.
Roasty nutty caramel malt aroma with hints of spicy pepper and cloves, hops, bready yeast and chocolate. The roatiness is prominent but not overpowering like a coffee beer. The cloves and caramel malt flavors balance things out nicely.
Smooth caramel malt body with a nice spicy clove presence. Hints of chocolate, bready yeast, banana, nut, toffee, roasty malts and sight hops. Alcohol very well masked making this a complex easy drinking dopplebock. The clove spiciness is very strong slightly overpowering the other flavors
4.2Wish they’d make this a regular. Great beer all around and a very good value.
3.5Bottle sample at Noogfest High 5 thanks to tronraner. Poured a darker amber with an off-white head. Sweet aromas of malt, raisin, and spices. The flavor found toasted malts with light spice. Medium body and sweet throughout.
3.4Dark mahogany beer with a tiny ring of lace - nose of caramel, cherry, raisin, toffee, some coppery/metallic character - fairly smooth, moderate carbonation, creamy mouthfeel - flavor of caramelized sugars, fruity esters, a bit of tart cherry quality - some leafy bitterness on the tail end, and well as a metallic tang and mild acidity left lingering on the tongue - some caramel and toffee on the end as well - somewhat flawed, but okay.

Poured clear brown color with an average frothy off-white head that mostly lasted with excellent lacing. Good toasted malt and yeast aroma. Medium to full body with a smooth texture and soft carbonation. Good balanced bittersweet malty flavor with a moderate smooth balanced finish of moderate duration.
Good doppelbock.

taste, malty, light smoke, fruity; raisins, caramel notes. Finish has hints of hops with a nice warming abv. Overall palate has a herbal medicinal touch with some peppery spices.

3.422oz. bomber served in a pilsner glass. Poured a dark copper with a finger of light tan head. Malty aroma, caramel comes out as it warms. Also a fair amount of American hops in the nose. Medium to full bodied. There is plenty of malt here, but you don’t get the malt complexity of a good German dopplebock. Some sweetness. Hop bitterness makes it a very American take on the style.
Don’t go into this beer expecting German Dopplebock, or you will be disappointed. Just enjoy it as a good beer. It has more in common with an old ale to me.
4.0Noogfest High 5. Sample from a bottle thanks to tronraner. Clear red-copper, thin whitish head. Aroma is malty, caramel, fruity, toffee. Taste is brown sugar, fruit, caramel.
3.6Sampled at Noogfest High 5. The body was medium copper with a white head. Smells of bread dough and pears. The taste was sweet with pears and cinnamon. Some meat notes. A coppery metallic finish. Good.
3.7This poured a very dark amber to brown color. The aroma contains some raisins, caramel, and chocolate. The flavor contains some alcohol notes, toffee, caramel, and dark fruit. Overall this was a nice beer.

3.1From a 22oz Bottle. Mostly transparent, dark amber colored body with some ruddy hues and a thick layer of creamy beige head. Aromas of prune flesh and tobacco abound in the nose, rich and malty, but in a caramelized crystal malt kind of way, lacking in any munich-laden melanoidins. Clean, yeast-wise, with no noticeable hop aroma. Moderate alcohol warmth. Medium-full bodied, creamy mouthfeel with a chewy malt texture. Clean, malty flavors, with notes of prune, fig, and leather. Only a faint touch of hop bitterness helps to dry up the finish. Well executed, but lacks that distinctive munich-driven melanoidin character I expect and really want from my doppelbocks. I don’t say this to imply they didn’t use munich malt in the beer, but simply to state I’d like to see more of that distinctive, grapey, raisiny melanoidin punch.
