De houten ton is een Gallische uitvinding, die gebruikt werd voor het gisten als voor het bewaren van wijn als bier. Ten opzichte van de amforen hadden ze veel voordelen : ze waren lichter, konden een grotere inhoud bevatten, waren minder fragiel en waren ook nog handiger, want men kon ze rollen.
De tonnen en pijpen die Breughel schilderde kunnen zo afkomstig zijn uit het tonnenmagazijn van elke Pajottenlandse lambikbrouwer (of daar nog staan ...). Houten tonnen werden algemeen gebruikt tot het begin van de vorige eeuw.

Kolor pomarańczowy, mocno opalizujący. Piana biała, wysoka i trwała, nie pozostawia po sobie śladów na szklance.
Aromat kwaśny, wytrawny. Jest tu spora owocowość, dużo nut wiejskich i skórzanych. Jest kiszonka, stodoła, siano i kurz. Są pestki białych owoców.
Smak jest cierpki, wytrawny, słodki i jednocześnie kwaśny, jest pestkowa goryczka. Podobnie jak wcześniej jest intensywna owocowość, są nuty wiejskie, stodoła, siano, kurz. Są akcenty skórzane, dzikie, funky. Smak podobnie jak aromat jest bardzo złożony.
Wysycenie wysokie. Ciało średnie. Faktura płynu jest zdecydowanie szorstka. Posmak długi, owocowy z pestkową goryczką.

Appearance: Golden cloudy yellow-orange with a medium-sized fast disappearing head
Taste: Mild sweetness and moderately acidic with a refreshing complex funky grapefruit, apple and lemon taste
Mouthfeel: Watery texture with moderate carbonation
Overall: Easy accessable and delicious lambic :)
Nästan helt klar, gyllene bärnstens kulör. Tätt och oväntat stadigt skum men som försvinner tämligen snart, enligt stilen. Det här är en klockren syrlig öl med bred doftpalett av lagårdsbacke, syrlighet, och citrus/moget äpple. Smaken följer samma karaktär och uppvisar ingen inställsamhet. Härligt lång syrlighet som ligger kvar efteråt. Kroppen är halvfyllig med aningen vattnig textur. Kolsyran är mjuk men mängden är i överkant.
2019/08/24 - Pours a clear burnt orange colour with a thin, fizzy, off white head that quickly reduces and leaves no lacing. Aroma is sour apples with hints of lemon and peach, wet barnyard, leather, wood, burnt rubber and light herbal notes. Taste is mildly tart apple, lemon, burnt rubber, white wine notes, wood and barnyard. Mouthfeel is light to medium with mildly biting carbonation and a lightly tart, drying, fruity finish. Very smooth. Nice.
Bottle 0.375l at home, Nivala. Vintage 2016. Color is slightly cloudy light orange with very small white head. Aromas and flavors: Fruits, peaches, some sweetness, some sourness and some distant hints of malts.
2017 bottle. Unclear orange colour, quite large white head. Aroma of lemon, grapefruit, apple, leather, berry skins, light stable. Taste is dry, medium sour, lemon, grapefruit, leather, white grape, some apple, berry skins. Quite bitter, woody finish. Light to medium body, average carbonation. Very drinkable, fruity, but also very complex. Great lambic.

Copenhagen 16/5 2019. 37,5 cl corked bottlefrom Vin de Table, Frederikssundsvej, Kbh. NV. Black label with the name of the beer and a very red "1882". Promises me Spontane Gisting and Spontaneous Fermentation.
Pours hazy golden amber with a big, bubbly white head. Settles as thin, patchy layer of foam unable to cover the surface of the beer. Moderate lacing.
Aroma is sweet and tart apples, unripe berries. Sharp, crisp and acerbic. Distinct sour white wine vibe.
Strong carbonation. Thin, fizzy, lively texture.
Flavor has a light sweetness followed by a strong, aggressive, sharp tart sourness. Aftertaste is tart and vinous. Finish is bone dry.
A very fine, strong Gueuze. Strong flavor and a dry vinous quality.
Quite sour with bitter aftertaste
Flot gylden klar (æble juice) fint hvis luftig skum. Funky aroma ved åbning, derefter lidt syrlig æble cider. Smagen er syrlig, lidt tør æble cider, lidt udfordrende, fin kompleks, ganske god.
Pomarańczowe, delikatnie zmętnione; piana puszysta i trwała. W aromacie kwaśne owoce, brzoskwinia, marakuja, cytrusy, poza tym bretty - stajnia, skóra. W smaku owocowe, sporo tanin, drewna, lekka stajnia i minimalny ocet. Ciało średnie, nasycenie również. Przyjemny i bardzo pijalny lambik.
Bottle in poechenellekelder. Medium amber with a thin residing head. Scent is somewhat mild gueuze. Taste is lovely semisour stone fruit notes with some lemon bitterness. Somewhat aggressive. Finish is consistent. Great beer.
Bottle at Van Moll, Eindhoven. Pours orange color, white head. Aroma is sour, tart. Taste is sour, quite fizzy, tart, some apples. Really sour finish.
[23-3-2019] 37.5cl bottle at home, best before 8-2018. Appearance: slightly hazy golden with medium, stable, white head. Aroma: dust, funky, chalk, citrus, some funk and barnyard. Taste: medium sweet- and bitterness, and soft to medium tartness. Notes of citrus, brett, green apple skins, some funk. Palate: medium bodied, watery texture and soft carbonation. Overall: pretty good, but it somehow feels like it lacks something. It feels quite young and not too funky. A bit mild, which is pleasant at times too. Nice apple notes in there. Definitely interesting to keep this in the cellar for a good number of years.
Bottle. Deep golden/orange color, with a big white head, disappearing after a while but lasting more than most of gueze. Aroma is leather, apple, wood, very fresh. Taste is citrusy, apple, sour but not too much, and with an incredible bitter finish. Great gueze, very balanced in every aspect.
2003 Bottle at Akkurat. Pours unclear yellow with a white head. Fairly carbonated. Funky barnyard, bright citrus and some dusty oak. Elegant and complex. Masterpiece.

Bottle. Color: Slightly hazy orange golden. Aroma: Sweet and sour fruity, barnyard funk. Taste: Moderate to medium sour and sweet, well balanced and no tart vinegar notes at all. Yellow fruit, notes of grapes, peach, apple hints. Pretty strong barnyard, horse blanket funk notes. Notes of oak. Dry mouthfeel. Over medium body, just below average carbonation. Very nice balance and complexity.
0,375l bottle at Café Rose, Bruges, Pours cloudy golden liquis, small white frothy head, Aroma: sour funky wild, spicy, Taste: light to medium sweet, light bitter, heavy sour, spur funky wild, enjoyed very well.
Bouteille. Liquide d'un bel orange et petite mousse. Nez "sour", pomme verte, groseille verte, citron, Brett. Bouche fraîche (bien entendu), fruitée, acide mais pas trop, presque douce, bien équilibrée et aux goûts de fruits sûrs. Un cran au-dessus du White Label même si je ne suis pas un grand connaisseur!
[2018-10-07] Flaska från Belgiuminabox. Årgång 2018. Klar ljusguldig med vit krona. Ladugård, hö, gröna druvor, druvkärnor, gröna äpplen, grönt äppelskal/äppelkart, citrus, kumquat, yuzu, fat och skalbeska. Lätt kropp, något fizzig. Kanske lite väl skarp och ung än. 3,8

2006 vintage. Slightly hazy amber brown color. Very nice green apples, oak, cobwebs and some very subtle underlying fruitiness - strawberries and cherries. Very tart, low medium carbonation, lots of green apples but oak had faded a lot. I thought it was good but it just didn’t blow me away as much as I was hoping
Thanks TimE for sharing the bottle! 2006 Vintage poured into a taster showing translucent deep gold with a finger of lightly stained white foam.
The nose shows pronounced round deep notes of brett, hay, barnyard door, and dry grass.
The palate is well carbonated and medium bodied. Moderately tart with round notes of brett and lightly tart peach/apricot/stone fruit with more acetic notes on the finish.
W aromacie słodko, pestkowo z niewielką dzikością. W smaku mocno wytrawnie. Solidnie cierpkie, kwaśne, do tego wysokie wysycenie potęgujące kwas. Krótka wyraźna goryczka. Trochę wszystko ze sobą nie gra.
