Ale with Strawberries, Honey, and White Pepper Aged in Wine Barrels



Inspired by an amuse bouche often prepared by the wife of one of our brewers, Scully brings white pepper, strawberry, and honey to a harmonious blend of “mouth amusement”. The ingredients are added at different stages to a Saison, and fermented with a normal Belgian yeast as well as a Champagne yeast.

4.9 Cloudy blonde colour. Slight strawberry and sour smell. Tart and strawberry mix on the initial taste, fading into a lovely milkshake finish. This is so, so, *so* good. Would definitely come back to in an instant! Highly recommend.
4.2 On tap at the stadsbrouwhuis. What a lovely farmhouse saison - tart but only slightly sour, with a great body and a lovely sweetness enhanced by the honey. Strawberries are mostly noticeable in the aroma, which is very complex; strawberries, other berries, tart aromas and wine barrel. Finishes tart and sweet, with a woody wine note. Delicious.

4.5 A personal favourite of the 'sour sisters' range. Fruity strawberry, fresh and effervescent, with a tingling tartness that hides the high ABV deceptively well. (I also love the X-Files, so was immediately won over by the name too...)
3.0 355 ml bottle from Beer Hawk, bottled 21/02/2017. Orange/copper, opaque, no head. Nose - heavy funk, wet dog, some berries. Taste - sour-ish, some strawberry. I love Scully, therefore +3
4.0 On keg at Six Degrees North, Edinburgh. Appearance - blonde with attractive lacing. Nose - subtle strawberry with white pepper. Lemon cream. Taste - more lemon cream and spice with the strawberry coming through at the end. Palate - close to medium bodied with a creamy texture. A long creamy yet tangy finish. So elegant. Overall - delicious.
3.8 Clear blond colour with heavy carbonation. Aroma has plenty of wild funky yeast. Also lots of candied strawberry. Decent body. The honey sweetness does come through. Dry and yrasty to the finish.

4.0 Bottle. Golden pour. Aroma of tart, brett, horseblanket, cherry and funk. Taste has rich funk, horseblanket, tart, citrus, cherry, dry hay, oak and a funky tart finish. Very good.

Flavor is sweet and light sour, malt, yeast, strawberry, grapes, wood, white wine. Medium body, average carbonation, dry and light acidic finish. 291218
1.7 4/20 funky bitter yeast, pretty disgusting, background taste of formented apples. a fizzy wild ale that's not my bag
3.7 Aroma: A very strong strawberry aroma, feels artificial, like strawberry lollipop. Honey and pepper, funky wine, apple. Some belgian yeast (spices). Interesting combination, although a bit unbalanced. Appearance: Quite clear, golden. Small white head. Taste: Dry, slightly sour. Palate: Very unusual mouthfeel, feels very dry, medium body, medium carbonation. Overall: Strange beer, interesting but a bit too weird.
3.7 Aromas are Brett, fruit, yeast and soap. Fruit comes out more in the flavor and is a little more tart than sweet. Brett is still obvious but not overwhelming. Great body slightly boozy finish.
3.7 On tap at Goose Island Shoreditch. Fruity sour. It's expensive but very decent. Some light red fruit I thought. Some lemon on the finish. An above average sour. Very likeable. Some decent bicuit malt. Good.

3.5 Bottle. Pours a hazy orange colour with a thin white head, plenty of fruit with a hint of strawberries in the aroma, the taste is medium bitterness and with fruity with a dry bitter finish.

3.6 Could smell the strawberry instantly, as I popped the top. Lovely hazy yellow/orange colour. Taste was strawberries and honey up front, slight tartness and bit of funk on the mid palate. Seems quite cool and fresh in the mouthfeel. This is a lovely Belgium style wild ale . I think it’s that bit of strawberry that makes it clean and fresh.
4.0 Pours juicy golden with a low white head. Aromas of funk, farmhouse, citrus, peach, apricot. Taste is very fruity and quite sour with floral notes and farmhouse notes. Mouthfeel is medium bodied with moderate carbonation.

3.8 2017 bottle. Gold with a white head that just about holds a coat in the requested chalice. Mild funk, honeyed dough, nectarines - sits nicely between bright and brooding. Medium bodied, spritzy. Sweet with floral honey, a little tart, zingy. Off dry finish with some spices that really creep up after a while. Old oranges, just ripe nectarines with a brackeny touch. Dangerously easy drinking for 8.9%. Washed rind cheese friendly. Good - just a little drier would have worked even better.
3.5 Bottle: Poured a hazy yellow color ale with a medium size white head with limited retention and no lacing. Aroma of tart and acidic notes with some light fruity notes. Taste is also a mix of tart and acidic notes with light vinous feel with some subtle fruity undertones. Body is somewhat fuller than average with good carbonation. Enjoyable but unfortunately acidic notes are overwhelming and limits the flavours profile.
4.4 750 mL bottle from SoHo Organic Market, Elizabeth City, NC (2016 bottle, Feb. 19, 2016 at 8.8% ABV). Yellowish-orange pour with quickly fading champagne-like bubbles. Mildly tart aroma with notes of oak and white pepper. Taste is extremely tart with obvious green apple, strawberry, and white vinegar. The flavor is somewhat balanced by the oak and honey. Tartness lingers and the palate is left somewhat dry. A nicely done sour!

3.9 Taster at GABS 2018. Pours a thin orange gold with a white head. Aroma: citrus, yeast, tart strawberry, mild honey notes. Taste: citrus, tart strawberry, mild honey, white pepper, sweet lemon flavours. Medium bodied. Moderate tartness with a mild spicy finish. This was quite nice.
4.1 6/2/18: 765 ML Bottled 3/29/15, multiple pours into Goose Island Chalice. Murky golden pour, heavy carbonation, thin white lacing. Very sweet aroma, strawberry, cherry, very tart. Very dry finish, taste strawberry and cherry. Thin texture, carbonation holds, easy drinking. Overall very good offering.
3.6 Cheers Mike for bringing this 765ml bottle to the Shrewsbury Beer Exchange Group meeting on 29th May 2018; I really enjoyed this beer. Hazy golden pour, white pillow on top. Yeasty off-notes in the fruity nose, taste also 'on the turn' semi-sour like and fruity. Not usually a fan of this kind of style/beer but I was impressed with this brew.
