"Elderberry Black Ale"

Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.

Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.

A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.

Recommended with stewed and baked foods.

Drink lightly chilled from a straight glass.

3.7 Pours black with a small tanned head.  Aroma is roasted oats and dark fruit. Roasted almost smokey malts flavour with a smooth earthy finish. Interesting and complex style, I really enjoyed it.
2.7 330 ml bottle bought at CitySuper in Habour City, Tsim Sha Tsui. Looks: Clear, deep blackish red colour; Less than one quarter finger head with residual soapy white foam which fades in 15 seconds; Good sticky lacing with near zero carbonation. Aroma: Quite fragrant dark malt, with milk chocolate, light roast, caramel, strong sticky toffee, cream, light dark berries, sugar, alcohol and light grass. Taste: Mid to light sweet fair dark malt, with caramel, light toffee, light chocolate, light berries, fair cream, light floral, light molasses, biscuits, lemon, medium bitter hops and grass. Body: Mid to light body. Thin and slightly slick palate. Mouth Feel: Fair dark maltyness in a slightly sluggish background. Very watery feel with caramel and toffee, everything else are pretty light from berries, cream, floral, sweetness. Quite dry with lemon to round. Barely okay. Hoppiness: Light grass in nose. Light floral, lemon and grass in taste; Bitterness is fair for an abrupt, mid to low astringent caramel fruity finish. After Taste: Quite dry. Light fruity and quite easy to mouth. Comments: After the nice Alba, this got to be an anti-climax: intriguing chocolate aroma but too low-fi, too thinned for chocolately malt taste to impress, with too light berries and mild hopiness. Drinkable but hardly impressive.
3.4 Pours dark red/black colour with almost no head. Very malty aroma. Predominant taste is malts with a slight fruitiness. Quite dry aftertaste. (K)
3.7 Pours up a deep dark red with a foamy light brown head. Aroma is biscuit, caramel and dark berries. Taste is dark berries, some caramel, roasted malts. It is a little sour.. Medium body, low carbonation. Smooth.
3.7 Bottiglia. Al naso arriva il luppolo, poi il frumento ed infine l’orzo. Il cappello di schiuma a bollicine fini e carbonazione bassa resiste poco e si fa ricordare per un bel pizzo sul vetro. Il colore è scuro impenetrabile. Il corpo è strutturato ma duttile e presenta nuove sfaccettature. L’amaro è deciso. L’intensità gustativa è elevata. La persistenza gustativa è buona. Il gusto è godereccio e voluttuoso. Il finale è felpato, lungo, pulito e complesso. Il retrogusto è intenso e persistente. L’aroma in bocca riporta sentori di miele, frumento, orzo, pane tostato, resina , sambuco e mirto.
3.5 Dark brown color with red highlights and tan head. Aroma has roasted malt, some dark fruits and a hint of liquorice. Taste starts roasty and malty, quite bitter with some earthy spices on the finish. Light body with medium carbonation. Quite interesting beer, easy drinking and it has a quite unique flavor.
3.2 bottle @ Jungle Jims / Cincinnati OH --- Aroma of malt and light berry. Opaque black color, deep tan head that drops to the rim, strings of lace. Taste is malt with berries in the background. The swallow offers light carbonation along with more berry. A lightly bittered finish keeps the balance. Light, somewhat still, but, agreeable.
3.1 Bottle. Brown with garnet color. Aroma: malt, diacetyl, caramel, slightly grassy and berries. Taste: caramel, butter, a little wine, elderberry.
3.2 Arôme d’alcool et de café froid léger. Bière noire couleur Coca avec léger reflets rougeâtres. Fine mousse beige. En bouche, aqueuse. Aucune amertume, très douce et torrefaction légère en finale : chocolat, café, arrière goût fumé avec alcool (bien que pas très forte) . En association avec un carré de chocolat noir, l’impression de manger un chocolat alcoolisé type "mon chéri" mais sans la cerise. Bière sympa pour ce style que je n’aime pas trop habituellement.
3.4 Pours clear, dark brown. Quickly dissipating tan head. Aroma is honey, berries, and cocoa. Bitter, turning to sweet and flowery on the finish. Interesting.
3.0 Passable. Pas un goût ou une présence extraordinaire et un tout finalement plutôt fade malgré les nombreux étudiants. Le nez porte sur une petite stout, avec un fond de cerise et de très légères notes poivrées. La bouche part sur une brune avec un peu de levure, un peu caramélisée. Le sua au ne se sent quasiment pas. Le poivré est pour ainsi dire absent. Le tout est assez insipide, buvable mais franchement pas grandiose.

3.8 330ml bottle. Pours a near black brown with a half finger, khaki head. Aroma has fruity notes of caramel, a hint of licorice and roast, cola, and dark sugar. Taste is balanced. Roasted malts mixed with dark chocolate, cola, caramel, dark fruits, and a hint of fruity coffee at the end. The roast isn’t overwhelming. It is just there to back up the other malts. Medium body and carbonation. Clean in the mouth with a dry finish. Overall really nice. Dark caramel and toffee with hints of dark chocolate and roast. A bit of smoky wood and fruitiness as it warms up.
3.5 Bottled. Deep black color, opaque with a beige head that not last longer but keep a lacing for awhile. Aroma is dry black fruits like plum, smoke notes, chocolate, wood and roasted malt. Flavor is also like aroma, strong notes of berries and slightly alcohol. Flat carbonation and full body, creamy texture and long finish.
3.5 Dark pour with a reddish hue. Nose is all dark fruit. I'm guessing it's mostly just elderberry but I get black currants and blackberries, plums and grapes with some chocolate and caramel. Really pleasant stuff, especially the night after the first snowfall of the year. Texture is a little thin but otherwise this stuff is pretty tasty.
3.6 0.33 bottle. Clear. very dark brown color and a small, tanned head. Aroma of dark malts, wood, a tad of elderberries, and some roast. Taste is malty, caramel, chocolaty, a wee floral, and not as full of elderberries as one might suspect. Medium body, creamy texture, and average carbonation. Finish is more malty, chocolaty, obviously somewhat resemblant of elderberries. Overall not a bad beer but the elderberry part could be emphasized. Just a tad below Alba.
3.8 Bottle at Haket in Gothenbourg. Dark malty smell. Sweet taste with dark malts, caramel and chocolate. Nice, well made.
3.7 Deep ruby color with a fine off white head. Rich fruity aroma with some caramel notes. Medium + body and a smooth carbonation. Complex flavor. Mild fruity, caramel sweetness, light roasted malt, licorice and vanilla. Nice tasty ale. [Bottle from Oddbins in London, England]
3.0 Bottle @home. Pours almost black with red tinge and with a tan head. Malt on the nose and some elderberry. Some toffee on the taste buds, with a big dollop of fruit, just not my cup of tea.
3.9 "A rich black ale with fruit aroma, silky soft texture, soft roasted flavour and gentle finish." That sums it up really. The aroma is a lovely fruity one. The taste is of toasted fruit and it's a very smooth beer. Excellent.

3.9 330ml bottle: BBD Nov 15. Poured at home into a thistle shaped glass on 1st Sep 15. Black body with a good tan coloured blanket of foam on top. The Elderberry comes through loud and clear in both the aroma and taste, red/dark berries in general seem to ooze out of the brew in the nose and flavour. Complex and interesting, Fruit Wine like in fact but not as viscous in the body depth.
3.0 330 ml bottle at GH. Near black with tan head. Aroma malty, roasty, liquorice, faint heather, honey. Taste is sweet, honey, faint heathers, roasted malt, spice with a honey finish.
3.7 Brune assez sombre, petit collet persistant de fines bulles. Aromes bien marquées moka. Attaque douce et enveloppante, finale café et chocolat amer. Chaleureuse.
3.3 Bottle@Voldby. Pours black with a light brown head. Aroma and taste is light roasted malt, coffee notes, hint of elderberry. Smooth mouthfeel. Soft carbonation. Slightly bitter finish.
3.4 Bottle @ friends/the chef. Appearance: pours clear dark-brown with small short lived soapy off-white head and lacing. aroma/taste: caramel, berries, chocolate and some herbal hints. palette: medium aroma, light to average carbonation, medium body, medium to notable sweetness, somewhat balanced by an average bitterness, medium duration and an oily texture. Overall: Tasteful and complex dark ale.
3.6 Coarse persistent foam. Ebolum is a Traditional ale brewed with elderberry, It is black, thick and form fine lace in the glass. The aroma is most hard roasted malt but with a little ingenuity I can also track elderberry. The taste is very composed of good elements. I can trace elderberries, dark chocolate, toasted bread, caramel malt and a little coffee. Fullness is good, but the aftertaste little watery. The bitterness is absent and it has only a very small and virtually anonymous hoppy flavor towards the end. It is a very different ale to taste because it sticks out so far from expectations, but conversely, it also has many good and fantastic elements. I think it is excellent.
3.4 Pours black with a brown head. Aroma is malt, roasty and some fruit. Taste is lightly roasty and fruity. Not bad.
4.0 Elaborada con bayas, según receta del siglo XVI. Negra casi opaca. Casi sin espuma. Aroma muy frutal, cereza principalmente. Carabonatación muy baja, cuerpo medio y textura muy suave y cremosa. Excelente sabor, muy equilibrado entre dulce caramelo, frutas rojas y vino tinto. Amargor final muy contenido y agradable recuerdo. Muy buena.
3.9 Brown/black depending on lighting, creamy foam on top. Malty roasted, and coffee notes, with that sourness of the elderberry. smooth and silky mouthfeel, coffee and chocolate taste with the elderberry just pushing through. nice and long finish, with the malty roast lingering.
