Heavy Seas Uncharted Waters: Siren Noire

Heavy Seas Uncharted Waters: Siren Noire

Our Siren Noire isn't your father's chocolate stout. We've used almost 3 pounds of Belgian coco nibs per barrel. We've aged it for five weeks in bourbon barrels with vanilla beans added. A mix of dark malts gives Siren Noire a well-rounded body that is decidedly chocolatey - but without being extraordinarily sweet. Brewers Gold hops contribute an earthy spiciness, with notes of black current.

3.9 Thin dark brown of varying sized which dissipated rather quickly. Rich malty aroma with lots of chocolate, molasses, rubber and a decent bourbon nose. Color is a very dark brown that is not fully opaque. Much livelier on the tongue with zippy carbonation than i would have expected from the head. Very creamy and smooth. Lots more milk chocolate, anise, dark roasted malts, heavy cream and a bit of accent bourbon again. Light alcohol presence. Finishes super creamy as it coats the tongue and mouth. A pleasure to drink!
3.7 Tap at heavy seas in Baltimore with commonmac and rosskyle and samadouche. Black with medium off white tan head. Smells roasted and chocolate. Chocolate, roasted malt, full body. Good sweetness. Fairly typical for a chocolate stout.
4.0 Served on tap at Heavy Seas. Dark black color with a tan head. Dark chocolate coffee aroma. Chocolate milk coffee smoke flavor. Medium heavy body. Lot of of very good chocolate.
3.7 $7.99 for a BBA stout? Sign me up. Opaque pour with voluminous wet sand head, diminishing to a softly encompassing halo hung along the contours of my glass. Stiff lacing holds for a moment, then densely slides down to meet the dark body. Aroma boasts milk chocolate mocha, dulce de leche, caramelized vanilla from the barrel, gentle dried fig and licorice. Textbook BBA stout. Flavor exhibits the same as the nose, some more dark syrupy berry, alcohol heat blooms and creates a dry finish. Chocolatey, modestly bitter, fairly thin body (but I actually enjoy it), and a licorice, dark plum, gently mineraly graphite finish. Three weeks in bourbon barrels adds quite a lot to aroma and flavor without being too explosively oaky and bourbony. Easily one of the most drinkable BBA stouts for a great value.
3.8 22oz bottle pours out black topped with a brown head. nose is roast malts bourbon barrel booze vanilla chocolate sweetness. taste is more of the heavy roast malts some ashtray notes chocolate and bourbon barrel vanilla.
4.2 2016 bottle date. Pours an opaque dark brown color with khaki colored head. Even though it’s aged for a short time in barrels, it has a ton of bourbon on the nose with some vanilla bean, chocolate, and oak; follows onto the palate. Medium to full bodied. Finishes with barrel, chocolate, and vanilla. Nicely done.
4.1 650ml bottle from Total Wine in Jensen Beach/Stuart. 2016 version shared with bananabi11 while watching the NCAA Championship game. Chocolate, vanilla, roast. Very well balanced. Very tasty. Very smooth. This one is underrated .... Heavy Seas best! 15.4
4.1 Bottle, black, thick, decent almond colored head. Aroma toasted barley, oak, chocolate, booze, hint of wet dog, and raisin. Taste is chocolate, oak, bourbon, molasses, burnt sugar. Palate is rich and thick, carbonation moderate. The finish is pretty oaky, beer is sorta sweet in the middle, but dry on the finish.
3.5 Pours a dark brown color with a foamy light brown head. Notes of dried cherries, dark chocolate, and a decent amount of vanilla. Different.
4.3 On tap at Distillery, Savannah. Rich creamy coffee aroma. Huge caramel, vanilla, bourbon taste. Toasted marshmallows. Moderately bitter and boozy finish. Serious business. Very good.
4.3 Pours black with a nice tan head. Aroma is chocolate with a little booze. Taste is bitter chocolate upfront but gets sweeter as it goes. A little hoppy bitterness at the end. Very chocolate taste but not too sweet as advertised. Very good imperial stout!
4.4 on tap @ Party Town / Florence KY --- Aroma of toasted malt and bourbon. Opaque black color, dark tan head, streamers of lace. Taste is slightly bitter roasted malt that slips through a slightly carbonated swallow to chocolate that begins semi-sweet, then becomes sweeter as it glides to a beautiful rich chocolate finish. I smelled alcohol, but it stays in the background while drinking. Unusual in that the bitter is followed by sweet, but no matter - this is a silky smooth, full-bodied beer that has great complexity and balance. Worth the search.
4.0 Aroma caramel, chocolate, roasty, vanilla, Appearance brown, black, tan foam, Taste medium sweetness, lightly bitter, Palate medium body, Overall a very well balanced barrel aged stout. In my opinion this would be a great beer for someone who has never had a barrel aged stout. It’s not overwhelming but still lets you know it is a barrel aged beer. I would suggest this beer to a friend.
3.2 Back Log. Bottle Gift from Matt Rementer. Couldn’t remember the name. This was just okay for me. Strong notes of burnt malt. Subtle notes of dark chocolate, fig and roast. But that’s it. There is no real blend of anything else. The burnt malt is really all I taste. 93 beers left before retirement.
3.2 Pitch black pour. Brown head, not much retention, no lacing. Aroma mostly bourbon with some chocolate. Definitely thin on the body. Flavor tasted off to me. Neither the chocolate or the bourbon was very prominent. Keeping hitting on an unpleasant burnt taste. Overall just didn’t come together for me.
4.6 Simply delicious!! Very dark, very chocolaty, taste of bourbon--very well done. Vanilla. Mix it all together and it is one of the best stouts that I have had in a very long time! If you can get it--do so--I highly recommend it!
4.0 Strong taste. Great for drinking alone. May be hard to pair food with especially off cask. But if you are looking to just drink something, it’s GREAT!
3.1 Pours viscous, pitch black and completely opaque with a two finger, light beige head that very slowly settles into a thick lasting ring. Very good retention, especially for the style and ABV. Takes a while to settle, leaving streaks of soapy lacing in it’s path. Inviting aroma with a strong chocolate/cocoa presence and a subtle bourbon barrel character that’s nicely integrated into the notes of the base beer. Some damp earth and toasted oak along with sweet and spicy bourbon, vanilla bean and toasted count but the wood and spirit notes aren’t overpowering. Just the slightest bit of toothpick character and delicate bourbon followed by silky sweet chocolate, subtle roast and dark fruit. Hints of coffee bean, burnt toast and oatmeal but the sweeter, dessert-like notes really stand out. I’m picking up some baker’s chocolate, fudge, molasses and flourless chocolate cake. There could be a bit more bourbon/barrel presence for me but it’s a nice change of pace to smell a bourbon barrel aged beer that isn’t a complete booze bomb. On the fuller end of medium body with stronger bourbon barrel and roasted malt character than the nose suggests. Dry, bitter and nearly acrid with strong burnt wood and toothpick flavor. The oak us more prominent than expected but the bourbon presence is still subtle. There’s some spicy, boozy sweetness but unfortunately, most of the silkier barrel notes found in the aroma are missing. Bourbon flavor isn’t bad but it’s somewhat weak and overpowered by the wood and heavy roast. The sweeter dessert-like chocolate notes seem to get lost a bit was well. The malts taste smoker and somewhat burnt with hints of charcoal, toast, bitter dark cacao, oatmeal and ash. Mist of the lighter chocolate sweetness is masked, only shoeing up toward the finish. Still, the high ABV is well masked and although it appeared harsh at first, this beer is relatively easy to drink. Decent but not something I would want to try again.
3.9 22 oz bottle served in a Porter Bar goblet at about 45F. Opaque and essentially black body with red-brown highlights at the edges. Weak head; only a few spots of lacing. Aroma: bourbon, wood, and chocolate, with hints of dark dried fruits, fruit cake, smoke and vanilla. Like the aroma, the flavor is lightly sweet, has some wood. vanilla and more bourbon. However, the bourbon barrel has less effect here, the chocolate is mostly hidden until the aftertaste, and there’s a solid dark roasted grain base. A bit boozy. Feel: smooth, full body seems a touch under carbonated. The 9.5% ABV is partially hidden but mostly evident; the
4.0 Bomber. 1-2 years old. Nose of dark chocolate, berries, dark fruit, and light bourbon. Dark brown color with a dark tan head. Smooth chocolate initial, bourbon emerges immediatley and is very well blended, thick dark fruit, and good chocolate, nutty finish. Some alc. warmth. Medium heavy body and very creamy. Smooth and delicious. Not a barrel bomb. More delicate and well blended than most barrel stouts. Love it.
3.8 Appearance- Deep, dark brown with an average medium Brown head. Aroma- Big bittersweet chocolate, bourbon, vanilla Flavor- Sweet dark chocolate, bourbon, dark roasted malts, vanilla.
3.8 22 oz bottle. Dark brown with tan foam. Nose is chocolate banana, bourbon, coffee bean and fig. Medium body with fuzzy carb thinning with airy alcohol. Taste is bittersweet chocolate, bourbon, raisin and wood. A bit too much barrel for the base brew.
3.7 22 oz bottle shared by Spencer. The pour is a medium to dark brown with a finger of decent khaki colored head and no real lace. The aroma is pretty plain. There is a little chocolate, much less than I was expecting, some light roasted malt, and a hint of vanilla. Very disappointing. The flavor is just as disappointing. There is a little more chocolate flavor. Kind of milk chocolate. The vanilla almost vanishes and the roast sticks around just like in the nose. The mouth feel is thin and light with a soft carbonation and lingeringly chocolatey aftertaste. Finishes much better than it starts
3.8 2014 vintage, purchased bottle at Redstone Liquors, Stoneham, MA. Pitch black in color with a little bit of an oily sheen on the liquid. Aroma is bourbon soaked oak spirals, chocolate, and melted caramel candy. Flavor is mild on the bourbon with overly sweet vanilla hints. The body is medium plus with a creaminess. Mild bitter coffee grounds. Pretty good overall but would like to see a bit more bold bourbon character and a touch more body. Still pretty good drinking and a very reasonable price point at $12.99.
4.3 Heavy chocolate scent and taste. Like a rich European chocolat bar.a very smooth mouth feel not velvety like most imperial stouts. Some vanilla notes. Almost milky texture. Raisin notes come out at the end. Tap
3.9 Pours black with a tan head. Aroma of sweet malt. Sweet malt flavor with hint of chocolate.
3.5 Draft: Big chocolate flavors, but the alcohol hides away in this very well. Dangerous beer... just screams dessert to me.
4.4 Very mellow for a 9.5% beer. Pours dark with a thin head. Aromas of chocolate and bourbon. Taste is mild bourbon and chocolate.
4.0 Much more mellow flavors than other imperial stouts, actually more chocolatey than bourbony. Not very heavy mouthfeel for an imperial stout either. It is a very good beer, might pick it up again sometime but not one I’d stock up on.
3.6 Pitch black in color, viscous pour, not much head... Aroma of bourbon, vanilla, chocolate, caramel.... Flavor of chocolate malts, dark roasted malts, vanilla... Light bitterness on finish... Mouthfeel is a bit thin, doesn't carry the bourbon well ... Bummer, could have been better
