Arthur (1922-2005) was our grandfather’s youngest brother; Hill Farmstead Brewery rests upon the land that was once home to him and his 13 siblings. In his honor, this Saison is crafted from American malted barley, American and European hops, our distinctive farmhouse yeast and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Arthur.

4.575CL. This is HB’s bottle. Split 2 ways at fridge temp and allowed to warm. Hazy gold, almost no head. wow…smells FANTASTIC. Just a wild bouquet of cascade hops. Love the balance here with that lemon, earthy, bread yeast hill character. Exceptional perfect mouthfeel. Good hill farmstead yeast mouthfeel and wheat and lemon/lime? Juicy orange peel, grass, wheat, sugar, white wine. This is REALLY good! One of the best bottles of Arthur I’ve had in a long time.

PIcked this up two weeks ago at the Hill. Thanks Shaun! Beautiful beer! Put in the fridge for a few minutes and poured into a Hill Farmstead glass.
A - 3-finger crystal clear head that shimmers like crystal. Very tight bubbles almost creamy. The beer is a hazy golden color. Deep orange gold color. Gorgeous beer.
S - Great spices like pepper and some other very bitey spice. Loving the very bready and sort of butter-like croissant scent. There’s a terrific tangy scent that you related to great farmhouse saisons and a lot of dry white-wine appeal. I’d be happy just smelling this beer!
T - Dry Saison is what I first get. The spice is a bit too much but it’s not terrible, I’m just not a fan of so much spice. Maybe that’s why they call this a "rustic" saison. Very dry finish which pulls the spice away leaving a lingering tangy taste.
M - Huge explosion of bubbles on the swish but not bubbles that expand your cheeks. Carbonation without full-ness. Very nice. Light bodied and easy to drink
O - I’d like this beer. HFS’s Anna I prefer but this is still a solid Saison but just a little spicy for me.
Revising this to a 4.8. I reviewed this earlier in the year. The latest batches are more tart / sour. The spice is almost gone, still a little buttery on the nose. These beers are starting to sour and I’m sure it’s intentional. Going to save my other 3 of these for a year and hope they develop into something else.
4.4Bottle shared at Moor Beer Vaults - Bermondsey. Pours lightly hazed gold with a fluffy, white head. Lovely beer, clean, with mellow funk, dashes of salt, subtle juicy citrus, minimal bitterness. Light bodied with delicate, massaging carbonation. Lightly tart finish, background acidity, more lemony nips, mild salty bite. Outstanding.

Bottle shared at CBC one of Nate’s last nights. Pours hazy yellow-gold with a large, frothy white head. Lovely aroma, all yeast, lemon and dough. Light to medium sweet flavor, some doughy bread, light spice, light bitterness, yeast, faint citrus. Light bodied with average to lively carbonation. Clean, fresh, bready finish, some mild yeast, light lemon and citrus rind. Just a damn good saison. Doesn’t try to blow the top off. Just makes it do what it do, baby. (February 2012, score: 4.4)

3.8Tap at BeerOut, Forlì, Italy. Pours classic gold, with fine white foam. Aroma is delicately funky, grainy, citrus. Body is average, with quite a carbonation. Some astringency. Taste is medium-high sour, with some underlying sweetness. Final is average.
4.3Lightly hazy deep-gold-to-mustard-yellow. Fine frothy white head. Aroma is tart lactic acid, some sweet wheat grain dust, touch of Demerara sugar - lovely sweet-sour balance without too much pickle and no acetic. Touch of delicious tart fresh-baked bakers yeast, bit of toasted scone, hint of grape, touch of yellow-green apple, somewhat underripe guava and mango. Body is medium-light weight, somewhat syrupy-oily, bit starchy, high-medium-high carbonation, medium-high burn, fine-medium-fine bubbles - really great texture. Flavor is medium-medium-plus acidity, dry-to-dry-to-off-dry, some grass, bit of very underripe pineapple and mango, touch of toasted dry wheat grains, hint of wetland grasses and grape, slight hint of rich wet earth. Light-to-very-light crisp bitterness (grassy and slightly resinous). Bit of musty Parmesan is coming through on the exhale as it warms! Overall, delicious! Yummy, not as funky as it could be, but still complex. Highlight is the texture (fine carbonation in particular) and the enticing aroma with the almost wheat-toffee note. I get why Hill Farmstead makes the best saisons now!

4.0750 ml bottle. Pours a hazy straw golden color and topped by a thick off white layer of foam that slowly settles to a thin film and leaves patches of lace on the glass. The aroma shows notes of light lemon citrus, zest, barnyard funk, hay, and wheat over a toasted bread malt base with underlying Brett and yeasty esters. The flavor follows suit with the lemon citrus, hay, barnyard funk, and crisp wheat up front to go with the breast malts, some minerals, and a light Brett driven tartness on the back end. Medium bodied with lively carbonation that leads to a clean, crisp, funky, light citrus, and dry brett on the finish. Perfectly balanced between sweet, tart, and funky that is very refreshing. Really solid saison here, but I expect nothing less from Hill Farmstead.

4.2Year old bottle. Beautiful cloudy straw pour with a big, blooming, clean white cap. Lemon and pepper, musty green grapes/white wine, just a touch of earthy funk. Taste is a perfect balance between sweet, tart and dry. Tart, lemony finish with just a bit of bitterness. Complex and crushable.

4.7A 750ml bottle, bottled on 23rd May 2018. Poured into a 3 Fonteinen Zenne glass. It was a very nice lightly hazy golden colour with a two finger white head that had good retention and left nice lacing. Aromas funky, tart, mango, stone fruit, malt, bready, citrus, lemon juice and pepper. Tastes sweet, tart, lightly sour, stone fruit, peach, citrusy, lemon juice, grass, funk, with hints of peppery spice. Medium bodied with moderate spritzy carbonation. Overall I love Arthur every time I get a chance to try it. One of my favourite from Hill Farmstead, and one of my favourite in the Saison / Farmhouse style. The aroma and flavours just come together so well that it’s a joy to drink.

Taste: medium sweetness and bitterness. Pretty wild en lemony with notes of grass, slight spiciness, some funk. Palate: medium bodied, oily texture and lively carbonation. Overall: best farmhouse ale I’ve had so far. Enjoyable and complex.

Texture is oily to watery, medium to light bodied with moderate carbonation.

3.8Thick, whipped eggwhite-like head over hazy yellow beer. Spicy, herbal nose with other grains. Spicy with a light, mild sourish edge, wheat and yeast.
