Batch 1: Corked. Blend of barrels. Batch 2: Gold Cap. No cork. Blend. Batch 3: Silver cap. Blend of barrels. Inoculated with culture from our coolship experiments. Batch 4: #4 written in box. Batch 5: Dated. Batch 4: Silver cap. Same brew day/batch as Flora 3 - but the beer progressed/rested longer in the barrels.

3.9Quintessence. Unclear paleish yellow. Yoghurt, saison and stables funk, berry, herbs, oak. Medium, pinching sour, some fruit and yeast flavours, a bit one dimensional. Still good.

4.3(Bottle sample @ Quintessence 2018, Cantillon, May 1/18) Pours nearly clear pale gold with a tight white head. Notes of bright zesty citrus, meadow flowers, fresh grass, white wine, bright balanced lactic acidity with a hint of wine vinegar, light to moderate hay-like Brett funk, a little cereal, wooden accents. Moderately tart, decent bitterness, drier mineral finish, super crisp. Medium mouthfeel with low sparkling carbonation. Beautiful stuff, a supremely balanced and complex saison that's bright and easy to quaff. Would love more of this.

3.9Bottle. Hazy golden with white head. Aroma is vineous, white grapes, barrel funk. Taste is grape skin, quite very tannic, unripe berries, barrel funk. Oily mouthfeel with low carbonation. Good, but a bit overdone.
3.8Bottle from a friend. Hazy yellow color, white head. Bitter/sour taste with citrus, minerals, hops, earthy notes, grass and ripe fruits. Bitter/sour finish with citrus, earthy notes, ripe fruits, grass, white currant and spices. Excellent saison.

From bottle at kermis’ b-day tasting at Kwartje. Hazy golden with white head. Sweet malts, loads of white grapes, apricot, white raisans, grass, lemon, flower petals, almond shavings, whatnot, big tartness. Moderate sweet, bitter and light sour. Over medium body, slick and soft carbonation.
4.4Sampled at Chris' birthday share. Semi-hazy golden pour with a white head. Notes of oak, brett, citrus, lime, hay, stone fruit, light white grapes, light caramel, light spices, other fruit. Beautifully balanced, light and easy to drink.
4.2Bottle shared at Kermis birthday tasting. Pours a hazy pale yellow with a white head. Candied lemon, peach, oak, funk, hay. There's a lovely brightness to this, crisp and juicy all at once. Lovely beer, so balanced, thanks Marius.
4.4Bottle shared at kermis' birthday, huge thanks to mariuspoenari!! Hazy light golden with short lasting white head. Some lemon, yoghurt, sweet white grapes, funk, spicy yeast, apricot, pomelo, soft grains, starfruits, gooseberries. Very fruity, light herbs and grains but here the yeast and barrel really shine. Medium sweet and sour and light bitter. Bit over medium bodied with soft spritzy carbonation. Absolutely lovely lovely stuff.
4.1From notes. Enjoyed at a share up at Huffman Lake with some good dudes the weekend of September 30 through October 01. 750 mL bottle from the November 2016 release. The pour is a lighter golden orange, relatively clear, with a nice thick cap of white head that falls down to a thin ring with a little lace left behind it. The aroma is good. There is a light tart wheat and a hint of funk. A light citrus zest follows it up with a bit of a funky barnyard going on. This is pretty damn good. There is a delicateness to it, but it’s got the distinct Hill Farmstead nose. The flavor is even better. The tartness on the wheat works well with the yeast and light funk. There is a great citrus to it and a light vinousness that I really like. The mouth feel is lighter medium bodied with a softer carbonation and a lingeringly tart wheat and yeastiness. Golden blonde with a decent off white head that retains well.
Nose is lemon rind, hint of lime, damp straw, grassy vibes, light spice pinch, mellow barrel tunes.
Taste comprises damp straw, light funk, vinous, green berry must, on the turn melon, grains.
Medium bodied, fine carbonation, semi drying close.
Solid well balanced saison.

Hazy blond color. Sour beer with nice lemon character, strong acidity, hint of acetic acid, balance and enough complexity.
Very good (not worth the price point though).

Pours a very hazy golden colour with a small white head. Nose is lightly funky, with hints of fruit. Flavour is fruity and funky brett of a moderate amount with an overall sour aspect. It's clean easy, smooth drinking, that's quite refreshing.
4.0Bottle - Nice funky notes, oak and lemon. Clearish pale yellow gold and a decent white head. Soured lemon, nice funk and a clean finish. Well balanced and nice.
4.0Hazy, blonde. Thin head. Nice bretty aroma, with a touch of pedio, some dusty barrel notes. On the palate, dry, earthy, tart, a bit dusty, then woody notes come through. Brettanomyces accents throughout. Lemon juice tartness. Nice balance. Still some sweetness left in the beer. Refreshing and complex.

3.7Updating this rating. Cloudy rosy pour with a ton of sediment. Funky, tart, raspberry notes, very dry finish. Quite nice.

The nose shows lightly tart notes of juicy plum.
The palate is medium bodied and moderately carbonated. Moderately tart with flavors of juicy plum and bretty funk.

A~ crazy multiple hues of glowing orange. nice fluffy white head and a tad bit of lacing.
S~ lots of lemony tartness up front followed by some nice peppercorns. then of course the bready saison yeast on the finish.
T~ pretty much follows the nose with way more wine funk. heavy citrus and lots of pepper. just an all around great saison! mmmm....! the tartness!
M~ i love how wine barrels seem to give a thicker, slight oily feel. other than that, nice carbonation all around and a slightly dry finish.
O~ oh how i love HF saisons! i would drink any of them every day if i could! this one is aged in wine barrels so of course its a little superior =] overall i’d say... DELICIOUS!

4.5750ml bottle shared with brother, thanks for the share. Aroma: wow. Amazing complex aroma of white wine aroma, fresh apples, pear, some funk. App: hazy light golden, minimal white head leaving little lacing. Taste and palate: medium body, moderate carbonation, crisp acidity finish. Overall: I’ve had almost every variants except the regular version. This is just amazing. I much prefer the original version. This feels so complex. So well done. Amazing. Really love this one.
4.5One of the best beers I’ve ever had. Gold pour, smaller head, tiny ring of lace. Aroma and taste is rustic, tart, white wine, light oak, wheat, yeast. Perfect mouthfeel, lighter carbonation, lighter body.
4.62016 bottle. This is an incredible beer. I’m biased, since I love Hill Farmstead and Florence is my favorite saison that they make. However, this is impressive in its own right. It’s subtle and seriously restrained. There’s a lot of funk smell, with that characteristic HF complex yeast aroma, but the taste is extremely light and balanced. The funk aroma drops away, leaving a bit of acidity, a bit of oak, and some nice lemon flavor. It doesn’t try to beat you over the head with a huge wine barrel flavor or a ton of heavy Brett funk; instead, this is light and complex, and really wonderful.
3.6Batch 2017. Bottled splited 4 ways. Very pale golden slighlty hazy liquid with a white head diminishing fast. Shy nose, winy, white grape, slight funk, tartness. Taste is quite disappointing, light body, light floral taste, some citrus sourness, white wine, I lot of hype around this one that I think doesn’t deserve it. Florence in my opinion deserves more respect for the taste vs price.
3.9750ml bottle pours out a straw color topped with a white head. Nose is nice funk notes wine barrel touch some spice. Taste is more of the wine barrel notes oak floral perfume notes and some funk.
