Hill Farmstead Genealogy of Morals

Genealogy of Morals, the name of one of our most coveted Nietzschean narratives, also happens to be one our barrel-aged imperial stouts. We brewed this wheat imperial stout, added a touch of coffee, and aged it in a selection of bourbon barrels from our favorite distillers.

4.2 Bottle. Opaque black liquid with minimal tan head. Aroma of bourbon, chocolate, leather, light licorice, wood and very light coffee. Taste is medium sweet and light bitter with notes of bourbon, chocolate, light wood and leather. Medium to full bodied with low carbonation. Really nice.
4.2 2016 batch. Pours black and lifeless from the bottle. The thin, foamy brown head soon dissipates. Aroma is bourbon and coffee and they meld quite nicely. Taste is sweet and complex, full of bourbon, coffee, wood, dark bread and brown sugar. Medium bodied. Low carbonation. Incredibly sticky. Alcohol stays perfectly hidden. Not the most appealing visually but after a few sips it really draws you in. Well balanced and complex. Excellent.
4.3 Bottle that was kindly brought along and shared by Thirstybird (Ryan), cheers Ryan Friday 23rd. On the nose there is of course a little bourbon but also an alcohol buzz and a smidgen of fruit. Wow this is a lovely beer really enjoying this, lots of bourbon, wonderful warmth, smooth and yet there is a little tang, good kick and an overall quality feel to this beer. The coffee is in here but for me it plays second fiddle to the bourbon at the moment. Excellent stuff.Btw Loz thinks that I am being tight she would have given this 4.6 A8 A4 T9 P5 Ov17 4.3
3.6 Bottle. Strong chocolate and coffee. Moderate boost. Decent overall. A tad of warming. Nice.
3.9 Thanks Virby44 for sharing the bottle! Poured into a snifter showing pitch black center and caramel thick rims with no head. The nose shows a moderately intense bourbon forwardness. The palate is light bodied with barely any carbonation. Moderately intense and perfectly balanced bourbon flavours throughout with light coffee tartness through matched with a light coffee bitterness on the finish. Barely any alcoholic spiciness.

2.9 This beer is way over the top with bourbon. I might as well dump a shot of bourbon in an imperial stout and chug it. Not. Good. At. All.

3.7 8/1/2013 500ml bottle poured into a huge Tired Hands wine glass. A~ extremely dark brown, nice fluffy tan head, and surprisingly a lot of lacing. S~ lots of booze, bourbon which of course adds some vanilla, caramel, and molasses aspects. i also get some burnt coffee, roasted malts, bitter dark chocolate and farts... oh wait that was me haha T~ smooth oaky bourbon up front, just like licking the barrel! followed by a ton of chocolate, milk and dark. roasted malts linger through out along with some nice coffee. surprisingly no booze to be found on the pallet! M~ an extremely smooth stout and exactly where i like the carbonation to be for this style. O~ definitely tasty! i love picking out the different barrel aspects. more coffee then i detected in the last version but thats definitely because i’m having this fresh opposed to the last one which had been aged a year. i prefer the Madeira aged version over this but only cause it gave it way more funk and as i’m sure you can tell after all these HF review thats my thinggg!
4.0 Bottle shared at Matt’s. Dark and rich with chocolate and oily body medium mouthfeel. Great.
4.8 Fresh batch released on May 2017. Bottle splitted 4 ways. Black as night liquid with a foamy dark beige head. Nose is coffee, some notes of acidity (cherries or simply coming from the coffee?), chocolate, vanilla, bourbon, lovely! I can’t stop smelling the beer. Astonishing taste of well dosed coffee, residual sugar, milk chocolate, vanilla and bourbon, everything is so balanced, the glass clearly doesn’t last long, I would grab another bottle and drink it all! Abv% is hardly perceptible, medium to full body. One of the most amazing imperial stout I had the chance to drink!

4.5 Bottle @ Dangerous Bottleshare goodbye Aaron edition (or not?). Pitch black pour with a dark tan head. Notes of smooth brrrrbn, vanilla, coconut, light coffee, smooth chocolate and light roast. Subtle but still super tasty stuff!
4.5 Dangerous bottle share goodbye Aaron edition. Pours black with a nice dark brown head. Aroma of sweet chocolate, coffee, sweet bourbon, caramel, fudge and vanilla. Just mellow and balanced aroma. Taste of mellow sweet chocolate, vanilla, sweet bourbon, dark sweet fruits, fudge, caramel and some coffee. Just a nice bourbon barrel forward coffee stout. Straight up awesome!
4.4 From bottle at Dangerous Bottleshares - See You In August Aaron Edition! Pours a pitch black with a lovely, tan head. Aroma has intense bourbon, sweet malts, caramel, raisins, prunes, nice spicy coffee. Taste is intensely chocolaty, sweet, chocolate acidic, roasty but still with rather low bitterness. Very spicy and slight boozy. Balanced, full bodied and a with a rather low carbonation.
4.5 Bottle @ Aarons Last Visit. Pours pitch black with a small creamy mocha head. Aromas of sweet bourbon, roasted coffee, dark chocolate, fudgey, vanilla, light sweet milk chocolates. Taste is very smooth, sweet bourbon, vanilla, fudgey, peppery coffee, milk chocolate, subtle roasty finish.
4.3 2013 bottle. Pours an inky black, nice two finger brown head. Aromas of malted milk balls, espresso, wet oak, bourbon and vanilla. Taste is nicely balanced chocolate and coffee upfront. Medium bitterness, medium to heavy mouthfeel that pushes the dark roast. Light nuttiness, light vanilla and then a heavy oak/bourbon inflection. Never too hot. Top notch stuff as always.
4.6 Bottle. Batch 1. By way of a trade with Leighton. Cheers! Nearly black. Creamy, lasting, dense, tan head. Nose has quality chocolate. Soft liquorice. Rich, sweet cake fruits. Beautifully sweet, oaky, vanilla bourbon. Some steeped cherry. Any coffee notes have long gone, but that’s fine by me. This is stunning. Taste is sweet, chocolatey, and woody. Soft charred bitterness. Mouthfeel can’t be bettered. Rich and soft, while never feeling the ABV. Fudge, chocolate, and sweet bourbon on the finish. Wow.
3.9 Bottle - Da k roast malts, bourbon and chocolate. Jet black brown with a small brown head. Dark toasty malts, chocolate, dark fruit and some bourbon booze notes.
4.3 500ml bottle pours a near pitch black color with a tan head. The smell is dark roasted malt, molasses, coffee, bourbon. The taste is molasses, dark roasted malt, coffee and bourbon ending roasty, rich and dry. Wow!Full bodied with fine carbonation.
4.4 Bottle shared thanks to Patrick. Pours an oily black with a small mocha head. This is wild. Amazing decadent bourbon, vanilla, oak, chocolate cake, creamy milk chocolate, smooth coffee. So good, so smooth. Perfect balance.
3.8 Bottle sample at Beer Study bottle share in Durham. Jet black color, brown head. Aroma of vanilla and dark roast. Taste is sweet vanilla, coffee, bourbon. Nice.
4.4 500ml bottle (thx, Frederic!) at Alex’s. Pours a very dark brown with a beige head. Aroma is bourbon, boozy, dark fruits, chocolate. Same taste. Impressive! P.S. Blend of GoM and M&C7 is even better than the beers alone! Wow!
4.1 Sergey’s hunt; bottled 01.07.2016 Dark brown color, almost no head. Big phenolic aroma, plays well with the dark malts. Smooth, luscious chocolate flavor, moderately sweet, with big alcohol presence, but not too boozy, and some hints of tobacco, liquorice. Excellent.
4.4 500ml bottled thanks to Julien. Pours an oily black with a dark mocha brown head leaving some substantial lacing. Long lasting with foamy bubbles. Smells of sweet bourbon. Nice spicey cinnamon to it as well. Smooth vanilla and sweet finish. Tastes very smooth. Bourbon sweet heat right away with a nice cinnamon heat at the end. This comes with some roast and a woodsy finish. The mouthfeel is perfect. Smooth and heavy. Standard HF. Love it. All in all this beer is something else. Amazing
4.1 Bottle (batch 1). Pours thick and black with only a minimal, fluffy, mocha head ringing the glass. Bourbon aromas most prominent, some chocolate. Moderate sweetness up front overtaken quickly with a building, medium+ bitterness that lasts. Flavors of chocolate, bourbon, vanilla, and roasted malts. Full bodied, slick and creamy. Slightly undercarbonated. Finish is lightly dry.
4.1 A deep dark stout with a thin mocha head. In aroma, sweet fruity chocolate malt with light coffee notes, grassy hops, light bourbon barrel notes, woody notes, very nice. In mouth, a nice sweet fruity chocolate malt with light vanilla cake, oily mouth feel, coffee, dark fruits, molasses, alcohol warmth, very nice. Bottle at Big Matt’s Eclipse tasting.

4.4 bottle shared at BBF, poured a rich dark black colour with a beige head on top. an incredible aroma of layers hits the nose, dark roasted malts, sweet bakers chocolate, subtle chocolate coffee, mocha, marshmallows, sweet bourbon, vanilla, oak, perfect heat finish. sweet molasses, sticky full bodied mouthfeel, belgian pralines. absolute winner. incredible
4.3 Update: drank the April 2018 versio at brothers place. This is so good! Lots of bourbon coming through, some vanilla, roasted almond. Mouthfeel is so perfect as well. I want more! Old rating: 500ml bottle from the premise drank in this cabin in the woods in Ferme-Neuve with the kids. For the records, the kids didn’t drink any, no need to call child protection care. Aroma: strong boozy bourbon / alcohol, woody, chocolate, light molasses. App: dark brown, small brown head, nice lacing. Taste and palate: medium to full body, extremely creamy and smooth, soft carbonation, subtle acidity and bitter / sweet and alcohol finish. Overall: really like this one. The feeling of being in vacation and in a cabin in the woods with my kids probably helps a lot but I don’t really care. This is exactly what I needed. This beer is so smooth but also feels really strong at the same time. Perfect mouthfeel. Also love the boozyness.
