Um das Thema "Granit" im Bier noch mehr zu verankern, beschlossen wir 2008 erstmals ein GRANIT BOCKBIER einzubrauen, das in alten Granitsteintrögen vergoren wird.

Perfekte Vorraussetzungen für ein solches Bier, bietet das Sudhaus aus dem Jahre 1929.
Während der Hauptgärung in alten Granitbottichen hat das Gestein Zeit seine Geschichte an das Bier weiter zu geben.

Um auf Temperatur zu kommen starten wir diesen Prozeß mit glühenden Granitzwecken. Die Steine werden über offenem Feuer erhitzt und kühlen dann schlagartig in der Würze ab. Die Bierinhaltstoffe karamellisieren und die Hefe erhält optimale Gärbedingungen. Zusätzlich wird die Hefe ganz klassisch "aufgezogen" d. h. von Kübel zu Kübel geschüttet um diese zu belüften.
Dank der offenen Gärbottiche können wir die Kräusendecke abschöpfen und somit unedle Hopfenbitterstoffe entfernen. Daraus resultiert ein dunkler Bocktyp mit schönen Karamell- und Röstaromen und einem wunderbaren Hopfenbuket.

Nach ausreichender Lagerung in den alten Gewölbe-kellern, ziehen wir den Bock bereits im Juli auf die Flasche, damit bis Weihnachten eine Nachreifung stattfinden kann.

3.6 750ml bottle [2012 vintage]. Clear, reddish, dark chestnut colour with slightly late awakening, small, frothy to creamy, half-way lasting, minimally lacing, off-white to beige head. Sweet-ish, caramel malty aroma, notes of caramel, hints of burnt caramel, malt lozenge, a touch of nougat and toffee. Taste is sweet-ish, caramel malty, slightly nutty, notes of caramel, hints of toffee, malt lozenge, a touch of nougat; creamy texture, smooth, soft and silky palate. Pretty good.
3.9 0,33l bottle shared @ One Pint Pub, Austria self-import tasting. Pours clear deep chestnut with a medium off-white head. Aroma is gently roasted malts with some caramel and some wood. Flavor is gently roasted malts, some caramel, some wood, some hops. Tasty.
4.1 Bottle from Dranken Geers, Oostakker. Pours hazy dark brown with a small, foamy, tan head; little lacing. Inviting aroma of candied banana, plum, molasses, candi sugar, vanilla, crème brûlée, milk chocolate, cookie dough, apple cake, licorice & syrup. It tastes medium to heavy malty sweet, lots of plum, banana, caramel & dough, and light herbal bitter, countering a cloying sweetness, with hints of 'spicy licorice', even some toast. Dryish, herbal hoppy finish, spicy, lingering syrup & bread/dough, with a dash of warming liqueur alcohol. Medium body, syrupy texture, soft carbonation. Extremely enjoyable, a real winter warmer...
3.7 Doppelbock de 7,3 % abv, avec malts d'orge et de blé. Mon exemplaire était à 15 mois avant sa date. Couleur roux caramel sombre, avec des matières en suspension. Bulles moyennes, en fontaine centrale, vives. Mousse beige, à fins flocons, stable à 2 mm. Arômes de pruneau, raisins secs, poire cuite. 1ère bouche souple, à l'entame pareille au nez. Arrière-bouche riche, mais à l'harmonie un peu hésitante. 2ème avec de beaux fruits mûrs, cassonade. Arrière-bouche avec une pointe de vieux porto. La suite paraît enfermée dans cette structure de granit .. (pas facile d'en sortir !!). Jambes lisses. Levure un peu vineuse, ligne correcte. Alcool bien, mais il ne peut faire sauter le granit pour trouver des choses plus fines. Finale un peu mielleuse. CONCLUSION : dur comme le granit, c'est bien, mais quand cela devient une prison, c'est moins bien et un peu encombrant. Il n'empêche qu'on trouve un certain agrément en présence de ce rocher .. 3.4 Flosch'n: Hazy, deep ruby-amber coloured, small off-white foamy layer; toffee in themoderate to solid sweet caramelly-toasty and fruity nose with a delicate malty bitterness underneath; pretty solid sweet and slightly bitter flavour, nearly full bodied, not so soft; sweet vinous and caramelly finish with a slight alcohol-burn in the aftertaste. Well, Austria is not Franconia...
3.8 Delikatnie zamglone, ciemne, ciemny bursztyn przechodzący w czerwień. Piana mało obfita, jasny beż, drobne i średnie pęcherzyki, dość szybko się redukuje do obrączki. W aromacie karmel, skórka od chleba, czerwone owoce - dojrzała wiśnia, porzeczka, nieco czerwone winogrona, młode wino, marcepan, banan. Konkretny i mocny. W smaku całkiem delikatne. Są czerwone owoce, wino, skórka od chleba, słód, karmel, nieco sok z cytryny, nieco paloności, żywiczności i ziemistości na finiszu. Nie jest mocno słodkie, raczej idzie w stronę wytrawności, ale jest gęste i pełne mimo tego. Gładkie, całkiem pijalne. Dopiero w przełyku czuć alkohol, rozgrzewanie. Goryczka jest, chmielowa, nieco palona, raczej słaba, ale nieco zalegająca.
3.8 Aroma: melanoids, caramel, roasted dark malts, dried red fruits. Appearance: mahogany color and creamy head. Taste: melanoidins, red dried fruits, roasted, caramel, smooth, quite dry. Palate: medium body and low carbonation. Overall: perfect dunklerbock, very velvet and complex.
3.2 Sweet and malty aroma with dried plums, honey and caramel. Mahagoni color with a small beige head. Flavor is roasty, light sweet with dark chocolate and coffee. Medium body, thin to oily texture, lively carbonation. Average long medium bitter finish with light alcohol. For my taste a bit too roasty. 0,33l bottle.
3.4 Deep brown, clear, small head, nice glints. Roasty, cocoa, dark bread, caramel, plum, molasses. Not eanough body, nice carbonation.
3.8 Preciuos aroma of dried fruitiness with signs of caramel, some chocolate with raisins and toasty touch. Very dark ruby in the glass with a minimal head. Taste is semi dry with huge notes of roastiness, ginger bread, plumy touch and toasty notes. Really tasty, worth any price.
3.4 Barwa ciemnobrązowa, piana niewielka. Aromat karmelu, suszonych owoców, prażonych słodów. W smaku słody, karmele, lekki miód i czekolada. Spoko pifko.

4.0 Ar: Tangy malt, toasty; vinous, with a hint of orange marmalade; truly rounded malt. Ap: Very, very deep red, clear; medium-small light tan head; settles into an egg white-textured ring with a sudsy cover of the center. T: Rich, treacle-like maltiness up front; clean, rum-like alcohol; brief bright hints of coffee, deep caramels, candied orange, and vanilla; bitterness is medium-low; no hop flavor; mild sweetness throughout. P: Smooth and rich; medium-full bodied; carbonation is medium-high; finishes medium-dry. O: A doppelbock with unique flavors for the style, but they all complement the backbone of deep, rich malt; full of toast and broad caramels.
3.7 Bottle from de Caigny in Essen, Belgium. The beer is dark brown colored and has a fast dissappearing creamy head, with good carbonation. The aroma is very sweet. with notes of roasted malts and caramel, dried fruits, raisins and some small hints of spcies. The taste is full bodied and sweet with roasted malts and a lot of caramel and goes a light bitterness with chocolate, cacao, nuts and some spices. The finish is light alcoholic, light dry and with a nice hoppy bitterness.
3.5 Wenig Schaum. Geschmack nach gedörrten Pflaumen, etwas Kirsche, Karamel und Röstaromen. Nur leichte Bitternote.
4.1 On tap. Pours in rich ruby colour with very small white head. Aroma of caramel, ruby port. Highly sweet, lightly sweet, no sourness. Full body, low carbonization, long lasting medium intensity burned sweet caramel aftertaste.
3.8 This acquisition was made, surprisingly to me in hindsight, in Montana on a trip to visit Yellowstone Park. The 16.9 oz bottle is opened and poured into my favorite small tulip tasting glass. The body is a dark brown complemented by a momentary light brown head. I take a good smell and detect grain, malt and just a hint of dark fruit. With a drink I find more of the malt, hay, cough drop, rock candy plus a small bitter finish. While I am not that familiar with doppelbocks, this beer compares favorably with Vetters 33 that I sampled a few weeks ago. A bit less sweet, perhaps the better for it.
3.5 Bottle sample at a tasting at zvsn’s place. Thanks tomer. Murky brown-red. Chocolate ice cream, some ice coffee aroma. Alcoholic, ice-coffee and slightly bitter taste. Full body, long, bitter-coffee finish, rather fizzy.
3.3 33cl bottle. Caramelly round beginning. Grainy bitterness, caramelly body. Grain and moderate bitter in the mainpart, the dry roasted caramel is there, but not too smooth. Round and bitter dry caramelly aftertaste.
4.4 A dark brown to black color with a beige head. Aroma on this is spot on with some chocolate, caramel, raisins, cherries, oak, and toffee. The flavor is slighty sweet but mostly sour with some red wine flavors and chocolate coming through. Some caramel and toffee in the background. The aftertaste is a balance of sweet and sour. Overall this is very good!
3.1 Shared at a tasting, small creamy head, cloudy murky brown color, aroma of dried fruits, sour bread and hints of rum and barnyard, flavor of dark bread, candy and some graininess, dried fruits aftertaste. Quite nice and enjoyable.
3.4 Bottle sample at a tasting. Thanks tomer. Dark amber, almost brown with a big beige head. Aroma of raisins, caramel, nuts, rye bread. Sweet, dark fruits, caramel, raisins, prunes, light alcoholic warmth. Medium-bodied, smooth. Nice sipping beer.

Sweet flavor with notes of prune, milk chocolate, some roastiness, flowers, syrupy with some spiciness. Medium to full-bodied.
3.3 Donkerbruin bier met weinig schuim. Smaak is zoet en kruidig met iets van braam, rozijn, chocolade, karamel en noten. Erg goed.

3.7 Bottle at home. Clear dark reddish brown with nice beige head. Lots of caramel, milk chocolate, toffee, raisin bread, marzipan, light alcohol. Over medium sweet and under medium bitter. Over medium bodied. Pretty good.
3.2 33cl fles. Helder donker robijnrood kleur, fijne witte schuimkraag. Aroma van karamel en donker fruit. Smaak is zoet, karamel, donker fruit en rozijnen. Medium lichaam, veel koolzuur.
3.4 Rating #2395 - 2016.03.28 - Bottle 2/5 in the forgotten box. Dark brown pour with a tan head that fades fairly slowly. Mild-medium carbonation. Aroma is coffee, hint of toffee and roasted malt. Taste is a little earth, wheat, mild smoke, and just super walnutty.
4.2 Dark brown with a thin layer of head. Sweet burned sugar, caramel and hawaiian bread. Nice long lasting sweet malts. Some fortification is apparent, but this isn?t boozy whatsoever. My German sucks but I think this is a steinbier, where hot stones are used during brewing. The caramel is definitely there but the ash or soot is not so noticeable. Really nice and worth trying.
