Ilkley The Mayan

Ilkley The Mayan

Keg & Bottle.
Inspired by an ancient Mayan recipe, Ilkley Brewery has created an extraordinary Stout. It is velvety smooth, bittersweet, and has a subtle smoky fire in its belly. The Mayan is a Chipotle Chocolate Stout, dare you take it on?

4.1 500ml bottle. Thin dark brown pour with a fine mocha head. Aroma of sweet cream, slight spiciness, and rich dark chocolate that lacks the usual cocoa bitterness. Light cream and chocolate on the tongue, with a pleasant chilli burn upon the swallow. Dry mouthfeel.
3.6 No está mal como stout, además de la gracia del chipotle que le da picor. Cuerpo medio. Tiene buen sabor pero no lo acabo de unir al picante. Aun así es bastante buena.
3.4 Black pour. Chocolate and vanilla aromas with some pepper. Taste is sweet chocolate before the chipotle does its magic. The burn is only moderate, making it possible to enjoy the whole drink. Dry finish with lingering chipotle burn. Too heavy on the chipotle during the end, but still good.
3.5 Bottle 33cl. @ LaBIRRAtorium, Madrid, Spain. A: Black. T: Roasted malt, chocolate, coffee, spicy.
3.8 Aroma - syrupy chocolate similar to Hershey’s Syrup, faint roast, and a touch of spice. Appearance - black body. Head is 2+" and holds tightly, and buff in color. Taste - has a nice mix of milk chocolate and peppery spice. There is also soft yeast quality, usually reserved for hefeweizens. Palate - full body, creamy texture, carbonation is average, the finish is spicy finish.
3.7 Negro con reflejos caoba y espuma beis. Aromas de chocolate y especiado. Cuerpo medio - bajo, sabor achocolatado con final y regusto picante.
3.1 Bottle from Latitude, Leeds. Black with next to no head. Has a strong chocolate aroma, with its spice subduing this greatly in its taste. It only provides a mild kick and fire in the palate though.
2.7 Bottle. Ruby body with a beige head. Faint lacing. Aroma of chocolate milkshake, fig and green pepper. Flavour of dark chocolate with a chilli burn. Medium body with a creamy mouthfeel. Soft fizz. Too spicy for me.
3.5 Bottle shared with the bro. Cheers Jamestulloch! Pours a black with little head. Aromas of chocolate, black pepper and big chocolate. Flavour is sweet chocolate, coffee and then a black pepper spice creeps up and nips the tongue. Mild spicy linger. Surprisingly rather enjoyable.
3.8 Bottle. Pours deep brown with a small, staying, creamy beige head. Aroma has lots of chocolate, light milky, some coconut, mild roasted. Low carbonation, fine dry and quite creamy mouthfeel. Flavour has cocoa, firm chili burn, light coffee, soft roasted. Lingering, light warming finish with some chili. Nice.
3.7 Desde el principio destacan las notas a cacao y ahumadas, con un trago que tira hacia la milk stout, dulce y tostada, con un final especiado y ligeramente picante que se va acumulando poco a poco en la garganta.
2.0 Keg, half-pint shared with Finn at Alexandra Hotel. Tiny beige head. Jet black body. Inviting chocolate aroma, sweet. O’boy taste with a very strong chipotle smoked chili ending. Very slow sipper. Almost undrinkable (Derby 19.02.2016).
2.1 The smell is good. The appearance is not bad, but the foam does not have the desired persistance. The taste reminds us like spicy bacon. The palate is long, and spicy. In overall, we didn’t like this beer, because we don’t search for spicy flavours on our beer.
2.2 Fra fat på Alexandra Hotel i Derby 19 Feb 16. Delt med Rune. Svart. Skum langs glasset. Lett sjokoladearoma. Smaken er O’Boy - i 3 sekunder. Så slår chilien til og ødelegger alt.
3.5 On tap @ CBR Festival 2015, London - UK. Color: deep dark black beer with no carbonation and small brown head. Smell: roasted malt and chocolate domination. Spicy notes. Taste: medium body with roasted malt, chocolate and coffee taste. Good attenuation with spicy finish. Quiet warm on throat ! Interesting spicy beer. Aftertaste: chocolate and spicy.
3.5 Backlog from the Brony Bottle Share at Travlr’s. Dark brown with bare offwhite head. Lots of cocoa and roast, with spices coming through. Great taste, but thin.
4.4 Keg at the Blue Moon, Cambridge. Dark, dark brown with the tiniest of tan heads. Smells of milk chocolate, like a lovely little milk stout. Then you taste it and the chilli hits you full on. Hot, sweet/savoury and intense. Burns, burns burns well after the beer itself is gone. A wonderful marriage of beer and chilli. Won’t be to everyone’s taste but my dear Christ it is to mine.
4.6 Aroma: chocolate, roasty Appearance: black with a brown head Taste: medium sweetness, medium bitterness, some heat from the peppers Palate: medium body, creamy, soft carbonation, long finish, Very nice
3.7 Bomber at home. Decent stout. Not quite the season for a beer this big yet. Super dark, thick and roasty. Chipotle notes really come through at the end. Somewhat off-putting slick mouthfeel- but one could say velvety. Got smoother as it warmed up. Decent but better examples of style. Bit rich for my palate.
2.4 It’s the second beer with chilli I’m trying and that particular ingredient seems not suiting my beer tastes (though I love it in food). The chocolate has a really nice flavour, but chilli aftertaste ruins it for me.
3.3 Off white head with good retention. Dark opaque mahogany colour. Aroma is strong black cocoa and spicy with brownie hints. Taste is black chocolate and peppery with very hot chilli finish. Very peppery aftertaste. Medium creamy palate. A very hot chilli taste.
3.8 On cask at The Dandelion in Philadelphia. Pours black with a tan head. Aroma is big roasted malt, chocolate, cinnamon and smoky chipotle pepper spiciness. Flavor is roasted malt with smokiness, chocolate, dark dried fruit tartness, cinnamon and finishing with spicy smoky chipotle. Heat grows as you drink more. Really nice.
4.1 Bottle. Great stout, roasty with lots of chocolate, roasted malts, coffee, but with something extra - chipotle burning onthe palate. It is strong but it is not overpowering the flavour of the beer. Smooth and velvety on the palate. Medium bitter with spicy burning in the finish. Great beer.
4.0 500 ml. bbe 10/15. Opaque ebony with a creamy disc of foam and beautiful lace. Interesting nose is at first apple but then lingers with vanilla, coffee graham cracker and chocolate. Sweet front flavors of vanilla, cappuccino and biscotti turn to lightly tart apple and a spicy finish of earthy capsaicin. Medium body has a smooth carbonation and leans to the sweet side, but balances it out nicely with just the right dose of pepper.
3.3 Black pour. Tan head. Little lacing. Huge chocolate nose. Huge nutty and chocolate taste with a spicy pepper in the finish.
3.7 Keg at Berkhamsted beer shop, Berkhamsted, Herts. A black coloured pour with a medium beige head on top. Chocolate, chilli, malty aroma. Tastes similar, chocolate, chilli, malty, bitter/sweet. Quite rich, I really liked it but half a pint was enough.
3.6 Bottle from Bier Huis. Pours dark brown, with a half finger tan coloured head. Aroma of chocolate, some Chilli for sure...Taste of initial chocolate, dark chocolate, almost like Sam Smiths Choc stout, then we have subtle chillis...I say subtle, they’re present but not in your face, nice and warming, not blasting your mouth away.
3.3 Tasted from the tap on the 14/06/2015. Deep brown to black colour with a foamy tan head. Aroma of lactose, cocoa and vanilla. Taste of chocolate, chipotle chilli, some earth and brown sugar. Medium body and soft carbonation. Next one please!
4.1 Draft at fire works Arlington. Pours black and luscious with a thick khaki head that leaves an absolute shitload of lacing. Lots of rich chocolate on the nose. Plenty of chocolate on the tongue as well. The heat from the chipotle is faint at first but builds as the beer warms up. Nice!
