Innis & Gunn Caribbean Rum Cask

Innis & Gunn Caribbean Rum Cask

Also known as "Blood Red Sky" from 2017 to 2021. Innis & Gun confirmed that "It is the same recipe, but it has been given different names over the years. It is currently called Caribbean Rum Cask"

Originally brewed at Belhaven for Innis & Gunn. Production moved to Wellpark - date unknown.
NOTE: This is the same beer as the Oak Aged Beer Rum Finish. According to Innis & Gunn "they are the same beer, the process changed slightly so we changed the name. But the recipe is the same."

Ingredients: Golden Promise and Crystal malt; Phoenix hops.

We are delighted to present this unique limited bottling of Innis & Gunn finished in oak
barrels which previously contained navy rum. Maturation in special oak barrels imparts
Navy rums with the sweet, spicy character for which they are renowned. We have long
wondered what flavours might be imparted to our beer by finishing it in these same
barrels and earlier this year we decided to find out.

We brewed a special batch of Innis & Gunn beer and matured it in oak for 60 days. Every single drop spent half of that time in American oak barrels before being refilled into selected navy rum barrels to finish the lengthy maturation. Once the beer had absorbed the unique character the barrels were emptied, the beer blended and then maturation continued for a further 47 days until all of the flavours had married together and mellowed. We think the result is absolutely delicious!

2.9 Liquide ambré rouge avec mousse courte et persistante. Nez prunes, épices et légèrement épicé version Noël. En bouche, c'est entièrement sur une impression de rhum raisins avec un final très court, dommage !!!
3.5 Bottle. Clear ruby body with an off-white head. Steady carbonation. Faint lacing. Aroma of cinder toffee, prune and a hint of smoke. Flavour of roasted malt, wood, rum and raisin. Medium body with a slick texture. Soft fizz. A tasty beer - what’s with the clear bottle though? Earlier Rating: 11/10/2012 Total Score: 2.4 Aroma: Dark fruits, rum and sugar. Appearance: Dark ruby body with a fragile beige head that soon fades. No visible carbonation or lacing. Taste: Sweet (but thankfully not to the extent of their ’Original’) with plummy fruit flavours. Brown sugar. Not very hoppy. Noticeable alcohol burn on the finish. Palate: Thin body with a watery texture. Soft carbonation. Overall: Too sweet and sickly for me - I couldn’t finish the bottle. And on a side note, why does this come in a clear bottle? Do the brewers not care about protecting their product from getting lightstruck?

3.2 12iz bottle from Hops & Bottles. Dark, clear brown pour with a thin, silky beige head. Malty aroma, sweet, party, brown sugar. Taste is peated malts, raisins, rum seems to be hiding, although it is quite sweet. Dry finish too. Earlier Rating: 10/23/2012 Total Score: 3.6 Catch up rating from notes, 2012: Bottle from the BritShop on Ramstein. Pours out a nice dark brown, but clear, small half finger tan head. Rum is readily apparent in the aroma, caramel malts, woody notes. The rum also brings sweetness to the malts, along with what seems like a very boozy vibe. Nice feel overall, and despite the seemingly boozy flavor and warmth, it's not that strong of a beer.
3.8 Ahoy! Where is my pirate eye patch! This beer combines two worlds - that of beer and of strong rum. Drink it and you will want to pillage some royal ships!
3.8 Dar brown pour with a decent white/tan head. Aromas of rum, dreid fruit, white bread, caramel. Taste similar with hints of prunes and herbs. Decent finish with a pleasant rum aftertaste.

3.4 Poured from 330mL bottle. Clear mahogany brown with full off white head. Subdued typical I&G malt profile with underlying rum character. Quite similar to the now retired I&G generic rum cask, but slightly sweeter, more dark sugars. Okay. Earlier Rating: 12/4/2013 Total Score: 3.4 Poured from 330mL bottle. Clear amber colour with dissipating off-white head. Vanilla, oak, toffee, malt nose with very subtle hint of rum. Same flavour. Rum taste is much subtler and balanced compared with the spiced rum finish. Smooth, medium body, but finish is a little shorter than usual for I&G beers.
3.3 Copenhagen 15/9 2022. 33 cl clear glass bottle from VinSpecialisten, Butikstorvet, Billund. White label with a lot of barrels Mordor less faded. Pours clear dark brown with a distinct red hue and a mid-sized off-white head. Stable. Settles thin, almost transparent layer of foam struggling to cover the surface of the beer. Clinging to the sides of the glass. Substantial lacing. Aroma is moderately intense with a sweet, malty odor mingling with a sweet scent of rum essence. Caramel and toffee. Hints brown sugar.Sweet dark rum. Medium strong carbonation. Thin, oily, lively and tingling texture. Flavor is medium intense with a rather strong sweetness followed by a moderately strong tart bitterness. Aftertaste is sweet with a light boozy streak. Lingers for a bit. Finish is rather dry. Quite restrained fora beer with lot of Rum barrels the label. Earlier Rating: 2/14/2015 Total Score: 3.5 Copenhagen 17/1 2015. 33 cl bottle from Netto. Pours reddish light brown with quickly settling white head. Sweetish but spicy aroma. Actually notes of rum and alcohol. Medium to low carbonation provides silky mouthfeel. Taste is rather sweet and complex with notes of alcohol and rum. A rather weird mix of beer and avec.
3.2 Botella 330ml Color cobrizo-rojizo, transparente, espuma blanca, fina, mediana, retencion media. Aroma malta tostada, rum, frutas secas, ciruela seca, nueces, frutal, floral. Media resistente. 3.3 Bottle, 330ml. Pours clear dark brown, a short head. Nose is fruity, malty, very ripe, alcohol. Mouth feel is light, syrupy, medium carbonation, tacky. Taste is quite sweet, some bitterness, some acidity. Flavors are malt, dark malt, ripe fruit, raisin, metallic, leather. Nice, just a bit too sweet.
2.3 --Sample, thanks oh6gdx! -- Clear mahgany colour. Aroma of sweet apples, caramel and rum. Very sweet with medium body and clean, rounded mouthfeel. Papery caramel, some pineapple and rum. Low bitterness. Why do they keep using up all those fine barrels on such a mediocre beer? Earlier Rating: 5/30/2008 Total Score: 3 Nut brown, creamy head. Potent woody rhum aroma. Sweet with rounded mouthfeel and medium body. Fruity with lots of vanilla and some sugar. The barrel flavour dominates the beer, which is probably good as I’m not fond of the base beer. Finishes with powerful rhum flavour rather than bitterness.
3.1 Unusual taste profile to me. Not unpleasant but not a favourite.
3.0 How: Bottle. Where: Systembolaget. Appearance: Amber colour with an off-white head. Aroma: Malt, fruit, rum, some vanilla, wood. Body: Medium body and carbonation. Flavour: Malt, fruit, rum, vanilla. Earlier Rating: 2/20/2011 Total Score: 3.3 Doesn’t reach the same good taste as the regular oak aged version. A promising beer that falls short of the goal.
3.7 On keg at I n G Lothian Road. Appearance - brown to black and opaque with decent lacing. Nose - raisins, booze,, caramel and sweet malt. Taste - Rum and raisin. Sweet spice and wood. Generally boozy. Palate - medium to full bodied with a seeet middle and finish. Overall - nice. Earlier Rating: 4/22/2011 Total Score: 2.3 33cl bottle. Chestnut brown in colour with a nice head which hangs around for a good while. The nose has sugar and malt - the beer underneath seems quite thin. The taste is of more sugar, coconut and slightly oxidised beer in the background. The palate is medium all the way through and it doesn’t really refresh on the end. Overall, I’d struggle to have more than one.
3.4 330ml bottle as a present. Pours clear copper with an off white head. Aroma of malt and rum with vanilla. Similar taste. Bittersweet finish.
3.6 Bottle 0,33 ltr: Clear dark amber coloured brew with an nicely sweet taste with low bitterness, hints of toffee, dried fruits, vanilla, little bit oak and that fine rum flavour. 4.5 06-07-2022; bottle; at the Swedish house (bought at Tesco, Schotland). The beer looks very nice. It is a nice dark copper colored beer, almost chestnut. Somewhere in between that. It is crystal clear and produces a very nice glow. On top o the beer some slightly grayish foam is formed. Foam retention is average, but a lovely lacing is left on the glass. Looking good. The aroma of the beer is wonderfull. It is really rich and intense. The malts give nice aromas of caramel and some toffee. Besides that there is some chocolate roast. Hops give some spicy and herbal aromas. The rum casks give some amazing aromas. There is loads of vanilla, some spice and nice oaky notes. This results in a complex aroma, that is smooth and easy accessible at the same time. A really nice blend. The taste of the beer is also amazing. It is a lovely balanced beer. The hops give some bitters. The malts give some lovely sweet flavors. The rum gives nice extra sweetness. All in all, a sweet but perfectly balanced beer. The mouthfeel is nice too. Full bodied, smooth as silk and medium carbonation. The finish of the beer is nice and filled with spicy rum, oak and vanilla. A really nice cask aging. Earlier Rating: 9/15/2017 Total Score: 4 15-09-2017; bottle; at home (bought at Saveur Bière, as part of their September discovery box). The looks of the beer are very nice. The beer is quite dark. The color is a dark amber, or a nice coper reddish brown. The beer is crystal clear. On top of the beer a nice layer of soft slightly off-white foam is formed. Foam retention is average. After a while a nice drape is left. The smell of the beer is very nice. It is special. There is a nice malty aroma, with some bitter hops. It is hard to distinct those aromas, since there is a lovely strong oaky rum aroma. This aroma is very good. It is a lovely spicy and sweet rum aroma, with a touch of cinnamon in it and some chocolate. There is also a lovely oaky aroma there. It is lovely, very spicy and unique. Good work. The taste of the beer is also very nice. It has the same features as the smell. There are nice flavours of sweet malts, oakwood, spicy rum, hints of cinnamon and chocolate and also a nice bitter hoppy touch. I like it. It is rich and well balanced. The palate of the beer is nice. There is a nice medium body, slightly sticky texture and also a nice high carbonation. The finish contains a nice dry bitterness of spicy rum and hops. There is also a nice alcohol touch. I like it. It is a really nice beer. Nice flavours with a nice twist from the rum, well done. I like it.
