Jester King Atrial Rubicite

Back in February of this year, we added several hundred pounds of raspberries to oak barrels containing mature sour beer. We then allowed the beer to re-ferment to dryness. The result is Atrial Rubicite, our first barrel aged sour beer to incorporate fruit. Atrial Rubicite is made from well water, barley, wheat, hops, farmhouse yeast, native yeast from the Texas Hill Country, souring bacteria, and raspberries. It’s 5.8% alcohol by volume, has a finishing gravity of 1.005 and is 3.36 pH. It is unfiltered, unpasteurized and 100% bottle conditioned. Atrial Rubicite is our first beer to be packaged exclusively in 500 ml bottles.

4.0 On tap at BXL 2018. Pours slightly hazy, dark red colour with moderate pinkish head. Undescribable amount of raspberries in the aroma. Raspberry balsamico, raspberry seeds and so on. Really intensive and strong smell. Lots of raspberries at first. Raspberries, raspberry seeds in the middle. Raspberries and raspberry balsamico in the end. Lots of raspberries in rhe aftertaste too. Bit heavy and buttery texture. Taste is dominated only by raspberries.
3.9 Sample at the Shelton Festival. Pours a dark red color, with a big, frothy, pink head. The aroma is heavy raspberry, blueberry, vanilla, Greek yogurt, and lemon juice. Sweet and fruity, with a sharp, assertive tart flavor. Medium body, with an acidic, sharp, and thick mouthfeel. This is a very fruity, enjoyable sour.

3.5 5Oct2018 Intense raspberries, bit of oak,light citrus fruits. Hazy reddish, small, creamy, deep purple head. Medium sour. Sour citrus fruits,orange and lemon peel,lime juice, acidic, soft carbonation, medium bodied. Beautiful aroma, too sour. Keg at IMBC18, Manchester.
4.0 Keg at Indy Man Beer Con. A deep reddish purple colour with a medium pink head. Aroma of tart raspberry coulis and subtle acidity. Taste of tart raspberry, slight sharp lemon, a little funk and subtle vinegar. Medium bodied and a slick texture. A dryish, tart and acidic raspberry finish. This is the most tartest raspberry sour I’ve ever tasted! Pretty much raspberry coulis, perfect sour and palate cleanser.
4.5 Tap @ MBCT, Red Session. Clean bright ruby red, some pink foam there as well. Creamy sweet raspberry nose, freshly grated raspberry jam. Taste is tart, no sweetness, just clean raspberry essence basically. Oak and light spice in the background. Some tannins drying out your mouth. Tart and clean and fruity. Pretty amazing overall if you ask me.

4.0 Sampled @ BXL Beerfest 2018. A clear ruby reddish purple beer. Aroma of red berries, sweet berries, raspberries. Taste of intense tart raspberries, super fresh and easy to drink.
4.3 2nd day of BXL fest. Beautiful ruby with pink head. Massive raspberries. Raspberries, raspberries and raspberries. Sweet and tart, light to medium acidic. Medium body and soft carbonation. Fantastic.
4.1 Bxlbeerfest. Pours deep red with pink head. Aroma is massive raspberries, fruity, vanilla, sweet. Flavor is sour and sweet, vinegar, fruuts, raspberries. Finish is sour. Overall: great.

4.1 Rose pour, thin off white head. Nose is funky yeasts and raspberries. Middle is a burst of SOUR, medium kilned malt, roasted wheat, mixed raspberries. Finish is solid funkiness over berries.

4.4 500 ml bottle, blend 7 June 2017. Deep ruby body, with a frothy, pinkish head. Amazing aroma with loads of the freshest, jammy raspberries, moderate young cheese, slight funk. Tastes also amazing, like fresh raspberry jam, with subtle vinegar. Medium, a bit oily mouthfeel, with an average carbonation. Finishes sour, medium dry, a bit wooden, with slight vinegar, loads of lingering, jammy raspberry. Amazing! So much distinct, fresh, jammy raspberries everywhere, like few beers I've had. Drinks incredibly fresh and balanced. Outstanding, even better than expected, one of the best raspberry beers I've ever had! Score: 9 / 4 / 9 / 4 / 18
4.2 500 ml bottle at Sanders place, shared by Saeglopur, many thanks! Pours a hazy deep wine-red, with a quickly disappearing pink head. Intense aroma of raspberries, oak, mild vinegar, cherries, mild funk, some leather - lovely, really complex smell. Medium body with a medium sourness and a light fruity tartness. The flavor is again full of raspberries, raspberry jam, wood, hints of vinegar and gooseberries. Finishes dry with a light tartness and some woody notes. Very well balanced and complex - excellent beer! Aroma: 9 Appearance: 4 Taste: 8 Palate: 4 Overall: 17

Smells strong of raspberries, berry notes, light marzipan, wood, bit nutty, jammy. Lovely smell. Full body, light carbonation, slick mouthfeel. Tastes of raspberries, jammy, bit lactic, earthy, grassy, some wood, peppery, light spices, berry notes. Finishes dry and medium sour with notes of raspberries, wood and some citrus. Lovely, lovely raspberry notes, very nice one
4.5 #7 top sour and I can see why. Brilliant pinkish red pour. Bright jammy aroma of fresh picked raspberries. Light and refreshing even though it's got a decent amount of pucker and jammy deep raspberry flavor. Just fantastic. 4.4-4.5.
4.5 Tap. Blend 7. Sampled with the RB Crew on the 09/05/2018 at «Himmeriget», Copenhagen. Dark ruby colour with a low pinkish head. Aroma of raspberry, minerals, leather, oak barrels and intense red fruits. Taste is very intense berries with a complex sour finish. Definition of well balanced beer. Smooth and juicy medium sour finish. A gem. Next one please!
4.2 Tap at MBCC blue. Aroma of citrus, hay funk, lot of raspberry, light lactic. Light Sweet and moderate Tart Sour with lingering fruity sourness. Great.
4.5 Tap, Blend 7. Deep ruby color with pinkish head. Aroma is super raspberry, leathery, very fruity, but also berry skin complexity. Taste is raspberry, almost puckering, fresh, leathery, a bit tannic. Fizzy carbonation, but not too big-bubbled. Awesome, this is perfectly balanced between complexity and refreshingness!

Aroma is slightly dry sour-ish fruity, raspberry syrup, hay, minerals, oak, berry skin, sorrel, sour concentrated raspberry juice. Taste is slightly dry sour-ish fruity, soda powder, sour raspberries, berry skin, sorrel, oak, minerals, fruit stones, grass, hay. Medium bitterness, slightly dry sour-ish fruity mouthfeel. Nice.
4.5 Enjoyed last night at Doug's house on March 20. 500 mL bottle, Blend 7. Thanks Dude, this is a long time want! The pour is a dark, dark red, almost black, with a thin ring of darker pink colored head that vanishes almost all away to nothing. The aroma is fantastic. There is so much jammy fruit throughout this it's nuts. he bright raspberry, fleshy, yet tart and sour just makes your mouth water. A light dry fruitiness comes on the back end. I love this. The flavor matches. So fruity, sour, jammy, tart, and clean. Fuck. Great fruit heaviness and a hint of dryness, all while remaining fleshy and juicy. The mouth feel is crisp and clean with a bright carbonation and a lingering fruity sourness that just makes you want another drink. Damn this is an amazing beer. 9 4 9 5 18
4.9 Way yup.
4.2 Nice light heavy raspberry aroma, slightly tart and moderately sour. Taste is moderate sweet with moderate acidity - quite a long duration, tart. Medium body, oily texture, rather soft carbonation .Quite drinkable.
4.3 Bottle shared at Himmeriget. Clear dark ruby with short lasting pink head. Strong sour raspberries, raspberry pits, hay, soft old oak, funk, light mineral. Very nice fruits with soft underlying funk. Not too different from fresh fruit lambic I’d say. Medium sour, light bitter and sweet. About medium bodied with soft carbonation. Fucking lovely.
4.0 (On tap @ MBCC 2017 Yellow Session, Copenhagen) Pours hazy dark red with a pale pink head. Aroma is deep punchy raspberry, fresh and lightly jammy, touches of cherry or other tart red berry in there too, lightly tart, oaky and funky hints, a bit of berry seed bitterness. Flavour is conveying similar notes, raspberry is the dominant factor, some berry seed bitterness, softly tannic oak, low funk, rather tart with light sweetness, and a drying bitterness. Unfortunately I found the fruit concentration in the flavour rather low, bordering on watery. Mouthfeel was light to medium bodied with average carbonation. I don't know whether the keg format did not flatter this or what but I was expecting a lot more concentration from the reputation. Having this shortly after a Bokkereyder Framboos variant, the fruit on the tongue a shadow of that beer.
3.9 Bottle. Thanks! A: Dark raspberry in color with a thin white head. N: Big raspberry and grapefruit. Lemon zest. Oak. There is a nice cracker. Sulfuric. More of the raspberry. Balsalmic vinegar. T: Very sharp with the raspberry sourness. Light sweetness but more of the vinegar. M: Light body, no alcohol, biting carbonation. O: Good. Reminds me of Block 15. Nice but could use a little refinement of acidity
