Jester King El Cedro (Batch 1-5)

El Cedro, an 8.0% ABV farmhouse ale dry-hopped with Citra hops, aged with Spanish Cedar spirals and bottle conditioned with Brettanomyces yeast. It combines tropical, fruity hop flavor and aroma with funky, barnyard yeast character and the unique flavor and aromatics of Spanish Cedar.

El Cedro is brewed with Texas Hill Country well water, 100% organic malt (Two Row, Carapils and Wheat), Millenium, Cascade, Columbus and Citra hops, farmhouse and Brettanomyces yeasts, and Spanish Cedar spirals. After primary fermentation with farmhouse yeast, El Cedro is dry hopped with Citra hops and aged for weeks with Spanish Cedar spirals. It is unfiltered, unpasteurized and naturally carbonated through re-fermentation with Brettanomyces yeast.

4.0 bottle-Batch 4 from July 2013 Sampled December 2014 Pours hazy orange with a nice fluffy white head with big bubbles all over. Nose is crazy-lots of cedar, citrus, lemon, orange peal, very subtle citrus here, but the cedar age is so heavy on this. IT sort of reminds me of the cedar aged Jai Ali from Cigar City on the nose. Flavors show the wood age with lots of bright citrus as well. THis beer is 1 1/2 yrs old and it still shows quite a bit of hops. THe yeast created something truely unique-lots of crazy funk along with the woody notes and hops. Its really hard to pinpoint everything that is going on here. Long woody, grapefruity lemony finish with quite a bit of bitterness. I really dig this beer! THe carbonation is a bit on the high side, that maybe the only detracting thing here. still quite good!
3.7 Slightly hazy yellow orange in color... Spanish Cedar and citrus hops portend a shockingly vivid grapefruit aroma... Cedar is initially very pronounced, grapefruit and citrus notes come through with a funky Bretty finish... Light citrus and pine hops on palate... Solid
3.0 Bottle: Hazy amber body with a foamy white head that settles rather quickly. Lots of peppery & woody spices all around; you can definitely smell & taste the cedar. Super woodsy, reminds me a little of a cigar humidifier even with some notes of earthiness & tobacco. Kind of tastes salty, too, with a brine-like finish. A little bit of tartness & some modestly funky barnyard notes from the brettanomyces, but certainly understated compared to the spicy cedar. Lightly floral with notes of peppercorn in the finish.
3.8 Bottle. Pours hazy gold with a white head. Nice woody cedar base, some spicy yeast, light fruity sweetness, and some faint rustic notes. Good stuff.
3.6 Not bad, nice mellow bubblegum aroma, somewhat sugary. Tasted banana cloy sweet but not too overpowering in each respect. Decent finish, slight warmth, decent brew.
2.2 5/VII/14 - 75cl bottle @ RBBSG III (Gent) - BB: n/a, bottled: VI/22/13, batch #4 (2014-743) Thanks to omgrich for sharing the bottle! Little cloudy pale orange to yellow beer, creamy white head, pretty stable, bit adhesive. Aroma: lots of cedar, soapy, deodorant, very weird. MF: lots of carbon, medium body. Taste: way too much of that cedar stuff, no subtleties, very bitter, wood, tannins, meh. Aftertaste: very soapy, unpleasant bitterness, weird. I don’t like this one little bit.
4.1 1.5 year old bottle. Almost a gusher. Poured 99% foam and 1% beer. After 10 minutes of settling and pouring, I had this: http://i.imgur.com/GNMdFos.jpg Anyway, that’s what it looked like. Aromas of funky brett and wood. Taste is bitter and funky. Flavors of cedar and sweaty Brett. Bone dry. I guess this kind of dried out during the past year and a half due to the brett and really built up some carbonation. Pretty nice metamorphosis. The end result is a woody funk train, bone dry and cracklingly decadent. Really glad this beer had time to bottle condition with the Brett, as it turned out amazing. Finishes woody, dry and Brett-tastic. Very nice and an amazingly unique experience!
4.0 750ml bottle, batch 3, honey gold color, with a big frothy white head, nice will bretty, funky yeast, dusty, barnyard, spicy cedar woody nose, with a mild floral leafy, citrusy, grassy hop, faint lemon juice accent,with a lemongrass, pine bark, bread dough note in the aroma follows through on a medium-bodied palate, with a good funky, bretty, fruity yeasty, cedar wood barrel, earthy floral cedar bushes and trees, flowery leafy, grassy, cedar hoppy character, with some dusty, lemon, lime rind, light acidic lemon juice, spicy peppery, doughy flavours, leading towards a funky, bretty yeastiness, woody cedar, dry leafy, grassy, citrus hop bitterness finish.
4.6 Batch #4 - July 22, 2013. This was poured into a tulip. The appearance was a nice hazy golden orange to yellow color with a slight ability to see small carbonation bubbles rising at the edges . There was a two finger white foamy head that dissipated within about a minute leaving some light spider web lacing. The smell was absolutely amazing through a piney/resinous aroma with a nice entanglement of lemon zest, lemongrass, sweetened freshly cut grass and cracked pepper. The taste takes those flavors and jumbled them up to practically perfection. The aftertaste, probably one of the absolute best aftertaste I’ve ever encountered in any beer. Okay, it’s a long intriguing sticky sweet lemon with a slight dry touch from the lemongrass that lets in a tad of refreshing tropical fruitiness. The finish is sticky and sweet that brings in a light grapefruit with a light sweet grassiness to it. On the palate, this one sat about a light to medium on the body with a fairly decent sessionability about it. Would I have this with food? I might if I could get it again. At the beginning of the beer, the carbonation felt a bit sharper but as the beer warms, it really smooths out. Overall, hot damn! Way to knock one outa the park, Jester King! When are you going to sending your beers to Alaska? Don’t make me have to trade for this again.
3.7 75cl bottle at Gainsbar in Kortrijk - Belgium. Pours a amber orange color with white head. Light aroma of pepper and cedarwoord, very carbonated but still balanced, slightly bitter bretty finish. Lovely.
3.7 Pours a hazy light yellow with a large loose white head. The smell is a big white pepper, cedar, fruit, orange. The taste is fruit, pepper, cedar, spice. Light + with soft elegant carbonation.
3.8 Bouteille 75cl @ RBBSG III, courtesy of omgrich. Troisième bière utilisant du cèdre pour cette session, avec encore une fois un rappel prononcé à CCB. Dorée, léger trouble, col fin blanc. Arôme est dominé par le cèdre. Fruité houblonné arrivant en rétro-nasal et apportant une très belle palette de fruité, léger noble, malt cara pâle avec un brett qui ne profite pas de la force du cèdre. Palais met ici aussi le cèdre bien en avant. Houblonné fruité notamment sur un niveau citronné frais et léger tropical. Léger épicé - boisé venant du cèdre mais aussi du Simcoe plus un léger pin qui s’estompent un peu avec la présence du cèdre. Pour 8%, reste très, voire trop, facile à boire. Au final, bière agréable qui reste plus appréciable que la version de To Ol et un peu moins balancée que celle de CCB.
4.3 750 ml. bottle sampled @ RBBSG III. Thanks to omgrich! Hazy citrus with huge fluffy white head. Fizzy citrus nose, touch tart with huge lemongrass / Fanta / Ceder profile. Taste is huge punch of brett / lemongrass / Fanta / lots of Ceder / air refresher / fizzy / citrus / minor funk. Very love or hate. Bit too softdrink-like almost for me but very unique & refreshing for me.
4.0 Sample at Gainsbar Kortrijk. APPEARANCE: clear blond beer, small unstable white head. NOSE: hoppy, citrus, brett, dry. TASTE: dry, bitter, hoppy, brett, fresh, balanced, wood.
4.4 Bottle: Poured a light dirty beige color ale with a giant white foamy head with good retention and some lacing. Aroma of fruity hops with light mango notes with dry Brett notes and some light spicy notes form the cedar. Taste is also dominated by light mango fruity notes with some spicy notes from the cedar and the dry aftertaste and funky notes from the yeast. Body is full with limited filtration and good carbonation and no apparent alcohol. Incredible amount of complexity can be found in this beer but it also retains an extremely high level of drinkability.

3.7 Batch 2, jan 2013. At my place over an empty pool with group. Pours neon orange with massive massive bubbly head. Aroma is huge bretty, orange peel, big funk, big cedar. Taste, is cedar, zesty orange, massive brett, cedar. The hops are gone, and the cedar is a little less, Brett is huge. Finish is quick and zesty.
4.3 This is one of my favorites from Jester King and a very well done beer. Pours a hazy straw yellow color with white head. Citrus, brett, cedar, funk, light fruit, and some earth tones on the nose; follows onto the palate. Very complex, and medium bodied. Finishes dry with a bit of funk.

4.5 Une des bières les plus intéressante, travaillée et marquante qu’il m’ai été donné de goûter. À la première gorgée, on se sent transporté. J’ai fermé les yeux et j’ai cru me trouver en pleine pinède Toscane. L’une des personne avec qui je l’ai dégusté m’a même assuré en avoir rêvé après coup ^^
3.5 On tap at brewery, poured a milky orange hue w/ thick creamy white head and great lacing. Initial flavor is light sweet w/ a light sour finish. Tastes are pink and white peppercorn, farmyard funk, and tangerine.
4.0 3/29/2014. On tap at the brewery. Pale yellow with a white head. Aromas of hops, yeast, Brett, hay. Bitter and tart with an oaky finish. Awesome beer.
3.2 15.02.2014. 0,75l Bottle. RBNG-14. Pale yellow colour with white head. Sour with noteas of stables and steap malts. Aftertaste is sour and medium bitter.
3.0 Pours a honey colored gold, pillowed white head and some noticeable sediment floating in the hazy body. Aromas of strong peppercorn, wheat, light funk, bitter lemon and oregano. Taste is spicy (no heat) with pepper, orgenano, basil, cedar dominating the flavor. Nothing subtle about this. The hops are mostly lost on me. Very little citrus or funk peeking out across the middle or the finish. The spices only became more pronounced with each sip. Not my cup of tea.
3.6 Cloudy golden with a massive fluffy white head. Aroma is cedar, brett funk, freshly ground pepper, citrus. Medium-full bodied, nice balance of sweet, sour and bitter. Taste is ruby grapefruit, honey, pepper, cedar.

3.8 From a shared bottle at RBNG-14. Pours hazy golden with a white head. Fruity and funky aroma of tropical fruits, citrus and yeast. Moderate sweet with fruity flavours and pleasant sour notes. Quite delicious! (2014-02-15 - Grand Tasting, Fredriksten festning, Halden)
3.0 Shared from a big bottle. Hazy golden body, remaining white head. Brett-like aroma, rather dry. Grass, pineapple, and wood to the taste buds. Sweet and tart to the ending. Soft carbonated. Smooth on the swallow. Not a favourite of mine, but quite nice to drink anyway (Grand Tasting, Fredrik 3.s Hall, RBNG, Halden 15.02.2014).
4.0 Tall foamy white head. Hazy yellow-golden body. Nose is tangerines and sweet lemon, light funky with a touch of wood. Medium body. Fine fruit flavors. Light acidic, with orange peel, and pineapple. Fruity bitterness and soft wood tones. Elegant, refreshing and very easy drinkable despite the high abv. [Shared bottle at Grand Tasting, RBNG2014]
4.0 Sampled at the RBNG-14 Grand Tasting courtesy of Meilby. Muddy yellow body with a white film. Funky lemongrass and cedar tree on the nose. The bret comes through in the mouth on top of all the other aromas. Spicy wooden finish. Delightful!
