Pecan Wood Smoked Saison

Crafted in the once commonplace, Old World tradition of bière de coupage, young, dry hopped ale is blended with old, barrel-aged sour beer fermented with native yeast. A portion of the malt was smoked over pecan wood at The Salt Lick BBQ in Driftwood, Texas. Unfiltered, unpasteurized and naturally conditioned.


Update: Our original label application for Salt Lick Pecan Wood Smoked Saison was rejected by the Texas Alcoholic Beverage Commission (TABC), after having been approved by the Federal Alcohol and Tobacco Tax & Trade Bureau (TTB). We have renamed this beer "Censored" for sale in Texas.

3.5 Bottle. Pours a hazy yellow with a white head. Nose is smoke, bread, some slight nuts, and mild vinegary funk. Flavor is similar with smoke and funk, mild vinegar, and some wheat. Light to medium in body and interesting overall.

2.7 Gusher. Yellow coloured and unclear. Has a white head, medium duration. Odd, smoked, light acid.

3.5 Bottle. Cloudy yellow with a tiny white head. Fruity and smoky tones. Malt, smoke, hops and fruit. Medium body with a bitter / sour finish.
3.7 Piana - Duza, wolno opada. Zapach - Kwaskowa wedzonosc. Gaz - Mocno nasycone, nawet po otwarciu butelki troche mi wystrzelilo i piana lala sie z butelki. Smak - Tu jest bardzo ciekawie. Lekka slonosc, pozniej kwasnie a nastepnie wedzona slodowosc zostajaca juz do konca. Ogolnie - Po tym piwie spodziwalem sie mocniejszej soli, ale jest ledwo musniecie. Ale absolutnie nie czuje sie zawiedzony, bo okazalo sie naprawde pyszne, bardzo interesujace w przemianach nut smakowych z kazdym lykiem.

2.9 Pours a hazy light yellow with no head. Aroma of smoke, wheat with a touch of funk. Taste follows, all smoke. This is a bit hard to drink
3.6 Another unique beer from Jester King. Big aroma of smoked malt with a sense of cooked fruit. Nice color with a decent white head. Medium to light palate. Flavors were blended well with the underlying smoke essence being careful to not mask the touches of citrus and sour fruit with just enough hops bitterness.
4.1 Bottle shared @ home from Brewberry, Paris - FR. Color: hazy pale blond beer with no carbonation and small white foam. Smell: sour notes and grassy presence. Small floral notes. Taste: good sour notes well balanced with grassy finish. Amazing peat presence, really great notes and amazing. Good surprising !!!! Aftertaste: sour finish and floral bouquet ! Amazing composition beer ! For the balance of sour and peat, it’s a must to try!
4.0 Bottle with thanks to Homer! Pours hazy orange, large off-white head, dissipates leaving lots of residual and lacing. Aroma is smoky, campfire, belgian yeast, black pepper and hay, some lemon. Flavor is light sweet initially, giving way to a light tartness. Fairly smoky but not overpowering. Belgian yeast provides hay, mowed grass, black pepper notes as well as a touch of funky musty dusty flavors. Fairly prominent lemon/citrus notes as well. Lightish body, champagnelike carbonation. This one is underrated IMO.
4.6 This beer was probably my favorite one that I had in all of 2013. Lots of evolution throughout the tasting, a somewhat funky flavor, with detection of some slightly fruity flavors, that eventually transform into a nice dark wood finish. Beautiful to sip on.
2.4 750 ml bottle from Bieropholie, shared with judges. Very murky golden, minimal head. Strong smoke, phenolic, sour organic acids, a little funk (Lambic), minerals, citrus. Medium mouth feel, relaxed carbonation. Reasonable fruitiness and some Saison spiciness, light funk, citrus; lightly tart, moderately high bitterness, a spiciness in the feel. Interesting if not totally successful.
3.8 Bottle-Jan 2013 batch 1 Sampled as I rate it Pours hazy light orange hue with a small soapy fizzy white head with lots of bubble size, carbonation and some sparse lacing. Nice looking brew as the head settled pretty fast. Nose is bigtime smokey, but just in a beachwood sort of way. Flavors are tart, slightly woody, lite smoke, lots of fruits-peach, orange peal, and maybe a tad of lite melons. Lovely long sweet, tart and smokey finish-very long. A great brew, why the low ratings? I dont get it. great brew! give it some age and it will shine!
3.5 Bottle. Cloudy muddy golden-yllow colour with a white head. Aroma is meat, smoked, yeast, orange, wood. Flavour is dry, sourness, orange, smoked ,yeast, citrus, wood, brett. Nice beer.
3.8 Pours light cloudy gold with a big frothy white top. Aroma is nutty pecan, oak and light smoke. Taste a little smoke and oak, light nut and floral hops.
3.7 Pours slightly cloudy after a huge foamy pour, big gusher. Nose is smoky with some dough. Flavours are peachy, smoke and some tartness. Taste light tart, light bitter and smokey. Light body with lively carbonation. Not usually a big fan of smokey beer, but really like the tart/smoke interplay.
3.8 750ml bottle, batch 1, slight hazy gold hue, with a fluffy white head, with a wild fruity, yeasty, funky, doughy, smoking, ashy nose, with some lactic, sour, milky, lemon pie accents, with a light lemon, grapefruit rind, wheat, pale, toasted malt, sour mash note in the aroma follows through on a medium-bodied palate with a wild funky, fruity yeasty, sour mash, pale, oat, smoked, toasted malt, ashy character, with some mild lemon, grapefruit, yogourt l’actif acidic, lemon pie, light sour green apple, doughy flavours, within a faint flowery citrus hop undertone, leading towards a funky, fruity, lactic sour yeastiness, smoked pale, toasted maltiness, ashen, citrusy, doughy, milkyish sourness finish.
4.2 From notes, consumed 8/28/2013. 750 ml bottle poured into a Belgian snifter. Bottle dated January 2013, batch 1. Hazy honey yellow with 2.5 fingers of fluffy off-white head. Great lacing. Aromas of smoky notes, bacon, light yeast and funk. Tastes of smoke, barbecue, citrus, tart, funk. Medium body with a semi-dry and smoky finish. Smoke lingers past the finish.
3.7 Bottle: Poured a hazy pale yellow color ale with a huge off-white foamy head (bit of gusher) with good retention and some lacing. Aroma of smoked malt is pretty dominant with light cereal notes also perceptible. Taste is a mostly dominated by smoked malt with some funky barnyard notes and a tart finish being also noticeable. Body is light with great carbonation and no apparent alcohol. Not an everyday kind of beer with the amount of smoke that can be found here and not really a saison anymore but nonetheless I still enjoyed this beer.

3.1 a pretty solid smoky beer, albeit it wasnt too much. a decent representation of the style.
3.1 Pale pour with aromatic hints of wood, banana, candy, hard to decipher. A mish mash. Tasting this saison, the taste shows the aroma is over light and under bodied. Feels like a basic beer without vision and added on the pecan wood to give it character. My philosophy is to produce a strong basis to believe in... and then supplement.
3.0 Bottle from a monster jester king box a while back. Definite smoke action and it is a smoke I’m not particularly find of. It is over an otherwise light and delicate beer which kind of just tastes like smoke to me. There is am underlying salty sourness working but that gets overpowered prett quickly. Ok just not my personal fave.

3.4 Slow gusher, pours a very cloudy pale orange with a fluffy head. Funky saison aroma with notes of tar, smoke, hay and gras. Taste is refreshingly tart with hints of smoke and wood. Fairly dry but also a slight alcoholic burn. Body is medium with fairly high levels of co2.
3.3 12-JUL-2014, bottle @Kregme. Present from Topdanmark for hosting a tasting earlier this year. Hazy, milky yellow with low yellow head. Aroma is huge smoke. After some time I get some fruit, citrus, orange. But mostly smoke. Taste is Smoke, wheat, Wood, funk, lemon, orange, yeast. Tart with a touch of salt. Creamy, medium carbonation and body. A strange beast. Works better than feared, though.
3.8 Finally got round to drinking this! Bottle from Beers of Europe. It pours cloudy golden with a decent white head. The nose is earthy, wood, smoke, barnyard, lemon peel and some sherbet. The taste is crisp, smooth sourness, smoke, farmyard, mild acidity, salted lemon, grapefruit, toasted nut, straw and dough with a dry, smoked finish. Medium body and fine carbonation. Interesting combination of flavours all meld together well. Very nice indeed.
